This 30 Minute Coconut Milk Braised Chicken with Sweet Potatoes and Rice is a fusion of Thai and Indian flavors. It’s the perfect bowl of warming comfort food that’s also healthy…and so delicious. Quickly made in your instant pot (slow cooker, or on the stove) in just about 30 minutes. Made using good for us ingredients like high protein chicken, antioxidant-packed spices, sweet potatoes, spinach, and creamy coconut milk. It’s cozy, creamy, a little spicy, and filled with vegetables. Finish each bowl off with steamed rice and serve with fresh naan. You’ll have the perfect healthy chicken curry that can be enjoyed any night of the week. Bonus? The leftovers are even more delicious the next day.
This is the very first post of 2020…and the very first post of a whole new decade too. I hope you all had a great NYE and enjoyed a laid back New Years’ Day. Our NYE day was low-key but very fun. We spent the afternoon playing kickball in the snow, just what everyone wanted. At night I ended up making my Indian Coconut Butter Cauliflower along with my Chicken Tikka Masala from the HBH Super Simple Cookbook. This was not what I had planned on making for NYE, but it was delicious and everyone really enjoyed it.
Today I’m feeling so excited for the new year and ready to jump right into work. Anyone else feeling the same? Something about January 2nd is always so exciting. There’s a whole fresh new year ahead…kind of like a blank slate!
Today kicks off the start of healthy January 2020. If you missed it, I rounded up all my favorite healthy recipes on Tuesday. But today I’m sharing a new family favorite. I debated sharing a salad, but in the end, this just felt right for today. This dish is so GOOD and it’s filled with healthy ingredients too.
The Inspiration…
Like the majority of HBH recipes, this was inspired by my family. I made this over Christmas break because everyone, even my brothers, all enjoy a spiced chicken curry. I wanted the flavors to be somewhat of a mix between Thai and Indian and I wanted the sauce to be extremely creamy.
Most importantly, I wanted to create a cozy, warming winter curry that was healthy, filling, and delicious. Quick and easy was a top priority as well!
I did some googling, looked through past HBH recipes, and ended up combining a few HBH recipes to create this one. The outcome? An easy chicken braised in coconut milk that’s delicious when served over rice…and with a side of naan. Of course.
Here is exactly how to make this…
For starters, this chicken braised in coconut milk can be made in the instant pot, slow cooker, or on the stove-top. I prefer using the instant pot, but either method is great. The instant pot just seems to always leave me with perfectly tender chicken that’s never dry, plus it’s so easy.
The dish starts out simply by tossing the chicken with plenty of turmeric and ground ginger which is key to creating a really flavorful chicken. Sear the chicken to give it even more flavor. Then toss in a good amount of shallots and garlic, more ginger, sweet potatoes. and a touch of spices too. Stir this all together, then add your broth and coconut milk.
And then…the fish sauce. If you don’t enjoy fish sauce you can certainly use low sodium soy sauce or tamari, BUT I highly, highly recommend giving the fish sauce a try. It’s my favorite Thai ingredient, it adds a very savory, salty flavor. And even if you don’t enjoy fish, you’ll enjoy this sauce. Just be sure not to smell it, the smell isn’t the best, but the flavor is good.
If using the instant pot, lock the lid and let it do its thing.
As this cooks, the aroma in the kitchen is truly incredible. It’s almost Indian like, but with a Thai twist.
Once done cooking, all you need to do is simmer the sauce down a little, then stir in a good amount of both spinach and lime juice.
And that’s it. Simple. Simple.
I served my chicken over steamed rice with some fresh naan for scooping up the creamy, coconutty sauce. If you want to go the extra mile, make some homemade chili oil, but swap the garlic for shallots. it’s DELICIOUS spooned over top the curry.
Alternately, you could serve the chicken on its own or over brown rice for a whole grain option. Rice noodles would also be delicious.
How are the leftovers?
I swear they taste even better the following day. The flavors have time to mend and the sauce is just more intense. This would make for a great lunch to pack up and take to work, or just enjoy the leftovers for dinner. Either way, you’ll have an amazing meal to enjoy not once, but twice…assuming you’re not serving more than four people.
I can’t tell you how much I love this recipe. This curry is SO flavorful, SO full of color, and filled with good for us ingredients. Yet it feels totally comforting with the sweet potatoes, creamy coconut milk, and rice. The best part, well aside from all the deliciousness, is that this requires only one pot and is ready in just about 30 minutes. Perfect.

