Weeknight style Thai Black Pepper Chicken and Garlic Noodles. The super fast Thai chicken noodle bowl that looks like takeout, but tastes so much better…and it’s healthier too! Quick-cooking chicken tossed in a sweet, tangy, and spicy Thai style black pepper sauce with plenty of broccoli, cashews, and basil. Serve this chicken over saucy garlic butter rice noodles and top with extra lime juice. Every bite is saucy, sweet, spicy, and hinted with basil. It’s delicious and healthy. Major bonus? This comes together in no time at all (under 30 minutes). Perfect for busy weeknights when you’re looking for something a little more special, but still quick, healthy-ish, and DELICIOUS.

Making Monday night Thai inspired food a thing and so happy about it. I’ve been saying this for weeks, but all I’m craving right now is colorful food, anything fun, and anything different. Any kind of recipe that I haven’t made before. With life in quarantine being much the same every day, I’m thankful to have food as an outlet for spontaneity. Just something different to break up the days, you know?
So yeah, long story short, I’m switching up recipes these days. I’ve made things like a whipped coffee white Russian, Mexican taquitos, and Italian style ravioli. I even ventured towards Cuban with my skillet cheesy Cuban chicken and rice bake and creamy coconut lime mojitos.
Cooking has been the only thing keeping me sane. What’s helping you guys?
Anyway, today we’re stepping into some quick-cooking Thai cuisine, and it’s truly my favorite kind of food.

The inspiration.
I’ve had this dish in mind for a while now. My oldest brother Creighton is here and this week he pushed me to finally create the recipe. He’s been asking for some new quick-cooking Thai inspired chicken dishes, so I obviously had to deliver up something good.
Enter this under 30-minute Thai black pepper chicken. It’s not super traditional, but it was inspired by black pepper chicken. Which customarily, is a mix of chili peppers, garlic, ginger, rice vinegar, fish sauce, and plenty of black pepper. My take has all these flavors too…but also some additional ones as well.
It’s saucy, spicy, sweet, a touch salty, and just about as delicious as a quick-cooking Thai chicken dinner can get. I really can’t say enough good things about this recipe. It’s one of those dishes that will become a monthly staple.
Why? Well, it’s simple, it’s quick, it’s pretty healthy, and it’s a dinner that most everyone can really enjoy.

The process.
First up, toss the chicken with a little cornstarch, turmeric, and ginger. Tossing the chicken with cornstarch allows it to get extra crispy and caramelize while cooking.
Now make the sauce. It’s simply, honey, soy sauce, rice vinegar, and plenty of chili flakes, plus black pepper.
Pan-fry the chicken in a little oil until it is crisp. Add plenty of broccoli, a handful of cashews. Then pour over the sauce and let it simmer down and thicken over the chicken and broccoli.
As the chicken is cooking, boil some rice noodles and toss them in a hot pan full of butter and garlic. Yes, noodles, butter, and garlic…but then add a touch of coconut milk for a little more sauce and additional creaminess. SO GOOD.
By the time the noodles have cooked, the chicken should be done as well. Now, put it all together…

Spoon the noodles plus the sauce into bowls, then add the chicken and broccoli. Finish each bowl off with a squeeze of fresh lime juice and fresh basil or cilantro.
Enjoy. Immediately.
Yes, this is that simple and that quick-cooking. Honestly, this will take you no more than thirty minutes to make and uses a good amount of pantry staples too!

Notes and substitutions…
For the broccoli, while I love it with this dish, you can really use whatever vegetable you have on hand. Bell peppers would be my top pick, then asparagus, but you could also use mushrooms, bok choy, carrots. Really, use whatever you’ve got.
Now, let’s talk about the noodles. I like to use vermicelli rice noodles, but you could use any variety of rice noodles or even angel hair pasta. The noodles are meant to be saucy, so once you toss them with the garlic butter sauce, make sure to serve right away.
And you guys…that’s it. Takes less than 30 minutes to make and it’s not only delicious but fun too. We might not be able to travel around the world right now, but at least we can create fun ethnic-inspired recipes at home any night of the week.

