This simple Sheet Pan Sticky Ginger Sesame Chicken and Crispy Brussels Sprouts dinner is about to become your new go-to meal. Easy homemade Asian inspired chicken, tossed in a gingery, sweet, spicy, and extra sticky soy pomegranate sauce. Serve this meal with roasted brussels sprouts, cooked right alongside the chicken, for the easiest sheet pan dinner. Then add a side of steamed rice topped with plenty of sesame seeds. And the best part…this sticky chicken is made quicker than any take-out meal and much healthier too. A delicious, fun, and healthy dinner any night of the week!
I love a good Asian inspired recipe more than you know. Anything that semi resembles take-out style meals seem to end up as a family favorite. Well, we love pizza and pasta too. That’s why I try to provide a variety of recipes here on HBH for whatever food mood you’re in.
Anyway, tonight we’re going the take-out at home route and I’m excited. It’s been a while since I’ve shared a “take-out” style recipe.
I originally had the idea to make this chicken last week, but then we had snow. The cold swayed me towards creating a cozier rosemary chicken and rice pilaf. But this week, the sun is shining and we’re back to normal fall weather around here. Enter this chicken, it’s the perfect fall dinner that highlights in-season brussels sprouts and sweet pomegranates.
Making this sheet pan sticky ginger chicken is easy…
Here are all the details. I wasn’t planning on breading the chicken, but as I was testing, a light went off in my head. Sure, I wanted a sticky sauce, but how would the sauce really stick to the chicken without any coating?
So I quickly decided to toss the chicken with a beaten egg and dredge it through some flour. This is a very, very light coating, but it’s just enough to help all that sticky sauce actually stick to the chicken. Once you’ve coated the chicken in flour, arrange it to one side of a large greased baking sheet. Then drizzle generously with sesame oil (or olive oil) to help the chicken crisp up a bit.
Now that you’ve got the chicken ready, let’s talk about those sprouts.
First off, sure you can use broccoli if you hate brussels sprouts. But I LOVE a well-roasted sprout and also find them delicious when paired with a salty Asian recipe.
I kept the sprouts basic, just sesame oil, salt, and pepper. But the real secret? Getting them extra crispy in the oven. Since the chicken cooks at such a high temperature, the sprouts have time to roast, soften, turn crisp, and lightly char on the outside. Delicious.
While everything is roasting, make the sticky sauce.
The truth? The sauce is truly why you should make this recipe. The sauce + the sprouts, because I really do love brussels sprouts the most.
Oh, and the sauce? It’s honestly so addicting. Sweet, tangy, a touch spicy and once boiled down, super sticky. The secret ingredient is one of my autumn favorites, pomegranate juice. I know it might sound odd, but please, don’t doubt me here. The pomegranate juice adds sweetness, tanginess, and deep dark color too. It’s one of my favorite ingredients to use in Asian inspired recipes. Plus, I always love the added pop of color, especially this time of year when the pomegranates are coming into season.
The sauce takes only a few minutes to thicken up on the stove. It’s usually ready by the time the chicken has finished cooking.
Then just toss the sauce with the chicken, return to the oven for a few more minutes, and you’re done. I was shocked at how well the timing of everything ended up working out.
Nothing fancy here, just simple cooking, but very delicious.
Serving suggestions?
Steamed rice, plenty of green onions, toasted sesame seeds, and pomegranate arils – if you can find them. Sadly ours have yet to show up for the season, but they’ll be here soon! Then drizzle with a generous amount of the leftover sauce…because saucy sticky chicken is the only way to go.
Tip…double the recipe and save the leftovers for quick and easy lunches. The chicken would also be great atop a chopped salad or served with rice noodles.

