Weeknight Thai Chicken Meatball Khao Soi. This northern Thai inspired noodle soup is the simplest weeknight dinner. Made with flavorful Thai curry paste, coconut milk, and plenty of fresh herbs and lime juice. Toss in seared gingery chicken meatballs and plenty of delicious egg noodles, it’s hard to beat the easy Thai inspired soup. It’s the perfect any night of the week dinner that’s made in 30 minutes, hearty, cozy, and healthy too.
Say hello to my personal favorite recipe of the week. This soup is a combination of everything I love most. It’s colorful, hearty, full of so many vegetables, has crispy (flavorful) chicken meatballs, noodles, and truly the most delicious soup broth. If I wasn’t making a million other things every single week I would be making this soup on repeat. It’s one of my favorites…probably should have saved it for a possible future cookbook but I simply had to share.
Sooo, hopefully, that lets you know just how excited I am. I know this soup is different, but I beg you to try it.
The background + inspiration.
First, I want to share the background on Khao Soi, in case you’re unfamiliar with it. It’s a soup from Northern Thailand made with very specific Thai curry paste giving the soup its unique rich flavor. Additionally, it’s made with creamy coconut milk, which makes this more like a curry…but yet it’s still soup. Well actually, it’s somewhere in between the two!
After reading up on Khao Soi, I discovered there are actually a few variations throughout different parts of Thailand. Some parts of the country will use rice noodles, while others use egg noodles. However, the broth remains the same…curry paste and coconut milk. You can read up on the history here, if you’d like.
So the inspiration? Of course, it’s once again my brother, Brendan. He’s traveled to Thailand a few times now and each time he brings me curry paste and noodles. It’s like winning the lottery, I love him so much for it. Praying he and Lyn’s head back soon because my stash is currently gone.
Anyway, this is their favorite soup. I’ve made a couple versions of it now, one you can find in the Half Baked Harvest Super Simple Cookbook. But I think today’s version might just be my favorite…
My point is, I just love the meatballs in this version, they’re such a fun twist.
Here is how you make Thai Khao Soy.
Going to put this right out there before getting into details, this is not an authentic Khao Soi. This is just my take, it’s similar but different.
Moving along, aside from cooking the noodles, this soup is made entirely in one pot. The meatballs are the exact same mix that I used for my ginger sesame meatballs…ground chicken, green onions, garlic, and ginger. Roll this all together, then pan-fry the meatballs in a bit of olive oil to get them nice and crispy on the outside. Toss in some baby bok choy, or other greens of your liking, and sear them until they are crisp. At this point, you’ll remove everything from the pot so that the meatballs and greens don’t overcook or lose their crispness.
Next, you’ll want to sauté the Thai red curry paste for a minute or two before adding in the liquids. This will activate the flavors in the curry paste and give you a richer tasting broth. Now, just add in all the liquid, stir back in the meatballs and bok choy, and simmer everything together for a few minutes. You want the meatballs to cook fully through and the flavors in the soup to meld together.
While that’s happening, boil some egg noodles (or use rice noodles if you are gluten free). By the time the noodles are ready, the soup will be too!
Let’s talk about the toppings.
Because they are the best part! Well, maybe not the best part, but they contribute so much to this soup.
I am not shy with my toppings, I really like to layer them on. Use ingredients you love most, but here are my recommendations…plenty of fresh Thai basil, a generous handful of thinly sliced green onions, some very thinly sliced shallots (bonus points if you fry the shallots in oil first), lots of fresh-squeezed lime juice, and lastly – chili oil…lots and lots of chili oil.
For the chili oil, I simply make up a quick homemade batch, but you can easily use store-bought too. And if you can’t find any Thai basil, regular Italian basil works as well.
And that’s it, simple, so much flavor, quick, easy, extra color, and insanely good!
I really can’t begin to express just how good. If you loved my Thai ramen or my coconut milk braised chicken, I think you’ll also greatly enjoy this. Similar(ish) flavors, but very different dishes.
The broth, the crispy meatballs, the noodles, the toppings…everything all together. It is the BEST. Creamy, hinted with ginger and garlic, a touch spicy, a touch sweet, herby, salty, so perfect. Yeah, I think that pretty much sums this up. So how about a cozy bowl of Khao Soi tonight? You only need thirty minutes.

