Seasonal autumn butternut squash, roasted with fresh herbs, and garlic, all pureed into a creamy carbonara sauce that’s vibrant and so delicious! Finish off this pasta with crispy, spicy rosemary bacon for an autumn dinner that’s mouth-wateringly delicious. This is a great fall pasta to serve any night of the week, or for your next Saturday night dinner with friends.
And here we go. The first butternut squash recipe of the season. I’m thinking from today on it’s all things fall here on HBH. Ok, I know I’ve already been heavy on the fall recipes for about the last week (see these cinnamon spiced apple fritters and cheesy cauliflower). But this dish feels very fall with the roasted squash and crispy rosemary bacon.
Officially we still have 5 more days of summer. But I’m ready to jump ahead now, and this pasta needs to be shared sooner rather than later. It’s just really darn good, oh so creamy, and infused with autumn flavors. The perfect bowl to welcome in the upcoming crisp fall days.
Did I sell you yet? Did I mention the creaminess? The cheesiness? That crispy, spicy, almost “candied” rosemary bacon?
Yummmm, this pasta is a bowl full of all the good things in life…cheesy, but true.
Moving on to the details.
I kept this as simple as can be. While making sure to keep all the flavor in this bowl of creamy autumn carbonara.
The heart of the pasta is really all in the butternut squash and bacon. The secret? Roasting both the squash and bacon together on the same sheet pan. As the squash roasts, the bacon cooks down overtop. The squash adds just adds that much more flavor to the already delicious butternut squash.
First, toss the squash with lots of fresh thyme, salt, and pepper. You could also add sage, but I didn’t want any of the flavors to be too overpowering, so I stuck with thyme.
For the bacon, you’ll want to rub it with fresh chopped rosemary, then a little cayenne pepper, and finish it off with honey. The honey helps to balance the heat from the cayenne and makes this more of a herby, spicy, “candied” bacon. LOVE the sweet and spicy combination with the savory autumn squash.
As the bacon cooks, the flavor from the bacon drips down over the squash infusing everything with incredible flavor. A little spiciness, a little sweetness, and a touch of smokiness.
So delicious.
Of course, if you don’t eat meat, you can easily omit the bacon to make this a vegetarian pasta. Just add the rosemary and cayenne to the squash instead.
While the squash and bacon are roasting, whisk the eggs with parmesan. If you’ve never made a carbonara pasta, it’s a classic Italian pasta dish. It’s unique in that it uses raw eggs. Tossing the raw eggs with hot pasta and plenty of parmesan cheese creates a delicious sauce. The heat from the pasta cooks the eggs and produces the silkiest, smoothest, and creamiest pasta sauce. It’s melt in your mouth good.
Once the squash has finished roasting, puree it into a smooth puree. You can do this in a food processor or blender. Now, bring a pot of water to a boil and toss in the pasta. I like to use linguine, but any pasta cut works well, so use your personal favorite.
As soon as the pasta has finished cooking, immediately toss it with the eggs. This step is really important, but don’t worry it’s also really easy. Just be sure to toss, toss, toss for a good minute until the sauce thickens. Once the sauce has thickened, toss in the squash puree.
Then serve topped with that extra crispy rosemary bacon.
To sum things up…
This is such a warming fall pasta that’s hearty too. It’s made just a little healthier with the butternut squash replacing extra cream and butter. Every twirl of pasta is creamy, silky, and laced with rich, warming fall flavors. The sauce is herby, savory, and just the creamiest. And the bacon adds a spicy, sweet crunch…like topping on a cake.
All together this dish is beyond good…think roll your eye back, go for that second serving…good.
And lastly, this is such a nice switch up from the classic carbonara pasta. Great for any upcoming dinner at home with family or friends. Or just a really good Thursday night meal that we can all look forward to.

Butternut Squash Pasta Carbonara with Rosemary Bacon
Simple and cozy...for nights when you’re craving Italian, but also want cozy fall flavors.
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 cups cubed butternut squash (about 1 small squash)
- 2 tablespoons fresh thyme leaves
- 1/2 teaspoon crushed red pepper flakes
- kosher salt and black pepper
- 2 cloves garlic, smashed
- 8 slices thick-cut bacon
- 2 tablespoon chopped fresh rosemary
- 1/2-1 teaspoon cayenne pepper
- 2 teaspoons honey
- 1 pound dry linguine pasta
- 2 large eggs, at room temperature, beaten
- 1 cup grated parmesan cheese, plus more for serving
- 2 tablespoons salted butter, at room temperature
Instructions

