Coconut Almond Cream Chia Pudding with Superfoods + Dark Chocolate.
You know what is really weird?

My parents have been married since they were eighteen (while my mom was eighteen and my dad was twenty-one) and not one of their seven kids are even close to being married. I just asked my nineteen year old brother and three of his friends (sorry for those awkward conversations guys) if they had a serious girlfriend. Not one of them did – let alone a girlfriend at all. I have not a clue why I was thinking of this topic, but I just think it’s funny how different things seem to be. I think my mom would say that it wasn’t really typical then either, and apparently neither of my grandparents were too excited to see them get married at such a young age.
Actually, I was probably thinking about this topic because my parents 30th wedding anniversary was last week, but we didn’t really get around to celebrating it until my mom’s birthday on Sunday. It just got me thinking how freaking crazy they where to get married so young. And how it’s a miracle they are still together. Really, I could not even imagine being married at twenty-one, and by then my mom had two kids.

I find this rather INSANE.

And now you probably find me rather insane for talking about such a random topic. Sorry, but I like randomness. In fact I am pretty sure I have been freaking my brother out with my latest texts…pretty sure he is wondering what the heck is wrong with me. I know the “do you have a girlfriend?” text really had to have freaked him out, I don’t usually ask those questions.
I have to say though, I’m sort of having fun messing with him. I’m telling ya, living on my own has made me a whole new and exciting person. Ok, while not really that exciting, I spent my Friday night placing a Williams-Sonoma order, but hey, baby steps.

ANYWAY, let’s talk about this coconut almond cream chia pudding.
I know this whole chia seed pudding concept may not be anything new for some of you guys, but I’m just now discovering it’s textured deliciousness. I knew chia seeds where magical little seeds, but whoa! I never knew that chia pudding could be so simple and tasty. All you really need is some type of milk and chia seeds and you’ll end up with a pretty good pudding. I of course added a little vanilla to mine, and some honey to sweeten things up a bit, but the flavor combos are endless!
Today I just went super easy and classic – fruits, nuts and seeds. I am really trying to keep recipes simple and not to fill them with a list of long crazy ingredients and flavors. I’m sure you have noticed, but I sort of like to keep building upon flavors and textures until I can’t go anymore. It’s mostly because I can’t make decisions on which ingredients I want to use, so instead I just use them all (assuming they taste good of course). It’s kind of an issue sometimes, but not today, today I went so simple!

Come on, can I get a high-five or something?
Ok, an invisible one will do.

In keeping with this whole healthy January thing, I thought this chia pudding would be perfect for today. There is nothing NOT healthy about this, and everything about this is so good, and I know I say this all the time, but it’s true.
This pudding is thick and creamy just like any other pudding, only you get to eat it for breakfast, dessert or snack. Gotta love that!

And you can totally top these with whatever you want. I just went with my favorite combos.