Ingredients
- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 1 tablespoon ground turmeric
- 2 teaspoons ground ginger
- 3 tablespoons sesame oil or extra virgin olive oil
- 2 medium shallots, chopped
- 2 cloves garlic, minced or grated
- 1 inch fresh ginger, peeled and grated
- 1/4-1 teaspoon cayenne pepper, use more or less to your taste
- 1/2 cup fresh cilantro, chopped plus more for serving
- 1 medium sweet potato, peeled and cut into 1 inch chunks (thicker is better)
- 1-2 cups low sodium chicken broth
- 2 cups canned coconut milk
- 2 tablespoons fish sauce
- 2 cups fresh baby spinach
- juice of 2 limes
- kosher salt
- 2 cups cooked rice, for serving
- chili oil, for serving (optional)
- fresh Naan, for serving
Instructions
Stove Stop
-
1. Toss the chicken with the turmeric, ginger, and 1 tablespoon oil. Let sit 5 minutes.
2. Heat 2 tablespoons oil in a large Dutch oven or pot over medium-high heat. Add the chicken and sear on both sides until browned, about 2 minutes. Add the shallots, garlic, ginger, cayenne, and cilantro, cook 3 minutes, then toss in the sweet potato.
3. Reduce the heat to low. Add 1 cup broth, the coconut milk, and fish sauce. Partially cover and simmer for 20-30 minutes, or until the chicken is cooked through. If the sauce is too thick, add additional broth. Stir in the spinach and lime juice. Season to taste with salt.
4. Serve the chicken and sauce over rice. Top with fresh cilantro and chili oil. Enjoy with naan.
Instant Pot
-
1. Toss the chicken with the turmeric, ginger, and 1 tablespoon oil. Let sit 5 minutes.
2. Set the Instant Pot to sauté. Add 2 tablespoons oil and the chicken to the instant pot and sear on both sides until browned, about 2 minutes. Add the shallots, garlic, ginger, cayenne, and cilantro, cook 3 minutes, then toss in the sweet potato. Turn the instant pot off. To the instant pot, add 1 cup broth, the coconut milk, and fish sauce. Cover and cook on high pressure for 8 minutes.
3. Once done cooking, use the natural or quick release function. Set the Instant pot to sauté and bring to a boil, boil 5 minutes or until the liquid reduces slightly. If the sauce is too thick, add additional broth. Turn the instant pot off. Stir in the spinach and lime juice. Season to taste with salt.
4. Serve the chicken and sauce over rice. Top with fresh cilantro and chili oil. Enjoy with naan.
Slow Cooker

1. Toss the chicken with the turmeric, ginger, and 1 tablespoon oil. Let sit 5 minutes.
2. Heat 2 tablespoons oil in a large Dutch oven or pot set over medium-high heat. Add the chicken and sear on both sides until browned, about 2 minutes. Add the shallots, garlic, ginger, cayenne, and cilantro, cook 3 minutes, then toss in the sweet potato. Transfer the chicken and potatoes to the slow cooker. Add 1 cup broth, the coconut milk, and fish sauce. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
3. Remove the lid, cook 30 minutes on high to thicken the sauce. Stir in the spinach and lime juice. Season to taste with salt.
4. Serve the chicken and sauce over rice. Top with fresh cilantro and chili oil. Enjoy with naan.

Sounds amazing! I am going to try it but once the chicken cooks I will add the sweet potatoes to cook at the end On sauté mode while the sauce thickens. Vegetable ALWAYS get to mushy if you pressure cook them and worse with natural release.

Super yummy and flavorful. Love the fish sauce, it calls for more than recipes usually suggest, but I loved it!! I Only use Red Boat fish sauce, it’s the best! I made this as directed and found it to be way too brothy. I’d been hoping for a rich sauce but it was like soup. The sweet potato pieces disintegrated into nothingness. Overall, it was a big disappointment.

Simple recipie, good flavor, thank you! We found it a little runny, next time we would use a bit less lime, less broth, and simmer on the stove to thicken up. Like others mentioned, the sweet potato was a little mushy so I would add that after the chicken. We followed the stovetop instructions.

My first half baked recipe! I used the instapot. I would make these adaptations: leave the sweet potatoes in bigger chunks and add a little thickener to the sauce. I omitted half the chicken broth and still had a lot of liquid to cook down. I added about half tsp. gluccoman. I was afraid it would be too spicy and kept the cayenne at the smallest amount, but the coconut milk absorbs a lot of flavors and I would put more cayenne in next time! Delicious recipe!

I liked how easy this was and will try again on the stove top. I used the instant pot and my sweet potatoes were mush. It must have been the coconut milk I used, but the dish turned out very sweet tasting.

This was delicious! I followed the recipe exactly and even made the homemade naan. When I opened the instant pot, it did seem very soupy. But after boiling for 5 minutes it thickened up. The sweet potatoes did kind of disintegrate but I think they made they made the sauce even thicker and better. The star of the dish was definitely the naan! My husband was in shock at my culinary feat 😉 I did set off our smoke alarm 3 times but worth it.

