Keeping things healthy, but still warm and cozy, with my 30 Minute Creamy Thai Turmeric Chicken and Noodles. This Thai inspired saucy curry is the simplest weeknight dinner. Made with flavorful Thai curry paste, creamy coconut milk, fresh herbs, and lime juice. Toss in seared gingery turmeric chicken and plenty of delicious noodles and it’s hard to beat this easy Thai curry. It’s the perfect any night of the week dinner that’s made in 30 minutes, hearty, and pretty healthy too.
It feels like it’s been ages since I shared a new recipe, but here we are! The first recipe of 2021. Yes, there were a couple of New Years’ recipes last week, but with New Years’ falling on a Friday and then a long weekend, this is the longest we’ve gone without a new recipe….a whole four days! It felt very weird, and to be honest, it made me totally anxious. I love sharing daily recipes with you guys, it’s actually what I love doing most!
Anyway, I’m back, and we have a week full of fresh new recipes, starting with this cozy, but healthy, Thai curry. We all know I love my Thai inspired recipes and this one is no exception. It’s a hodgepodge of a few of my favorite Thai and Indian based recipes, just simplified into one quick 30 minutes curry that’s extra saucy and a little spicy.
So perfect for these bitter cold wintery days.
The Inspiration.
Like clockwork every January I find myself craving only the most colorful recipes. After months of overly hearty holiday recipes (which are of course delicious), I’m ready for more freshness come January. It’s weird how that shift happens almost immediately after New Years’.
But, you all know me, it’s the dead of winter here in Colorado, and so freezing cold at night. I simply can’t do a recipe that’s not warming, you know? We need creamy sauces, soups, stews, and even some carbs too. All are a must to help get us through these shorter frigid days.
Enter curry! Curries are so easy to load up with vegetables and spices, they make for the perfect winter dinner.
All the very quick details.
As you would guess with a 30 minute cook time, this Thai curry comes together pretty easily.
I like to start with the chicken. I toss it with ground turmeric, ginger, soy sauce, and honey. This step is key to creating a really flavorful chicken that’s savory, sweet, and spicy. Sear the chicken to give it a little crispiness and caramelization. Then toss in bok choy or any other hearty green and let them sear for a bit. At this point, you’ll remove everything from the pot so that the chicken and greens don’t overcook or lose their crispness.
Then I like to stir in a good amount of shallots and garlic, more ginger, and Thai red curry paste for even more flavor. The trick is to cook everything together for a minute or two before adding in the liquids. This will activate the flavors in the curry paste and give you a richer tasting sauce. Now, just add in all the liquid, stir back in the chicken and bok choy, and simmer everything together for a few minutes.
While that’s happening, boil some noodles. Any noodle works, rice noodles, egg noodles, and even regular pasta, but I love a very thin Thai Vermicelli Rice Noodle. By the time the noodles are ready, the curry should be ready as well.
As this cooks, the aroma in the kitchen is truly incredible. It’s kind of like your favorite Thai spot in town, but at home…so better.
The only real note I have for this recipe is regarding the fish sauce. I know this is such a controversial ingredient, but I always recommend giving the fish sauce a try. Yes, you can use soy sauce instead, but fish sauce is better for this dish. It’s my favorite Thai ingredient, it adds a very savory, salty flavor. And even if you don’t enjoy fish, you’ll enjoy this sauce. I know this from testing out every last Thai recipe I’ve shared with my picky, nonfish eating family members. They never notice a thing. Just be sure not to smell it, the smell isn’t the best, but the flavor is good.
Other than that little note, there’s nothing else to add! This one is simple, healthy, and delicious. Perfect (non-boring) recipe to really kick off the new year!! Oh and lastly, while it’s not traditional to Thai cooking, a side of fresh, warm naan is especially delicious with this creamy curry sauce. Just an idea!