1. Preheat oven to 400 degrees F. On a baking sheet, toss together the olive oil, butternut squash, garlic, thyme, and a pinch each of crushed red pepper flakes, salt, and pepper. On a plate, rub the bacon with rosemary and cayenne, drizzle with honey. Lay the bacon over top.
2. Transfer to the oven and roast for 10 minutes, flip the bacon and bake another 5-8 minutes, until the bacon is crisp, watch closely. Remove the bacon. If squash needs more time, return to the oven for another 10 minutes, or until the squash is tender.
3. Transfer the squash and garlic to a food processor. Puree until smooth. Season with salt and pepper. Roughly chop the bacon, reserve for topping.
4. Meanwhile, whisk together the eggs and parmesan.
5. Boil the pasta until al dente. Before draining, scoop out 1 cup pasta water, then drain the pasta and add the pasta back to the hot pot. Immediately add the egg/cheese mixture, tossing quickly (to ensure the eggs do not scramble) until the eggs thicken and create a sauce. Add the butternut squash puree, and the butter, tossing to combine. Thin the sauce with the reserved pasta water until it reaches your desired consistency.
6. Divide the pasta between plates. Top with bacon. Twirl the pasta up...EAT and ENJOY.

Thank you so much for this awesome recipe! This is my first time making carbonara and I completely messed up adding the eggs. I tried my best to stir continually while doing it so as to prevent scrambling the eggs but the eggs still scrambled. I also let the eggs get to room temperature beforehand so they wouldn’t be cold going into a hot pot. Any suggestions? Could I maybe warm the eggs over low heat (while stirring vigorously) and then add to the noodles? I’m hoping there are some other methods I could try in the future to avoid this. Thank you, Tieghan!

Oh my was I looking forward to making this! I used the metric measurements, but it looks like this was way off 🙁 I had way too much pasta, not enough butternut squash purree and my sauce was just not saucy, even after following all of the instructions. Individual components were delicious and flavorful. Unfortunately, once the butternut puree was mixed into 1lb of pasta, those flavors all but disappeared. Couldn’t taste any of the butternut sweet/spicy flavor at all. Next time will either use more than 2 cups of butternut or less pasta to get a better ratio.

This was great! My squash and bacon took longer to cook than the time mentioned above, but that gave me plenty of time to catch up on the dirty dishes, lol. My sauce turned out a bit thick, so I will add some water before I heat up the left overs. I suspect my squash wasn’t quite ripe, since the purée was a bit paste like. I’d 100% make this again. The best part, of course is the spicy candied bacon!

Made this recipe tonight and it was amazing. I came across your IG and website at the beginning of Covid and anytime I am looking for a new recipe I either open your book or come here! To Die For! I have two kids, 18 & 21. They were begging for seconds. My husband loved it too. It took longer to make the whole thing than the instructions indicated, so leave yourself a little more time the first time you make it. Yummy combination!! Agree with others on a few suggestions: 1. Cook bacon longer; not crispy at all after the time suggested 2. Use half the amount of pasta 3. The egg part didn’t work for me and it never got creamy. Not sure what to suggest here. I’ve never done a recipe like this where you quickly add raw eggs to pasta to make a sauce. The flavors were delicious, but this took waaaaaay longer than 30 minutes. I used an aluminum (rather than dark) baking sheet. Should I have increased the oven temperature?

Oh my gosh, this pasta was AMAZING! we actually made homemade pasta, so ours had a nice chew to it. But the simplicity of it was great. I do reccomend doing a rough choo of both the broccoli rabe and the sage before roasting, for better distribution in the pasta.

Had some trouble with consistency, not sure if my pot was too hot, too much squash, or what. BUT it was delicious. I think I’ll convert the rest into a casserole and bake it (With more cheese and breadcrumbs) since it is extra gloopy.

This recipe was so delicious it was even approved by my squash loathing husband, ha! I loved the subtle flavors that didn’t overpower the squash and the kick from the cayenne (though I definitely didn’t measure my cayenne and might’ve added a bit extra). My only issue/frustration was I could not get the mixture creamy! I tried adding all of the pasta water I had saved but it still ended up goopy. Maybe my squash wasn’t ripe enough? Maybe I accidentally cooked the eggs when I added them? Any tips for next time I make it?

Thanks so much for trying the recipe, I am sorry yours was not creamy. I am guessing you may have cooked the eggs. I think it is key to add the pasta to the pan, then the eggs, and then stir really well. This will help to avoid cooking the eggs which creates the creaminess in this dish. This recipe was AMAZING. I have pretty much exclusively made your recipes in 2020, and I think this might be my favorite. The bacon is to die for, and I would even make that as its own item. My sauce didn’t look as smooth as the photos, but I didn’t find it to be too thick either. The recipe also made a LOT of pasta and we have plenty of leftovers for 2 people! I LOVED this recipe! I’d been wanting to make it since it came out but my small grocer didn’t have butternut squash yet. They finally did (only cubed which, while pricier, made this even easier) and it’s a new favorite. My boyfriend was blown away with every bite. And so was I! I definitely got ahead of myself making the pasta too early so I felt like the noodles sat in the egg sauce too long while I was cooking/pureeing the squash but even with my missteps it was still really good. Simple. Decadent. One of our favorite meals in months. We added some sautéed chicken sausage for extra protein and used GF spinach linguini noodle; I also added the sage (one of my fall/winter favorite herbs) that is suggested above. SO GOOD. AND, don’t be afraid to get the pre-cut squash from the grocery store! I’m always afraid I’ll cut a finger off when I’m cutting squash. INCREDIBLE recipe.