1. To make the chili oil. Heat a large skillet over medium heat. Add the 1/3 cup sesame oil, the garlic, and chili flakes. Cook, stirring occasionally until the garlic is fragrant, about 5 minutes. Remove from the heat and very carefully transfer the oil to a heat proof bowl or glass jar.

I made this with a couple of modifications others had suggested. I used a scant 1 1/2 cups broth and would cut it down to 1 or less. The dish was pretty soupy. I cut the sweet potato into larger chucks but don’t see the value for flavor or thickening. Maybe try a Yukon gold potato next to one. Flavor and smell were good.
My big compliant – 10 minutes for prep. no way. Took at least 30 minutes to cut chop grate clean those items. Cilantro by itself is easily 10 min to rinse, dry and separate leaves from stems. In addition, rice time was not included. Had I not read carefully, all we would of had would have been this dish.
All that, I would still make this again. but plan at least an hour for it, the rice, and prep.

I made this in an Instant Pot after reading earlier reviews. I kept my potatoes in big chunks and while they didn’t disintegrate they were completely soft. Next time I’ll cut them small and add after pressure release. I used only 1 can of coconut milk and 3/4 c. of broth. After 6-7 minutes of boiling to reduce liquid then adding the spinach & lime juice (I would cut the lime juice in half) I thought the consistency was fine.
I agree the only way the prep time is 10 minutes is if you have everything washed, chopped, squeezed, measured out and ready to go (mise en place), then start timing.
The flavor is great, we enjoyed the dish and would make again, thanks.

I was disappointed when I took the lid off as mine looked thin and watery, the sweet potato disintegrated and it just didn’t look like the pictures. Then I tasted it. Oh. My. God. It was amazing. Just made this last night. It was delicious and easy. I used half chicken renters and half thighs. I also used lo mein noodles instead of rice. It’s a keeper and I’ll be making it again soon. I think some cashews would be good for some crunch.
We made this tonight with family friends and it was delicious! We also added some cauliflower to it but other than that we did exactly as the meal was written. We made the naan suggested to go with it and that was good. It really puffed up a lot and not so flat but still good. We will make this again!

I loved the recipe because of its unique flavors. However, mine did not turn out like the photo:( I tried mine in an instapot and it came out so watery! I followed the recipe exactly as it stated and used the proper measurements of all ingredients. Maybe the instapot created a more watery finish? I might have to try it again on the stovetop!
Hi Jacqueline! Sorry you had some trouble. Yes, the instant pot will create more moisture, but it sounds like your created a little too much. Next time, try reducing the amount of broth to 1 cup and simmer the sauce on saute for 5-10 additional minutes. That will thicken the sauce right up for you! This was great and even my picky eater ate some. I did it on the stovetop and used broccoli and red bell pepper instead of sweet potato (I try to avoid starches for health reasons). I also love acid but juice of one lime was good for me in this recipe (it was a pretty juicy lime). My husband had it with rice noodles and I had it with cauliflower rice with a little sesame oil. The kids had regular jasmine rice. Definitely wish I would have whipped up some grain free naan to go with. Next time!!

This was absolutely delicious. I am always impressed by how no recipe of yours has ever turned out poorly, but I’m not complaining! I did mostly leave the lid off and cook for an extra 10 minutes because I wanted it slightly less thin, but it was wonderful as written.

I found this Monday and made it Tuesday – it was delicious!!! My husband and I love curries and this did not disappoint. The ONLY comment is that it’s not a “30 minutes to the table” dish – it actively cooks for 30 minutes and there is a fair amount of prep involved. Having said that – don’t let that deter you – this is awesome and will become part of our regular rotation! Thank you!

3 cups of liquid was way too much in my case. I followed the recipe exactly, adding only one cup of chicken broth. This turned out so thin, like a soup, despite simmering for 40 minutes. I used full fat coconut milk, but maybe I should have used coconut cream instead.
I added a flour paste (out of corn starch and didn’t think I would need any this week) to try and turn it into sauce instead of soup. I didn’t want to simmer any longer because I didn’t want the sweet potatoes to disintegrate.
Three stars because the flavour was good and I will make it again, albeit with significant adaptations.
As I am posting this, I see that many other people have commented on consistency issues. I should have read the comments before I made this!

Made this for dinner and it was delicious! Just a few changes – used 1/2 cup chicken broth, 1 can full fat coconut milk, cut the sweet potatoes a little bigger, juice of half a lime and let it simmer a little longer so that the sauce thickened and the flavors came together. Even better the next day!

I actually made this twice this week! First time for a friend that came over. That time I followed the recipe to a tee. The second time was last night just for me 🙂 so I would have plenty of leftovers. 2nd time I used 1/2 of an onion instead of scallions, 2.5 lbs of boneless chicken thighs (all they had at the store and I didn’t want to have leftover raw chicken) and added a half a bag of kale and the leftover spinach from the 1st time I made it. So great both times! I made it in the instant pot so I had to boil it quite a bit to thicken it up. I don’t mind that the sweet potato disintegrated. Thanks! This may replace my other favorite curry chicken recipe!