30 Minute Creamy Thai Turmeric Chicken and Noodles.
The perfect weeknight dinner that’s made in 30 minutes, hearty, and pretty healthy too!
Ingredients
- 1 1/2 pounds boneless skinless chicken thighs or breasts, cubed
- 1 tablespoon ground turmeric
- 2 teaspoons ground ginger
- black pepper
- 2 tablespoons low sodium soy sauce or tamari
- 1 teaspoon honey
- 3 tablespoons sesame oil or extra virgin olive oil
- 4 baby bok choy or 1 bunch kale, chopped
- 2 medium shallots, chopped
- 3 cloves garlic, minced or grated
- 1 inch fresh ginger, peeled and grated
- 1/4 cup fresh cilantro and or Thai basil, chopped
- 1/4 cup Thai red curry paste, using more or less to taste
- 2-3 cups canned full-fat coconut milk
- 2 tablespoons fish sauce (or low sodium soy sauce)
- 8 ounces rice noodles, thick or thin
- sliced limes, mixed herbs, and thinly sliced shallots, for serving
Instructions
-
1. Toss the chicken with turmeric, ground ginger, pinch of pepper, soy sauce, honey, and 1 tablespoon oil. Let sit 5 minutes.
2. Heat 2 tablespoons oil in a large Dutch oven or braiser over medium-high heat. Add the chicken and sear until browned, about 3 minutes, stirring 2-3 times. Toss in the bok choy and cook 2 minutes more, until just charred on the edges. Transfer everything to a plate.
3. To the same Dutch oven, add 2 tablespoons oil, the shallots, garlic, fresh ginger, and cilantro/basil, cook 3 minutes, then stir in the curry paste. Cook until fragrant, about 2 minutes. Stir in about 2 cups coconut milk and fish sauce. Slide the chicken and bok choy back into the sauce. If you want more sauce, add the additional coconut milk...I always use 3 cups. Simmer over medium heat until the sauce thickens slightly, 5 minutes.
4. Meanwhile, cook noodles according to package directions.
5. Divide the noodles between bowls and ladle the chicken and sauce over. Top each bowl as desired with herbs, shallots, and lime juice.

When you print this recipe, the amounts of ingredients are different – 1 pound chicken, 2t ground turmeric, yet same amount of soy sauce as for 1.5 lbs, etc – very confusing ( I double checked, same website, same photo, same directions.

Now, I am a big Half Baked Harvest fan and I have done many of Tieghan’s recipes, but this one was unfortunately underwhelming. I just made this tonight for my family, almost all the same, but with kale rather than bok choy. Not very much flavor at all, even with the amount of shallots and garlic. It was pretty tasteless. Disappointed, but excited to try another dish none the less.

So many haters! This looks amazing, I love Tieghan’s recipes and will definitely try this. If the flavor isn’t enough then add some salt or spice!
I always adjust salt/pepper etc to taste… everyone has their own preference. We’re not all robots following her directions to a T. Great recipe! Made this with broccoli and bean sprouts. The lime juice is essential – the acidity and freshness brightens up the curry! I love all the curry recipes here, especially the coconut milk braised chicken with sweet potato and the khao soi.

Thanks for this tasty Thai recipe. It came together quickly and I enjoyed it for breakfast this morning! The flavor of turmeric was too strong. I made the recipe without any alterations, though I marinated the chicken overnight. It needed a little extra at the end, so I put in some lemon juice and a bit of salt. My instinct is that this is a 3.75 star recipe that could easily be a five star with a couple of updates. I could not have made it without the recipe. Thank you!

Did anyone else find this dish to be crazy spicy? My family was dying and I couldn’t eat it because it was so spicy. I re-read the whole recipe again to make sure I didn’t miss a reference to spice, but nowhere does it even mention that it has any kick or spice. 1/4 cup of red curry paste seems like way too much. That is the only thing that could have been spicy. We would have loved it, had it not been SO spicy. Will make again with much less curry paste.

Exceptionally good! HBH never disappoints, but this recipe is definitely one of the best I have tried so far! My 9 y.o. loved it so much he asked me to make it two nights in a row. The first night we did not have chicken and subbed tofu which was just as good and crisped up nicely with the marinade and made the dish easy to convert to vegan. The second night we bought chicken for it which was also delicious. It was also fast and easy. We will keep this on regular rotation!

Really delicious! I originally thought this was going to be more of a soup, but the sauce is amazing. I used kale with the main stem removed but next time I would like to try the Bok Choy. While tasting the sauce near the end I thought it might be a little too creamy so I stirred in fresh juice from half a lime right before serving (in addition to lime wedges served with other toppings). When the sauce coats the noodles it’s utterly delightful!

