Keeping things simple, but delicious with this One Pot Lemon Rosemary Dijon Chicken and Butter Toasted Rice Pilaf. It’s everyone’s favorite dinner made easy and delicious in one pot. Pan-seared chicken roasted up alongside nutty wild rice, warming rosemary, and autumn vegetables. Dijon and lemon keep this dish light, but or so flavorful. This roasted chicken and rice dinner is a hearty but healthy meal to cook any night of the week, especially as the weather begins to cool. And the best part? It’s the easiest dinner to prepare and one the whole family will love.
As I sit here typing away, it’s blowing snow outside my window, my heater is on, my candles are lit, and it’s the coziest winter night…
Only, it’s September…and it’s not even fall yet. And we actually have two full weeks until fall officially arrives (let alone winter!). I know the above sounds like a nice wintery scene, but guys, I’m going to be honest, I’m not ready for this kind of weather. Not even close.
And I’m not talking a light flurry, I’m talking full-on snowstorm! This amount of snow on September 8th? Yeah, that’s just not something I can embrace.
On the bright side, all this snow is giving me the perfect excuse to cook up all the cozy fall dinners on the earlier side. I know you guys are still enjoying warm summer days, but we can all enjoy a good cozy dinner regardless of the weather, right?
I think we can! And while today’s recipe is cozy and hearty, it’s also healthy, colorful, and beyond delicious. Full-on comfort food, but not the heavy kind. This is the perfect transition recipe to slowly welcome the fall days ahead.

The story.
Once September hits, I quickly transition into creating more one pot dinners, easy family meals, and recipes that can be enjoyed by everyone in the family.
You all know the story, but growing up my dad would serve up chicken recipes at least a couple times a week. It was his staple dinner. However, on cold Sunday nights throughout the fall and winter, my mom would often roast a whole chicken, alongside carrots, with a simple rice pilaf style side dish and bread (mom likes her bread with every meal).
This dish is kind of a combination of both of their dinners, and it’s made easy in one pot. It’s got the ease of dad’s chicken and rice, but all the hearty flavors of mom whole roasted chicken.
So it’s a nice balance and truly such a wonderfully comforting meal…and yes, it smells incredible as it roasts away in the oven.

Like all my one pot recipes, this one is pretty straight forward, though it does have a few ingredients. Please don’t let that scare you away, I promise this is going to be easy…
I like to season my chicken with a sprinkling of paprika, lemon zest, salt, and pepper. I prefer to use mostly chicken breasts since they’re what my family prefers. But I also always love including a couple chicken thighs for added flavor. You can use either or both, just use what you and your family love most.
Now, sear the chicken to get it golden and crisp. After you sear the chicken, remove it from the pan and add in all the flavor. Meaning the shallots, vegetables, butter, wild rice, and lots of fresh garlic, rosemary, and thyme. I like to cook the rice in butter to get it nice and toasty before adding in the liquid. This is such a simple step, but it adds so much flavor.
Moving along…
After you toast the rice, toss in an apple and pour in the apple cider and white wine.
The apple and apple cider add a sweet autumn flavor that’s unexpected, but delicious. I absolutely love the pairing of wild rice, apples, and cider. I also like to use a little dijon mustard, it ties everything together in a beautiful savory way.
If the apple sounds too odd, you don’t have to use it, but I do find it to be especially delicious.
At this point, you’ll want to transfer the pan to the oven to finish cooking. As the chicken roasts, the rice soaks up all the flavors from the cider and wine. It then becomes infused with rosemary.
By the end of cooking, the kitchen should be smelling like Thanksgiving. It’s an unexpected but welcomed scent that will only get you that much more excited for dinner. Nothing beats this cozy scent, it’s beyond good.
Once you pull the pan out, fluff the rice with a fork, and serve everything together.
Simple, easy, healthy, and so delicious. This is a complete all-in-one dinner. Of course, you could also add a side of bread or a big salad, that would be delicious too.
This is one of those recipes that I’ll be coming back to time and time again. I love the idea of a Sunday night roasted chicken dinner. But honestly, it’s easy enough for any night of the week.