Ingredients
- 1 pound ground chicken
- 2 green onions, finely, chopped, plus more for serving
- 1 inch fresh ginger, grated
- 1 clove garlic, minced or grated
- black pepper
- 2 tablespoons extra-virgin olive oil
- 4 baby bok choy or 1 bunch kale, chopped
- 1/4 cup Thai red curry paste
- 2 (14-ounce) cans full-fat coconut milk
- 3 cups low-sodium chicken broth
- 3 tablespoons fish sauce (or low sodium soy sauce)
- 1 tablespoon honey
- 1/4 cup each fresh cilantro and Thai or regular basil, chopped, plus more for serving
- 8 ounces egg or rice noodles
- sliced limes and thinly sliced shallots, for serving
- chili oil, for serving
Instructions
-
1. Add the chicken, green onions, ginger, garlic, and a pinch of pepper to a bowl. Mix until just combined. Coat your hands with a bit of oil, and roll the meat into tablespoon-size balls (will make 15-20 meatballs).
2. Heat a large pot over medium-high heat and add 2 tablespoons oil. When the oil shimmers, add the meatballs and sear until crisp, about 4-5 minutes, turning them 2-3 times. Toss in the bok choy and cook 2 minutes more, until just charred on the edges. Transfer everything to a plate.
3. To the same pot, add the remaining 1 tablespoon oil, and the curry paste. Cook until fragrant, about 2 minutes. Stir in the coconut milk, chicken broth, fish sauce, and honey. Slide the meatballs and bok choy back into the soup. Simmer over medium heat until the meatballs are cooked through, 5-8 minutes. Stir in the herbs.
4. Meanwhile, cook noodles according to package directions.
5. Divide the noodles between bowls and ladle the soup over. Top each bowl as desired with basil, green onions, shallots, lime juice, and chili oil.

What is the difference between this khao soi and a regular red curry noodle dish? Isn’t curry paste + coconut milk + fish sauce a typical red curry dish combo? D

This was delicious! I made it for a dinner with friends last night and even a couple of people who said they don’t like curry liked this soup.Full disclosure, I used a Cambodian Lemongrass curry for the curry paste (because that’s what I had) and make meatballs out of ground shrimp instead of chicken, but everything else was the same. Had tons of flavor but I increased amounts of ginger, garlic, green onion and added lemon grass. Didn’t have the pop I thought it would have. Hubby thought bland needed more flavor and I was afraid it would be too spicy for him. I added chili oil to increase heat.

Just made this, and was it ever delicious! Instead of meatballs (because I had two screaming kids), I browned the meat in the pan with the scallions, ginger and garlic. I didn’t have fish sauce on hand and used half soy and half rice wine vinegar to still get the brightness. I definitely want to try it with the fish sauce though! Thanks again!!!

This was a winner! I made a few changes based on preference and what I had on hand. I used ground pork (can’t handle the texture of ground poultry) and a 5oz box of “Super Greens” in place of the Bok Choy. We didn’t have basil but didn’t miss it and I used traditional linguini since we were out of rice noodles. It was so delicious and easy. Hands on time was less than 15 mins. This is going into the monthly rotation for sure.

My husband and I went NUTS for this soup – the flavors are powerful without being overwhelming and everything feels so balanced. I cannot seem to keep enough coconut milk in our pantry lately, it makes for a beautiful background to soups. This was excellent but way too salty. FYI, 1/4 cup of Mae Ploy res curry has almost 4000mg of sodium.
It was still pretty good but I wish I’d halfed the curry paste or maybe used another brand. Does the kind you use have that much sodium?

