Homemade Cheesy Gordita Crunch Tacos.
Homemade Cheesy Gordita Crunch Tacos…taking everyone’s favorite fast food taco and making it healthier at home. Ground meat (chicken or beef) seasoned with homemade taco seasoning. Then stuffed into hard shell tacos wrapped in soft tortillas with a blend of three types of Mexican cheese. Each taco is topped with spicy ranch, lettuce, and cheddar cheese. Just the right amount of melty cheese and a CRUNCH with every bite. These tacos come together quickly and are so DELICIOUS. Serve with a mix of more of your favorite toppings for a Cheesy Gordita Crunch that no one can pass up. A whole lot better than the fast-food version.
Well, would you look at me? I started with the Crunchwrap and now we’re moving onto these homemade Cheesy Gordita CRUNCH tacos. And to be honest, I think these might actually be a touch better than the Crunchwraps…
Don’t hate me for saying that, but hear me out.
First things first, these were not planned for today – at all. But if you follow along on my Instagram stories you know why these are happening today. Let’s rewind to Friday night. It’s about 6:45 pm, I’m working on writing recipes by the fire at the studio. I know, I’m lame, yes, writing recipes were my Friday night plans, but for me, it’s fine. Anyway…
My oldest brother, Creighton walks in looking for food only to find out I haven’t cooked. It was yet another computer day. He’s very, very disappointed. I made nothing he really enjoyed last week. After three days working on the computer, not a lot of food had come up to the house from me. So he was bumming. I can’t remember what exactly started the conversation, but Creigh was telling me about a dinner he made. Somehow our conversation came around to the Taco Bell Cheesy Gordita Crunch.
And Oh. My. Gosh. Did he have a lot to say about his very favorite Taco Bell menu item. I’ve never seen so much enthusiasm over anything in my life.
In his words, “whooooooo, if you can make a Cheesy Gordita Crunch, and you can make it healthy? You’ll solve the problems of the world”.
To say that I was dying with laughter would be an understatement. This conversation was surely the highlight of my weekend.
I could tell from the moment Creighton walked over to me and started going on about some couch he had to move, that he really had some things he needed to get off his chest. And when he started talking about T-Bell with so much excitement (all while holding a giant pepperoni stick in his hand), I quickly flipped the camera on him. Some moments are too good to not be documented.
I threw our little conversation up on Instagram Friday night, and…wow.
You guys have a lot of love for this T-Bell Cheesy Gordita Crunch. I took the thousands of direct messages to heart and quickly created my version of the Cheesy Gordita Crunch on Saturday. And now, here we are.
It’s Monday and we’re celebrating with the most exciting recipe of the week, the homemade Cheesy Gordita Crunch.
If you loved the Crunchwrap you’re guaranteed to love this taco too. Personally, I’m all about this taco, even over the Crunchwrap.
For anyone who is unfamiliar, the Cheesy Gordita Crunch is simply a hard shell taco, wrapped up in a soft piece of flatbread, topped with a three-cheese melted blend. It’s stuffed with meat, T-Bell’s spicy ranch sauce, lettuce, and then cheddar. It’s basically just a loaded cheesy taco doubled up on the shells.
These are GOOD. My photos do not do them justice. I just couldn’t seem to capture their cheesy goodness, but trust me, it’s there.
The Tacos.
The best part about the Cheesy Gordita Crunch? They’re even easier to make than the Crunchwrap. If you can make a basic taco, you can easily make these too!
For the taco meat, I used my chipotle chicken taco seasoning mix because it’s always everyone’s favorite. You can make these using ground beef or chicken, I’ve done it both ways now, and both are equally delicious.
Once the meat is done, simply assemble, it’s that EASY.
First, lay the flour tortillas flat onto a baking sheet, then top them with a good amount of the three-cheese blend (cheddar, Monterey Jack, and mozzarella). Now, this next step is optional, BUT, if you ask me it’s a must-do. Sprinkle over a little bit of my homemade cheesy “Doritos” seasoning blend. Yes, cheesy Doritos seasoning. It’s a simple mix of garlic powder, onion powder, paprika, cumin, chili powder, salt, and grated parmesan cheese.
It. Is. DELICIOUS when baked into the cheese…and only just a little bit addicting.
Throw the pan in the oven to let the cheese melt. Once the cheese is melty, add the hard shell tacos. Now press the melty cheese into the hard shells. The cheese sticks to the shell and holds everything together. I then throw the shells back into the oven to warm through again.
Now, layer up your tacos. It goes taco meat, homemade spicy ranch, lettuce, and then cheddar.
The Spicy Ranch.
For the ranch, I did my go-to homemade Greek yogurt ranch but added in a spicy jalapeño and a squeeze of lime juice.
Most tacos are topped with sour cream, but trust me, this spicy ranch is so much better. It’s not your average ranch and really completes the taco.
I generously dollop the ranch on each taco, then pile on the lettuce and cheddar. It sure isn’t anything fancy, but I have to admit, these are some of the best tacos. You get the best of both worlds between the soft and hard shells, lots of melty, warm cheese, perfectly seasoned meat, spicy sauce, and even some greens too.
Beyond delicious. Easy to make. And hey, healthier than the T-Bell version, so I’d said they’re better too! Creighton’s opinion? Well, first of all, the excitement he had when I actually made these was through the roof. But then the taste.
Even BETTER. More seasoning, more sauce, more ranch, and the perfect cheesy shells. Pretty hard to beat that combo. Delicious, and so much fun too!

