Turkish Fried Eggs in Herbed Yogurt.
You knew this had to be coming, right?!?
The eggs I mean? You guys know how much I love an egg with my meal, right? Breakfast, lunch, dinner, snack… whatever, I love eggs. I think fried are probably my favorite, BUT I’m really loving soft-boiled and poached at the moment as well. I especially love eggs with carby things like toast, pasta, rice and obviously Naan. Naan is always a favorite of mine, but I am guessing, if you’ve been reading for a while, that you knew that too.
Geeze, am I predictable or what?? Oh well, it’s good food, so predictable or not I am happy!
So I feel like I have been blab, blab, blabbing to you guys all week, but umm, my brother Kai and his girlfriend Caitlin just stopped over to say goodbye before they leave for school (Cait to Cinci and Kai to LA). They are the last two “holiday guests” to go and I am totally sad. One, because the holidays are over and I didn’t get enough chill out time with my Christmas tree and ABC Family’s 25 Days of Christmas (I maybe even cried throwing out my Christmas tree over the weekend) and two, because Kai and Caitlin are my most favorite people. They chat with me, Cait does my make-up, and Kai makes me DO things… like other than work.
Good brother, right?
They even got me to leave my house and venture out into the real world on Monday and head down to Denver to shop…till we dropped…literally. We shopped and shopped and I think I passed out the moment we got on to the highway to head back up into the mountains. I think it was the combo of tiredness and the bowl of rice + salsa little Miss Asher and I shared from Chipotle (rice for Asher, and salsa with a side of rice for me, Kai got a burrito the size of my thigh…I was like, whooooaaa). Yeah, that is how we roll. Bowls of rice and salsa. Odd?? For sure, but good. So good.
We girls like our carbs.
Also, I have decided I am totally over being the third wheel. UGH. How are people supposed to meet other people in this world if they work from home and maybe… never leave?? Oh man, oh man.
2016 life goal: get out and meet someone so I am no longer the third wheel. Cousin Abby? You with me on this??
Anyways, they are gone, and now it’s officially back to reality around here. Is this hitting anyone else a little hard this week? I’m feeling like there may be a lot of us in the same boat here, no??
Good news is I am bringing eggs to the table today. Eggs all cozy in a garlic herbed yogurt, topped with a spicy coconut butter and sitting on a piece of fresh, hot, naan.
YUMMMY.
These Turkish fried eggs in herbed yogurt could honestly be made for breakfast, lunch or dinner. The dish comes together so quickly, is totally healthy and just kind of the ultimate power meal. And did I mention there is goat cheese involved too? And sun-dried tomato pesto AND… a spicy coconut butter sauce – this sauce is legit and delish, and apparently very commonly paired with turkish eggs from what I have read.
Traditionally, turkish eggs include a butter sauce made up of Aleppo chile pepper flakes, paprika and butter but I can’t get the Aleppo chile pepper flakes at my local grocery store and I didn’t want to order them from Amazon, so I just used crushed red pepper flakes. I’m sure the flavor is slightly different, but I think the butter sauce is amazing, so I’m going with it! I also used half coconut oil to keep this recipe on the healthier side. After all, we are staying committed to a Healthy January – remember!
I really love this recipe. The combo of fried eggs, creamy-garlicy-herby yogurt, spicy butter sauce, sun-dried tomato pesto and soft and fluffy naan is truly out of this world. I added some fresh spinach for color, plus extra veggies, a sprinkle of goat cheese and toasted sesame seeds.
This is my ultimate anytime, any day, meal right here. This meal comes together in under thirty minutes, and whether you are using store-bought naan or homemade, all of the toppings are super healthy. Hello greek yogurt, eggs, spinach, garlic, herbs, lemon, tomatoes, chiles and sesame seeds!!

Turkish Fried Eggs in Herbed Yogurt.

