Hey, hi! Happy Super Bowl Sunday!!!

Please tell me you guys are making some KILLER food today. I mean, to me, the Super Bowl is as much about the game as it is about the food. But then again, I am kind of into really good food.
Anyway, my guess is that whether you are watching the game because you love football, watching the game because you love the food or maybe just having a lazy Sunday you might be looking for some healthy recipes to get you back on track after a day like today. Or maybe you just need some good recipes for the week? Well, whatever the reason, I’ve got you covered. I picked out seven of my favorite healthy winter recipes to get you through this week, plus maybe one bonus recipe at the end…it’s kind of sweet!

To start the morning off right: The Mean Green Smoothie

To make Monday so much better: 30-Minute Healthy Kickin’ Cajun Chicken and Rice

There’s quinoa and veggies in here, meaning all the cheese, that’s also in here, is totally OK: Quinoa Crusted Baked 3-Cheese Zucchini and Eggplant Parmesan

To make mid-week (and mid winter), pretty and colorful: Seared Ahi Tuna Poke Salad with Hula Ginger Vinaigrette + Wonton Crisps

To bring the tropics right into your house: Cuban Chicken and Black Bean Quinoa Bowls with Fried Bananas

For that busy night when you want to reach for the Asian takeout…make your own: Sake and Ginger Soba Noodle Salmon Stir Fry

Just a freaking bowl of goodness: Spicy BBQ Chickpea and Crispy Polenta Bowls with Asparagus + Ranch Hummus

BONUS: 5-Minute Grilled Cinnamon Toast with Chocolate…because we all need something warm and chocolatey during mid winter (or ok, anytime).

This is a great list!!! I don’t how I missed that Cuban chicken bowl the first time around, but I’m pinning it to make soon!
I don’t have a bowl party to go to but I do have some Better’n Cinnamon Chocolate peanut butter and that toast looks SO good.
I also have some low calorie brownie mix from Trader Joe’s and some hidden Reece peanut butter cups SO I made a brownie mug and it was SO good (have two Reece cups left for another one).
I saw your cornmeal mush in a picture SO I think I’ll have cornmeal mush, eggs, and Geotta for supper.

I made the Cuban chicken and quinoa bowl and it was fabulous! It was a little bit of work but worth it!
I absolutely love your site! The blog and pics get my tummy rumbling every time. My husband and I are vegetarians, and I enjoy converting the meat recipes into dishes we can devour. We have not eaten one that we wouldn’t make again and again.
Do you come up with these recipes as a hobby or do you have a restaurant/cafe? If you don’t, then you should!
On a side note, I love the conversion of barn to home. You have come up with stylish ideas, and the transformation is awesome. My husband and I have dreams of rezoning a church, barn or any building with unique architectural potential.

To begin with if you use dark chocolate, hence 70% cocoa, cinnamon which has tons of benefits & whole grain bread, then what’s your problem?

Try frying the plantains in coconut oil….sounds like a win win to me.
