Made with flavorful Thai curry paste, coconut milk, creamy peanut butter, and a sprinkling of cilantro. Toss in seared chicken meatballs and plenty of delicious egg noodles and it’s hard to beat this easy creamy curry. It’s the perfect any night of the week dinner that’s made in just about 30 minutes…hearty, cozy, and healthy too.
Hey, hi! We made it to Thursday, which means the weekend is almost here! Trust me, I know it’s been a long week, but thankfully we have good food to share, upcoming holiday excitement, and tomorrow…chocolate. Everything is better with a good dinner and a night that ends on a sweet note. And that is just the truth.
You guys, I am very excited about today’s recipe. It’s inspired by a Southeast Asian soup called Laksa. It’s spicy, creamy, and the most flavorful dish. And I love all the color throughout.
With fall in full force, and Thanksgiving planning and prep underway, I tend to get into a dinner rut of making casserole after casserole and pasta after pasta. In my mind, there isn’t anything wrong with that. I love these foods! But it’s always nice to switch it up. I was feeling like I needed to break away from all my cozy, cheesy pasta and Thanksgiving recipes and share something completely fresh and different, but yet still warming for fall.
The Thanksgiving recipes will return tomorrow and throughout next week, but when in the midst of Thanksgiving planning and prep, we also need good dinners!
The background.
Laksa is one of the most popular southeast Asian dishes. It’s a spicy noodle soup that usually consists of either rice or wheat noodles with chicken or fish. The broth is a spicy, rich curried coconut milk. Laksa can most commonly be found in Indonesia, Malaysia, Singapore, and southern Thailand. It varies from place to place in exact flavor, but the two things Laksa always has is a creamy, spicy coconut broth and lots of noodles. It’s not hard to prepare, but it does require a handful of ingredients that I can’t easily find.
So this is my simplified version of Laksa. It’s creamy, heavy on the noodles, and made with chicken meatballs. It’s a little different than a classic Laksa, but similar in flavor profiles. Most importantly, it’s easy to make and so delicious.
Here are the details.
Aside from cooking the noodles, you can make this dish entirely in one pot. The meatballs are simply a mix of ground chicken, green onions, soy sauce, and black pepper. Very simple, but yet so flavorful. The combination of green onions and salty soy is key here.
To make the meatballs, roll them out and then pan-fry them in a bit of oil to get them nice and crispy on the outside. I really like using avocado oil for this since it’s a high heat cooking oil, but olive oil works nicely too.
Once the meatballs are seared, remove them from the pot to ensure they don’t end up overcooking or losing their crispness. Once the meatballs are out, add everything else right to that very same pot. Starting with lots of shallots, ginger, and garlic, then toss in the cubed butternut squash or sweet potatoes.
Next, you’ll want to sauté the Thai red curry paste for a minute or two before adding in the liquids. This will activate the flavors in the curry paste and give you a richer tasting broth. Now, just add in all the coconut milk, stir back in the meatballs and simmer everything together for a few minutes.
While that’s happening, boil some egg noodles (or use rice noodles if you’re gluten-free). By the time the noodles are ready, the curry should be thick and ready to toss with the noodles and serve.
To serve, just add the noodles to bowls and then ladle both the veggies and meatballs overtop.
Finish with lots of fresh cilantro and pomegranate arils. Simple, but yet so complex with flavor, and so colorful too!
The broth, the crispy meatballs, the noodles, the toppings…everything all together? It’s delicious. Creamy, gingery, and garlicky, a touch spicy, salty, and truly so perfect. Loving this for busy weeknights, but yet it feels special enough for a cold Sunday night. Either night you end up serving this, it’s going to be perfect.

