Thai Basil Sesame Cashew Chicken with Coconut Rice.
Weeknight (25 minute) Thai Basil Sesame Cashew Chicken with Coconut Rice…and deliciously addicting salted chili lime cashews. This is the super-fast Thai inspired chicken rice bowl that the whole family will love. Quick-cooking chicken, pan-seared, then tossed in a sweet and spicy Thai chili sauce with garden fresh bell peppers, sesame seeds, and summer’s most flavorful basil. Serve this chicken over steamed rice and top with chili lime cashews. Every bite is saucy, sweet, spicy, and hinted with basil. It’s delicious and healthy. Major bonus? This is all made in one pan without the use of your oven. Perfect for hot summer days.

This is one of those recipes where I just love how easily it came together for me. This came to me on a busy day and with really just the use of my brain and what sounded delicious.
I knew I wanted to use up all the Thai basil we have growing in the garden. We literally have so much. It’s overflowing at this point. So I knew I needed to do something with it…and soon. If you follow on Instagram, I’m sure you’ve noticed all the basil in the garden, there’s a lot. And I’m certainly not complaining, I love it.
I also knew I wanted to use the chicken I had on hand. Because the grocery is not a place I want to be heading to these days, so I’m trying to use what I’ve got! And in comes this chicken.
I have to say, I’m really excited with how this turned out. It’s Thai inspired, but with my own additions. Additions like chili lime cashews (with honey…and flaky sea salt too). And one of the best sweet and spicy Thai chili sauces I’ve ever made.
I love this dish. It’s easy, almost no-cook, and just so flavorful. And then there’s coconut rice too…all the (good) things I love.

The process.
First up, the cashews. Now, these are an “extra” and you don’t have to make them. But you certainly should if you have five minutes and cashews in the pantry.
Simply toss raw cashews with sesame oil, honey, chili powder, and a bit of turmeric, then cook until toasted, golden, and caramelized. Once the cashews are toasty, remove them from the heat, and add lots of lime zest plus flaky sea salt. Oh. So. Delicious!
Putting it out there, these are hard to stop eating. My best tip? Make a double batch. Serve half with the chicken and save the other half for random mid-day snacking. It’s a good idea.

Next, toss the chicken with a little cornstarch and a good pinch of pepper. Tossing the chicken with cornstarch allows it to get extra crispy and caramelize while cooking.
Now make the sauce. It’s simply, honey, soy sauce, fish sauce, chili paste, ketchup (which is the secret), and sesame seeds. You guys, this sauce is now my newest favorite. It’s the ketchup, it adds a layer of flavor that’s subtle, but yet is so key. It’s sweet, salty, and spicy.
Pan-fry the chicken in a little oil until it’s crisp. Add plenty of garlic, ginger, and bell peppers. Then pour the sauce in and let it simmer down and thicken over the chicken and peppers.
As the chicken is cooking, you should be making some steamed rice. I like to toss it with a touch of butter and basil just before serving. SO GOOD.

Now, put it all together…
Spoon your rice into bowls, then add the chicken and peppers. Finish each bowl off with lots of fresh basil and a handful of those salted chili honey-lime cashews.
Oh and add some thinly sliced cucumbers if you’d like too.
Enjoy…immediately.
And you guys…that’s it. This takes less than 30 minutes to make and it’s not only delicious but fun too!