Sheet Pan Sticky Ginger Sesame Chicken and Crispy Brussels Sprouts
Sticky chicken made quicker than any take-out meal...and is so much healthier too!
Ingredients
- 1 1/2 pounds boneless chicken breasts, cut into 2 inch cubes
- 1 egg, beaten
- 1/4 cup all-purpose or gluten free all-purpose flour
- kosher salt and black pepper
- 3/4 pound brussels sprouts, halved
- 6 tablespoons extra virgin olive oil or sesame oil
- 2/3 cup low sodium soy sauce
- 1/3 cup pomegranate juice (equal amounts of apple cider or orange juice are great substitutes)
- 1/4 cups honey
- 2 tablespoons balsamic vinegar
- 2 tablespoons apple cider vinegar
- 1 tablespoon molasses or pomegranate molasses
- 1 tablespoon creamy peanut butter
- 2 cloves garlic, minced or grated
- 1 inch fresh ginger, grated
- 1 teaspoon crushed red pepper flakes, use more or less to taste
- rice, sesame seeds, and green onions, for serving
Instructions
-
1. Preheat the oven to 475 degrees F. Line a baking sheet with parchment paper or grease with oil.
2. Add the chicken, egg, and a pinch of pepper to a bowl. Toss to combine. Add the flour to another bowl. Dredge the chicken in batches through the flour, tossing to coat. Place the chicken on one side of the prepared baking sheet. Drizzle with 2 tablespoons oil. Add the brussels sprouts to the other side of the pan and toss with 2 tablespoon oil, salt, and pepper. Arrange cut side down. Bake for 12 minutes. Toss the sprouts, flip the chicken and return to the oven another 3-5 minutes, until the chicken is cooked through. Reduce the oven temp to 400 degrees F.
3. Meanwhile, combine the soy sauce, pomegranate juice, honey, balsamic vinegar, apple cider vinegar, molasses, peanut butter, garlic, ginger, and crushed red pepper flakes in a medium saucepan. Set over medium-high heat and bring the sauce to a boil. Boil 5-8 minutes, until the sauce thickens and reduces by about 1/3. Remove from the heat.
4. Pour half the sauce over the chicken, tossing to combine. Toss the sprouts with 1 tablespoon oil. Return everything to the oven for 3 minutes, until the sauce coats the chicken, watch close the sauce can burn.
5. Serve the chicken and sauce over bowls of rice topped with additional green onions, pomegranate arils, and sesame seeds. Serve the brussels sprouts on the side.

I made this last night….absolutely delicious! I just used regular molasses. I would recommend measuring out all the sauce ingredients first before you start baking because that took longer than I expected and my sauce wasn’t reduced enough yet by the time the chicken and brussel sprouts were done. It was pretty easy and looked amazing. Quick and “fancy.” Not my favorite of the recipes I’ve tried but I had to improvise using orange juice and no molasses. It wasn’t as dark or sticky. Those changes probably alter the flavor a bit. Tasted good nonetheless.

Another great recipe by HBH! This had so much flavor and was pretty easy to make. My only complaint was that I found the sauce to be a bit too spicy for me. My husband loved the spice level though. However, living in Scotland in the UK, one thing that drives me crazy about the many American recipes that I try, are the different weights and measures that we use, and I have to keep stopping and looking up my phone to convert them. The sauce never thickened. 🙁 I boiled it 8min to reduce then added it to the pan and baked for several minutes at 400 as directed. It’s still watery after 5min and I’m afraid to burn it. I made the sauce a second time, whisking constantly — it never thickened so finally I added in flour carefully whisking and it thickened. Wish I had corn startch!

This one wasn’t a hit for me. It may be user error (!) but I followed instructions to the T and it was just okay. So many ingredients and yet I only tasted soy sauce, honey, and pepper. I felt a little frustrated that I literally grated garlic and ginger, found molasses, pomegranate juice(!) etc. and couldn’t taste any of it. Chicken also did not really crisp despite dredging in egg and flour. Brussel sprouts were just okay- simple salt and pepper. Just a lot of effort going on and not the payout (for me). Love this blog though and can’t wait to try another recipe!

Made this for dinner tonight and it was really delicious. The only thing I can say is that I didn’t have low sodium soy sauce on hand so the dish was quite salty with no additional salt, but besides that was great and my kids liked it too!

I’ve made lots of Half Baked recipes and loved them all, but this was the exception. The chicken didn’t really crisp nor did it take to the sauce. It wasn’t a “coating” per se. I made with the pomegranate molasses and cherry juice (which is what I had on hand) and it came out quite tart. I loved it but my kids probably would have preferred with the regular molasses or maple syrup for a sweeter profile.