Amazing Flavor! I had chicken breasts on hand so used these and would not recommend. I think the cooking time was too much for the breasts and they were dry (I used instant pot). Thighs would have been amazing! I added about half of a roasted butternut squash to the final dish and a bit of sriracha. For leftovers the next day, I added some canned chickpeas (and more sriracha of course). Excited to make this with thighs!

Ok guys! I made this for a second time and added my own spin to it to make it more like a stew. First, I would definitely recommend roasting up the sweet potato and adding it upon serving to avoid the possibility of a mushy potato. Second, I used less broth (3/4 cup) and even added a tablespoon of arrowroot powder to it to thicken it up.Third, I sautéed some mushrooms and threw them in the pot along with some frozen peas (the bigger ones). Lastly, I used bok-choy instead of spinach only because spinach doesn’t agree with me. Oh my goodness, the flavors and the richness of this dish is so delicious. I served over a small amount of rice but added a bit of zucchini noodles to my bowl and it was delish! I also bought store bought Naan from TJ’s and it was great if you don’t have time to make it fresh. So, for those of you bummed out that it was too soupy, throw some veggies in there. You can’t go wrong with this combo. I can ‘t wait to try some of Tieghan’s other recipes.

LOVE this recipe! I add some extra cayenne because it were super spicy lovers in this family! Question though, I’ve made it 3 times now and I still somehow keep getting it too soupy? I’m not sure if I did something wrong or if it’s just supposed to be super liquidy, but I only used 1 cup of chicken broth and it was like soup. Then, I think because I only used 1 cup of broth, the amount of lime was way too overwhelming. I wanted to love it and I will try again with changes!

This was really tasty. I made mine in the Instant Pot and it was pretty soupy when it was finished cooking, so I boiled it with the lid off for about 10-15 min (longer than the suggested 5 min). The sweet potatoes broke apart, but I found it thickened the sauce even more. The chicken shredded on its own when I stirred everything. So, so delicious. Flavours are awesome. I’ll make this again!

This was terrible. The stock added to the coconut milk created a thin soup, not the hearty creamy spicy sauce I expected. There are better recipes for a quick chicken curry.

This was so delicious, and came together so quickly in the instant pot. I served it over basmati rice with green onions on top, and while it was pressure cooking I also fried up some hedgehog mushrooms in a lil butter to go on top. The sauce thickened up beautifully on ‘saute’ mode- but for me it took more like 10 minutes of simmering on sauté to get the desired thickness. Thanks for the great recipes as usual!

I made the Instant Pot version of this. This had great flavor! But it definitely made produced too much sauce/broth compared to how much chicken was in it. I also had the issue of my potatoes disintegrating fully so next time, I’d use less coconut milk/broth (though I only used one cup of broth) and I’d cook the potatoes separately.

I made this last night – after work. Easy to make and ingredients were all in my pantry… It was delicious! From the first bite this one was a do again. We’ve made it every other week since it was first shared and we fight over the leftovers! Seems a little complicated at first, but by the 2nd or 3rd time it was easy to throw together and was on the table quickly. I’m a little slow to the party on this one as I just made it today, but it was amazing – a definite keeper! I cooked it on the stovetop and used just one cup of broth. I realized at the last moment that I had no limes and did not want to run to the store, so I served it with Patak’s Spicy Pickled Lime instead. It was a great addition, and I’ll purposefully forget the lime juice next time. Thanks for a great recipe!

This is my second time making this, and I just cannot understand how the sauce remains so thin! This time I made sure to use a scant cup of chicken broth and used coconut cream instead of coconut milk to help it thicken without adding a separate thickening agent. Unfortunately I’m thirty minutes into simmering and risking the sweet potatoes turning to mush again, so it looks like cornstarch will have to save it.
For your recipe pictures, did you roast your sweet potato in the oven and then add it in? I just can’t seem to get the same kind of char, especially when adding the liquid immediately after the sweet potatoes. Maybe if I roasted them separately I could simmer the sauce for an hour to thicken it and add them afterward to save them from mush. It’s a more work and dishes, but I already feel like this recipe has ended up being more work than expected – twice now!

Making this for the 3rd time because it was just so good!! I added a little brown sugar though, because i like that added when I add fish sauce to recipes. Also, one of the times I had to omit the fish sauce altogether because of a severe fish allergy someone had and it still turned out really good. I prefer the fish sauce for sure (plus brown sugar) but it’s definitely still really good without it if needed.