Homemade Cheesy Gordita Crunch Taco
Taking everyone’s favorite fast food taco and making it healthier at home...plus quick and easy!
Ingredients
Tacos
- 2 tablespoons extra virgin olive oil
- 1 pound ground chicken, beef, or turkey
- 1 yellow onion, chopped
- 2-3 teaspoons chipotle chili powder
- 2 teaspoons smoked paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/4-1/2 teaspoon crushed red pepper
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
For Assembling
- 1 1/2 cups shredded Mexican cheese blend
- 2 tablespoons Doritos seasoning (recipe in notes - optional)
- 8 mini taco size whole wheat or gluten free tortillas
- 8 hard taco shells
- spicy ranch dressing (homemade in notes)
- 2 cups shredded romaine lettuce
- 1/2 cup shredded sharp cheddar cheese
- fresh cilantro, limes, avocado, and hot sauce for serving
Instructions
-
1. Preheat the oven to 400° F.
2. In a large skillet, heat the olive oil over high heat. When the oil shimmers, add the ground meat and onion. Cook, breaking up the meat as it cooks until it is browned, about 5 minutes. Add the chili powder, paprika, cumin, garlic powder, red pepper flakes, oregano, and salt. Add 3/4 cup water. Reduce the heat to medium and simmer until the sauce has thickened slightly around the meat, about 10 minutes. Keep warm over low heat.
3. Meanwhile, lay the flour tortillas flat onto 2 baking sheets. Evenly divide the Mexican cheese blend between each tortilla. Sprinkle the Doritos seasoning over the cheese (if desired). Bake 3-5 minutes, until the cheese is melted. Add the hard shells to the center of each tortilla, pressing one side of the shell into the cheese. Bake another 2-3 minutes. Fold the remaining cheesy side onto the hard shell, pressing the shell into the cheese.
4. Spoon the meat evenly into each shell. Top with the spicy ranch, lettuce, and a sprinkle of cheddar cheese. Serve immediately with any amount of desired toppings...avocado, hot sauce, yogurt, cilantro, salsa, whatever you love!
Recipe Notes
Cheesy Doritos Seasoning: In a small bowl, mix 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, 1 teaspoon chili powder, 1/2 teaspoon kosher salt, and 2 tablespoons grated parmesan cheese. Add cayenne pepper for even more kick.
Spicy Ranch: Mix 1/2 cup plain Greek yogurt or sour cream, 2 tablespoons buttermilk, 2 tablespoons fresh chopped chives, 1 finely chopped jalapeño (seeded, if desired), 1 finely chopped chipotle in adobo (optional), 1 teaspoon dried parsley, 1 teaspoon dried dill, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and a pinch each of kosher salt and black pepper in a glass jar or measuring cup. Squeeze in some lime juice.
Tortillas: I love to use Siete Foods Grain Free Burrito Size Tortillas and their smaller Grain Free Tortillas. You can get these at Whole Foods or order online. I also love the Whole Foods Brand whole wheat tortillas.