Hey Tieghan – I’m such a fan of your recipes and have such success with them. I made this last night and used Bragg’s liquid aminos instead of low sodium soy sauce. The sauce was too salty – do you think this is why? If so, to improve it could I reduce the amount of liquid aminos and add water, or do I just need to use low sodium soy sauce?

I did this with tahini instead of peanut butter (probably more like 2 tbsp, I love tahini!) and orange juice.
I also ended up tossing the sprouts, chicken and sauce all together before popping back in the oven for the last few minutes. Delicious!

While I normally really enjoy recipes from this site, this one wasn’t my favourite. I was confused by all the ingredients for the sauce. For example the peanut butter which I didn’t think added anything as the overall taste was quite acidic to me with both vinegars. Also my sauce never thickened so I had to use cornstarch to thicken it up.

Just made this the other night for our daughter’s birthday. She’d asked for a stir fry but I swapped this in at the last minute. I love the one-pan recipes! She loved it enough to take all the leftovers. Wish we’d used a little more oil when baking the chicken pieces, but that’s it. Made as directed except we’re not brussels sprouts fans so I used broccoli head chunks and sliced carrot chunks, and it still worked brilliantly (could see a lot of other veggies doing just fine in this). No chance to take a picture! Would have liked to find the pomegranate arils to sprinkle on top but couldn’t, but we had the pom juice and molasses for the sauce. We used sliced scallions and some of the flaked red pepper on top (my husband and I like hotter, our daughter mild). Wish we’d taken a pic!
Have been thinking of a kind of combination of your other sheet pan dish with pomegranate chicken and squash. I don’t like coconut so might do the baked chicken this way and try the other sauce. Thanks for great recipes!

I feel like any time I’ve tried to make baked chicken after its been coated in egg and flour, it turns out cooked on the inside, but very soggy on the outside. I love your recipes but I have to say the sauce was too pungent. We couldn’t eat it. The Brussels and chicken were tasty. I threw the chicken in a skillet and added Wegmans garlic sesame sauce instead.

Hi I made this last week and I gotta say I thought the sauce was way too vinegary. Not enough yin and yang. Also am I missing something, because you call for six TB of oil, but only use 5 in the recipe? Was the last tablespoon supposed to be added to the sauce at the end? My sauce was not sticky :/

My sauce wouldn’t thicken. After 15 minutes rolling boil it was still like water. I noticed the ingredients said “1/4 cups honey”, cupS with an “s” – could you have meant 1 and 1/4 cups honey? Thanks!

This looks very tasty but I would really like it if you – and pretty much every other chef – would be realistic about prep times. The average home cook would need a lot more than 15 min to peel and grate garlic and ginger, wash and cut the brussel sprouts, cut the chicken, measure out over a dozen other ingredients, and make some rice if we don’t happen to have some cooked or crack open a pomegranate if we haven’t pre-separated the arils. I have your super simple cookbook and, while every recipe I have tried is delicious, it always takes me AT LEAST three times longer than stated.

Tried recipe as directed. It was soo good and relatively easy. I’m not the greatest cook so producing a pan dish is ideal. I will suggest including *making rice* as a step for direction followers like myself. It wasn’t until the end of that I reliazed I still had to make rice and thus had to wait 20 more minutes before consuming. Worth the wait though and now I know. Also the serving I used was for 6 since that was the pre set number, but it actually makes 3. Super delicious. The sauce is amazing. The brussel sprouts roasted so nicely l, which is my favorite. I will make this again, especially knowing how easy and quick it was to make

My husband and I LOVE this recipe. We substituted with things on hand (orange juice, white wine vinegar instead of apple, coconut amounts, and Lakanto brown sugar instead of molasses) and we just can’t get enough. Using the OJ makes it like an orange chicken but not too sweet. Very easy to make and comes together quickly.