Followed the recipe to a t. Was really lacking flavor. I should have known when I noticed the meatballs had no salt. It is also very hard to eat soup with these type of noodles was very messy.

Oh. My. Goodness! You’ve done it again!!! This was AMAZING!!! We loved it so much on Friday that I made it again on Sunday to share with my grown kids, grandmother and aunt! Everyone LOVED it!!! The layers of flavors are out of this world! Full disclosure, I did add shiitake mushrooms and shredded carrots, just because I love mushrooms SO much and will put them in anything I think they will work in (And boy did they work in this!), and I love the color of carrots in soup. Let me lead by saying I LOVE all of your recipes. I was really looking forward to this one – but I struggled a bit. My meatballs just would not stay together. Any advice? I used ground chicken just as the recipe called for, and followed the rest of the ingredients to a t – but couldn’t get them to hold.
Hey Hannah! So sorry you had trouble with the meatballs. What percent fat is your chicken and what brand are you using? My guess is that the chicken you are using has a lower moisture content (and less fat) than the ground chicken I use. Brands can vary, so it can be a little tricky if you have a leaner ground chicken. If you can get the meat to hold, just add 1 egg to the mix and that should solve the issue.

I thought the liquid ratio to chicken was to much. I
I also ran into a moisture problem when trying to brown the balls. They just let out so much water and didn’t brown as much as i wanted and stuck a bit. I used a Dutch Oven. Maybe I should have used a straight cast iron? Any ways. It was too soupy and we prefer chicken chunks to ground meat..

No ginger in Kao Soi curry please. The dish look very delicious but you missing one most important ingredient in the curry base, you need to put indian yellow curry powder in it too. You say this is not the Authentic one but still no basil in kKao Soi cause it’s kill other flavor in the dish

Hi Tieghan, I made this a few days ago for my husband and 22 year old son. I cook a lot and am pretty adventurous, so it’s not always home runs, but whenever I do hit one – the whole family agree it “goes on the menu.” That is, the menu for restaurant we will probably never open but if we did open, we would only serve food that we LOVE.
Anyway I’m sitting here eating the last leftovers – plotting when to make it again. Won’t be long:)
Notes: I used Klusky Polish Egg noodles which worked great. Added an egg and a splash of breadcrumbs to the meatballs, otherwise I essentially followed the recipe (which rare for me:) perhaps a little heavy on my 3 loves, Garlic, Ginger, Red Curry This soup is everything. Hi Tieghan, this recipe tasted amazing. I’m a meatball newbie, and my meatballs totally fell apart during searing. Do you think this is because I should’ve rolled them tightly (I did not)? Made it! Love it! I lived in northern Thailand briefly and it’s pretty close to khao soi in general. My 2 year old niece greatly approved of the meatballs. Notes: I made this during the coronavirus panic phase so the grocery store only had ground turkey. But all of the other ingredients were well stocked. I would add salt or something acidic to the meatballs while making them. And I had enough broth for leftovers with fresh noodles (meatballs were gone). I’d also recommend adding more veggies if you’d like!

I made this last night and it was excellent! The noodles definitely soaked up a lot of the sauce/broth so I think next time i’ll add more broth/milk/curry (or maybe just less noodles?). Either way, it was SO good and I can’t wait to have the leftovers.

Hi! I wanted to thank you for this recipe. I’m a teenager, and my parents are both working from home so I’ve been taking up much of the cooking in my household during the pandemic. I made this on Friday, changed some things because of what I had on hand and had to make some substitutions (seared tofu instead of meatballs, different veggies, homemade coconut milk etc.), but my parents said it was one of the best things they’ve ever eaten. This was sooooo good! My meatballs didn’t hold together very well, but I think I let them sit for too long and they were way too soft. Most of them turned out pretty well and the ones that fell apart didn’t affect the soup at all, only the presentation. The flavor of this soup is amazing and I’m shocked at how little time it took; it tastes like it took so much longer to simmer.
While I agree it took me longer than the stated prep time, maybe ten minutes longer, it didn’t matter to me – I might be a slow prepper. 🙂 The total time from start to finish was definitely worth it. This blows my Thai Ramen out of the water and it my new go-to. Thanks so much for creating and sharing! xo

My meatballs fell a little bit apart when trying to sear them. I removed them from the pot and put them on a baking sheet and broiled them to sear them and make them stay together. Is there a trick to getting them not to crumble in the pot?