Looks insanely delicious! Cannot wait to make them!
Hey Cassandra,
Thanks so much for giving the recipe a try, I am so glad it was enjoyed! Have a great week:) xTieghan
The taco itself is very simple to make, we’ve been doing it this way for years! I’m so glad you came on board and made them! I will say I’m bummed you didn’t try to make Baja sauce, the spicy ranch in the comments won’t be at all like what TB serves (their ranch is a pepperjack, bell pepper and chipotle based sauce). Baja sauce is the one component I can’t figure out!
I hope you love the recipe Miranda! xTieghan
I am making these, for sure. I will let u know.
Hope you love the recipe Elaine! xTieghan
I always loved the Taco Bell double decker taco supreme growing up. Similar concept but beans are the glue between the hard and soft tacos. I make them at home now as a fun take on taco night! Throw some pinto beans in the crockpot over the course of the day, mash them up, and assemble them with whatever you like. I may need to do the cheese glue with your dorito flavoring though. That sounds amazing!
Thanks Julie! xTieghan
I remember eating these in high school, it was the only thing I’d ever order from Taco Bell (and haven’t eaten there since). These look INSANE! I need one!
xo Jessica
an indigo day
Thanks Jessica! xTieghan
Yo I am so dang excited for this! I am 34 years old and for 34 years I have been known for my insatiable love for all things Taco Bell (Yes, I know I’m crazy). My sister and I ate it growing up like it was some Michelin Star restaurant and my friends to this day will bring over TB when coming over to hang out. Needless to say I will be making this very, very soon. Looks DELICIOUS! Thank you so much for the recipe. Love your blog. 🙂
Hey Derek,
LOL I hope you love the recipe, let me know how it turns out! xTieghan
PLEASE do the toasted cheddar chalupa next. Life has not been the same for me since Taco Bell took it off the menu and I have not been able to find a good recipe for it. Can’t wait to try these, though. They look delicious!
I’ll add to my list!! xTieghan
Hi, I am Ale.
I think a better name for this recipe could be Quesadilla Crunchy Tacos.
Best wishes from Mexico : )
Thanks Ale! If you go back and read the post, I explain why these are called cheesy Gordita crunch tacos:) xTieghan
These Tacos were absolutely delicious, made a side of Tater Tots with the seasoning as well! Family is over the moon 😋 I’ll have to work out a little more this week, but we’ll worth it.
Hey Joanne,
Thanks so much for making the recipe, I am delighted it was enjoyed! xTieghan
Great recipe, kids loved it too, thanks!
Hey Lisa,
Thanks so much for making the recipe, I am delighted it was enjoyed! xTieghan
I made these tonight ! Absolutely delicious!! My tortillas and the cheese on top of them kinda overcooked. The tortillas were a bit difficult to fold and ended up quite crunch but maybe because I did not use gluten free like suggested! Was still so delicious. I loved the ranch.
Hey Hannah,
Thanks so much for making the recipe, I am delighted it was enjoyed! xTieghan
Is there a substitute for buttermilk in the spicy ranch recipe? I don’t usually have buttermilk on hand but would love to give this recipe a try! Especially since the crunch wrap recipe you posted was a huge success !
Hey Lucy,
You can make buttermilk by mixing whole milk with 1 tablespoon of lemon juice! I hope you love the recipe, please let me know if you have any other questions! xTieghan
Hello Tieghan,
So glad you made these! What size flour tortilla? I attempted a double decker taco once before and the street taco size I used didn’t wrap fully around the hard shell. Are the ones you used 8 inch?
Thank you for your help!
Hey Amy,
I used 6 inch shells, but you can use any size that you like:) I hope you love the recipe, please let me know if you have any other questions! xTieghan
We loved this recipe so much Tieghan! Super easy to throw together on a weeknight with so much flavor! Thank you for always crushing the recipe game, I swear we make your recipes at least 5x a week, between meals & desserts. The BEST!
Hey Christine,
Thanks so much for making the recipe, I am so glad it was enjoyed! Thanks! xTieghan
Hi! Just wondering for the ranch, do you use full fat or nonfat Greek yogurt?
Hey Joy,
I like to use full fat but either will work. I hope you enjoy the recipe, please let me know if you have any other questions! xTieghan
Says 553 kcals per serving.. but doesn’t say the serving size? Messaged her on Instagram and got a rude reply. No very nice when I’m just trying to get the right calories!
Hey Lydia,
So sorry for the confusion! The serving size is for 1 taco:) I hope you love the recipe, please let me know if you have any other questions! xTieghan
So good!
Thanks Heidi! xTieghan
553 Calories per taco? Worth it……they were so good
Hey Annie,
Thanks so much for making the recipe, I am so glad it was enjoyed! Thanks! xTieghan
My family told me this is the ONLY way that they want tacos from now on!
Hey Cindy,