Now let’s eat some pudding, please!
First of all went back to look at the two cakes you made both were out of this world wonderful–but I would have had a piece of the chocolate–lucky mom!
Second being over the hill–I had many friends get married young and thank God they are still married (I’m still waiting for someone to ask–ugh).
Thirdly sorry to say I’m not a pudding person but I do like tapioca.
Hope you have a good week in the barn.
Thank you so much, Nancy! Chocolate all the way!!
I’ve yet to try the chia seeds and chia seed pudding….there’s something that just sort of creeps me out about those seeds….I think it from all those chia pets we played with as kids (whom am I kidding we did Kung fu panda in the office last year)…but if you say its good I may need to give it a try.
Yeah, I know what you mean. Black little seeds that you eat? A little creepy!
Thanks Lisa!
This is quite interesting. I’m going to try that pudding. I use chia seeds on my yogurt and it definitely thickens it up if you don’t eat it right away. Thank you T.
Thanks Brenda! Hope you love chia pudding!
Today is my birthday, and I was planning on having a chocolate shake as a special treat, but I think that this pudding might have just metaphorically beaten that shake up and thrown it out the window. So in other words, I can’t wait to try this!
Haha! HAPPY BIRTHDAY!!
Thanks Danielle!
Yum! I love chia pudding. And it’s a great excuse to have some bits of dark chocolate with breakfast!
Thanks Liz! And I agree!
I love chia pudding and so do my kids. It’s a great healthy treat. I’ve never added chocolate to it, but it sounds wonderful and I’m sure I wouldn’t get any complaints from my family for that sweet addition!
Wow! That is awesome that your kids love chi pudding! Major parent award to you!
Believe it or not, I haven’t tried chia pudding yet! But if there’s dark chocolate involved, I can’t resist 🙂
You have to try it!! 🙂
Wow, pudding for breakfast? Chia seeds and chocolate? Tieghan, you’re a genius! And huge congrats to your parents… 30 years is such a wonderful accomplishment.
Thanks so much! 🙂
I agree, it’s such an accomplishment!
Chia pudding to the max!!! I had some this morning, but it wasn’t half as fun as this!
Thanks Katrina!
Hi – new to this reply business. But I am definitely going to try this pudding with all sorts of fruits, nuts and dark chocolate – whatever I have on hand – it looks yummy!
I can relate to your Mom – we have 7 children also and the last 4 have waited until they are all in their 30’s to get married! (not such a bad idea). I tell them that I didn’t think they would wait that long – why couldn’t they get married in their 20’s when I was working and had some $$’s – now retired and with 4 weddings in 3 years – you know that gest a bit expensive! But I do wedding flowers and decor since I have retired as a health education professor – so that helps them and me too.
Enjoy your recipes so much and LOVE that new kitchen of yours! Wonderful planning and so worth the efforts and frustration 🙂
WOW! I am not sure we will ever have that many weddings in our family….it’s looking scary! LOL!
Thanks you so much for the kind words and congrats to you and your growing family!
Kudos to your parents for rocking the marriage for 30 years!! Cheers to many many happy years to come. As far as not being in a serious relationship when you’re young: to each their own…some peeps take a hot minute to acquire a taste for commitment, where some just know what they want right away. Sounds like you have a pretty kick A family, my dear! Loving this pudding and all your healthy and tasty add-ins!!
Thanks Julia!!
This looks amazing and would make me a very happy camper if i had this for breakfast!
Thanks Millie!
This chia pudding is screaming my name. And the photos… beautiful!!
It’s so interesting to see how lots of people in our generation are waiting to get married and have kids. I’ll be 30 next month and we’re not close to have kids yet. Congrats to your mom and dad on 30 years! That’s so awesome.
Thank you so much, Brittany!! 🙂
And yea, it is crazy! I can’t even imagine doing what my parents did.
Love chi puddings, gotta make it more often though. Thanks for great flavor options. And congrats on your parents’ 30th Anniversary!
Thanks so much!
I love that this looks healthy and dessert-y at the same time 🙂
Thanks Trish!
I’m with you on the whole relationship thing. My mom got married to my dad at 19. I’m 20 and I’m obsessed with a boyband and sometimes watch Disney Channel. I don’t understand.
This chia pudding THOUGH…. I’ve never actually tried it, even though I’ve always wanted to. You’re inspiring me!
HAHA! SAME HERE! 🙂
Thank you so much! So excited to inspire…but um you totally inspire me too. Seriously!
Congrats to your parents on 30 years! I had to laugh at your comment about “not being able to imagine being married at age 21” because that’s exactly what I did! Now, almost 3 years later I am still so so happy I did.