One Pot Lemon Rosemary Dijon Chicken and Butter Toasted Rice Pilaf
Everyone’s favorite dinner made easy and delicious and all in one-pot!
Ingredients
- 1 1/2 pounds boneless chicken breasts or thighs
- 1 teaspoon smoked paprika
- juice and zest of 1 lemon
- kosher salt and black pepper
- 2 tablespoons extra virgin olive oil
- 2 shallots, chopped
- 4 carrots, chopped
- 1 1/2 cups mushrooms, chopped
- 3 tablespoons salted butter
- 1 1/2 cups wild rice blend (mix wild and brown rice)
- 1/2 cup dry orzo pasta
- 4 cloves garlic, minced or grated
- 1 whole sprig + 2 tablespoons chopped fresh rosemary
- 1 tablespoon fresh thyme leaves, plus more for serving
- 1 small honeycrisp apple, chopped (optional)
- 2 cups apple cider (not vinegar)
- 1 cup dry white wine such, as Pinot Grigio or Sauvignon Blanc
- 2 tablespoons Dijon mustard
Instructions

1. Preheat the oven to 425 degrees F. Season the chicken with paprika, lemon zest, and a pinch each of salt and pepper.
2. Heat the olive oil in a large skillet/braiser set over medium heat. When the oil shimmers, add the chicken and cook on both sides until golden, about 5 minutes per side. Remove the chicken from the pan.
3. To the skillet, add the shallots, carrots, and mushrooms. Cook 5 minutes, until just caramelized. Add the butter, wild rice, orzo, garlic, rosemary, thyme, and apple, if using. Cook 5 minutes, until lightly toasted and golden. Add the apple cider, wine, dijon, lemon juice, and 1/2 cup of water. Season with salt and pepper. Bring to a boil over high heat.
4. Slide the chicken back into the pan. Add the rosemary sprig. Bake, covered, for 30-40 minutes, until the liquid is absorbed and the rice is cooked. During the last 10-15 minutes of cooking remove the lid and allow the chicken to crisp, if needed, add in 1/4 cup additional water or chicken broth to keep the rice from getting dry.
5. To serve, fluff the rice with a fork and serve the chicken, rice, and veggies together. Enjoy!

The cooking time for wild rice is much longer than most other grains, including orzo. It took twice the recommended time to cook as a result. Any suggestions? Wondering if cooking the wild rice first until partially done and then adding at the same time as the orzo?

@aisha – I could be wrong, but I don’t think you’re supposed to use apple cider vinegar. I think it’s supposed to be just straight up apple cider, which would make a big difference! The recipe lists apple cider and doesn’t say anything about it being vinegar (though I initially thought apple cider vinegar as well).

Update: ended up pouring juice from 1/2 lemon into the dish. This was bar far the best recipe I have found in a long time. Taste was a WOW. I cut the chicken breast in 1/2 before cooking. Won’t do that again as chicken was somewhat dry after baking 30 min. And rice could have used another 5-10. I will figure it out as I won’t give up on this dish, amazing!

Made this recipe for dinner last night. There is quite a bit of prep, so give yourself some time, but once everything is measured and chopped, it’s a cinch to make. I didn’t know where in the process to add the apples or the lemon juice as others have commented. We added the apples at the same time as the wine and cider. Forgot to add in the lemon juice, but think it might have toned down the sweetness. It is a hearty one-pot recipe. I think of it as the ideal dinner for a cold winter night, I used black rice and heirloom carrots and boneless chicken breasts. Next time, I will try with boneless thighs. My husband loved this recipe and he is very particular with his commentary for good food. This recipe is a keeper!