Tried this last night: so, so tasty and addicting! I had three helpings. The flavors were wonderful, comforting and fall-inspired. My only critique is that, like another reviewer, the bacon did not crisp for me. It was an easy fix though: I removed the squash to put in the food processor and put the bacon back in the oven for another three minutes or so (I think the bacon just steamed with all the veggies in there). Otherwise, followed the recipe exactly. Side note: I can’t believe I’ve never tried the bacon-rosemary combo before, amazing!

Made this and using sage instead of thyme. Bacon took longer to cook and I ended up taking out the squash and leaving the bacon to cook longer. The end result was so delicious and creamy. The rosemary and cayenne rubbed bacon really complimented the pasta flavors!

Oh my this was delicious! The flavor combo was so good and it gave me all the fall feels. The butternut squash after cooking in the herbs and bacon was amazing. Once I pureed it I was licking it off the spoon!! It was so tasty mixed with the carbonara sauce and pasta. I wanted to love this and I think I still might if I try again. The flavors for everything were delish but my sauce just did NOT do what it was supposed to. I used lots of pasta water with the squash and then again when it went into the pot but it was basically like glue. I thought I saw on IG some butter at the end and I think I might have missed that step if it would have helped make the sauce slicker. I’m going to give it another go with different pasta and hope it turns out this time!

I made this last night and it was fabulous! Several weeks ago I purchased a butternut squash that yielded more than the recipe required, so I froze the extra cubed butternut squash. (I now plan to purchase a larger butternut squash on purpose to freeze the extra for later.) The thawed butternut squash worked great. I made the butternut squash puree and the rosemary bacon earlier in the day. (I included the bacon grease in the puree so it had a smooth consistency.) I did need to crisp the bacon in the microwave, but the bacon from the oven was easier to chop. I followed your instructions for preparing the pasta and everything worked perfectly. (I did add a small amount of the pasta water.) Another delicious Half Baked Harvest recipe! The carbonara snobs don’t know what they are missing!

As per usual, HBH delivers an amazing recipe. I c ant wait to make this again!! I did struggle to crisp up the bacon at first, despite leaving it in far longer than the instructions state. I eventually realized this was likely due to the elevation (I’m in Denver), so I upped the heat to 425 and it quickly crisped up. Just a heads up to all you high altituders!

This was an excellent recipe! My only comment is that the squash did not purée in the food processor so that was a bit of a disappointment. Next time I’ll use a blender or immersion blender. And there WILL be a next time!

We absolutely loved this! This was my first time making a carbonara and I ended up with some egg scrambles. Once I add the pasta back to the pan should I have the pan on a different unheated burner? Not sure how you made this in 30 minutes….took me much longer. Bacon took a lot longer to crisp up, almost half an hour. My sauce was THICK, too thick, and I used quite a bit of water…thinking I used too much squash (my fault, but it was a small squash). Flavor was fantastic…loved the spicy bacon on top. Soooo good! Hubs liked it better than the vodka sauce version I made a few weeks ago.

I found that the back didn’t crisp over the butternut squash, and the butternut squash needed more time to cook than the directions said even though I cubed them pretty small. I ended up baking it in the oven to get to the right done-ness, but next time I think I will pan fry the bacon first to get it crispy then toss the butternut squash in the oil before cooking for about 40 min. The taste was phenomenal and I will be giving this a second try!

Oh my goodness, I LOVED this recipe. I love butternut squash and had some left over from a soup I made recently so I decided to give this one a go. THIS WAS DELICIOUS. Ive been wanting to make this for weeks, possibly months and finally did it and it’s my favorite recipe EVER. For those who are saying the egg mixture didn’t come out to be smooth consistency, I cooled down my pasta about 15 min by draining the pasta and removing from the stove. I cooled it to the point where my drained pasta was lukewarm-almost cool. Then I put the pasta back on the stove and as the stove was heating up I mixed the egg and parm mixture. Then added hot squash mixture. Came out perfect! I did have to add more time and raise the temp to 415 to cook butternut squash and bacon. I ended up broiling bacon after I took out the squash. But make sure you watch closely to make sure they dont burn!

So good! I warmed the honey, mixed with chopped rosemary and cayenne, and brushed over bacon-drizzling the remains over everything. Delicious!

I followed every step and the end product wasn’t as good as expected. Squash is not the best choice to make into sauce. However, rubbing bacon with rosemary and baking with honey makes it smell great. Wouldn’t recommend people to make this dish.
