20 Cozy Winter Recipes.
You guys, it’s SO cold outside.
Like we’re talking negative temps and icy cold snow, but hey, it sure is beautiful. PLUS, cold temps just mean it’s time for cozy winter food that’s gonna warm ya right up. Yeah!!
Seeing as it is January though, I picked a few of my favorite HEALTHIER comfort foods. You know, because I want to help everyone stick to those New Years resolutions. Which by the way, did any of you make any fun resolutions? Mine are pretty typical and boring. Mostly stuff like be more organized, try new things, yadda, yadda, yadda. Clearly I am not much of a resolution maker.
Anyway, let’s talk about good food. Today I am sharing twenty of my favorite winter recipes. Most are super cozy, but I also threw in a couple extra pretty salads for a pop of color and crunch!
A lot of these are oven to table dishes too, which makes them perfect for easy weeknights or easy weekend entertaining. I’ve been making a lot of the casseroles for dinner this past week. They are the perfect meals for everyone who just got off the mountain and is starving! Yumm!
Ok, so here are my favorite 20 Cozy Winter Recipes:
30-Minute Healthy Kickin’ Cajun Chicken and Rice.
One-Pot 30 Minute Creamy Tomato basil Pasta Bake.
Cheesy Sweet and Sour Pomegranate Thai Chicken Enchiladas.

One-Pan 45 Minute Coq au Vin with Brown Butter Sage Mashed Potatoes.
Simple Caramelized Butternut and Kale Florentine Lasagna.
Italian Quinoa Risotto Lasagna withTruffle Oil.

Morning Tieghan:
I have tagged a couple of your recipes.
I must tell you though that I had to rig a cover for over your flashing Novica add.
Did you know that things that flash like this, can cause seizures?
I won’t be able to come back onto your site as long as this ad is flashing.
I’m sorry about this as I really do enjoy you and your recipes.
Have a Joyful Day :~D
Charlie
Hi Charlie: I have a Kindle and have to turn it sideways because those ads cover the words–when I do that the ads disappear. If your using a tablet maybe this will help.
Sorry about those annoying adds Nancy! I removed them, but please let me know if there are any more. So sorry for the trouble!
Hey Charlie,
I am so sorry about that add, I have removed it. I agree that is was beyond annoying. Please let me know if there are any other issues. Thanks for the kind words!
Tieghan!
I’m for sure making 1 & 2–I’m heading to the store now–that really cold weather is headed here. I really love that pasta bake #2.
Thai peanut chicken is good also.
Lasagna boats I would like to try but I have weak hands and opening those squashes is hard for me–even piercing them is hard–ugh.
Saw your picture of the snow covered mountains–just beautiful!
Thank you so much, Nancy! Hope you had a wonderful Sunday!
These are my kind of recipes! Everything looks wonderful. A perfect post for the beginning of January.
Thank you so much, Beth!

Many of these are a favorite around here. Pinning the harissa wild rice and the spinach rigatoni! Cannot wait to make them. 🙂
Thank you so much! Hope you had a great Sunday, Bri! 🙂
I know I’m not even dealing with cold like you are, but I’m still tired of being freezing (Northern California speaking!). I’m all about cozy meals at the moment and these all look perfect!
Haha! You would probably die where I live. I have to admit, I would love to be in CA right about now! 🙂
Thanks Laura!
Your new blog layout is so gorgeous, Tieghan!! What an awesome way to start 2015!
Thank you!
I was just in your neck of the woods a few weekends ago! I took a little trip to Breckenridge 🙂 And yes…cold! And yes, I did try to take an alternative road home to avoid 70…and yes….it ended badly…Ha! BUT, the important thing is now I am home, cozied up by the fire and can make all of these delicious recipes!!
OH NO! Hope everything eventually turned out ok for you!
Thanks Erin and stay warm! 🙂