Amazing flavors! Modified and used a cooked rotisserie chicken, for the sake of time, but seasoned it per the recipe. Thank you for the lovely recipe. I just made it for dinner, and it’s warming and satisfying on a cold evening. A couple things: with so many ingredients and steps, I’m not sure how anyone could make this in 30 minutes. It took me almost 1 and a half hours. I am nine months pregnant and moving quite slow, so maybe an average person it would take 1 hour. The curry wasn’t very strong and lacked a certain boldness, this is definitely more mild with so much coconut milk, but you could change that depending on your choice of Thai red paste and the amount you put. I added half a yellow bell pepper, and more shallots would have made it better as well. Overall quite good. Happy cooking!

This was really good. I made a few adjustments just based on what I had on hand. I cut the coconut milk in half and used chicken broth for the omitted amount and I replaced the bok choy with shredded cabbage. The flavors were great and the heat level was perfect. Made this last night, quick, easy and delicious! The chicken was really flavorful. My local CDN Superstore was out of baby bok choy, so subbed broccoli and red peppers which worked well. I used 2 cans of coconut milk, but for future i will add some chicken broth to make it more “soupy” a la Tom Ka Gai.

This dish packs a serious flavor punch, wow! so good & i got rave reviews! Like others, i didnt’ have all ingredients on hand, but had to make it asap lol. This dish can do that, i used cabbage & subbed almond and yogurt for the coconut,and only had thai garlic sauce…. but regardless of what you sub, the flavor comes through big time!

I haven’t written a review for a recipe for a very long time but felt I had to after making this for dinner this evening.
All I can say is WOW! Thank you for creating such a successful recipe that my whole family enjoyed, including my eldest teen who had a tofu version as she is a vegetarian. We added some shitake mushrooms as we had some in the fridge and also some Chinese chilli, salt and pepper blend we found in the world food aisle at the supermarket which added a little extra spice. We used straight to wok noodles which shortened the cooking time and meant less washing up too 🙂
It was absolutely delightful, the sauce was creamy and silky with just enough heat to warm us on a freezing day. I’ll be adding this recipe to my meal planner regularly now as everyone commented on how delicious this meal was. Thanks so much!

Just made this last night and will be devouring the leftovers later. This recipe is so hearty and came together so quickly! A small lesson learned to offer: the noodles I used didn’t hang onto the sauce and it all kinda gathered in the bottom of my bowl. Next time, I’ll use white rice, which will hopefully absorb some of the sauce. It was all just so tasty.

I make so many HBH recipes that I love. This one wasn’t my fave. The flavors were really good. However, I felt like

Made this tonight and it was delicious! Perfect for a cold Sunday in January. I did not have fish sauce so I added a teaspoon of anchovy paste to the sauce and it turned out great! I though this recipe was flavorful and easy to make. The chicken was juicy, tender, and low maintenance. I think I was a little disappointed at how similar it tasted to your Meatball Khao Soi, but I can’t actually complain because I made that dish like 6 times after I found it on your site it was so delicious. Probably set myself up for failure there! Overall a good recipe and the chicken was way easier to bring together than the meatballs. I added a little chili crisp on top for extra crunch! Such a good recipe! My whole fam gave it 10/10.
I added julienned carrots and even my 8 year old ate it!
Lightened it up with only 1 can coconut milk (full fat) plus chicken broth.
Lime on top is key!
I did both broccoli and bok choy since I knew my kids likely wouldn’t eat the bok choy. But they devoured the rest.

Made this tonight and it was a home run! Made a plant based version with chickpeas for myself and the chicken for my husband. For the chickpeas, I made the same marinade as the chicken with a sub of coconut aminos for the soy. Then roasted them on 425 for 25 mins. Definitely will be making naan next time. 🙂

Looks good! I know a lot of your recipes use coconut milk. In order to help stop the milk from separating when it hits that hot pan is to stir a little corn starch into the coconut milk before adding it to the pan. Also then lower the heat to make sure it stays at a true low simmer and stir constantly.

I would like to offer some constructive criticism here…firstly, my feeling after making this was that if I had followed the basic instructions on a jar of red curry paste, the flavor would have been much fuller.
Once you cook the chicken, nothing will be crispy after you put it back into the curry so this shouldn’t be one of the descriptors. In your photos it looks more like the chicken was placed atop the curry than in it as is advised.
Last, it seems there is no advice to add palm sugar or brown sugar to the curry which is required to really tie everything together. I felt this was a waste of many extra ingredients and would be definitely disappointing to people who have eaten Thai curry before and a poor intro for first timers. It can be so much simpler!