I made this and it turned out amazing! It’s very easy to make and recipe is easy to follow. the only thing I would mention is preparation took longer than 15 minutes (about double) but cook time was the same. Made this with salmon instead of chicken because I had already planned on salmon but then saw the recipe and had to make the sauce, like tonight, and it worked! Used two pans instead of one, and after the sprouts were done, baked 6 salmon filets at 400 for 15 minutes, brushing with a layer of sauce before the last 2 minutes in the oven. Delicious!! I did substitute coconut sugar for the honey (only had Manuka). Im also trying onion flakes dredging for the flour – hope its not too strong. Otherwise, the sauce is reducing down nicely and serving with some coconut rice.

This is DELICIOUS. I used cider instead of pom juice and pom molasses instead of regular molasses. I also used sunflower butter instead of PB due to an allergy. The end result tasted like takeout and it was seriously addicting. Leftovers were just as good on top of arugula the next day.

I typically love your recipes but I won’t be trying this one again. I followed the recipe and used low sodium soy sauce , but man this was so salty I couldn’t even finish it. I did add any salt. Whenever you make an Asian style dish your meat always comes out so dark. Everytime I try it comes out way lighter and different looking but I follow the recipe exactly. What are you doing that is different?

I make a lot of your chicken recipes and this is probably the first one that wasn’t an instant success. Perhaps there was a bit too much egg on the chicken before I covered it with flour, because it stuck to the paper. The sauce didn’t really thicken on the stove, it felt very liquid. Also it was very salty, even though I used low-sodium soy sauce. The soy sauce kind of killed the other flavours, so if I try it again I will use less.

Another keeper, we liked it a lot, my husband love the sauce. After reading the comments I decided to start the sauce first. I had to use 1/3 cup of Tamara because that’s all I had and it still came out great. I had to boil it longer than the specified time to get it reduced and thickened.

The chicken came out way over done and the sauce, though reduced, was not ‘sticky’ or syrupy. If i made it again I would stir fry the chicken in a wok instead of baking at 475 then add the sauce at the end. My daughter recommended this recipe and she said she baked it at 425 because the 475 was “too scary” and that she had to add a corn starch slurry to thicken the sauce. oh well. The sauce did have a good taste

Tieghan! My mom and i just made this for New Year’s Day and we love it! My 11 year old brother does too 🙂 The flavors went together perfectly – we didn’t have balsamic vinegar so we subbed 1/2 red wine and 1/2 maple syrup and it worked out great. Hi Tieghan, would love to try this recipe. Do you think it would work as well with dark meat, say thighs? Would this change the cooking times? So many people loved this recipe so I am assuming my issues are user error! The sauce never thickened even with another 10 minutes of boiling. I did whisk it at the beginning to blend in the peanut butter so not sure if that created an issue. I substituted apple cider for the pomegranate juice but everything else was the same. There was no sweetness – it tasted a little bitter. I am not sure if that is because of the cider? Also my chicken did not get crisp so not sure what I did wrong with that. All of the other recipes I’ve tried are amazing so not quite sure what went wrong for me with this one!

Made this tonight. My husband and I loved it! However, no matter how long i cooked it I couldn’t get the sauce to become syrupy and reduce down. It was delicious, but much more “watery”. I didn’t make any subs except for liquid aminos instead of soy sauce, I did apple cider in place of pomegranate juice as well. Nevertheless we loved it, I also added a little corn starch to the flour, the chicken crisped up nicely!

Delicious recipe and my husband loved it! Loved that it wasn’t too too sweet and still satisfies that take-out craving.
I substituted cranberry-apple juice for the pomegranate juice and still turned out delicious. My only comment – it took much longer for the sauce to reduce down to a thick, coat-able consistency; had to reduce by 2/3rds in order to get it thick enough to coat the chicken. I wonder if that is because of my substitution?

This recipe was fantastic! The chicken had a great texture and flavor. Baking made it feel much healthier rather than other recipes that would fry it. I would absolutely make this weekly. I used regular molasses and orange juice and it worked great. Also used broccoli instead, since that is all that I had. Very satisfied!

This was delicious! My brussel sprouts burned fairly quickly so I had to half the cook time for them. Substituted the pomegranate juice for cranberry juice because that was all I could find at the store. Still turned out great. Extra points for how easy it was!!