NO way! Really? that is so awesome, congrats!!
Thank you so much!
YUM. This is wonderful. I haven’t made chia pudding in forever and love the idea of making it with coconut milk!
Thanks Jenna! 🙂
Is the drizzle peanut butter? These look so pretty by the way!
It’s a drizzle of almond butter, but peanut butter would be great too! Thanks!
This looks so good! You’ve added such fun flavors 🙂
Thanks Nik!
I have yet to try chia pudding but you’ve convinced me ;). This looks so good and I love all those colorful toppers!
No way, really? I would think it would be something you’d love. Thanks Laura!
I’ve been thinking that I haven’t had chia pudding in a while . . . I have some coconut kefir in the fridge and I feel it would make a deligthful pudding:)
Oh I bet that would be awesome! Hope you love this!
This looks so great! I just popped a chia seed pudding in the fridge – cinnamon, pumpkin pie spice, vanilla. Once it’s done…gelling(?)…I’m going to try and beautify it like yours! Thanks for the inspiration!
oh yum! I love those flavors!
This pudding is beautiful and I want to shove it all in my face right now! Also, if I were my mom, I’d be married with two kids already too! How’s married with two cats instead? Baby steps…
🙂
Thanks Sarah!
Hi there, I made this last night using lite coconut milk as that was all I had in the cupboard and it didn’t set. Would this have made a difference?
Hey Sharon, no that would not have made a huge difference. Did you use chia seeds? If so, how many? I cannot think why it would not jell up for you.
Amazing recipe!! Just commenting to say I used “Light” Thai Kitchen coconut milk and this still turned out amazing. I used the whole can and added a tiny bit of almond milk. This pudding is delicious.
So happy you love this! Thanks Becca!!
I made this last night and tried it for breakfast today, absolutely in love. It turned out great and then today I topped it with cranberries, walnuts, and bananas- delicious! Thank you for sharing this recipe, it will definitely be a staple in my house from now on 🙂
So happy you love this! Thanks! Oh and I love you topping choices! 🙂
What an awesome recipe for breakfast
Thanks Kim! Have a great weekend!
High five!! This looks crazy yummy too. I’d have to give this recipe a go one of these days. Wish me luck! Hope it ends up looking as scrumptious as yours does. Thanks for the recipe!
Breakfast tomorrow for me and the kiddos!
YEAH! Hope you love this! 🙂
As a coconut milk newbie, can you imagine my surprise when I opened it and it was like a thick cream/frosting texture? I had to google to make sure that was normal. LOL. Can’t wait to try this in the morning 🙂
Oh no! That is totally normal, you just have ti mix it with the water underneath. 🙂
Hope you love this!!
Chai has brought new meaning into my life.. Really delicious and good for you too.. A winner as far as I am concerned..
Yumm, this looks amazing and perfect for a healthy breakfast! I love your combination of toppings, sounds delicious and the colors look gorgeous
Thanks so much! 🙂
Hi Tieghan, it’s funny to read your post. I am late to the chia pudding bandwagon too, I made it first time a few days back and loved it! My latest post blog post was Raspberry Coconut Chia Pudding. You are right, it is so easy to make and by adding different ingredients you get endless variety.
SO happy you loved it! THANKS!!
Made this last night for breakfast this morning. It tasted wonderful but I will make it for dessert or a snack next time. A little too rich for me at breakfast (even without the chocolate). My husband liked it but my 17 year old said it looked like an alien life form from Star Trek. 🙂
Thank you!!
Recipe looks great! I’m a bit unclear about the TOPPINGS. I’m assuming that the ingredient list for the TOPPINGS is for the four portions. However, if mixed together on day one, the half of banana won’ be very appealing by the fourth day. Could you possibly clarify the TOPPINGS instructions. Thanks
HI! Yes, the toppings is for 4 servings. I recommend mixing them together just before serving or leaving the banana out and then adding that right before serving. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Hello. Followed recipe and mine is still liquid after setting overnight??
Hey Kelley, I need a bit more info. Are they any ingredients that you swapped out? It is possible you did something differently when making the pudding? I really cant think of why these wouldn’t set for you. So sorry you are having trouble. Hope I can help! xTieghan
i like the recipe, it’s just that its really confusing for me to understand the measurements if I’m doing only one serving. Other than that, its all good.
Hi Anastasia! Please let me know if you have any questions in the future! Thank you for trying this! xTieghan