Made this tonight In the Instant Pot- easy and good and loved by the kids, too! Sauce didn’t really cook down for me, so I would reduce liquid next time as it was a bit watery. I cut the sweet potatoes in a small dice and they pretty much broke down and became part of the sauce, which was OK with me. Will throw in more veggies next time, to round it out and fill in the sauce? It’s a keeper!

I made the Coconut Milk Braised Chicken with Sweet Potatoes and Rice. I changed just a few things decided not to do the naan bread and added cauliflower towards the end of cooking time. I needed less carbs that’s why I added the cauliflower. My husband and his parents in their 80’s loved it. I love your recipes. I will definitely add it to my to my line up of foods.

Just delicious! We love coconut milk, so I added in a bit more – almost 2 full cans. Just made my house smell so good! Just the right amount of spice, and the chicken was so moist! (I almost switched to chicken breast, but so happy I stuck with the thighs)
I’m no baker – but I took on the Naan. My dough was super sticky, making it hard to work with. Tip (I figured out a little too late) – only roll out the dough right before you put it in the pan. Otherwise, it’s REALLY HARD to lift off the counter, no matter how much flour you use! So mine were a little mis-shapen, but so happy I made them myself! This was so good and easy to make. I added some Penzy’s Hot Curry Powder to my chicken rub and also threw in some babycorn (because it is my fave). The flavor of this is incredible. If you want a thicker broth, just cook it with the lid off so more liquid will evaporate.

Made this on stovetop minus the cilantro (which I did not have). I found it somewhat bitter and began hunting for chunks of sweet potato to assure it was in every mouthful of the chicken. The sweet potato sweetness helped but without that it was not a pleasant experience.

Best recipe I’ve made in a while. Definitely use chicken thighs. Next time I’d double the recipe because we like some leftovers, and this was just enough for me, my husband, and our boys age 2 and 1. I made some basmati rice and added steamed peas to the rice, and also roasted a head of cauliflower with yellow curry powder until it was not quite al dente and then processed it in the curry sauce In the IP (after taking the cooked chicken out) for 1 minute. Mostly because I got a late start on the cauliflower and didn’t have time to keep roasting it, but it melded the flavors together so well! I was licking the bottom of the serving dish. Will make again.

I make so many of your recipes and love the way you craft flavours and ideas. (We made it with your naan too of course!) This was good— my family loved it but if I was making again, I would add half the fish sauce. While we love Thai flavours and often use fish sauce, two tablespoons was a bit much for this I thought.

Made this tonight and it was very good. I made sure the chicken was well coated in the turmeric, ginger and oil and let it sit while I prepped everything. I used 3 large handfuls of mixed greens (power blend). I used 1 c of broth and a whole can of coconut milk. It was plenty soupy. Will definitely make again. Served with brown rice.

Loved the recipe and finished product (as always, your recipes are my fave!) but had some trouble searing the chicken for some reason…used an enameled Dutch oven, 1T of Sesame and 1T of EVOO and chicken thighs. The recipe said to sear for 2mins but the chicken was stuck to the pot when I tried to turn over. Left it no longer thinking once it was brown it would naturally release but didn’t. When I finally turned, the other side did the same thing. Any thoughts or suggestions would be appreciated! Thank you!!

I made this in my instant pot and had great success. I followed the directions as is but omitted the sweet potato till the very end. I put the instant pot on saute after it was done and added the sweet potato and cooked them till they were tender. It didn’t take to long. I also made a roux of cornstarch and water to thicken it up a bit. It was excellent. We really enjoyed it. I will definitely make this again.

I made this last night just for me. I usually reserve recipes like this for when my son is visiting but I am bored with my usual meal of baked potatoes and soup during our “shelter in place”. I made this chicken for my family two nights ago, and we all agreed it’s the best ‘curry-type’ dish we’ve ever had! I had to sub curry powder for the turmeric, as that’s all I had on hand, and it was delicious. And I didn’t weigh my chicken, but used three cup up chicken breast. We couldn’t wait to have the leftovers again the next night, and dare I say it tasted even better. Thank you for this delicious recipe.

I am an adventurous eater and like a lot of different cuisines. The pictures looked so good that I had to try it, especially because I loooove coconut curries, and I thought this had a similar vibe. I also lived overseas for a period where I didn’t have an oven and cooked exclusively using this sort of stovetop method, so I thought I would try something new with it. Unfortunately, I didn’t really care for this mix of flavors even before the lime, and then adding two whole limes worth of juice at the end made the whole thing taste sour. To anyone who didn’t care for this like me, I would say try this same cooking method but with other seasonings, as there are many other good options out there!