So delicious! The spicy ranch was interesting – was surprised to see the dill in there. You are so creative! Thank you. Just found out about HBH a month or so ago and have already made like 6 recipes and they are all winners!! Keep em coming!
Hey Kayla,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! xTieghan
Have made several of your recipes with great success! These were no exception!! I’m not sure I got the cheese blend correct. Could you please share which types of cheese you use for your Mexican cheese blend? Thank you:)
Hey Laurie,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! I like to use mozzarella, cheddar, and pepper jack! xTieghan
I made these last night and holy moly my family was SO HAPPY!! So so sooooo good! These will be added to the regular rotation. Thank you!!
Hey Jen,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! xTieghan
Made them tonight! SO good! Th Doritos spice was an added bonus.
Hey Jen,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! xTieghan
I wish I had listened to my gut: 10 total minutes for the flour tortillas + cheese is way too long. My flour tortillas were stiff and the cheese was hard and not gooey. I think 5 total minutes for all the tortillas would be just right. The flour tortillas + cheese looked perfect after 5 minutes.
Brilliant concept, will make again with the above modifications.
Hey Jackie,
So sorry you had issues with the bake time, thanks for trying the recipe! xTieghan
Delicious! Had to force myself to stop eating. So yummy! (Never had the taco bell version but I love these!) And we are big fans of Half Baked Harvest. Thank you!
Hey Dina,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! xTieghan
These were SO good. Partner wasn’t too sure of the concept at first (he’s never had Taco Bell, can you believe?!) but we’re both now hooked!! Used chicken and didn’t make the sour cream ranch style as we didn’t have all of those ingredients on hand, but man. Delicious!
Hey Caroline,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! xTieghan
These were the best tacos I’ve ever had in my life. I’ve never eaten and Taco Bell and never will need to now.
Hey Casey,
I so appreciate you giving the recipe a try, I am thrilled it was enjoyed! xTieghan
Hi Tieghan, what would you suggest for a vegetarian alternative to meat in these?
Hey Kelsey,
I think cauliflower or beans would work well here. I hope you love the recipe, please let me know if you have any other questions! xTieghan
I just made the homemade ranch sauce and honestly it is UNREAL!!! I can’t wait to put this recipe all together tonight!!!
Hey Natalie,
Thanks so much for making the recipe, I am delighted it was enjoyed! Happy Friday:) xTieghan
We found a new family favorite!