Thai Black Pepper Chicken and Garlic Noodles
Key Ingredient: chicken
The fast Thai chicken noodle bowl that looks like takeout, but tastes so much better...and is healthier too!
Ingredients
- 1 pound boneless skinless chicken thighs or breasts, thinly sliced
- 2 tablespoons corn starch or flour
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1-2 teaspoons black pepper, using more or less to your taste
- 3 tablespoons sesame oil or extra virgin olive oil
- 1/4 cup honey
- 1/4 cup low sodium soy sauce
- 2 tablespoons rice vinegar
- 1/2 teaspoon crushed red pepper flakes
- 8 ounces rice noodles
- 2 medium shallots, sliced or chopped
- 2 small heads broccoli, chopped
- 1/2 cup raw cashews
- zest and juice of 1 lime
- 1/2 cup fresh basil or cilantro, roughly chopped
- 3 tablespoons salted butter
- 3-4 cloves garlic finely chopped or grated
- 1/3 cup canned coconut milk
Instructions
-
1. In a medium bowl, toss together the chicken, cornstarch, turmeric, ginger, black pepper, and 1 tablespoon oil.
2. In a glass jar, combine the honey, soy sauce, rice vinegar, red pepper flakes, and 1/4 cup water.
3. Cook rice noodles according to packaged directions.
4. Heat the remaining 2 tablespoons oil in a large skillet over medium heat. When the oil shimmers, add the chicken and brown all over, until it becomes crispy, about 5 minutes. Add the shallots, broccoli, and cashews, cook another 2-3 minutes, until the broccoli is charring. Pour in the honey/soy sauce mix. Bring the sauce to a boil over medium-high heat and cook until the sauce coats the chicken, about 5 minutes. Remove from the heat and stir in the lime zest, lime juice, and the basil.
5. Meanwhile, heat a medium skillet over medium heat. Add the butter, garlic, and a pinch of red pepper flakes, if desired. Cook until the garlic begins to caramelize and turn light golden brown, 1 to 2 minutes. Stir in the coconut milk, cooking 3-5 minutes, until warmed through. Remove from the heat and toss the noodles with the sauce.
6. To serve, divide the noodles among bowls and top with chicken. Serve with additional basil and limes. Enjoy!

I’ve made tons of HBH recipes and honestly while this had more ingredients than most, I had them all on hand and it was FANTASTIC. The noodles alone had such a creamy flavor and the chicken, broccoli, cashew mix was fantastic. Next time I’d double the noodles.

I loved this recipe was but I forgot to add the pepper I think? The ingredient list calls for 1.5 teaspoons but the instructions only call for a pinch in the cornstarch coating for the chicken. Was I supposed to add the rest of the pepper to the sauce? And was I supposed to add fish sauce? It wasn’t in the recipe or ingredient list but you mentioned It in the post! I added a little dash of It just in case. Actually it was vegetarian fish sauce because that was all I had in hand but it turned out really good!

Hey Tieghan! How do you calculate nutrition? When I did it for this recipe it shows as about 570 calories per serving, not 279. I even used subs like light coconut milk instead of whole and it still comes out over what you have calculated. I might be doing it wrong though 🙂

Delicious recipe. I’m still confused about where the black pepper is added. I put the 1.5 tsp of pepper in the cornstarch mixture and it worked out fine. This is very flavorful and delicious. I will say it took me 10m to put all of the ingredients on the counter to get ready to cook so if you can prep this whole meal in 10m props to you but it took me closer to an hour to prep and cook.

I made this last night and it was delicious, especially the coconut garlic rice noodles, perfect paring! The lime juice and zest gave it an amazing note of fresh citrus which I think completed the meal. However I can’t see where in the recipe it says to add the 1.5 teaspoons of black pepper? I only see “a pinch of black pepper” in step #1. I added a 1/2 teaspoon at the end (im serving kids who don’t like too spicy) Am I missing something?