Delicious! Makes the entire house smell good and fall-like. I used the optional apple and highly recommend. Also used double the amount of chicken and still have tons of the rice left over but that’s a good thing. It takes much longer than 15 minutes to prep though. I am a pescatarian so I made a piece of salmon (Seasoned the same as the chicken) to serve with my rice and it was a great pairing,

The wild rice turned out pretty crunchy. Definitely need to add more liquid while baking. Bake on the longer side while covered so that the rice can cook fully.

This was overall a delicious recipe, however the wild rice took twice as long as prescribed to cook, resulting in overdone chicken. I should have precooked the wild rice to some extent in advance.

Made this last night (and although not quite the fall / winter-like weather you were having when you shared the recipe video) and it was awesome! What a tasty, delicious meal with a hug. This was super good! We didn’t have any cooking white wine on hand (only nice stuff from vineyards we weren’t ready to open), so we used our boxed Vielle de Ferme red and it was so hearty. With the red wine it had a deep rustic flavor to it, and my husband and I both think it would be great with some softened dried prunes and crushed walnuts next time!

This was tasty but long grain rice takes a full 45 minutes to cook so it didn’t get done. If I make it again I will cover and simmer the rice for 15 minutes before adding the chicken back in, covering and baking in the oven. I also subbed chicken broth for the cider because we don’t like cider. But the other flavors in the dish were amazing and I will make it again with those modifications!

Made this last night, thought the flavor combination was fabulous. I did not have a wild rice blend on hand, just regular wild rice so after reading through comments let it simmer on stove top longer before putting chicken back in. You’re so right about this making the house smell delicious!! Loved the rice pilaf and veggie part of the recipe — so flavorful. My chicken came out a little bland but perhaps it’s because I used one large chicken breast instead of a couple small ones. Feel like that should be included in the recipe! It sounds silly but I’m not super great at cooking and didn’t think about how using one large piece of chicken would decrease the flavor.

Excellent recipe… Your ingredient list includes lemon juice and an honey crips, but I didn’t see when to put both in the instructions. I didn’t add any lemon juice, and it was very good, though longuer for the rice to cook than 40 minutes.

This dinner was SO delicious. Such a great hearty fall meal. However the recipe instructions have a few errors. If you only read the recipe, not the whole blog post, there is no indication of when to add the lemon juice or the chopped apple. Also, the recipe mentions adding water, but there is no water listed in the ingredient list.
Also, the wild rice blend we used needed a bit longer to cook, so we took the chicken out and kept it warm, then added it back in right before serving. Otherwise, the chicken would have definitely been dry by the time the rice cooked.
All in all, this was a super tasty dinner that will definitely be made many more times here!

Made this tonight for Sunday dinner and oh my! It did not disappoint. It is chilly here in Massachusetts and the warmth/flavors were just perfect! The only reason I give 4 stars and not 5 is with rendering the fat from the skin on the chicken thighs plus the cooking oil it was slightly oily. I’d use less extra oil next time (and there WILL be a next time!) definitely a keeper and one I would make for guests.

It was very good, easy to prepare. Although I didn’t know where to add the apple until after I cooked the recipe and read above the recipe and saw where to add it, it also does not say where to add the juice of the lemon although I didn’t think it really needed it. I may reduce the apple cider a bit if I did add the apple as I found it a bit too sweet. I would also let it boil a little longer before adding in the chicken and putting it in the oven rice was a little under done. Over all a GREAT meal, family loved it, easy to prepare on a week night and very filling.

Great easy midweek dinner. I missed the cider bit added extra wine. I think the cider is needed for sweetness in contrasting the lemon and wine. Loved it will make again.

I am such a fan of HFH but this one was disappointing. I was skeptical from the start – wild rice usually has a cooking time of 45 minutes, I knew the chicken would be dried to pieces if I cooked it that long so I put the rice mixture in the oven for 15 minutes before adding the chicken. The rice ended up taking over 1 hour – I removed the chicken after 30 minutes and it was dry. The rice had so much flavor and I wanted to love it but the cooking times do not match up.