Made this tonight and it was delicious! My chicken didn’t get very browned in the oven and my sauce wasn’t as thick as I would have liked when I added it to the chicken, but the flavors were still so good! I’ll make the sauce ahead of time next time and then start to heat it when I put the chicken in the oven. It came together easily. I used regular soy sauce full strength and that was a mistake. I have a bad habit of over crowding my pans so the brussel sprouts weren’t as crispy.
Topping the dish with sliced scallions and pomegranate arils was definitely a highlight and shouldn’t be skipped.
My kids devoured the chicken and they can be picky.

Love your recipes, but it should be noted that the oven temps used are often unsafe for parchment paper. Always check the box to see how much heat your paper can handle—a lot of the time it’s only up to 425º. I recommend using foil if you’re baking at a higher temperature.

Been on a Chinese food kick and this was a fun way to mix it up by doing it in the oven so the stove top didn’t get destroyed. My boyfriend and I have recently been making so many of Half Baked Harvest’s recipes and have really enjoyed all of them except for this one.
It didn’t hit the mark for us as we had multiple problems with the recipe throughout. Our chicken got stuck to the parchment paper after the first bake in the oven (def skip the parchment paper if you’re going to try this recipe!) and our sauce never thickened to a good consistency.
All in all, we’ve chalked it up to the fact that Asian cuisine is extremely hard to replicate and although the flavor of the sauce for this was yummy it might be best for us to stick to ordering in Chinese!

Delicious! This definitely will be added to the “rotation.” I used skinless, boneless thighs that I had on hand and in place of pomegranate juice I squeezed orange juice. I did however have pomegranate ariels on hand to add as a garnish.
As I made a larger serving, to avoid crowding the chicken & sprouts I used 2 baking sheets.

This dish was very tasty, but the times are a bit off. I’ve cooked for many years, don’t consider myself new, I’m 62. But when I made last night, I don’t know how you can prep everything within 15 minutes. Cleaning Brussel sprouts alone takes time, but cutting and breading the chicken, chopping the garlic, the ginger and gathering all for the sauce? Very good and SO quick to throw together! Next time I’ll start with the sauce and reduce it while I prep the chicken. I felt like 475 for 20 min total was super hot, so I reduced it to 450 and cooled the chicken for 15 min, then an additional 3 with the glaze. Turned out great!

Sadly, we did not enjoy this recipe.
Brussel sprouts didn’t turn crispy and lacked flavour despite plenty of salt and sesame oil.
We had to replace the pomegranate juice with apple cider vinegar. The sauce turned out very acid despite adding additional peanut butter, honey and brown sugar.
Maybe another time we will have better luck.

I made this and the flavors were excellent. One question, however. You say to pour half the sauce over the chicken. What do you do with the rest of the sauce? Add it when you serve it? it was a lot of sauce for the amount of chicken. Flavor was soooo good, though!

I’m not sure why I keep trying these sheet pans dinners. They’ve all been disappointing aside from the salmon with feta and olives. The constant removing the pan to toss with oils/sauces ruins the convenience of a sheet pan dinner. The sauce in this recipe was not good, the chicken does not cook well via this method—maybe meatballs would have been better? *shrug*

Probably one of my favorite recipes of yours that I’ve made!! I subbed in some extra broccoli I needed to use up for the brussel sprouts and left out the egg on the chicken because my son is allergic. Chicken still cooked up beautifully without it! I did end up adding a little corn starch to the sauce to help it thicken up and wow the flavor was out of this world. It was a little salty but I think that might’ve been from me over salting the chicken. Served it all over rice and it was so easy and so delicious! Also loved the tip from the comments to measure out the sauce ingredients ahead of time, it saved me a lot of time while cooking. I already left a comment on IG saying this but I’ve been making one of your recipes every week and I’m just obsessed with everything you create. It’s been so easy for me to make swaps in your recipes to make them safe for my son’s allergies and they always turn out so good! Thank you!

This was easy and delicious, when I make it again, would do the sauce a day ahead. I used maple syrup for the molasses and orange juice instead of pomegranate. I just did a post, but there were some autocorrect that were just not appropriate. I didn’t use the word freaky, by my iPad typed that word to describe the speed of cooking to table service.