Hey Christine,

So easy to make and delicious! I love that the cheesy outer tortilla holds the taco together and also makes them so easy to eat!
Hey Ali,
Thanks so much for making the recipe, I am delighted it was enjoyed! Happy Friday:) xTieghan
WOW! What a fun recipe! I have been making homemade versions of crunch wrap supremes since the beginning of quarantine but never though about these cheesy gordita crunches! HIGHLY recommend making the Doritos seasoning. The spicy yogurt ranch (I used greek yogurt) was a nice cool flavor packed twist instead of adding just plain sour cream. I also added some diced up chipotle peppers in adobo sauce since I had a jar opened in the fridge. PRO TIP since there is quite a few steps, I made my taco meat seasoning blend, doritos seasoning and spicy ranch a few days in advance. So when it came time to making day, it was basically all assembly and cooking the meat so it was super speedy. Again, a super fun meal to make at home. As always, thank you Tieghan for your creations.
Hey Ciara,
Thanks so much for making the recipe, I am delighted it was enjoyed! Happy Friday:) xTieghan
OMG. I never say that, but wow these were good! When I announce that I want to try a new HBH recipe, my husband is always excited! So good. Thanks Tieghan!!
Hey Casey,
Thank you so much for making the recipe, I am thrilled it was enjoyed! Have a great weekend:) xTieghan
Burned my hand making these. Still would 100% do it again. Bomb recipe. Boyfriend took pictures to send to friends. Winning. 💯
Hey Emily,
Thank you so much for making the recipe, I am thrilled it was enjoyed! Have a great weekend:) xTieghan
sounds delicious!
Thanks Yvonne!
I made these last night and WOW they are delicious! I warmed the soft tortillas with cheese and seasoning as per the recipe and then placed them in my stainless taco stands then pressed the hard shells into them. I did the second shell warming in the stands and then filled them as directed. The stands made the process so easy! I will definitely be making these again very soon. Thanks so much for your creative, tasty recipes!
Hey Ashley,
Thanks so much for giving this recipe a try, I am so glad it was enjoyed! Happy Sunday:) xTieghan
Made these tonight…tasted like taco bell without the guilt. Love!
Thanks so much Lauren! xTieghan
Great recipe. I was out of flour tortillas and used naan instead and I have to say this might have taken it up another level. I recommend the naan for sure. Keep the dupe recipes coming!
Hey Lacey,
Thanks so much for giving this recipe a try, I am so glad it was enjoyed! Happy Sunday:) xTieghan

We had another “Half-Baked Harvest/Tieghan” cook along!!!!!! My nieces and I all follow you and when we see a recipe we all want to try, we gather our families and all cook together and review the recipe. We sit around the kitchen island and welcome comments and suggestions. You are adorable and we love your dedication to your family, that is exactly how I feel about my family!!!!! Oh, almost forgot………these gorditas are delicious!!!!!!
❤️
Hey Paige,
Thanks so much for giving the recipe a try, I am so glad it was enjoyed. Have a great week! xTieghan
Oh my, this recipe was easy and delicious! My husband always struggled with the hard taco as it broke while eating. Drove him crazy. So I hadn’t made these for along time. I did know about wrapping it with a soft shell. But, it wasn’t enough to convince him to eat them again. Until, I saw your recipe on Instagram and how to stories. He loved it!!! All of it and the ranch sauce…sublime. Let’s not forget the Doritos seasoning, muaahhh!
Our dinners have never been better since I started following you. Keep it up and thank you!!
Hey Nicole,
I am so glad you have enjoyed the recipe, thanks so much for making it! Have a great week! xTieghan
I actually used a meat substitute (Gardein ground) and they were still so delicious. 10/10 will make again!
Hey Laura,

Hey Dawn,
I am so glad you have enjoyed the recipe, thanks so much for making it! Have a great week! xTieghan
Watched this on IG and was inspired to make a variation for our dinner that very night with just what we had on hand and it was a HIT! I already had chicken in the slow cooker with taco seasoning to shred for tacos. I made the spicy ranch varied with Mexican crema. I only had a couple hard taco shells, so we improvised by lining with tortilla chips and those improvised were actually were are favorite. Printing this recipe as it is a “keeper”. Will plan better next time to make your seasoning. For sure will be adding the spicy ranch for all our Mexican night meals. Thanks for the great recipe!
Hey Kelli,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. xTieghan
These are insanely good. Definitely a must try! I used extra lean ground beef for authenticity – highly recommend.
Hey Kate,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. xTieghan