I’m not sure why your rice is taking so much longer than mine, but I’d recommend adding the chicken 20-25 minutes before you feel like your rice is ready. This should ensure the chicken isn’t dry. This is such a delicious and easy one-pan meal! Would be great for company since it would easily double or triple in a large enough pan. Great flavors make it seem super complex, but was so quick and easy! I added apples at end when I took off cover to brown chicken- kept them crisp but warmed them nicely. Great job with this one!

I made this last night and thought it was really good. I didn’t have cider so used apple juice and it worked out fine. However, it took way longer to cook than what the recipe said – more like an hour and 15 minutes, and I had to add significantly more water to get the rice to cook. This made me think I should’ve let it simmer on the stove for awhile before putting it in the oven right after it boils as it says in the directions. I recommend doing this (covered) for a little while to speed up the rice cooking. Thanks for a great recipe!

I just made this dish yesterday. The flavors turned out wonderfully, but the wild rice & brown rice were not at all finished cooking after 40 minutes. The rice was so crunchy as to be almost inedible. I followed the receipe exactly except I used apple juice instead of apple cider. I also used a about 1/8 cup extra wild rice. So sorry you had issues with the recipe. Unfortunately the cook time and liquid measurements are based on the rice measurements, so by adding more rice you off set those measurements, which is why the rice did not fully cook. I hope this helps for next time! xTieghan

Hey Kate! What brand of wild rice are you using? Is it a mixed blend? I would try using slightly larger chicken pieces to ensure the chicken cooks within the same time frame as the rice. What size was your chicken?

This has a lot of promise for future rotation! We had a hard time getting the wild rice to cook through, and the original night of, the dijon flavor was incredibly overpowering, making it almost seem too acidic. The flavors mellowed a lot the next day. I think the dish needs some kind of fat to balance against the dijon and cider. We’ll tinker with proportions next time we make it, but it’s a great way to welcome fall!

I only recently discovered HBH, and this is the first recipe I have made. I was so excited to try it! Unfortunately It didn’t turn out as good as I thought it would. The rice was very undercooked, so I ended up taking the chicken out (it was also dry by this point), adding more water, and then cooking the rice for about 25 more mins. It also is pretty sweet because I wasn’t sure when to add the lemon juice, I added it at the end after it was cooked which helped. If I were to make this again I would cook the rice longer before adding the chicken back in, and subbing some of the apple cider for chicken broth so it isn’t so sweet.

This recipe has potential, I’m not giving up on it. The issues were that I didn’t know when to add the lemon juice so, I figured it was a typo and I left it out. It needed the lemon juice. Also, I didn’t know when to add the apples so I added them before the liquid went in. It could have used more salt, I guess my pinches weren’t big enough. The biggest issue though was this took 2 1/2 hrs to make from the first chop to the first bite. The rice still wasn’t totally cooked but, we were so hungry we ate it anyway. The chicken was so dry, I would have not cooked it as long as I did and waited for it to cook in the oven. Not a good recipe to try on a Monday night when everyone is tired and hungry.

A little time consuming but delicious! Realized my lodge 10″ skillet wasn’t big enough for this recipe so I had to adjust on the fly. Used half cup less of wild rice and half cup less of apple cider. It was a little sweet for my taste so next time I’d probably use less apple cider and more chicken broth (I don’t ever have white wine on hand for cooking). Bought an apple for this but forgot to add it in, probably for the best since it was a little sweet for me anyway.
Tieghan, it may be helpful in the future to include the exact size cooking vessel you use as I had to adjust on the fly whereas if I had known your skillet was larger, would’ve adjusted quantity prior to.

This was absolutely delicious! I had to make some adjustments though since I was missing since of the ingredients. I used a variety of dried mushrooms that I soaked for about an hour, added a red bell pepper, I didn’t have fresh apples or apple cider so I used 1 cup homemade unsweetened applesauce (same amount of broth and water though), a yellow onion for shallots, and chicken drumsticks. I know I made a lot of adjustments, but the method and warm fall ingredients were wonderful. Thank you, HBH!