Made this last night. Followed instructions and ingredients (subbed broccoli for the Bok choy and used sesame oil). The meal was good, my family really liked it but I didn’t find it as flavourful as expected given the ingredients. I ate the leftovers today and the flavours just sang! Definitely recommend, it was easy to find ingredients/prepare. Next time I will make one day ahead for flavours to develop. Thanks Teighan!

I made this last night and it was reallyyyy good. Not something I would typically make so it was fun. I did add the juice of a whole lime to the sauce, and then added more once I served it. I think next time I may serve it with rice since the sauce isn’t super thick so it can absorb all the goodness. Anyway, this was awesome and thank you for sharing!

I made this recipe last night. Exactly as you had said. It was really good thank you. However, it was soooooo salty. I had to put 4 cups of coconut milk, add juice of a whole lemon and lots of cilantro and basil. Then it tasted fine with rice noodle. The Asian store didnt have Thai Kitchen curry paste just a very tradition Thai brand.

Soooooo delicious!!!! I had to alter it a bit for our fam. One of the kids is sensitive to coconut milk so I used one cup of it (they seem good with smallish amount) and then I used 3 more cups of organic chicken broth, if slightly less creamy. This was excellent! Easy to make and so so good. I added some sweet potato and a bell pepper because I had it on hand, and I used only one can of coconut milk because it’s all I had. Finishing it off with some lime juice really made a difference!

OMG! So delicious. I didn’t brown the chicken enough and wish I had charred the bok choy. The shallots looked more like they were quartered and not chopped. The sauce itself was amazing! More sweet than spicy. My 19 year old grandson and I cook together every Sunday and try out a new recipe each week. This was definitely a keeper. Did take more than 30 minutes even with the two of us but will make again. Used my Le Creuset which is the best investment I have ever made.

Thank you for another great recipe!! I live in south Florida and it’s a little chilly here (64f) today and I was craving something like this. I have never cooked with bok choy before, and I chopped to whole ones into 4 quarters and got them a little charred as you instructed. However, I found them a bit difficult to eat… are you supposed to cut the end off after charring them? Or leave them intact? I also used ramen noodles, as they were all I had. I turned out perfect. Made tonight and it was another hit from HBH. My 2.5 year old lived the broth. I added orange peppers for some more veg. We only had vermicelli rice noodles but next time I would use medium ones. I’m a new reader and have enjoyed trying some new recipes. I halfed this recipe and used chicken thighs but no fish sauce. I just can’t do the fish sauce. I think it could use some extra spice, and even though i’m a pasta lover I was thinking rice might be better. Any reason why pasta works better here?
I have an electric stove and turned the heat up hoping to get the same type of char I see in your pics. However, i just couldn’t seem to get there. Any tips? Especially for the bok choy.
I used a whole can of coconut milk because I like more broth. I notice that a whole can is 7 servings at 100 calories per serving. This seems to make the dish way more caloric than posted for just three servings. Can you cut the coconut milk with something to cut down on calories but still have a lot of broth? Thank you!

Love the curry flavors and the lime, but this was waaaayyy too much fish sauce for my taste. 2 Tablespoons is just too much saltiness — it overpowered the other lovely flavors from the garlic, ginger, curry paste, etc.

This was so excellent. I didn’t have any bok choy, so I subbed spinach, which worked well. It was super simple, quick, and totally delicious. I had black rice noodles, so used those. They made a pretty contrast to the color of the sauce. Also added some chopped cashews as garnish. The sauce was amazing. Family loved it. This is a keeper.

Delicious! Definitely took longer than 30 minutes, but worth it. Ended up marinading the chicken for about an hour (phone call) but it was fine. Used green curry, as didn’t have red, and cut down due to comments. Good thing, as it was fairly spicy. Also didn’t have bok Choy but had nappa cabbage which was a delicious substitute. The lime at serving made a beautiful difference. Will definitely make again! Thanks #halfbakedharvest!

Love your blog and have made some of your baked goods which came out perfect! This was my first time trying one of your dinner recipes, and while it came out amazing, it took me waaaay longer than 30 min (closer to 2.5 hrs!). A lot of the time was spent chopping, peeling, grating, etc so maybe it would be more realistic to include that in the cooking time? Otherwise it came out amazing! Just not a weeknight dinner unfortunately 🙁

We used tofu instead of chicken and opted for kale instead over bok choy and our meal was delicious. And of course we had to make a batch of fresh naan to serve with this.