Creamy Coconut Chicken Meatball and Noodle Curry
The perfect weeknight dinner...made in about 30 minutes, hearty, cozy, delicious + healthy too!
Ingredients
- 1 pound ground chicken
- 2 green onions, finely chopped, plus more for serving
- 1/4 cup + 2 teaspoons low sodium soy sauce
- black pepper
- 5 tablespoons extra virgin olive oil or avocado oil
- 1 cup cubed butternut squash or sweet potato
- 2-3 medium shallots, thinly sliced
- 1 inch fresh ginger, grated
- 4 cloves garlic, minced or grated
- 1/2 cup fresh cilantro, chopped, plus more for serving
- 1/4 cup Thai red curry paste
- 2 (14-ounce) cans full-fat coconut milk
- 2 tablespoons creamy peanut butter
- 1 tablespoon fish sauce (or low sodium soy sauce)
- 2 cups baby spinach
- 8 ounces egg or rice noodles
- pomegranate arils, for serving (optional)
Instructions
-
1. Add the chicken, green onions, 2 teaspoons soy sauce, and a pinch of pepper to a bowl. Mix until just combined. Coat your hands with a bit of oil, and roll the meat into tablespoon-size balls (will make 15-20 meatballs).
2. Heat a large pot over medium-high heat and add 2 tablespoons oil. When the oil shimmers, add the meatballs and sear until crisp, about 4-5 minutes, turning them 2-3 times until cooked through. Transfer to a plate.
3. To the same pot, add 3 tablespoon oil, the shallots, ginger, and garlic. Cook until fragrant, about 2 minutes. Add the butternut squash and curry paste. Cook another 5 minutes, stirring occasionally. Stir in the coconut milk, 1/2 cup water, 1/4 cup soy sauce, fish sauce, and peanut butter. Slide the meatballs back into the curry. Simmer over medium heat until the meatballs are cooked through, 5-8 minutes. Stir in the spinach. Thin as desired with additional water or broth.
4. Meanwhile, cook noodles according to package directions.
5. Divide the noodles between bowls and ladle the curry over. Top each bowl with pomegranate, cilantro, and green onions.

made this for dinner last night and it was very good! cut down the shallots to 1 since my partner doesn’t like them a ton and it was still good! my meatballs did take around 15 to fully cook and I let the sauce simmer for twice as long to make sure everything was cooked.

Great tasting curry recipe! I did have to take my butternut squash out of the pan and cook them in the microwave to soften because it would have taken forever for them to soften in the sauce. Next time I will pre cook them before adding to the sauce. My meatballs also desperately needed a binder as they fell apart during searing. I served this over rice as that’s how we mostly ate it in Thailand and I wanted to recreate that experience for my husband. Overall, a success!

Great flavour, I truly really enjoyed the recipe. Made a few adjustments as we like a thicker sauce. I omitted the water and reduced the coconut milk in half. Not only thicker but made the sauce richer.
Changed up the side from noodles to spiralized sweet potato. Simply pan-fried in a tablespoon of olive oil.

Made this last night for my family of 6 and doubled everything. My two pickiest eaters passed on everything but the meatballs and the rest of us thought it was delicious but needed more of the red curry flavor (after I double-checked that I had correctly doubled each ingredient). We all agreed even if 1/2 cup of the curry paste per batch would be better for those who want more flavor.
As per the directions, I followed the first step re the meatballs that says to turn them 2-3 times until cooked through. But then at the end it also says to simmer until meatballs are cooked through. Perhaps initially they’re only supposed to be browned? Lastly, even though I had to allow extra time bc of doubling the ingredients it took way more than 30 mins to prep everything – esp the rolling of the meatballs. I would say the total tome is far longer than an hour for even experienced cooks (esp if you’re using butternut squash which always takes a while to peel and cube). Overall delicious meal just needed a bigger flavor punch for our tastes and the first I have tried from your site, but I will be making more soon!

Overall very delicious and very satisfying! Being pescatarian I added meatless meatballs from Trader Joe’s instead of the chicken. I increased the butter nut squash by a half a cup, and added extra cilantro and green onions right into the dish. The heat factor was a bit low for me so I would change that up next time around with some Sriracha or jalapeño. I added chopped salted peanuts to the top for some texture. Yummy!

I think I need to try this recipe again to get it right! Used Trader Joe’s cubed squash, and should have cut them in smaller pieces to cook faster! had a hard time getting the chicken to bind and roll into balls-so just added some breadcrumbs. Next time I might use less coconut milk to amp up the flavor?? Or I might have not put in as much garlic as I should! This was DELICIOUS – I read a comment that it wasn’t flavorful? It was very flavorful – I only used one can of coconut milk, but could have used the second or added water. I only would suggest something to keep the meatballs together, but it works out as is. Will make again, really good!

So yummy!!! So cozy!!! So good!!! one bite and you know it’s comfort food forever. I will agree with some of the other comments regarding flavor; if your red curry paste isn’t a really good one the dish can be kind of lacking in flavor. I would highly recommend using chicken broth or some other kind of broth as your base, I had to thin out a lot as my coconut milk was very thick so it ended up with quite a bit of broth which gave so much more flavor than just soy, coconut and peanut butter. I also cooked my egg noodle in the broth. Also, add the juice of a lemon or lime in there, the pomegranate seeds add an acid boost, but it needs a little bit more to bring out all the flavors. And use more ginger than the recipe says!

