Can you tell I am a little indecisive or what?
I mean, chia pudding 3 ways? Come on, can’t I just pick ONE flavor?! Clearly I simply cannot, so I went for all three! Three fall inspired flavors that I could not be more excited about!!

Fig and Whipped Maple Butter
Chocolate Honey Banana
All my favorites! Apple, fig and chocolate. Yum, yum, YUM!
Okok, but first, life talk! Or my like goat, goaty talk! Soo, you remember on Sunday how I mentioned that Mara had her baby, and that Tiramisu was the only one of our three goats left who had not yet delivered? Well, she finally delivered early on Sunday morning (we all thought that for sure she would go first – she was huge!). Again, I was the first one to find the new baby goats. Tara did have three kids, but sadly one of her babies was dead when I found them all. Literally the saddest thing ever. Tara seemed fine, but just seeing that lifeless little goat was really hard. It’s not an uncommon thing for a baby to die, so we knew it could be a possibility, but I hoped and prayed that it wouldn’t happen. Tara’s other two babies are a boy and a girl. The little girl has been fine since I found her, but the baby boy has needed some help. I spent a lot of time on Sunday helping him nurse to make sure he got some milk in him. Thankfully once he started to get nourishment, he gained some strength and is doing much better now!
Feeling kind of good that I helped the little guy get there. Never did I ever think I would be handling baby goats, let alone helping them nurse and taking care of them, but I have to say, I love it!
And I know I’ve said this like more than once in the last week alone, but puppies have nothing on baby goats. Nothing.
Soo, this leaves us with a grand total of eight goats. Three healthy moms, two healthy baby girls and three healthy baby boys (aka the billies). My favorite little family is Layla and her two kids. They were the first-born, and I was the first to find them, hold them and love them, so they are just kind of special. Plus, I LOVE how protective and motherly Layla is with her kids. They eat, play and snuggle together and it’s the cutest thing ever.
As of right now the kids still don’t have names, but I’m sure Asher is going to change that very soon. I heard talk of naming them all after Harry Potter characters…
Alight, goat talk over. So sorry if that totally bored the heck out of anyone. I will try to keep the goat talk down the rest of the week, but umm, warning… that may be difficult. If you ARE digging hearing about and seeing the baby goats, just follow along on Instagram and snapchat. 🙂
SOO. I made us chia pudding! Let’s talk about that!
I dunno about you guys, but when it comes to breakfast I am a major creature of habit. Yogurt and fruit is my GO-TO and I rarely ever stray from that combo. I mean, sure I make crazy breakfasts for lunch and dinner, but in the early hours of the morning I can barely brush my hair let alone cook. Enter my yogurt + fruit.
I can’t lie, it sometimes gets a little boring, so I finally decided that I was going to make a few batches of chia pudding for easy breakfasts, or even as an easy healthy afternoon snack. I adore chia pudding so I thought this was a genius idea on my part. I really should have started doing this long ago. Chia pudding is great because you can make it on Sunday and then just let it sit in your fridge until you’re ready to eat it!
Since I have fall majorly on the brain, my pudding flavors reflect the season…
…Cinnamon Apple: a combo you really just cannot beat. It’s classic, and absolute perfection when topped with caramelized apples, pumpkin seeds and almond butter. Gimme.
…Fig and Whipped Maple Butter: words cannot describe how insanely good this flavor is. It’s all about that WHIPPED MAPLE BUTTER. Literally it’s the best thing ever, and totally delish with fresh figs… my favorite.
…Chocolate Honey Banana: I mean chocolate pudding for breakfast… enough said.
What I love most about these chia puddings is that they feel special. Like they could be a weekend breakfast, but yet they are crazy healthy and literally just take minutes to prepare.
Even if you’re one of those people who love your morning breakfast and cannot bear to part with it (I know my mom could never give up her artisan grain bread and hot chocolate/cacao, and I do have to say, I love my yogurt!), these make really great afternoon snacks!

Autumn Chia Pudding 3 Ways.

What I love most about these chia puddings is that they feel special. Like they could be a weekend breakfast, but yet they are crazy healthy and literally just take minutes to prepare.
Ingredients
Cinnamon Apple
- 3/4 cup milk I used coconut
- 3 tablespoons chia seeds
- 1 teaspoon vanilla
- 1/2 teaspoon + 1/4 cinnamon
- 1/4 teaspoon ginger
- 1-2 tablespoons maple syrup
- 1 tablespoon butter
- 1 apple chopped
- 2 tablespoons pumpkin seeds
- pinch of flaky salt
- apple sauce + almond butter for serving
Whipped Maple Butter Fig
- 3/4 cup milk I used coconut
- 3 tablespoons chia seeds
- 1 teaspoon vanilla
- 2 tablespoons butter
- 2 tablespoons maple syrup
- 2 tablespoons toasted walnuts
- 2-4 fresh or dried figs
Banana Chocolate
- 3/4 cup milk I used coconut
- 3 tablespoons chia seeds
- 1 teaspoon vanilla
- 1 tablespoon cacao or cocoa powder
- 2 dates finely chopped
- pinch of flaky sea salt
- 1 banana
- cacao nibs + hemp seeds + yogurt + coconut + honey for serving
Instructions
Cinnamon Apple