Pretty please do the cheesy bean and rice burrito next! Can’t wait to try this recipe!
Thanks for the recommendation Kels! xTieghan
Made it and it was fantastic! But I think i had the wrong “chipotle”- what kind/ brand are you using?
Hey Theona,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. I get my chipotle seasoning from Whole Foods. xTieghan
Tieghan, these were so delicious! Had a blast making them for our taco night and especially loved the “Cheesy Doritos”-style seasoning. Thanks for the recipe!
Hey Mandy,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. xTieghan
So delish! A million times better than Taco Bell.
Hey Lauren,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. xTieghan
Made these over the weekend and holy moly so good!!! The jalapeño ranch really makes it! So worth the extra work. Please keep the Taco Bell recipes coming.
Hey Lucy,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. xTieghan
These were so good! Although there are a lot of spices, I luckily had all of them on hand. I tried to cut some calories by using reduced fat cheese and I forgot it doesn’t melt at all. I was able to make 10 tacos with this, we loved them.
Hey Nicole,
Thank you so much for giving the recipe a go! I am thrilled it was enjoyed. xTieghan
These were so great! I was in a hurry and didn’t have time to make the dorito seasoning, so I used Trader Joe’s everything but the elote seasoning, and it worked great!
Hey Anna,
I am delighted that this recipe was enjoyed, thanks so much for giving it a try! xTieghan
If we are using flour tortillas, what would you recommend for the cook time? I saw a few reviews stating it didn’t exactly turn out so I would love to hear wha tyou suggest!
Hey Kim,
I think flour tortillas would work just fine following the recipe as is:) I hope you love them! xTieghan
I love these! Easy and family-friendly 💕
Hey Elly,
I am delighted that this recipe was enjoyed, thanks so much for giving it a try! xTieghan
So very delicious and easy to make! My husband and I enjoyed your recipe on Taco Tuesday.
Hey Angie,
I am delighted that this recipe was enjoyed, thanks so much for giving it a try! xTieghan
Seriously loved this! Even my picky eater husband had 3 servings. The spice combo for the meat (we used turkey) is better than the ore-packaged taco seasoning we usually use. The Dorito seasoning is also a must. We didn’t do the Spicy Ranch as we don’t like anything too spicy. Overall, very yummy!
Hey Lindsey,
I am delighted that this recipe was enjoyed, thanks so much for giving it a try! xTieghan
OMG these were so good! I used boneless skinless chicken thighs because that’s what I had in the frig! So amazing! And I used small street tacos bc it was also what I had! Next time I’ll use soft taco tortillas and shred my own cheese! so much flavor and goodness!
Hey Leah,
I am delighted that this recipe was enjoyed, thanks so much for giving it a try! xTieghan
10 out of 10! Family loved these, I made them vegetarian by swapping meat for beans. Easier than the crunch wraps, but both are excellent. So much fun, too. Thank you, another winner. My request: Indian spinach (saag or palak)! My favorite, what about adding halloumi for the paneer? I love all your recipes.
Hey Lori,
I am delighted that this recipe was enjoyed, thanks so much for giving it a try! xTieghan
Tieghan – first time commenter! I started following your daily recipe blog since the pandemic began and I’m hard-core crushing. My family and I love e-v-e-r-y-t-h-i-n-g you do!! I had to let you know that you have attained genius status with my fam with the gordita crunch. You figured out how to enjoy hard tacos without the sloppy disaster upon first bite — minds blown. Thank you!!
Hey Stephanie,
I am so glad the recipe was enjoyed, thank you for making it! Thanks for your kind message:) xTieghan
This was simply amazing. I used less cheese and didn’t even make the dressing and it was still beyond delicious. Will make this often for sure.