Ingredients
- 1 cup plain greek yogurt
- 1 tablespoon fresh dill chopped
- 1 tablespoon fresh parsley chopped
- 2 cloves garlic minced or grated
- salt + pepper to taste
- 4 eggs
- 4 pieces naan
- zest from 1 lemon
- 1/4 cup sun-dried tomato pesto homemade or store-bought
- 1-2 cups fresh baby spinach
- 4 ounces goat cheese crumbled
- toasted sesame seeds fresh dill, fresh mint and salt, for serving
Spicy Butter Sauce
- 2 tablespoons butter
- 2 tablespoons coconut oil
- 1-2 teaspoon crushed red pepper flakes
- 1/2 teaspoon sweet paprika
Instructions

In a bowl, mix together the greek yogurt, dill, parsley, garlic and a pinch of salt + pepper. Stir until combined. Keep stored in the fridge until ready to use.

Heat a skillet with a little olive oil or butter over medium-high heat and fry the eggs to your liking.

Spread the yogurt sauce over a piece of warm/toasted naan. Swirl 1-2 tablespoons of the sun-dried tomato pesto into the yogurt. Next add 1-2 eggs per piece of naan. Sprinkle each piece with lemon zest and fresh spinach. Drizzle the spicy butter sauce (recipe below) over the eggs. Garnish with fresh herbs, sesame seeds and some crumbled goat cheese. EAT!
Spicy Butter Sauce

In a small saucepan, melt together the butter, coconut oil, crushed red pepper flakes and paprika. Drizzle the warm sauce over the fried eggs.

i was hit with it on monday- and it feels like it should be the weekend (or preferably spring!) instead of just thursday, sigh. but this sounds like the perfect pick me up- i’m always game for tender, charred naan and creamy yogurty things (very tempted to add cucumber and/or mint and make it into raita/tzatziki).

My mother would treat us to fried eggs, fried potatoes, and homemade biscuits on Fridays (Catholic thing but cooked with bacon grease–lol).

I am such an egg fiend, I have a boiled egg for lunch everyday in my packed lunch – they are the perfect portable snack.
This looks so good and with regards to being a third wheel, there was a fantastic program last night (on BBC1, I don’t think you have that) about loneliness. It was amazing the different scenarios in which people felt lonely, pets seemed to be a big feature for people which makes complete sense!

This looks fabulous – decadent almost! Best of all, with just a little tweaking I can eat it too! I have a fierce allergy to all things cow milk, but if I don’t over-do it I can enjoy goat yogurt and cheese and sheep cheeses, and now that I have discovered “turmeric butter” (Google is our friend!) I don’t have to rely on overpriced fake margarine from the store, all of which allows me to look forward to yumminess like this 😉
I just made this for my husband for our Valentine’s Day dinner and it was a hit! Total comfort food. I’m vegetarian but my husband is not so I’m always looking for meatless meals that are still filling and super-satisfying and this certainly checks those boxes. We will definitely be making again. I wouldn’t change a thing about it!

Tried it and loved it. I used my favorite goat cheese (Humboldt fog) and a little more garlic. It turned out phenomenal my friends loved it. I love eggs but I guess not a much as you. I am gonna try it with soft poached eggs (my fav)

OMG! Absolutely wonderful. The only change I made was to add the spinach after the whites were set but before the yolks were done, covered the skillet, and took it off the heat while I put the other ingredients on the naan. I also broiled tomatoes to server alongside. The sweet of the tomatoes was a nice contrast to the variety of other flavors. My cutie pie said this was absolutely a keeper.

Absolutely delishious. I made this for breakfast this morning and it really surprised us. The tang from the yogurt and sun dried tomatoes was a great complement to the eggs. I used pita bread and feta cheese since i didn’t have the specific ingredients it called for. In addition, i added fresh mint, and sprinkle of zakhtar (zaatar) and it was amazing. My son does’t even eat eggs, but he tried and loved it. This is a keeper. Thank you for sharing.

We love this so much, we eat it pretty much weekly. It’s so much more than the sum of its parts!! We couldn’t find the sun dried tomato pesto the first time (and were too lazy to make it) so we used this roasted pepper bruschetta we found instead. Super good variation! We’ve since tried it with the pesto too and we think the pepper stuff is actually better.