Sooooo good! I wasn’t sure about adding oil to the cornstarch mixture so I skipped that step and just tossed the chicken in the dry mixture. I didn’t use coconut milk, I just tossed the noodles in that amazing garlic butter with a dash of water. Those noodles were heaven. I added a bit too much lime juice but it still turned out amazing. Such a delicious dish, but some family members argued that there were too many flavors going on. We added the small amount of red pepper flakes to the soy sauce mixture and it was too spicy for kids. I might also add that 25 minute time is slightly misleading (maybe we’re just slow haha) but all those small prep steps really add up. We had 3 adults zesting limes, grating garlic, chopping veggies stirring the chicken mixture, watching the noodles and the separate sauce, etc etc and it took us over an hour. Overall I found it to be worth it! Super fun and interesting take that wasn’t lacking flavor in the least.

I’m doing my best to not venture out to the store and the only thing I’m missing for this is the cashews. Do that make a huge difference? I have walnuts, almonds, or honey roasted peanuts (a go to snack but not sure if it would go in this dish). ANy recommendations?

I made this tonight for my husband and son. We loved it!!!! The only adaptations I made for my son were to use coconut amino acids instead of soy sauce and left the cashews off his plate. He has a lot of food sensitivities. It was easy to make and they loved the spice level. I made this for my family last night. It was pretty simple although the 25 mins may be deceiving if you’re a bit slower with chopping and everything like me. But it was still an easy and pretty straightforward recipe. And soo good!! It was so flavorful and something about it just kept me going back for more. Some notes: I used whole wheat ramen noodles as that’s what I had and they worked out just fine. Also used cilantro in a tube for one of the final steps of fresh cilantro or basil as well as frozen broccoli, and those were also fine swaps. I am adding this to my weekly lineup!!

Made this with a few substitutions because of pandemic creative cooking. This was fabulous and restaurant quality according to my husband. I marinated the chicken in the dry rub for a couple of hours, then, cooked the chicken. We ended up not having the rest of the meal until the next day. I used cut up chicken thighs as that is what I had, and I had cauliflower and fennel, so those were my veggies. I also left out the coconut milk…because I didn’t want to open the can for 1/3 cup…I know, lame! Still, the dish totally was awesome with layers of deliciousness and flavor. This recipe has the bones of a delightful dish, but my first attempt ended up with something tasty but gooey. The broccoli cooked down into a a green smear, the chicken was not crispy, and the noodles were gooey. Here are some observations and questions:
1) Chicken: the flavor was great no crispiness in sight. I don’t now how anything could remain crispy after being boiled in the sauce while it’s reducing. Maybe we shouldn’t be expecting crispy, because it did turn out nicely otherwise?
2) Broccoli: At medium heat, I could not char the broccoli at all. A large 14″ pan with the chicken in it and a big mount of broccoli ends up steaming the broccoli in its own juices. It got soft instead of charred. Then when the sauce was added, it cooked down into a green paste.
3) Sauce: I think less water would lead to less cooking time which would lead to crispier veggies. I used warm water which was an inspiration since it melted the honey and allowed the sauce to mix up nicely.
4) Noodles: At Denver elevation, if you start soaking the noodles when you start cooking the meat and stick to recipe cooking times, they aren’t soft enough by the time you need them. I started them before the meat and they ended up too soft. Then, after draining them, I put them back in the pot and added the noodle sauce. Oops! there was too much water left in the noodles and they got mushier. Next time, I’ll soak the noodles for less time and immediately rinse them with cool water, then let drain longer before adding the sauce. I think they will keep until serving once they have the sauce on them, since otherwise it’s a bit scary thinking they might stick together.