Made this tonight on the stove top. It ended up being way too soupy and I only used 1 cup of chicken stock! Next time I would cook it uncovered for the whole 30 mins and maybe throw the sweet potatoes in half way so they don’t get too mushy. I’d also increase the amount of spices to deepen the flavour. I’ve gotten obsessed with pinning Half Baked Harvest recipes lately and this is the first one I actually tried. Needless to say there will be more to come! This was DELICIOUS! With limited meat options in the stores right now, we used bone-in chicken thighs but when cooked in the IP at the recommended time, the meat was falling-off-the-bone tender anyway. Yum! I made this tonight for dinner. I skipped the fish sauce as I don’t eat fish but overall the taste was lovely. Our consistency was soup like but I believe that was my fault as I halved the recipe but forgot to half the liquid, oops. The sweet potato melted into the sauce so next time I think I will add more sweet potato with some smaller chuncks and some larger chunks to ensure that I have some pieces of potato.
Overall a brilliant recipe that tasted brilliant.

It took me closer to 90 minutes for the potatoes to cook through. Honestly, this is NOT a 30 minute meal, not by a long shot. Honestly, just taking a pack of boneless skinl;ess chicken thighs and trimming them of excess fat and pieces of bone that often are left attached can take a solid ten minutes, especially if you’re doing a large package and freezing half the chicken, like I suspect a lot of folks are doing. Add in cleaning that up and you’re likely already 15 minutes into this thing without even turning on the stove. Still, even thought it took a little over two hours (prep and cooking) it was a tasty meal. Far too time consuming for an average home cook to make on a busy weeknight, but a nice weekend meal. Next time I might just cut the sweet potatoes closer to a large dice (approx. 1/2 inch) and see if it helps.

I made this recipe last night and it was fantastic! My roommates raved about how good it was all night long. I don’t have an instant pot/slow cooker/or even a dutch oven so I braised the chicken in my frying pan before making the rest of the recipe in a pot and I had no problems. The flavors in this dish are incredible– the perfect amount of spice and sweet and tang. The sweet potatoes work so well in the dish. My final product looked a little different from the photos– not quite as creamy, but the flavors were so good I wouldn’t change a thing.

Had to up the garlic to 8 cloves, shallots to four and ginger root. Added mustard seeds and chilis to bring it to a level of heat we like. Only used one cup each of chicken broth and coconut milk and found it super soupy and not very thick at all, even after 40 minutes of simmering.

Made this tonight. My husband and I absolutely loved it! Delicious flavor, great texture. Actually could go with a thicker broth, so will likely use more coconut milk next time (I only used one cup of chicken broth). My sweet potatoes were perfect following stove top directions; didn’t fall apart, but perfectly mushed when eating. A couple of things – I’m not a fan of fish sauce at all, so I used oyster sauce. I swapped out half the olive oil for sesame oil since I knew I’d be too lazy to make the chili oil. And I only juiced 1 lime so it wouldn’t be too overwhelming. This one is definitely getting printed and added to my recipe book!

Super easy to make in the instantpot. I didn’t have spinach so I used kale, and I left out the fish sauce because I also didn’t have that. My chicken came out slightly overcooked, but I enjoyed the flavors of the dish. I will probably play around with the meat to veggie ratio next time to get more veggies into our diets. My 2-year-old loved this too!

I cooked this on my stove and it came out really delicious! I will make it again but use less broth/coconut milk because it didn’t thicken up as much as I would have liked. I could also see this being really good with broccoli added too!
Also added in curry powder, cumin, and paprika to the chicken to add a bit more warmth.

This looks so good! I think I’ll make it this weekend. It’s summer but it’s been gloomy and rainy for weeks.
Just a quick FYI, the active chemical which makes turmeric so healthy is called curcumin but it doesn’t get absorbed by our bodies very well by itself. Black pepper helps the absorption so it’s important to always have them together if you want the most health benefits from turmeric!

This recipe has become a favorite of mine. My boyfriend loves it too.
I usually have chicken in the freezer and the spices in my cupboard. When I don’t have all the ingredients, I mix it up a little bit. Instead of shallots, I’ve sometimes used yellow onion, I’ve used chicken breast instead of thighs, dried cilantro instead of fresh.
If I want to make a variant with fewer calories, I substitute the coconut milk for a light one, add some extra sweet potato and skip the rice and naan.
There is so much flavor with the fish sauce and spices, it’s hard to go wrong with this one. I’m not usually one for making recipes like this, but now I found one that really works and I keep turmeric, ginger, cayenne and fish sauce in the house at all times!

I really wanted to like this recipe. I followed most of aside from a few substitutions, I used soy sauce instead of fish sauce and used ground ginger instead of the fresh ginger the recipe called for. The curry was thick, just how I like it, but it tastes like it’s missing something but Im not sure what. I really love coconut curries but I was expecting this to be more flavorful and a bit sweeter. So much umami! No fresh cilantro or sweet potato so I threw in some carrots instead. I added ground coriander to seasoning of chicken to help impart some cilantro like flavor. Definitely needed a sweet aspect to counter the earthiness so I added a couple tablespoons of coconut aminos and 2 more of honey while it simmered which I think made it even more delicious!! Will certainly be remaking.