I’m reviewing as I eat this…my first HBH recipe, it turned out so well! I wish I had an option of uploading a picture.
Made this during a long conference call so it took me a bit longer because I was somewhat distracted. Perfect thing for a cold, snowy day in Chicago. The recipe is quite foolproof as I had to make some substitutions as I wanted to use up some items left in my pantry. I prefer mine to have more broth so I’d definitely recommend to go with 3-cups of the coconut milk. I didn’t have enough so I added in some vegetable broth to make sure it had enough broth, I’d add more next time as it reduced down more than I would have liked. I added in shredded carrots to give a little crunch.
I’ll most definitely be making this again.

I made this last weekend, and it was delicious! I recently started Weight Watchers, and this is only 9 points when you substitute light coconut milk. This tasted like a guilty pleasure, without breaking my diet at all.

I’ve made this twice now- the first time I followed the recipe exactly as written, but then last night I was really craving something curry-ish and the chicken was too frozen to thaw in time for dinner, I didn’t have kale or bok choy, and I somehow ran out of scallions for the time time, I dunno, ever. So I used shrimp and scallops as my protein, subbed broccoli for the greens, and sliced up some red onion to stand in for the scallions and, let me tell you, still SO good! I love the versatility of this recipe and how forgiving it is. Want more turmeric? Go for it! More coconut milk? Have at it! It’s damn-near impossible to mess up 🙂

I happen to have Thai green curry sauce, not paste,on hand (accidentally bought it, and it’s rather hot, unfortunately). Could that work somehow instead of the red curry paste?

This was so yummy. I was a little worried when I was cooking it because the fish sauce made it smell so fishy. I thought I’d used too much. But no worries. It was a very subtle flavor. A perfect balance.

So good! Perfect for chilly weather. I used 2.5 tbsp of red curry which was perfect for my family. The only other changes I made were adding red cabbage in addition to the bok choy for more veg, 1/4 cup of broth because the 3 cups of coconut milk was a bit too rich and not quote brothy enough for me, used only 1 tbsp of fish sauce, and I let everything simmer for at least 25 minutes so all of the flavors could really combine. I also only had udon noodles but they were fantastic. This will definitely become a household staple!

Really nice. I used the 3 cups of coconut milk too, substituted the greens for asparagus and broccoli and used Udon noodles. Was also nice with a sprinkling of chilli flakes. Will make again.

Tieghan I made this today for lunch and I absolutely loved it! I halved your recipe and still got 4 decent portions out of it paired with 1/2oz dry rice noods per serve. I’ve tried so many of your dishes and recently got a Staub dutch oven so I was so pumped to try it out. My only modification was that I wanted it to be super soupy – so I added a whole can of light coconut milk and a cup of chicken stock to the halved recipe. Fabulous! Thank you.

Quick tip- I use scissors to cut the chicken into cubes. It’s a trick my best friends Filipino mom taught me. 🙂

I made this last night after seeing your Insta story! I cook a lot, and am always searching for something new, delicious and enticing on the plate. I do have to say, I alter when I read or see an ingredient I’m unsure of! I do not like fish all that much, never mind using fish sauce! We thought it was just ok. I probably wont make it again. We weren’t wowed by it although the pictures are very beautiful and tempted us to try it. Nothing wrong with it we just didn’t think it tasted amazing. I did use 4 oz of curry paste. I initially forget the fish sauce and added it later and that helped quite a bit maybe I should’ve added more.

2 tablespoons of fish sauce is a little too overpowering for me so I ended up adding more coconut milk and curry paste try to offset it. Not my favorite coconut milk/curry recipe that you have but you have such other good ones it’s hard to beat!

Making this recipe for a second time. It was delicious but a bit too heavy so going to substitute some of the coconut milk for chicken stock and use tofu to try to see if that makes it any lighter. I do disagree with the comments saying it was bland, add some Thai basil and coriander at then and it is full of flavour !

This was incredible! SO much flavor! I did double the grated ginger just because we adore ginger 🙂 Everyone loved this dish. Will be making this again very soon. Wow! Very good recipe! We had this over rice. The rice soaked up the soup, it was divine! I also added some curry powder to the chicken. I told my husband on busy nights the chicken alone would go well on their own. Well done madam! This is a keeper for sure!

This looks fabulous and I have it on our menu plan for this week. One quick question, can I use green curry paste as that is what we have in our pantry. I’m also going to assume that you don’t need rice noodles but can use regular rice OR do you think that the noodles make the dish?