Thai Basil Sesame Cashew Chicken Chicken.
One pan, no oven, and quick-cooking. Serve this chicken over steamed rice and top with chili lime cashews for a delicious summer meal!
Ingredients
- 3 tablespoons sesame or extra virgin olive oil
- 1/4 cup plus 1 tablespoon honey
- 1/2 cup raw cashews
- 1/2 teaspoon chili powder
- 1/2 teaspoon turmeric
- zest of 1 lime
- 1 pound boneless skinless chicken thighs or breasts, thinly sliced
- 1 tablespoon corn starch or flour
- black pepper
- 1/2 cup low sodium soy sauce or tamari
- 1 tablespoons fish sauce
- 1-2 tablespoons chili paste (sambal oelek)
- 2 tablespoons ketchup
- 2 tablespoons raw sesame seeds
- 4 cloves garlic, minced or grated
- 1 inch fresh ginger, grated
- 2 red or orange bell peppers, thinly sliced
- 1 cup fresh Thai or regular basil, roughly torn
- steamed white or brown rice, for serving (coconut rice in notes)
Instructions
-
1. To make the cashews. Heat 1 tablespoon oil, 1 tablespoon honey, the cashews, chili, powder, and turmeric in a large skillet over medium heat. Cook until lightly toasted and caramelized, 3-4 minutes. Watch closely. Spoon the cashews out of the skillet onto a parchment-lined plate. Sprinkle with lime zest and salt. Set aside.
2. In a medium bowl, toss together the chicken, cornstarch, and a pinch of black pepper.
3. To make the sauce. Combine the remaining 1/4 cup honey, the soy sauce, fish sauce, chili paste, ketchup, and sesame seeds.
4. Wipe the skillet clean. Heat the remaining 2 tablespoons of oil over medium heat. When the oil shimmers, add the chicken and brown all over, until it becomes crispy, about 5 minutes. Add the garlic, ginger, and peppers, cook another 2-3 minutes, until the garlic is fragrant. Pour in the sauce and bring to a boil over medium-high heat. Cook until the sauce coats the chicken, about 5 minutes.
5. Remove from the heat and stir in the basil. Serve the chicken and sauce over bowls of rice. Top with cashews, additional basil, and cucumbers, if desired. Enjoy!
Recipe Notes
Coconut Rice: Combine 1 (14 ounce) can coconut milk and 1/2 cup water in a medium pot. Bring to a low boil. Add 1 cup basmati rice and a pinch of salt. Stir to combine, cover, then turn the heat down to the lowest setting possible. Allow the rice to cook 10 minutes on low, then turn the heat off completely and let the rice sit, covered for another 15-20 minutes (don't take any peeks inside!). Remove the lid and fluff the rice with a fork.

Diagnosis Delicious! Made this tonight. Tried to follow the recipe as closely as I could. Realized at the 11th hour that I was out of rice, so subbed in some chow mein noodles I had in the freezer. Added in the juice of half a lime in the sauce as well as a big dollop of peanut butter and blended it all in my mini blender. Also threw in a sliced red onion and some fresh corn off the cob in with the veggies. So so good with the cashews and basil. My husband went back for thirds. Definitely a keeper of a recipe.

This came out so salty for us! Not sure what I did wrong since we only added a touch of salt to the cashews or maybe this just isn’t the right recipe for my family. We have loved the over 30+ other HBH recipes we’ve tried (hence why we have both the books!). The coconut rice and cashews by themselves were delicious, so maybe it was just too much fish sauce / tamari for our tastebuds 🤷🏻♀️

Has potential but way to salty as written. Used low sodium soy, reduced to slightly over1/3 cup, reduced fish sauce slightly as well but still salty. Ran into issue with cashews as they stuck to parchment and had to toss quite a few. Just FYI, regular basil and Thai basil are totally different. I generally have the Thai version growing in pots as it is hard to find. If you can find it, use it over regular basil.

This was spectacular. The only change I made was the vegetable. I did not have red pepper and didn’t want to make a special trip to the store for it. However, the kohlrabi and carrot from my garden were great. I loved the coconut rice and actually ate some of the leftover as a breakfast porridge this morning. Now, the nuts — those would be a great treat to take to a party or just make as a snack. Excellent!

This was delicious and relatively easy to prepare while still achieving awesome layers of flavors! I found it to be a touch on the salty side, so I added extra honey to try to balance it out and it worked nicely. If I could do it again (which I will!) I LOVED the cashews, but the sauce ended up being so salty, it was almost inedible. I used low – sodium tamari, so that wasn’t the issue. I might try making this again with 1/4 cup tamari instead of the 1/2 cup.