Soooooo good! I happened to have everything I needed in the house to make this so I used it as a clear out the fridge dinner and it turned out way better than expected. I had only about half the chicken I needed, but I used the same ratio of all the other ingredients in the instant pot and the flavors are great. It was a little thin even after boiling for 5-10 minutes so I stirred in some coconut cream. I also added a can of crisped up chickpeas to make up for the smaller amount of chicken and it worked perfectly. Topped with Greek yogurt and chili oil and they balanced each other perfectly.

I loved this dish. Made it in the Instant Pot. I reduced it a LOT at the end, maybe a smidge too much, but it was very soupy after I let it NR for over 20 minutes – that said, it tasted great, so full of flavor. Chicken just falling apart. Served with polenta instead of rice. Definitely would make again!

I made this recipe and really enjoyed it.I made it on the stovetop after some of the comments discouraged the instant pot. I stuck pretty close to the recipe except I only had one chicken thigh on hand so I added a package of sliced mushrooms and a can of chickpeas. The recipe seems to beg for cauliflower and a few crushed peanuts on top so I’ll add those items next time. I didn’t have a chance to make the oil to drizzle on top but that sounds delish. I used 2 cups of broth and liked that it was sort of soupy. I guess that’s a personal preference. Overall, this is a tasty dish that can be modified in numerous ways based on personal preferences and what you have on hand.

I was so excited to make this recipe and it did not disappoint!!! SO delicious and fresh tasting the the cilantro and lime juice!!! I made it on the stove top and used potatoes instead of sweet potatoes (because that’s what was in the fridge). It was a good substitute but definitely want to make this recipe again with the sweet potatoes!! I also accidentally put the full 2 cups of broth in right away (oops!) so I had to thicken with cornstarch. Thanks so much for your clear and easy steps!!! Wow your recipes are killer delicious!

Wow, this was amazing. Simple but tastes like it took hours. Though it kind did because somehow it always takes me longer to make than what’s in the recipe but when you get a late start and HAVE to get the naan rising first then have to make the rice, find your fish sauce (new bottle hiding in the pantry downstairs), pick through the bag of spinach which was only mostly good, feed the dog, and the list goes on BUT none of it is the fault of the recipe and the result was well worth any “hectic-ness.” My cilantro was bad so I skipped it and it was fine. I had precut butternut squash so I took the easy way and substituted it for the sweet potatoes. I also threw in a few string beans because there were a few left in the fridge and it was a nice addition. The HBH naan is a family favorite and it topped off the perfect Wednesday night dinner.

Wow! Amazing recipe! I swapped the chicken for tofu and sweet potatoes for russet potatoes just because that’s what I had on hand. I ended up adding salt to the chicken rub part, the onion addition, and a hefty addition at the coconut milk part to season the potatoes while they cook. It turned out perfect in my opinion! This is AMAZING!! I’ve already made it twice and just found the recipe less than 2 weeks ago! I made some substitutions because I’m navigating AIP right now, but it still came out delish. Some changes I made: added 1 carrot cut into chunks, used a white sweet potato instead of orange as they’re a little less sweet, one time i used chicken thighs and one time boneless country pork ribs, and instead of a starch i used roasted spaghetti squash in the bottom of the bowl and one time I used TJs shredded cabbage and both were amazing!!! And the limes are key. Thank you for sharing!!

Another exceptional HBH dinner, we have been enjoying your recipes at least twice a week since March when we became a multigenerational household. This was so good, I haven’t found a good yellow curry recipe in a while and this takes the cake. I roasted my sweet potatoes and added them at the end. I also did only one can of coconut milk and a splash of chicken broth. I got an incredible consistency after simmering for thirty minutes, 15 covered and 15 uncovered. Thanks!!

Very yummy! Made in the instant pot so changed a little- cooked chicken for 6 min then threw in sweet potatoes and pressure cooked another 2 minutes. Sweet potatoes kept their shape and not too mushy. Maybe less lime next time? But still very good! Also left out the cayenne as Emmy 2 year old is having some!

Hey Lisa! For best results, I would just cut the chicken into pieces so that everything cools evenly. Then follow the directions for the instant pot, but add 5 minutes to the cooking time. I made this for dinner tonight and doubled it. Used kale in place of the spinach. SO GOOD! The flavors in this recipe were delicious but I would not make in the instapot again. The coconut milk curdled and the final texture looked very unappealing. The chicken cooked perfectly but the veggies turned almost to mush. Would definitely try again on the stove top! I kept everything the same plus the addition of a half of cup of lentils which went nicely. Homemade naan was the star of the meal!