In a glass jar or mixing bowl, combine the milk, chia seeds, vanilla, 1/2 teaspoon cinnamon, ginger, maple and a pinch of salt. Add a spoonful of apple sauce to the bottom of your jar if desired. Cover and place in the fridge for two hours or overnight. In the morning, heat a skillet over medium heat. Add the butter, apples and 1/4 teaspoon cinnamon. Cook until the apples are softened, about 5 minutes. Stir in the pumpkin seeds and cook another 2 minutes or until toasted. Remove from the heat and stir in the salt.

Top your pudding with a dollop of almond butter and then spoon the apples over top. Eat!
Whipped Maple Butter Fig

In a glass jar or mixing bowl, combine the milk, chia seeds, vanilla and a pinch of salt. Cover and place in the fridge for two hours or overnight. In the morning combine the butter and maple syrup in a small sauce pan and bring to a boil. Boil 3-5 minutes or until thickened. Using an electric mix (or your hand with a lot of might) whisk the butter until whipped, about 2 minutes. Stir in a pinch of salt.

Top your pudding with whipped maple butter, figs and walnuts. EAT!
Banana Chocolate

In a glass jar or mixing bowl, combine the milk, chia seeds, vanilla, cacao powder, dates and a pinch of salt. Cover and place in the fridge for two hours or overnight. In the morning, mash half a banana and stir it into the pudding.

Top your pudding with the remaining half of the banana - sliced, cacao nibs, hemp seeds, yogurt, toasted coconut and a drizzle of honey. EAT!
Chia pudding perfection, right? Thinkin so! 🙂
PS. If you think figs aren’t really your thing, I HIGHLY recommend at least giving them a try. If then you truly do not like them, dates, pears, apples and bananas will all work in their place.

Ahhh cannot wait to try these!!! Random question about chia seed pudding: sometimes when I make it, the milk doesn’t really set into a pudding texture. It’s weird…I sort of thought it could be the times when I have the lid on the jar, vs. just covering it with plastic wrap or leaving it open. But even with the latter, I’ve had it not set before. I use Trader Joe’s almond milk…any thoughts?
Hey Monica! That probably just means that your milk to chia seed ratios are off, just add a little more chia if your pudding is not thickening. Let me know if you have questions. Thank you! 🙂
I was looking at the recipe for the Banana Chocolate chia pudding and noticed the ingredient list calls for dates but the recipe doesn’t include them in any of the steps. Can you please clarify? Thanks

These look amazing! As do all the other recipes you post. Does your chia pudding end up be runny or firm? I used a coconut milk from a carton in the refrigerator section and it was pretty runny. Maybe that is what I should expect? Thanks!

Ooh I’ve been really into making interesting toppings for my morning bircher muesli or chia pudding lately – I’ve gotten a bit stuck on roast peaches and caramelised banana, or roast rhubarb when it’s around. I love the sound of these ones to change things up- especially the chocolate chia pudding, because who could turn down chocolate for breakfast?!

I immediately put these on my “to-make” list, but I waited to comment until I made them all. YUM! It is a light, but hearty and complete breakfast – and so easy! For mine, I used half skim milk and half nut milk. On the chocolate banana, I thought of blending the dates with the milk first, but it was early in the morning (quiet time), so I’ll give that a try next time. The buttered apple was so good! I wasn’t sure about the pumpkin seeds, but the flavors went together so well! (I didn’t include the almond butter – I’ll try that next time too) I made the maple fig with dried figs, and soaked them in milk while the pudding set. The whipped maple butter is amazing! I used the recipe amount of maple butter for double the pudding amount, and it was plenty for us – I think the dried figs gave it a lot of sweetness. I will definitely be making all of these again – more chia pudding recipes, please!
And, I will definitely be making whipped maple butter to put on EVERYTHING! It would be perfect for pumpkin donuts! Or even veggies – carrots, sweet potatoes, yum!

My pudding was not as thick as I would like. I followed the recipe and used 1 percent milk. I made it the night before and had it fir breakfast the next day. Any suggestions regarding how to make it thicker? Thanks.
Hi Mary! I would recommend using a higher percent milk. For best results I always recommend whole milk or canned coconut milk.