I made several modifications to this recipe but it was still absolutely delicious! I used turkey instead of chicken, coconut aminos instead of soy, and replaced one of the cans of coconut milk with chicken broth. We ate it with udon noodles since that’s what I had on hand. I liked this recipe ! I added half a lemon and hot sauce to balance out the creamy coconut milk. If I make this again I may decrease the coconut milk to 1 can and replace the with and equal amount of chicken stock.

I made this last night and loved it! South eastern Asian food is my FAV, so I love how many great recipes are on this page! I read through the comments for tips. I added an egg to my meatball mixture since people said they fell apart. They were still pretty soft so I had to carefully spoon them into my pot, but they came out great. They didn’t fall apart. I loved the pomegranate on this recipe! Don’t skip them! I think next time I’ll add a squeeze of lime at the end. Like someone mentioned, a little more acid would make this perfect. We also added a little red chili paste for a bit more heat. This one is a keeper!

This dish had good flavor, but as some other reviews suggested could be improved in a few ways. My meatballs also desperately needed a binder and almost fell apart in the pan. I love peanut flavor in Asian dishes, but I found the peanut butter to be a bit rich in addition to the coconut milk here, and in the future will reduce the peanut butter and increase the curry paste. The dish could also benefit from some acidity and some different textures, and so I think lime juice and perhaps a vegetable like red pepper would be an excellent addition. Finally, the dish does take more than the suggested time to make and prep, especially to ensure that the cubed sweet potato was cooked all the way through. All in all a solid dish, that I will likely remake in the future with some tweaks.

This was so good and very easy! I used turkey instead of chicken because my grocery store was out. I also skipped on the cilantro and pomegranate, so mine wasn’t exactly pretty, but it tasted great! I did have to cook for longer when I added the sweet potatoes back into the pot. They were not cooked through all the way at 5-8 minutes, but after letting everything simmer for about 15 minutes at the end it was great!

This recipe was so good! Easy to make, and delicious. I liked the option to thin out the broth as desired, I ended up adding an extra 1.5 cups of water as i found my coconut milk and curry paste quite thick and strong. Made this with rice noodles as that was all I had and it went perfectly!

I made this last night according to the recipe and it was a hit with even my pickier eaters! The pomegranates were a beautiful garnish and also was a surprise pop of flavor. It wouldn’t be the same without them. My family prefers rice over noodles so I made long grain brown rice and it was delicious! I was a little confused as to when to add the cilantro since it was farther up the ingredient list but after other questions, it made sense it was a garnish. Thank you, Tieghan!

This is so, so good! It’s a perfect fall supper. If I could do one thing different, it would be to add more butternut squash. That was such a nice flavor and texture in the sauce. The meatballs are tender and very flavorful. This will become a go to for sure.

This was very good, similar to the 30 minute thai peanut chicken ramen recipe you posted recently (which we loved!)!
I would suggest you steam or microwave the sweet potato or butternut squash first and the recipe will go together much more quickly. I also used only one can of lite coconut milk and replaced the rest with my homemade broth. I also added chili sauce for more spice. My meatballs did fine just as written. Make sure your pan and oil are hot and watch closely for turning.

This is the weirdest recipe I have ever tried.
In my opinion, the broth ruins this recipe.
Mixing curry paste with soy sauce and fish sauce, is not a great base for a curry… Maybe if you leave it out, this wil taste all right.
Also the peanut butter doesn’t add anything at all, you should leave that out and replace that with roasted peanuts as a garnish.
Overall a failed attempt to fusion cooking.

This soup came out tasty but a little salty. It definitely took longer than 30 minutes, especially if you include preparing the vegetables and fully cooking the squash. I recommend cooking the soup until the squash is soft. I accidentally doubled the amount of butternut squash; definitely a happy accident. The store was out of cilantro, but the soup was fine without it.

This was a really really good soup. We absolutely loved it! It smelled amazing, it tasted amazing and the next day is still was amazing. Oh, and easy to make! Just enough fun in the kitchen and not to many dishes.