I made this a couple days ago. It is DELICIOUS! I didn’t have chicken so I skipped the meatballs and added what I had, a big hunk of baked cod broken up. Still adding the ginger and garlic to the soup when I cooked the bok choy and zucchini. My husband liked it too. The only thing he doesn’t like is coconut so I was concerned he might taste the slight hint of coconut, but he devoured two bowls of it. It was such a nice meal to take to work for my lunch.

Just made this for lunch ad it’s a definite repeat recipe. Next time I might try chicken thighs or pork shoulder. I loved the meatballs but prefer more evenly distributed protein. I will also use the Pad Thai noodles and not the birds nest. I didn’t have chili oil but it definitely benefited from some Siracha. I love this recipe! I’ve made it so many times:) My husband and I visited Chiang Mai last spring and discovered this wonderful dish. I’ve made your version with the meatballs, but when we were in Chiang Mai we had it with chicken drumsticks. I wish i could give this more stars! I’m a huge fan of traditional Thai cooking and this fits the bill perfectly. I grew my own Thai basil and added lemongrass and fresh bird’s eye chilies I grew myself as well, all of which made an excellent addition. This recipe is pretty easy, and really good. I doubled the recipe, for leftovers.
I made a few changes, for my taste. First. I added mushrooms, steamed broccoli, and more greens than the recipe asks for, for nutrition and to bulk it up a bit. I don’t like raw scallions, so I cooked a chopped scallion with the mushrooms. I cooked the mushrooms and greens in broth, after the meatballs were cooked. I used much more garlic than the recipe called for (I love garlic), but the curry paste/coconut milk ratio was on point, for me. I like the Mae Ploy brand. In addition, I think that 3 tbs. of fish sauce is a bit much, so I used 2 tbs. + 1 tbs. of low-sodium soy sauce per batch. I also used slightly less olive oil than the recipe calls for, but that is due to my love of chili oil.
This recipe is interesting, because when it’s first served, it’s soup-y; however, the rice noodles absorb much of the liquid when it’s refrigerated overnight. I will definitely be making this again, and I will experiment with different veggies to mix into the dish.

Made this last night and everything about this recipe is great. The only thing I’ll do differently next time, would be to add a pinch of salt to the chicken meatballs when combining with the scallions, ginger and pepper. Otherwise, this has now become a staple recipe for us. Tieghan is right, don’t skimp on the toppings at the end!! I really love how the fresh lime juice brightens up the flavors and we didn’t have Thai basil, so I used cilantro instead and it was still fab. Pretty good recipe! My only advice would be to double the garlic and ginger and to add salt to meatballs and in general recipe (much needed and enhances the flavor of the dish!) Added some Panko to meatballs and they held up better. Definitely add lime at the end!

Made this as written except I added chopped lemongrass, salt, and diced jalapeno to the meatballs, and added yellow curry powder, some tumeric, and shrimp paste to the broth (as recommended by other khao soi recipes I found online). I think these additions really made a difference. My meatballs also fell apart when browning, even after adding an egg and some breadcrumbs. Lime juice at the end is key! Overall, totally delicious recipe.

My meatballs sadly fell apart, so it was more of a crumble situation so I added cubes of soft tofu and shitake mushrooms to help give it some texture, and I loved how it turned out. Nice, easy recipe otherwise!