Hi, the recipe turned out well but i would use only 1 tbsp of chopped rosemary instead of 2 tbsp. There was nothing in the recipe that mentions what to do with the lemon juice but is mentioned in the ingredients. I thought the dish was very flavorful and I made a green salad with dijon vinaigrette to along with it. Really nice.

I made this tonight but didn’t like it as I’d hoped. Not sure where we’re supposed to add the lemon juice in the ingredient list? I cooked it for 30 minutes covered, and then 15 minutes uncovered, and the wild rice wasn’t done yet, but orzo was totally overcooked. Overall I think the recipe was a bit sweet for my taste. If I were to make it again, I would omit the wine, and use chicken stock instead of apple cider.

THis is delicious! I prepped for WAY more than 15 minutes! washing, chopping, zesting, browning, etc. It is worth it, and maybe it would go more quickly with familiarity, but this took more than an hour to make for sure, before it went into the oven. Very good. Highly recommend!

I’m making this right now! I took a couple liberties because it was a last minute decision. I used butternut squash instead of carrots since I had to use some up and I have mushrooms roasting on the side, using the “my Paris kitchen” method, As my kiddos don’t love mushrooms like my hubby and I do. Also just straight up brown rice, and I was out of Dijon so I added just a touch of champagne vinegar. Smells amazing. I love these one skillet meals so easy, less mess, and love all the variations. This is my second time making this with the same issue – the wild rice doesn’t cook enough in the time described. Meanwhile my chicken overcooks. The second time making it I even tried lowering the oven temp to 400. Flavors are great though. Can you share the brand of wild rice you use so I can see if that works better?

WOW. This might be the best fall recipe I’ve ever made! I forgot the lemon and mushrooms at the store… but it still turned out amazing! I see a lot of comments about the cooking time for the wild rice being too short, but mine turned out perfect! I cooked it all in a dutch oven. I’m going to make the pilaf minus the chicken as a side dish on thanksgiving day and might add some walnuts and dried cranberries to it.

I made this last night and it is fantastic! I made it exactly as instructed except I didn’t add any orzo. The wild rice was enough for me. The apple and cider were a wonderful addition and the kitchen smelled amazing! One note; the instructions don’t list when to add the apple and lemon juice, only in the text above do you find that info. But it’s not super hard to figure out when to add 😉
I had to cook mine about 10 minutes longer than instructed but I think my pot was smaller than the one Tieghan used.
This is definitely a keeper!

For anyone thinking about making this in their slow cooker or crockpot… DON’T! The first time I made this, I made it as directed, and wrote a rave review. I just made it in the crock pot, and it ruins the texture of the rice (and overcooks the chicken).

Tieghan! I live in Summit County too. I have enjoyed many of your recipes, and this one no exception.
Like Linda in the above comments my rice was not completely cooked either. I will be making this again for my family, but am going to try pre cooking the rice 1/2 way next time. I actually did not have wild rice so just used brown rice….just wondering if you used a certain brand of a brown and wild mix or just regular, in its own box/bag wild and brown rice.
Awesome flavors lovely recipe! just needed the rice to be more done…I did add at least 20 minutes to compensate for our very high altitude cooking…bur i know we are at the same elevation! Best to you, enjoy our winter!

made no modifications, cooked for over an hour, rice was still crunchy and uncooked at the time. threw the whole thing out.

This was very tasty and perfect for a cold day! It did take longer for my rice to cook but not by much and I think it would have turned out better if I’d had a pot with more surface area but only my Dutch oven has a lid and it still turned out tasty! Thanks for the recipes, they are all so good!