We made this tonight and I can already tell that this is going to be in our weekly rotation. We’ve been doing a lot of cooking in quarantine and my husband and I agree this is by far our favorite thing we’ve eaten in the past two months! 😊 I didn’t have soy sauce or broccoli so I used tamari and red bell peppers (I threw in some scallions because I had some I needed to use) and it turned out great. I feel like this recipe is really flexible if you have to make substitutions which is a must in quarantine cooking 😉

I made this vegetarian by using tofu instead of chicken (tossed pressed cubed tofu in the cornstarch/spice mixture and then fried it like you would the chicken, then took it out of the pan before adding veggies to keep it crispy) and it was phenomenal! The flavor profile of this really hits all the notes. Great recipe from HBH once again, as always! ❤️

This was a really yummy recipe, but it took me MUCH MUCH longer than 25 minutes to make it. Just getting the water boiling was 20 minutes (even while concurrently slicing 4 pounds of chicken breast for 20 minutes, prepping both sauces and veggies, etc. etc.). Maybe I did something wrong! (maybe I just need your kitchen!! *wink*)
But honestly, unless I had an extra set of hands or two in my kitchen, I can’t even fathom how I would be able to get this to the table in under an hour (or two-bc it honestly took me about 2.5h from starting prep to plating).
That’s not so much a critique as it is a warning to those who might expect that prep to table can be accomplished by us mere human beings!
Love your recipes, Tieghan–please keep them coming–and next time I will take the timeframe with a grain or two of salt.

One question though re step 1. In the recipe it says to combine the spices/flour/1 tbsp oil in a bowl with the chicken. I had all my dry ingredients blended and added the oil and it immediately thickened and i had a tough time coating the chicken so had to add more corn starch and spices. Would you recommend coating the chicken in the oil first and then dredging each piece in the dry spice/flour mixture?

We made this tonight with a few tweaks. Buttery creamy noodles are not my cup of tea, so we just added the garlic to the sauce and served it over jasmine rice. Very good that way. I bought roasted cashews by mistake, but I don’t think it affected the end result too much. We used just one teaspoon of black pepper, but next time I think we’ll use less crushed red pepper flakes and slightly more black pepper. We felt like the red pepper overpowered the black pepper, and since black pepper is in the name we want that to come through a little more. We used basil (as opposed to cilantro) and really liked that.

Absolutely phenomenal recipe. It had so many great flavors, and while a little involved it was quick to make. I also didn’t have broccoli but substituted some carrots and yellow peppers instead as suggested. The lime at the end in the sauce and then making the coconut garlic noodles just put this a step above. I also have been looking for amazing recipes that are easy to incorporate baby lead weaning into. I gave my daughter the chicken (without the honey soy sauce) and steamed up some of the same carrots I used separately.

Great recipe, Tieghan. The black pepper gave it enough spice and heat without the red pepper, even for my husband, a/k/a Mr. Fussy. I didn’t have any broccoli so used what I had—slivered snap peas, bell pepper, mushrooms—and it worked well. The flavors are subtle but have depth. I let the chicken sit in the spices for 15+ minutes. I had fried rice to use up so served it with that. Next time I will make the rice noodle.

My noodles never go to that level of sauciness/creaminess compared to the picture you have of just the noodles. It felt like it barely soaked them and absorbed really quickly when it did. The recipe still turned out well, but I’m wondering if you know why? I used 1/3 coconut milk, the 3 TBSP of butter, and garlic. Then tossed with the 8oz of rice noodles.

i’m a “throw everything in the oven on a sheet pan” kind of girl. so, while this recipe was easy to do, to me, this recipe had a lot of moving parts. the stakes were high and i did not want to put all the effort of mixing bowls and dirtying three pots to make this meal only for it to not be that good. well, the effort was WELL WORTH IT. this is better than a lot of take-out/restaurant meals. very flavorful and lots of dimension. i’m making this a go-to meal. i wanted to lick the bowl and wish i had made double! 🙂

This was a really nice dish. I followed it exactly with the exception of the broccoli (I charred some string beans). It was delicious but my opinion was that the lime overtook all the flavor. I LOVE this recipe! The first time I made it, it took me considerably longer than 25 minutes, but I made it again tonight and including prep, knocked it out in 30 minutes flat. I skipped on measurements, opting to eyeball amounts to save time and dishes, and am pleased to find the recipe is forgiving. I like a little extra cracked pepper with the chicken, and a little extra garlic in the noodles. The flavors complement each other so well, and the leftovers heat up great (though there’s not much left after day 1!) This is definitely a new house favorite!