I just made this for tonight’s dinner. I had surgery yesterday and I was craving comfort food. Something packed with vitamins and flavorful. I knew I’ll find the right recipe in your website! This is the 4th recipe I make from your website and they are GREAT! In my house we always cooked Italian or Spanish dishes. Turmeric, ginger, fish sauce, coconut milk are not ingredients in my pan but they definitely make such a great twist to our usual cooking flavors! YUM! I am sad that I did not have any garlic naan because that would have hit the spot! I also used quinoa instead of rice, and I found that it did not absorb as well as rice would have (just an fyi for anyone considering going that route). If you don’t like your dishes to be lime-y maybe cut back on the lime, but I LOVE the flavors of cilantro and lime and coconut so bring it on. Also, I cooked it in the Instantpot, but I found that my sweet potatoes turned sorta mushy and disintegrated – I either cut them too small or the pressure dissolved them, regardless it was still soooo tasty! Can’t wait to try another recipe 🙂

This recipe was amazing! We found that the sweet potatoes were more cooked than we had hoped. We used the Instant Pot so not sure how to keep that from happening with this cooking method. We used legs and thighs – because it’s what I had defrosted but am anxious to use breasts on the next go around. I also used cauliflower rice instead of rice – but DEFINITELY had naan (store bought). Definitely don’t be shy with the salt. I’ve never made any dish like this and will definitely make it again.

Made this last night and it was the perfect, cozy dinner for a snowy evening. I cooked this stovetop and the flavors were incredible! I just made this in the slow cooker and it came out delicious but the chicken thighs are shredded and I added the potatoes in the last two hours and they are also falling apart. Since the recipe calls for starting it on the stove in a Dutch oven can I finish it by baking it in the oven instead of slow cooker? It would make for easier clean up too.

Really enjoyed the flavours of this recipe. I overlooked the cayenne while putting the dish together and noticed. I think it really needs that bit of heat, so make sure to add it! The sweet potatoes did soften to a point where they just mashed with a fork. if you are particular about texture I would look at maybe adding them in a bit later. I will definitely try making again in the future!

This was so delicious! I skipped the cilantro as we don’t like it. I used bone-in chicken thighs, 2 sweet potatoes peeled and cut into huge chunks, only 1 cup of broth and 1 can of coconut milk (I think it was just shy of 2 cups), all cooked in a Dutch oven on the stovetop and served over rice. It was thick and creamy, the perfect fusion of Indian and Thai flavors.

I followed the braised chicken recipe using the stovetop method with the exception of no cilantro ( it had gone bad so I skipped it) and I added 2 teaspoons of coconut amino‘s at the end for a little flavor boost and freshly ground pepper . I did not have the chili oil. My husband looked at it as it was simmering and rolled his eyes as he said “another new recipe for us to try”? BUT he really loved it and asked for it to be put in our regular rotation. It is full of complex flavors that work very well together. Thanks for the great recipe.

Delicious and versatile dish!
We have meat eaters and vegetarians in our home. So we switched this up a bit and just subbed a head of cauliflower for the chicken (we cooked chicken separately). Used the full 2 tablespoons of fish sauce, even after taking a whiff of it lol! Totally worth it. Definite keeper all around.

I did everything exactly as written for the stove top, and only used 1 cup of broth and mine came out very watery 🥺 I’m not sure what I missed… but the flavors were great. Any tips on thickening it up for next time?

I really enjoyed this recipe, but I can’t help but be frustrated at the cook time listed. I realize that “30 minute” in the title is great for SEO, but to say at the top that it’s 15 minutes prep 15 minutes cooking is just not true. In the text of the recipe you call for 5 minutes of marinading and 25-35 minutes of cooking time, after multiple steps of prep.

Not bad for homemade, but I’d be disappointed if I got this in an ethnic restaurant. Cutting the chicken breast into large pieces made sense, but it also meant the cooking times were too long for their small size. I used only 1 can (13.5 oz) coconut milk and 1 cup broth and it was still very runny.

This was excellent flavor and pretty easy to pull together – some thai dishes can take forever to prep! The ONLY changes I would make would be to cut the chicken into bite sized pieces and the sweet potato into smaller pieces. I had trouble getting the two to come up and the same time… aside from that – A KEEPER!!! Thanks Tieghan!

Made this tonight stove top version. Fiancé wasn’t sure about the sweet potatoes but I liked it just as it was. I did cut up my chicken before cooking and only cooked until sweet potatoes were soft but still holding their shape. Added it over rice and enjoyed. I will be making this again, with less sweet potatoes next time.

This recipe is my go-to for a warm flavourful dish! I love that it works with my AIP meal plan! I just leave out the cayenne pepper, rice, chili oil and naan; serving it as a stew/soup instead! Makes wonderful leftovers too!
