The Perfect Easter Brunch Menu.
Can you guys believe Easter is just a week away?!
I know I’ve said this like a million times over, but man, this year is flying by! Before we know it it’s going to be September 12th and the Half Baked Harvest Cookbook will be out. Then I’ll be one giant ball of nerves waiting for you guys to read it, cook from it, and hopefully love it! I just turned in all the very final edits, now it’s off (literally via FedEx) for multiple rounds of proof reading (and hopefully then some). Which I very much need because my grammar is so horrible! I’m maybe just a little stressed about a grammatical error being printed. As if you couldn’t tell…
But anyway, today is all about Easter brunch. You guys know that I love a good brunch recipe. I think in the last month alone I’ve shared at least five breakfast/brunch recipes. Therefore, with Easter being exactly one week from today, I figured that this was the day to share my ultimate Easter brunch menu! There’s a little bit of everything here, so pick and choose your favorites, or just make a whole bunch! I’m also sharing a few entertaining and make ahead tips as well!
And be sure to check back this week for a few more Easter recipes, and an easy (and cheesy) dinner, plus a last-minute cocktail!
OK here we go..
Cocktails
Tip: all of these drinks can be made virgin by simply omitting the booze. <–making things works for everyone!
Tropical Strawberry Hibiscus Rum Smash
Minty Grapefruit Caipirinha <–for a little bit of Brazilian vibe.
Blood Orange Champagne Mule Tip: if you can’t find blood oranges, try using regular orange juice or any other fruit juice! Strawberries would be great for spring.
Rose Tequila Sangria Tip: this is great to make ahead for a big crowd.
Snacks
Roasted Red Pepper Meze Platter Tip: prepare all the elements in advance and then put it all together on a platter before serving.
Marinated Cherry Tomatoes with Burrata + Toast <–big crowd pleaser.
Farmers Market Hummus Tip: the hummus can be made in advance, then add the toppings just before serving.
Greek Inspired Antipasto Platter
Salads
Panzanella Style Caprese Asparagus Salad
Nectarine and Fried Mozzarella Caprese Salad
Sunflower Seed, Kale and Cherry Salad with Savory Granola
Spring Pea and Carrot Salad with Carrot Top Pesto <–gotta get those carrots in!
Savory Brunch
Grilled Pineapple Caprese Eggs Benedict with Coconut-Almond Hollandaise
Heirloom Tomato Cheddar Tart with Everything Spice <–super easy.
Artichoke Shakshuka <–good for a crowd.
Huevos Rancheros Scrambled Eggs
Cheddar Cornbread Waffle BLT with Chipotle Butter
Turkish Fried Eggs in Herbed Yogurt Tip: make the yogurt in advance and fry up a whole bunch of eggs at once. Then let everyone assemble their own plates.
Sweet Brunch
Raspberry Ricotta Croissant French Toast <– one my favorite french toast recipes of all time. Hello croissants.
Easy Lemon Ricotta Old Fashioned Doughnuts Tip: prepare the dough ahead of time and make the glaze. Fry just before serving for a super delicious doughnut.
Blueberry Lemon Poppy Seed Scones or Blackberry Lavender White Chocolate Scones Tip: keep the prepared scones in the fridge, then bake just before guests arrive.
Whipped Cream Cheese Stuffed French Toast with Raspberries
Meyer Lemon Chamomile Suzette Crepes with Greek Yogurt Tip: make the crepes in advance and then build a crepe bar full of whipped cream, yogurt, berries, and other fun toppings!
Creamy Coconut Almond Breakfast Pops <– a fun and healthy treat for kids!
Bonus: Cakes
Strawberry Coconut Carrot Cake with Mascarpone Buttercream
Almond Honey Cake with Strawberry Ripple Cream
Coconut Eton Mess Cake with Whipped Ricotta Cream <–show stopper.
Salted Chamomile Honey Cakes with Raspberry Ripple Cream
Coconut Banana 3-Milk Cupcakes with Nutella Buttercream <–for the chocolate lovers.

Love everything I have tried of yours! And always get rave reviews from guests. Your site is the first place I go for new dinner party ideas! Please never change. Cannot wait for the cookbook. Have ordered three copies because I always give my kids a new cookbook for Christmas. This year it will be yours. Am going to make your ham and cheese sliders with bacon, pineapple, and carmelized onions (from previous post) and the strawberry coconut carrot cake for Easter brunch. Please, please, please keep the recipes coming…..

Oh everything is so beautiful! I wish you had a restaurant! I could never make all this with what we have available here, but you have inspired me so much to get creative (like that pineapple benedict w/coco-almond hollandaise!), I mean wow!! Again, I don’t know where to start, but it’s all very impressive! Really, “Food is an art in itself, but the artist shows everyone what’s possible”. LAB
You are too sweet! Thank you so much Tish! xTieghan