Lol so glad to hear this! Thanks for making the recipe:) xTieghan
So good and easy! The whole family gobbled these up. My soft taco shells were a little big so it didn’t look as pretty as yours but still delicious!
Hey Lisa,

Hey Amy,
Thanks so much for making this recipe, I am so glad it was enjoyed! Have great week:) xTieghan
OMG this recipe. It solves a lifelong problem. I’ve always loved crunchy tacos and hated the way that they fall apart. The flour tacos are a crunchy taco delivery system! Genius!! The faux Doritos spice mix was essential for bringing this whole recipe over the top. Again, a huge win for making me a dinner hero. Thank you!
Hey Maura,
Thanks a bunch for giving the recipe a try, I am so glad it was enjoyed! xTieghan
Best taco ever! Bursting with flavor. Definitely going on my menu rotation. Only one comment……. I didn’t care for the ranch dressing. The dill was too much and did nothing to compliment the other spices. Would swap out for plain sour cream. Otherwise, delicious! Thank you.
Hey Deb,
Thanks a bunch for giving the recipe a try, I am so glad it was enjoyed! xTieghan
These are SO good—and so easy! Made them for my husband and a “take out” for my in-laws (this is how we have enjoyed having dinners together since covid). Even with everything wrapped up much like Taco Bell, my mother-in-law FaceTimed me to say how delicious they were and felt like she had a meal out! Saving this for the future. Tacos are already amazing but this takes it to the next level. #thatcrunchthough
Thank you Tieghan for—as always—having the BEST recipes!
Hey Kindra,
Thanks a bunch for giving the recipe a try, I am so glad it was enjoyed! xTieghan

I am delighted that this recipe was enjoyed, thanks so much for making it! Happy Friday💕 xTieghan
Holy crap this is good! So much flavor. And the spicy ranch really makes this dish and that’s coming from someone who doesn’t even eat ranch!! My boyfriend said it’s better than Taco Bell and the cheesy Gordita crunch is his go-to. I highly recommend!!

Could I use corn tortilla shells instead of flour for the outer shell? That’s all I have.
Hey Haley,
Yes, that should work just fine for you. I hope you love the recipe, please let me know if you have any other questions! xTieghan
These were fantastic!! They’ll be a regular in our house now! Kids loved them and we loved them! The kick totally made them too.. although I left out the dorito seasoning for the kids, it would be a bit too spicy for their tastes!
Hey Ruth,
I am so glad that you liked this recipe, thanks for giving it a go! Happy Friday🌷 xTieghan
I have always used store bought taco seasoning but after this I am never going back! So good! I have 3 boys and it passed the taco bell test too! Thank you!
Hey Rachel,
I am so glad that you liked this recipe, thanks for giving it a go! Happy Friday🌷 xTieghan
This recipe was a huge hit! We loved it. The extra melty cheese in between the shells was awesome. I did a chicken breast in the crockpot and spiced it up also added some pico. Our new taco fav!
Hey Darla,
Thanks so much for making this recipe, I am delighted that it was enjoyed! xTieghan
I will never buy taco seasoning again. The way Teighan uses spices is unbelievable. Every single recipe that I have made so far (I think about 5 of them) are to die for. I made this for my boyfriend and myself and ever since I made it every time my boyfriend and I consider going out to get Mexican food he instead asks me to make this for him. As someone who has worked for Taco Bell for three years before I am so impressed with how well half baked harvest leveled up the cheesy Gordita crunch!!!
Hey Emily,
Thanks a bunch for giving this recipe a try, I am so excited that it was enjoyed! Happy Friday! xTieghan
I made these and it was a disaster. They turned out way to spicy and it was a huge mess. I used the recipe and followed it exactly. Do you have any recommendations on how to remedy this? And to get the shells to stick to the cheesy tortillas? They look amazing but didn’t pan out the way I had hoped.
Hey Michelle,
So sorry you did not enjoy the recipe. I would reduce the spice mixture next time to your level of liking. I highly recommend shredding your own cheese from the block, it melts much nicer than pre-shredded cheese and the shells should stick better. I hope this helps! xTieghan
It’s very rare I come out the champion in the kitchen when it comes to a last minute meal idea. My husband typically takes the task upon himself and is not a super adventurous eater (despite my love for HBH) but when I whipped these up on a whim – I was met with the most sincere “it’s like you read my mind”. These were so easy and delicious and we made more than we needed but we can’t stop eating them ….
Hey Carson,

You lost me at “healthy”…
Made these last night and they are so so good! I’m not usually the biggest ground meat taco fan, but these were amazing and the Doritos seasoning really made the recipe. Definitely will make again soon.
