30 Minute Sweet Thai Chili Peanut Chicken and Grilled Pineapple Stir Fry.

So I have been sitting here for the past 30 minutes just kind of brainstorming about what I should chat with you guys about today and so far I got, nottah.
Other than the fact that I received this crazy mean email. Plus a few other not so awesome and or unfriendly things have happened recently and it’s totally got me wondering how people can be so mean sometimes. I mean, like high school is over. Let’s just be grown ups and keep our mouth shut if we’ve got nothing nice to say, you know? No one is forcing anyone to do anything here.
Whatever. That’s life, it can be a tad cruel at times, but it’s mostly awesome, so I am going to try to stop stressing about the email.


And since, my life is on the boring side today and I have nothing to ramble on about, let me tell you about this fast and easy chicken and grilled pineapple stir fry.
I love a good stir fry, but I especially love them in the summer. This is mostly because it’s what my dad used to make us in the summertime when I was a kid. Nights where pretty hot and humid living on the lake in Ohio, so oftentimes my dad would just throw a bunch of veggies in a skillet, add some chicken and soy sauce and call it a stir fry. Of course there would be rice and cashews for topping because that’s just how this family does it, but the point is, stir fry was always my favorite.

I really just liked the veggies doused in soy sauce. I’d eat all the red peppers and broccoli and the boys would eat the chicken. It worked out well.
When I began taking over family meals, our stir fry’s got a little more creative and the sauces a little more complex…which means I didn’t just douse everything in soy sauce…not that I have an issue with that because I kind of love salty food (it runs in the family), but I thought it might be nice, and a bit healthier, to get a bit more creative.


Today’s stir fry is sweet Thai peanut chili with a side of grilled pineapple.

Ingredients
- 1/2 cup low sodium soy sauce
- 1/2 cup sweet thai chili sauce
- 1/4 cup creamy peanut butter
- 2 tablespoons rice vinegar
- 2 teaspoons thai red curry paste
- 1 teaspoon fish sauce (optional but so good!)
- 1 tablespoon gresh ginger grated
- 1 clove garlic minced or grated
- juice of 1 lime
- 1 pound boneless skinless chicken, cubed
- 1 red bell pepper sliced
- 2 carrots shredded
- 1/2 cup shelled edamame
- 1 cup fresh basil chopped
- 1/2 of a medium pineapple cut into triangles

Instructions

In blender, combine the soy sauce, sweet thai chili sauce, peanut butter, rice vinegar, thai red curry past, fish sauce, ginger, garlic and juice of 1 lime. Blend until smooth and combined.

Heat a large wok or skillet over high heat. Drizzle the pan with a little peanut oil and once hot, add the chicken in a single layer, stirring once or twice until cooked through, about 5 minutes. Once the chicken is cooked, add another drizzle of peanut oil to the pan and then add the red pepper. Continue cooking for 3-5 minutes. Next add the carrots and edamame.

Slowly stir in about 1/2-3/4 of the sauce and bring to a simmer, cook until thickened, about 5 minutes. Remove from the heat. Stir in the basil.

Meanwhile, heat the grill or a grill pan to high. Once hot, brush the pineapple with a little peanut oil and sear on both sides, about 3-4 minutes per side. Remove from the grill.

Divide the rice among plates and or bowls. Top with stir fry + pineapple. If desired serve with fresh red chili pepper slices, basil and limes. Serve with any extra stir fry sauce. Enjoy!

Also, did I mention how easy this is??? Cause it’s super EASY…which means you really just need to MAKE IT 🙂

Looks good, but how can it be gluten-free if it has soy sauce? My brother is celiac and I love your blog and always read your ‘gluten-free’ options, but there are always changes that need to be made to your recipes to be gluten-free and they are not marked. Could be dangerous for someone with a serious condition and not on a fad diet. Just a note as someone cooking these meals for a celiac could get someone sick if they do not know what to substitute in these meals and it is not noted what to change!