I am addicted to pretty much any HBH recipe I make but this one was ESPECIALLY good. It was super easy and quick to make. So happy to see a recipe from you for my favorite Thai dish! If this is on the menu at a restaurant I always order it. One suggestion is that traditionally it is served with chopped pickled mustard leaves and they are SO TASTY!! The broth was so good! It took me about 45 mins from start to finish. Not bad! I do wish the chicken meatballs had a bit more flavor themselves, but overall it was a great dish and I’d make it again. My meatballs didn’t fall apart totally but just a small amount would come off some of them whilst cooking. I used kale instead of bok Choy. Thank you for making another yummy dish!

Very flavorful! My husband loved the broth and that is not something he usually likes about soups. I did not do the noodles or honey to keep it lower carb but it was great! My meatballs were a little on the dry side but I think that is because I used all chicken breasts when I ground my own. These definitely needed a little dark meat in the mix. I will certainly keep this one in my quick dinner arsenal! I can’t wait to try making my own chili oil. One question…. Can you use another oil besides peanut to make the chili oil? Thank you!

This was delicious. I doubled the recipe and made exactly as stated except I used about 2 cups less broth because it wouldn’t fit in my pot. I skipped the step where you took out the meatballs and bok choy to sauté the curry sauce and just added the ingredients all at once because I was lazy. It was still delicious.

A die hard Khao Soi fan here. We made this recipe and felt like it needed more sugar. Tasted too much like a regular salty soup base. Realize this isn’t an authentic recipe, but we liked the meatball addition. Might try adding the meatballs to an authentic recipe.

I’ve had this bookmarked for a while to try, but never pulled the trigger because something about the recipe made me think the flavor might not be there- and I think I was right. I usually love HBH’s recipes, but I felt the proportions + directions for seasonings had this dish fall a bit short. I thought the chicken meatballs desperately needed some seasoning + binder or fat to improve the texture. The broth was a bit flat in flavor as well- I may recommend reducing the amount of chicken broth & upping the fish sauce, +50% curry paste to compensate. Overall, a solid infrastructure for a relatively quick and easy weeknight meal, but I do think there’s potential to get it to the same level as many of HBH’s recipes! I don’t mean for this to be a mean review! Just my honest thoughts. I love HBH and I will be leaving a review on one of my favorite recipes to compensate. I appreciate you, HBH!

Never have I ever commented on a recipe, but this was THAT good and I had to. I have been eying it all week and went for it tonight while my husband was working. Whenever I start with “I found a recipe on a blog that I want to try” I am almost always met with hesitation because they never turn out as expected. I will say it took me longer than 30 minutes (more like 50)…but new recipes always do before I perfect them. I added a bunch of veggies we had in the fridge (mushrooms, zuc, onion) along with everything you have above and it was a HUGE hit. Can’t wait to make it again. You’ve got me hooked!

This recipe is delicious! The prep was so simple and quick, once I read the recipe. As for preparing it, the recipe was well written and straight forward. We did change one aspect and that was to thicken it up a bit but that is a personal preference for my household. Next go around, I will start boiling water earlier- I forgot how long a watch pot takes to boil, lol.

New here, first recipe I’m trying. Is there a reason for the low sodium chicken broth? Honestly it didn’t have much kick or spice for my taste… I would probably add salt or use regular broth next time, and only 2 cups instead of 3. Also agree with the prep time comments, it took me a bit longer to form the meatballs and chop everything by myself than the suggested estimates. Maybe with 2 people or a better kitchen layout this could be faster.

This was delicious. My husband said restaurant flavours. Yum. I made this exactly as directed (except, lol) I used tofu – i tried to make tofu-balls but had no idea how to bind them on the fly – so used as a crumble and added a ton of vegetables, and wish I used more! Made this tonight and the broth and bok choy were all very tasty. The one idea I would suggest is to finish the meatballs before adding the bok choy. I had a fairly large dutch oven but after adding the bok choy I couldn’t find the meatballs I had worked so hard to make round and then the bok choy wasn’t cooking as quickly through the meatballs on the bottom of the pot. Also the meat balls needed salt and if I make again would use rice in the soup instead of meatballs.