This is very delicious! Easy to make and that’s a total winner in my book. Only issue is my *ahem* refined tastes gear towards schezuan chicken and general two’s and the like.. so while I absolutely LOVE Asian food, this didn’t fulfill that craving. I made this for dinner tonight, and wow! It was amazing! Even my bf said it was “really good” and he’s such a picky eater and my biggest critique! He’s so hard to please! I made minor changes to make this a little healthier as I’m weaning my way to whole30. I used coconut aminos instead of soy sauce, Yai Thais sweet chili sauce, which is whole30 compliant, I added some crushed red pepper to the sauce and threw in a Serrano pepper with the peppers for some extra heat. Seriously, altho mine looked nothing like yours, yours looks crispy (I didn’t get any crisp, maybe I had too much chicken in the pan) but this was SO good and will definitrly continue to make this in rotation! In compliance with whole30, do you think trying a date paste instead of honey would still make this taste good?

I made the coconut rice and had to let it go on the heat a little while longer to soak up all the liquid but it was a great addition to this dish!
Sauce was amazing and the cashews provide a nice texture and crunch, This was a hit in my house!
Next time I’ll use Coconut Aminos instead of Soy Sauce as it takes some gluten out of the recipe.

This recipe was sooooo good! The coconut rice was amazing. I made it ahead of time as well as the cashews. I also made the sauce and presliced the peppers & chicken to help it come together even quicker. I didn’t have Thai basil so I used regular, and it was delicious. Next year I’ll plant some Thai basil!

I made this last night and it was super delicious! I do have to say that, although I’ve been an avid home cook for over thirty years, there is no possible way I could make this recipe in the amount of time you estimate. I might be able to do it if every single ingredient was prepped and ready – chicken sliced, garlic and ginger grated, sauce ingredients measured and combined, etc. But without that being the case, it took me well over an hour from start to finish. This was so delicious! Definitely something I would make again. Easy, flavorful & comes together pretty quickly. I didn’t wipe the pan after making the cashews and left the residual oil that was flavored with the spices to cook the chicken in. Favorite dinner of the week. The first time I made it I skipped the cashews and basil. Second time I added them in and there was so much flavor- so so good. I swapped coconut aminos for soy sauce and skipped the chili paste. Excellent recipe!

Wow. This was a party in my mouth! The creamy coconut rice was an absolutely perfect base for the sweet/salty chicken. I didn’t have peppers, so I used zucchini and mushrooms as my veggie component. And I didn’t have chili paste, so I tossed some cucumbers in chili flakes and rice vinegar to put on top and give that spicy glow. My only complaint- I shouldn’t have made the cashews first. I sampled one while the chicken was cooking and had a hard time stopping myself from saving any to go on top of the chicken! Take the advice in the recipe: double the amount of cashews you make, they are terrific for snacking!

This did not turn out well for me. Not sure if it’s because of the tamari, but it had a weird taste. And the cashews stuck to the parchment and when I tried to lift it up, it took the paper with it so didn’t get a chance to use. I’m not sure why my chicken doesn’t crisp like yours. I used the cornstarch and nothing. Not sure if maybe I used too much chicken? I usually love all your recipes, but this did not make my cut. Luckily my fiancé still ate it up!

Another great recipe! However, I agree with several others…a bit too salty, and I’m not quite sure where to cut back to make it less salty. The cashews are a must, but they stuck together in a hurry. Be sure to spread them out really well on the parchment. I’ll be doubling the recipe next time, we had no leftovers and this would be just fine reheated.

This was an excellent recipe, and might be my new go-to stir-fry sauce for whatever protein and veggies I want. The cashews are super yummy, but the effort got a little wasted, because there is so much flavor in the sauce. So I think I’ll keep the cashew recipe just for making snacking nuts, and use regular cashews when I make the dish. Fantastic!

This was really flavorful, Tieghan! One suggestion, though: Separate the cashew ingredients from the main recipe—or at least say “divided use” to give us a heads up.. I (foolishly) didn’t read carefully and used almost all the oil and honey on the cashews! I was halving that part of the recipe so all was not lost; I simply made more cashews. The chicken came out looking exactly like your photo. I do a lot of stir fries that disappoint; this was not one of them! Even Mr. Fussy, my husband who isn’t a chicken fan, liked it!