This dish was great. The apples were a great addition for a sweet and savory taste! I couldn’t find apple cider so I put natural apple juice in it instead and I think it worked pretty well. I didn’t taste the lemon zest at all – I’m not sure if I put enough? It did take a good bit of time getting everything chopped but putting it together was really easy. The rice and chicken cooked perfectly! I’ve never had a baked chicken and rice dish turn out perfectly.

Made this tonight. Wasn’t sure when to add the apples, maybe I missed it, but I added about halfway in the cooking of the carrots, etc. It was AMAZING! I added the lemon juice when I added the wine and cider. It was simple to make, made the house smell like fall and was so delish. family really liked it as well. Will definitely be making this again… And again.

This will be the third, and last, request I will make to ask that this recipe be revised to include the lemon juice and chopped apple (that are in the ingredients list) in the instructions regarding when they should be added. The Lemon Rosemary Dijon Chicken recipe was posted on September 10, 2020 and as recent as yesterday you responded to this same question from another fan of yours. Why has this recipe not been revised? I understand you are incredibly busy, but if the recipe had been revised back in September you would have saved time by not having to respond to three months of the same question. Also since so many added apple cider vinegar instead of apple cider, perhaps you should consider adding “2 cups apple cider (not apple cider vinegar)”. I am a huge fan, but this recipe should have been revised when you first received comments pointing out the omission. Please revise the recipe.

I was making this for your kids but noticed the ingredients call for a chopped honey crisp apple and lemon juice, but it doesn’t say anywhere in the recipe where to add them – so I had to omit them. Not sure if I missed something, but I would love to use them if I make this recipe again!

This is FANTASTIC my family ate it all so fast. The only reason it has less than 5 stars is because people mistakenly used apple cider vinegar rather than apple cider. It’s delicious. I don’t like rosemary so excluded that. I used a 10 inch cast iron which was slightly too small but still came out delicious. Can’t wait to make it again in a larger pot.

Hey Tieghan! Great recipe! Made this last night and the flavors are awesome together. One question, I used the chicken breasts as the recipe calls for but they came out a little dry. Any recommendations to avoid this? Maybe shorter cooking time? Use chicken thighs instead?

I would give this recipe 5 stars for flavor but 3 stars for recipe editing. Calls for juice and zest of 1 lemon. Never tells you when to put in the lemon juice. Says the apple is optional but the actual recipe portion never tells you when to add, only figured this out by gut feeling and reading the above “blog” portion which mentioned when to add it, but again was missing from the actual recipe. Bummer since I usually like HBH recipes!

So I made this last night and for some reason the wild rice was not cooked all the way and the orzo was over cooked and I cooked much longer than recipe called for. 😫 the dish tasted delicious! Just wondering if it had something to do with my pan? The lid has a small venting hole. Could that have let too much steam out? What pan do you use for this dish? Thanks so much! I have a Dutch oven and wonder if that would have been better? 🤔 LOVE ALL YOUR RECIPES!

My family loved this. I included the apple to get as much produce in as possible. The only place where I did not follow the recipe was with the wild rice blend. I didn’t realize it when I was getting groceries, but the box I picked up did not have 1.5 cups of rice in it. I added more orzo to make up for that. Will definitely make this again – and I’ll buy more wild rice blend next time!

I thought this was really good. It has some unique elements that come together for a really complex flavor profile. This will definitely go into our meal rotation. My only substitution was high quality apple juice instead of apple cider to availability.

I love HBH so much. I am a loyal fan and have made a TON of recipes. However, this one did not do it for me. I followed the recipe exactly and my rice came out half-cooked. Not great. Flavors were fabulous but I’m weary of eating undercooked rice.

This receipt just didn’t turn out for me. The wild rice didn’t cook even when I cooked it a lot longer and liquid didn’t absorb very well. Yours looked very good but mine didn’t look anything like your and wild rice was just too crunchy even when I cooked extra long and liquid just didn’t absorb well. Wish it tasted as good as I wanted it to. I used apple cider not vinegar. 🙁