I came across this recipe and decided that I needed to make this. I was a little worried since I have never made Thai food before and was concerned that it was not going to taste like Thai food. I was wrong… this recipe came out amazing! I made this for my husband and mother-in-law and they were amazed. The meatballs were absolutely amazing and the soup tasted just like a thai restaurant. I saw another comment saying that they doubled the ingredients and the meatballs had more flavor, so I did that as well. Honestly, I can no wait to make this again. Quick, easy and tasted exactly how I thought it would. I would change anything else in the recipe. I also made thai iced tea with this meal and it complimented this dish so well. This was simply incredible!!! While easy to execute, the flavor was very deep and complex- probably a benefit of using the fish sauce- and the sauce itself tasted just like sauce found in Laksa, the classic Singaporean dish. Delicious, rich, yet delicate broth. I love the flavor of the fresh herbs. I used one can of full fat coconut milk and one can of lite and it was plenty rich. Added bamboo shoots and mushrooms for a few more veggies, and a heavier rice noodle. I wasn’t sure it would need three full tablespoons of fish sauce, but that was just the right amount. I added a bit of soy sauce and sriracha along with a lot of lime juice for some extra kick at the end.
The meatballs were tasty but next time I think I may make it with cubes of chicken or tofu, and just add the green onion, ginger, and garlic to the broth — or cook the meatballs all the way and put them on the top at the very end, so they don’t soak up so much of the soup. Their flavor was really good but they got quite soft. I’ll definitely be making it again though!

I made this for supper last night and it was very good! The first time I tasted it was in Thailand (Chiang Mai) and I must say, yours tastes very authentic! The only change I had to make, was that I didn’t have ground chicken (and neither did the grocery store) , so I just cooked a couple of chicken breasts and cut them up and then threw them in with the garlic, ginger and black pepper. Delicious! For anyone trying it for the first time, don’t be afraid if adding the full 1/4 cup of Thai curry paste. It isn’t spicy at all and the coconut milk will tame it down anyways. I did add some dried chili flakes because I needed some more heat. I used rice noodles in mine. I always have a good supply of them! And “do” squeeze some lime juice over the top too! It really brings out the flavours! Thanks Tieghan. Five stars for you!

I made this tonight and it was amazing! I do have trouble getting your chicken meatballs to stay together when I’m browning them but who cares? I didn’t have any red curry paste so used a TBS of curry powder and couldn’t get Thai basil so used regular. Also used wide low mein noodles, perfect. Seriously, this is so delicious and I get extra points for crisping up shallots in OO! I’m going to try it using shrimp next.

Made this recipe last night for dinner and it was great! I doubled the amount of garlic and ginger in the meatball mixture for a bit of extra flavor, and am glad that I did. The tip of using oil on my hands before rolling the meatballs worked perfectly to limit the build up of the mixture on my hands; I will remember this! I substituted the fish sauce with coconut aminos and used green curry paste instead of red since that is what I had on hand. I also used rice noodles instead of egg noodles because of an allergy. I will certainly make this recipe again, but will try adding more greens or other vegetables into the broth. Leftovers for lunch were even better than the meal hot off of the stove! This recipe was a winner! I lost track of time and was in a rush to get dinner going this evening. I found this recipe and had everything on hand for it. My husband who hates anything with ground chicken absolutely loved this meal. It was quick and so delicious!

We LOVED this. It seemed to take forever to find a week when my local grocery had both ground chicken and baby bok choy in stock, but when I finally snagged both this was simple, straight forward and incredibly delicious. I used glass noodles because I love them and don’t buy them often enough. It was my first time cooking with bok choy, which I was surprised taste a lot like a very mild celery. This will be in regular rotation at my house. Thanks for posting it!

This was great! I read through comments before about meatballs falling apart and added a bit of olive oil to increases the fat (was using lean Turkey). Cooked it in my wok after making the oil very hot and didn’t have any issues with them falling apart. Definitely a keeper.