First off let me say I have made at least 10 of your recipes and they are amazinnngggg!!! This one was absolutely delicious but just a few things I did differently. The butternut squash took at least 20 minutes to cook. I omitted the spinach sherly based on the fact my husband doesn’t like it, I added it to mine and could have went without it, needless to say the flavor was out of this world.. We really enjoyed this recipe. It was a very tasty and warming supper on our first really cold day. We cut down on the amount of curry, knowing that our urchins aren’t as spice friendly as we are. We’ll definitely make this one again.

This recipe was delicious and easy! One question though: I swapped the butternut squash for sweet potato as it said that was an option and the sweet potato was taking so long to cook that I had to take it out and quickly microwave! What did I do wrong?

Great recipe! This is the first one I make from your blog.
I’d recommend adding lemon zest or lemongrass. And adding extra spice via dried red chiles or mashed red Thai chiles! The red curry paste I got was missing flavor so I added a bit of yellow curry powder. I used regular potatoes that are more traditional in Thai food.

The meatballs were bit good at all, next time I would skip them or replace them with chicken thighs. The curry itself was good though they could’ve used a more substantial noodle.

The flavors in this dish were incredible! Tried beef instead of chicken, and wouldn’t recommend. Next time will follow the recipe more closely. Also, we went with egg noodles and they worked so well with the broth!

This was one of the most flavorful and delicious things I’ve ever made and I’m really surprised by how easy it was!! We made it for new years eve but it would have made a beautiful christmas meal with the red pomegranate seeds and cilantro on top. The only bit I found confusing is I wasn’t sure where to put the half cup of cilantro besides on top 🙂 For us this was 6 servings worth of food though we are hungrryyyy so we used more like a pound of noodles instead of 8oz. I didn’t have low sodium soy sauce so it was very salty but I added some water to tone it down. 🙂

Made this with the following changes: used 1 tbsp oil, stovetop skillet, cooked meatballs in that, then added shallot- ginger -garlic chop and cooked it alongside the meatballs. Didn’t have green onions and used dried chives instead. Omitted squash and spinach. No pomegranates in the store so I left those out too. Fresh cilantro is important, as is the fresh ginger.
While I am sure that the spinach, squash and pomegranate would go really well, they were not missed. It was deeeeee-lish! My son said “this is what I would make if I wanted to impress someone!”
If you want more heat, use more of the Thai curry paste. Like a stronger peanutty flavor? Amp up the PB! Use any veggies you have on hand. I will make this again for sure and with variations! Excellent dish, easy to prepare. Kudos!!!

This was delicious! Your beautiful picture shows 5 meatballs, which is an average helping for me, but my guys eat more. Your directions say to make 15-20 meatballs from 1 lb meat, so that would serve 3-4 people, not 6. I doubled the meat, sweet potatoes and spinach, but kept the same amount of everything else (omitting peanut butter and fish sauce because of food allergies). I couldn’t quite fit it all in the same large frying pan. Enough leftovers for lunch 😁

Such a great dish to make! I made it for my Fiancé and he now requests this meal almost once a week. It’s creamy, spicy, and so filling. Definitely coat your hands in olive oil before rolling the chicken into meatballs, the chicken can stick. One of my favorite dishes from Tieghan!

Our family loves this – the first time we made the meatballs as the recipe describes and the second time we just baked them to make things easier and less time consuming. The baked ones came out GREAT and were just faster and less messy! We baked them for about 20 min and tossed them back in the curry to keep cooking the same way she recommends in the recipe. Another good option for those who don’t want to deal with searing/pan frying them!

Made this last night and it was sooo good! I added some things to give it some heat because we like spice at our house. I love the texture of the noodles but next time I will probably do it over rice. It was just difficult to get that perfect bite with the noodles. Still, LOVED it!

So I’ve made some version of this recipe once a week for a few months, seriously. It’s so easy and fool proof. I forgo the meatball part and just add already cooked rotisserie chicken at the end to heated it up. I’ve also added shrimp and let it boil in the sauce for a few minutes…delicious. I start with the basics, onion, garlic and ginger, then add whatever veggies we have left in the fridge that need eating. My favorite is mushrooms and sweet potato. At the end, instead of folding spinach in the sauce, I serve the noodles and saucy mix over a bed of spinach (or leftover greens) and let it wilt with the heat of the sauce. This makes it easy to have leftovers with fresh greens every time. Also, I switched the pomegranate seeds with dried cranberries. These have the same sweet bite effect but much cheaper and easier to keep on hand. Love this dish. Thanks so much!