Delicious! So flavorful, smelled good while cookin and just the right amount of spice/heat. Will make again. Definitely took more than 25 mins, but now I’ve made it once I think it’ll go faster next time. Would love a suggestion of what to do with the other 2/3 cup of coconut milk!

New to your website and I love your selection of recipes. It has provided lots of inspiration during this time. Among the new recipes we have tried was this Black Pepper Chicken. I enjoyed it. Unfortunately, my family didn’t. Oh well. But I did want to comment on two things … This isn’t a 25 minute recipe. Not including prep time. It certainly does cook up quickly, but I can’t really see cutting up the chicken, the broccoli, the garlic, etc. and cooking it in 25 minutes.

I just finished making this recipe for the family and everyone was raving about it!! Thank you Tieghan for always providing multiple options – I used chicken breasts, corn starch, sesame oil, cilantro and 2% milk (and the extra red pepper flakes in the garlic noodle sauce). I made this recipe for dinner today and the chicken turned out pretty good but the soup noodle broth was not so great. Maybe it’s because my coconut milk was not the best brand. It tasted really bland even after cooking it with garlic/butter and red pepper flakes. Also I had to add a lot of salt and red chili pepper to everything to give it more flavor. Overall it was pretty good though!

another out of the park dinner. I halved the recipe and everything worked great. My butter, garlic, and coconut milk didn’t quite turn into a whole sauce, but I do always find sauce ratios can get odd when I half them. Still, so good!!!!

I do have one question regarding your recipes in general, when you say 1 shallot or 2 shallots, do you mean the entire thing or just 1 clove of the shallot? I left out all the red pepper flakes so that my little monsters wouldn’t complain about it being too spicy. Me & the hubs just added it to our individual plates and it was just as good. We used red peppers instead of broccoli because that’s what i had on hand. Took less than 30 minutes from start to finish. Everyone loved it. We will be making this regularly.

Thank you for this recipe it was delicious. I changed a few small things. I used Casava flour instead of corn flour. I added an onion, chilli and garlic to the vegetables and I used white basmati rice instead of noodles. It was a winner, I will definitely be making it again.

Loved this recipe! It was a unique take on Thai flavors – it wasn’t really a curry but once the chicken/veggie mixture was added to the coconut milk noodles the sauce formed a flavorful curry… so good! I especially loved the use of lime zest. It added so much extra citrus that the lime juice alone wouldn’t do!

This was absolutely delicious. I made it exactly as written, and the only thing I would change works be to double the amount of noodles and garlic butter-coconut milk sauce. My husband commented that he’d like to try it with shrimp instead of chicken, so I’ll probably do that sometime too. Can’t wait to make this again!

I made this last night for dinner and it was a huge hit! Sadly, there was nothing left for my teenage boys to have as their midnight snack. I do not eat chicken and ended up cooking a separate pan of shrimp (using the same coating) and it was fabulous! Nice and crunchy…my husband actually liked it better than the chicken:)

This recipe tasted OK- I really wish you would segment your recipes more so each step has its own bullet. It’s very easy to misread and not complete everything.
Also, I don’t think the last step of melting the butter and garlic is necessary- it didn’t add much to the flavor and created another dish to wash.

My sister made this a few times and I became OBSESSED with it so I have to make it myself! The only thing is, my partner can’t eat cashews as she has a nut allergy. SO good. Have to say that I did it feel that the noodles really needed any sauce as it was just delicious without more saucing (and another pot to clean up) but truly a delightful recipe that we will make again. I wish we had more leftovers but it was too good not to finish !!

Hi! I made this got the 2nd time tonight and it really is a delicious recipe. My one question is when I initially cook the chicken it seems that the corn starch mixture ends up coating the bottom of the pan instead of giving the chicken a ‘crisp coating’ like in your picture. First time I thought maybe the pan wasn’t hot enough but this time I made sure it was. Again the flavors were still there but any suggestions on how to avoid this?

This was my first time making anything considered “Thai,” and it was a hit. My husband and I both went back for seconds and were soooo stuffed which isn’t how we normally eat. It was THAT good. It also reheated perfectly. I made the recipe exactly how it was written and will again and again and again…. 😉
