I know we still have a little over a week left of summer, but seeing as fall is my very favorite time of year, I’m kind of just ready for it to start! OK, and it’s also felt like fall here since late August…remember it totally snowed on the mountains way before Labor Day! UGH. Not ready for the snow, but I am loving seeing the colors of the leaves start to change…my favorite!

The final reason I’m excited for today’s post is that I’m so thrilled to try my best to do a little something to brighten someone’s day. Let me explain: This fall, Land O’Lakes has a new campaign tagline: “Add a Little Good™.” This can mean in both little and big ways. Little, like simply opening the door for your neighbor who has her arms full of groceries. Big, by donating your time to help people in need. The whole idea is that we each try to find ways that we can do good things in the world. This fall, I’ve decided to try to bring this idea to life in a few simple ways.

First up is to help my cousin Abby with her volunteer trip to India to help families in need. This December (the day after Christmas actually), she’ll be traveling to India to help women, give young children guidance, and complete a variety of other tasks to make their lives more meaningful and prepare them for the future. Second, I’ve partnered with Cake In A Crate to bring you guys a holiday treat box filled with ingredients to make the perfect holiday dessert. I will be talking a bit more about this once we get closer to the holidays, but I’ve decided to give all of the proceeds from the sales to charity. I’m really excited about this project. My mom always taught me the importance of continuously looking for ways to give back in the world, and these are just little ways in which I can do so!

Third, I love that I can show how much I care simply by preparing healthy and delish meals for my family. It’s not every day that we all have time to get together for dinner, but when we do, I love that I can make something simple and easy for us all to enjoy. I know my parents greatly appreciate it. It’s a really fun way to get all nine of us together (okay, okay, and probably girlfriends and often random friends) in the same room (also not an easy task!) for a couple of hours and just catch up. We all live pretty busy and hectic lives, so an early fall dinner like this is just what’s needed!

What I love about this recipe is how easy it is. It’s really great for any night of the week. Cozy and hearty enough for a Sunday night dinner, but easy enough for a weeknight meal as well.

Let’s start with the chicken. Something about this time of year always has me thinking “roasted chicken.” I think maybe it’s the fact that I’m excited to be cranking up the heat in my oven again, or maybe it’s just that I love a good chicken-and-rice meal. It’s literally what I grew up on.

Whatever the reason, this chicken is SIMPLE and should probably become your new go-to this fall and even through the winter. Just add all the ingredients to a roasting pan and roast; simple as that. The goat milk really adds a special touch. It keeps the chicken incredibly moist and tender and adds great flavor…especially when paired with all the warm sage. YUM!

Alright, but the pasta… you can’t have a roasted chicken dinner without some carbs. I usually go with rice, but I decided to step outta my box a little and pair this chicken with pasta.

No complaining!

I have a deep love for Brussels sprouts, so I pan-charred a whole bunch of them and tossed them together with some angel hair pasta, a little white wine, a little more sage and some creamy goat cheese. For just a touch of decadence, I like to add a pat of butter to the hot pasta just before serving. Um, yes, please!

My whole family truly loved this meal. Even my picky brothers… of course, most of them picked out the Brussels sprouts, but all in all, I would say this meal was family dinner perfection! ?

Ingredients

Sage Lemon Roasted Chicken in Goat Milk

  • 1 1/2 pounds chicken breast or thighs
  • kosher salt + pepper
  • 4 tablespoons Land O Lakes® European Style Butter cut into 6 slices
  • 6 cloves garlic smashed
  • 1 cup full fat goat milk may also use whole milk
  • juice of 1 lemon + 1 lemon cut into wedges
  • 12 leaves fresh sage
  • 4 sprigs fresh thyme

Pasta

  • 1 pound spaghetti or angel hair pasta
  • 2 tablespoons olive oil
  • 1 pound Brussels sprouts cut into quarters
  • 16 leaves fresh sage
  • 1 clove large of garlic peeled
  • 1/3 cup white wine or sub 1/3 cup pasta cooking water
  • kosher salt + pepper
  • 2-4 ounces goat cheese crumbled
  • 1/2 cup grated Manchego cheese plus more for serving
  • pinch of crushed red pepper
  • arils from one pomegranate optional

Instructions

  1. Preheat the oven to 400 degrees F. Lightly grease a 9x13 inch Pyrex® pan. Add the chicken and sprinkle with salt + pepper. Place the pats of butter over each piece of chicken. Sprinkle the smashed garlic around the chicken. Pour the goat milk and lemon juice over the chicken. Add the sage and thyme. Bake for 30-40, minutes or until the chicken is cooked through. The time will depend on the size of your chicken pieces.
  2. Meanwhile, make the pasta. Bring a large pot of salted water to a boil. Boil the pasta until al dente. Drain and reserve 1 cup of pasta cooking water.
  3. Heat a large skillet over medium heat and add 2 tablespoons olive oil. Once hot add the Brussels sprouts and cook, stirring occasionally, until sprouts are golden brown, 8 to 10 minutes. Reduce the heat on the Brussels sprouts to medium. Add the sage, garlic, crushed red pepper and a pinch of salt + pepper. Cook 3-5 minutes or until fragrant. Once the pasta has finished cooking and is drained, add the hot pasta to the pan with the Brussels sprouts. Add the wine, crumbled goat and Manchego cheeses, toss well until creamy, adding pasta cooking water to thin if needed. Taste and season with salt + pepper.
  4. Serve immediately alongside the roasted chicken. Finish with pomegranate arils if desired.