Another winner from Tieghan! Flavorful with just enough spice/heat. We aren’t coconut fans so we just used jasmine rice and that worked fine. We agree that the cashews could be eaten on their own as a snack! For this recipe, with all the flavor in the sauce, the extra flavor on the cashews got a little lost. But the toasty texture of the nuts definitely added to the dish. We followed someone else recommendation and squeezed in little lime juice at the end when we added the basil. Just half the lime was plenty and gave it that little extra zip! 🙂

Ratios are off for the sauce. Had to reduce the salty elements by a lot. Too many seasoning ingredients vary the salt level by a lot.

This is a lovely recipe, better than take out! The cashews add a nice flair, on which we used Koran chili flakes for a different smoky spicy flavor. We ended up pairing it with a lemongrass kale, carrot, and edamame slaw for my keto husband. I had rice of course. I will say that the sauce ratio was very heavy. I made only half the soy sauce mixture, and then only used half of that, and it was still plenty salty but very enjoyable. All I would recommend adding the sauce gradually to taste rather than pouring it all in at once.

This recipe is a winner–it tasted like restaurant food and was a hit with the whole family. I made a few adjustments so that didn’t have to run to the store and it still turned out great. I replaced the red peppers with broccoli and used chili garlic cashews from Trader Joe’s instead of seasoning my own. I didn’t want to miss out on the lime zest, so I added that into the skillet at the same time as the garlic/ginger. Lastly, I served it over garlic rice (just crisped up some garlic in olive oil then poured over brown rice). This is getting added to the rotation 🙂

I do not cook my rice in the instant pot, I do it on the stove top:
Bring 3 cups water to a boil. Add 1 1/2 cups rice. Cover and cook on LOW for 10 minutes. Turn the heat off and let sit, covered another 15 minutes. Do not open the pot. Fluff with a fork. I hope you love the recipe, please let me know if you have any other questions! Happy New Year! xTieghan
This was incredible! Five stars!! Ahe sauce and other ingredients, it was so easy to make and cooked quickly. The coconut rice is an absolute MUST, as it added an incredible depth of flavor. I loved the cashews and basil additions. I don’t know how HBH comes up with this stuff, pure creative genius. If you haven’t made this, you need to make it ASAP. I did swap the peppers for frozen broccoli. I realized I didn’t have chili paste and swapped it for Chili Garlic Sauce (Huy Fung brand). Can’t wait to make it again soon!

Loved this recipe! First time I’ve followed a recipe to the “T” in a long time. We chose the cilantro instead of basil and it was still *chefs kiss* All the ginger in the chicken rub made me nervous, but it wasn’t overpowering, as I had feared. This was my first time using rice noodles, too. We ended up doubling the rice noodle “sauce” because our noodles just slurped it up and wanted more 🙂 Great job lady!

I rarely comment on any blog, but this recipe was a home run! Four out of four tasters gave it an enthusiastic thumbs up! The burst of flavor in every bite was fabulous. The only thing I changed was to use less chili paste to accommodate our wimpy palates. Well done!

I made this recipe with 1 pound of ground chicken and it turned out super saucy and a bit on the salty side for my taste. I think the next time I make this, I would reduce the soy sauce in half as well as the honey to maybe a tablespoon. There’s sodium in the ketchup and sambal oelek already.
I did like the spices in the cashews, that was a very nice twist but again omit the honey.

I enjoyed this recipe but made a couple small changes _ used peanuts instead of cashews because that’s what I had and used regular soy as we I didn’t have light. I found it too salty with regular soy sauce and will use some chicken broth for half of the soy next time.
I also made the coconut rice and it was soooo good!!

Delicious! I would recommend cutting the low sodium soy sauce in half and replacing with water. I made another one of her recipes that was too salty (sesame ginger chicken with sprouts), so I decided to half the soy sauce in this one. Glad I did because it was perfect.
Make a double batch of the cashews because they’re delicious and you’ll end up snacking on them!

Awesome recipe and super easy to vegan-ize!!! We loved it. The cashews are maybe my favorite part. For some reason, our basmati rice didn’t cook well according to the coconut rice instructions, but we were able to improvise!! Will 100% make again.

Easy and delicious recipe! The cashews make it exceptional. I used half coconut rice and half cauliflower rice to lighten it up, otherwise made the recipe exactly as printed. Will be making this again!
