The coolest thing that I have EVER experienced  happened Sunday night.

BABY GOATS!!

YES! I walked into the goat pen to bring the goats in for the night and there they were. Two of the cutest, tiniest baby goats. Oh my gosh!! Layla, had literally just given birth to her two babies. I caught her licking them off and doing her motherly thing. I say this with as much seriousness as possible, it was probably one of the coolest, most exiting and sweet things I have ever seen in my life. I have to say that I am beyond excited to have been the first one to see these little goats, hold these little goats, and be a part of their first few hours of life. I know this is so cheesy to say, but I feel as though I have a little bit of a special bond with them. I mean, I helped them stand and be with their mother!

I don’t feel like you can ever understand seeing new life moments after it happens and just how cool it is, until you experience it yourself. And something like this was totally different than a human birth. I was there when my little sister was born, and yes, that was amazing, but this was amazing in a different way. There was something so natural about this, and I dunno, I really cannot explain it, it was just pretty incredible.

Layla and her two babies are doing great and it’s the sweetest thing ever. Look for tons and tons of photos to follow along on Instagram and snapchat…I am posting photos and videos of them constantly.

Also, I don’t think we can give these baby goats away. Originally, the plan was to sell them because I mean, what are we going to do with possibly ten goats? But um, you guys! I honestly just do not think I can allow that to happen. One, I don’t think I can just give away something so cute and precious, and two, I also don’t think I have it in me to separate Layla from her babies. Like it just seems like one of the meanest thing you could ever do.

I can’t.

OK, so maybe I should stop gushing about these goats and actually talk about today’s recipe?

Sorry, I cannot help it, I feel like the owner of a new puppy. It’s so exciting!

Anyway, let’s talk Salted Honey Apple and Gouda Toast!! Toast is one of my favorites (I may or may not have a whole page dedicated to toast in my upcoming cookbook)!

I will not lie, this toast is very fall inspired. I was at the farm stand last week when Uncle John (for real) was bringing in the first batch of fresh apples right off the trees. Um, yes please! So I snatched those up, came home and made this piece of toast, well minus the bacon. When I made it, I was only making some food to snack on, cause ahh, apparently I needed some cheese and carbs with my apples.

As I was making it, I was getting pretty excited. I mean, what could not be delish about bread, butter, smoked gouda cheese and fresh apples with a good drizzle of honey and then a sprinkle of flaky sea salt.

Totally my kind of food. I was never even thinking about telling you guys, but then I realized it was even more delicious than I thought it would be. I reasoned with myself that even though the recipe is simple, it’s still great, and that if I threw some bacon into the mix it would be worthy of a blog recipe.

So that’s what I did, I added some bacon and fresh thyme for a little color, and DONE. Blog recipe perfection…or at least I hope! What do you guys think? Simple is good right?

Ahh, yes! Simple is always good.

Alright, so here’s the super fast run down.

…start with a good piece of bread, really anything will work, but use a loaf you truly love! I always go with something that won’t overpower any of the other flavors, so a simple sourdough or whole grain.

…add a little butter.

…tons of shredded smoked gouda cheese, sharp cheddar would also be great.

…crispy bacon, totally optional, but pretty delicious with these flavors.

…thinly sliced apples, honeycrisp apples are my favorite.

…then warm it all up in the oven.

…finish with a good drizzle of honey + a little fresh thyme.

…lastly, a good sprinkle of flaky sea salt.

…now EAT.

Simple, delicious, but perfect any time of day!

What could not be delish about bread, butter, smoked gouda cheese and fresh apples with a good drizzle of honey and then a sprinkle of flaky sea salt.

Ingredients

  • 2 slices thick cut bread lightly toasted
  • 1 tablespoon butter
  • 1/2 cup shredded smoked gouda cheese
  • 4-6 slices thick cut bacon cooked
  • 1 honeycrisp apple thinly sliced
  • 2 sprigs fresh thyme
  • honey for drizzling
  • flaky sea salt for sprinkling

Instructions

  1. Preheat your broiler to high.
  2. Spread your lightly toasted bread with butter and top with cheese, add the bacon and then the apple slices. Place on a baking sheet and place under the broiler for 1-2 minutes or until the cheese has melted. WATCH CLOSELY, you do not want black toast!
  3. Remove from the oven and sprinkle with fresh thyme. Drizzle with honey, and sprinkle with salt (to taste). EAT!
