Bonus, the shredded beef is great as a leftover. Pile it high onto your favorite tortilla chips for some delicious nachos or serve it up atop greens for a Mexican inspired salad.

Monday felt like it needed a fun dinner, so taco night it is. But guys, these are not your average tacos. Nope, they’re better, they’re what I’m calling “loaded” carne asada street tacos. They might not be one hundred percent traditional, but they’re fun and delicious.
Perfect for a Monday night…well perfect for any night. But these tacos are sure to livin’ up an average Monday, you know?
With Cinco de Mayo just a week away I wanted to be sure to share a few new Mexican recipes for you all to easily recreate at home. Since many of us are feeling a bit bored at home right now, it’s a great time to have some fun with some Mexican inspired dinners. Something about Mexican food is not only beyond delicious, but always feels fun and anything but fancy, which I kind of love. Tacos are laid back, low key, make yourself a margarita, sip, and eat, kind of food.
And well, right now they’re transporting me to the Mexican sunshine and have me dreaming of a vacation. It’s wonderful…and somewhat torturous at the same time. Soon enough that vacation will happen, but until then, let’s just build up the excitement with Monday night street tacos.
Sound good? Perfect.

The background and the story.
In full disclosure, Carne Asada is always, always a grilled steak taco. So I’m sure many of you might be giving me the side-eye for cooking these up in the slow cooker. But hear me out. For one, it’s not grilling weather up here in the mountains just yet (but I did provide grilling directions). And two? The slow cooker is easy, hands-off, and always leaves me with perfectly tender beef, that shreds nicely.
Just trying to do what’s easiest and what tastes best.
These fun street tacos were inspired by the ever so famous Carne Asada Burrito that’s commonly served up in the San Diego area. My cousin, Abby, who has lived in San Diego for years, loves these burritos. The best part about them? They come “loaded” with grilled carne asada, crema, salsa, cheese, and french fries. Yes, french fries in the burrito.
It’s weird but it’s also genius. So I took that concept, only I created a taco with shredded carne asada, lots of avocado, so much cilantro lime sauce, and fries on top…or on the side, whichever you prefer.

Making these Crockpot Carne Asada Tacos is easy, here are the details.
First, pick your cooking method. I used the crockpot, but honestly cooking in the instant pot, or of course grilling, are equally easy and delicious. It all comes down to how much time you have, and or what your preferred cooking method is. So take your pick.
Next, simply combine all of the ingredients. Flank steak, garlic, lots of seasonings, plenty of lime, and a splash of beer. Toss everything together in the bowl of the crockpot and cook until the steak is easily able to shred.
This next step is key. Remove the steak from the sauce, let it rest a bit, then lightly shred it and place it under the broiler. Cooking the steak under the broiler allows the steak to have a chance to caramelize and even become a bit crispy on the edges.
Yes…it’s an extra step, but I do think it’s worth it.

While the steak is cooking, get together the toppings.
The fries are simple. Just oven-baked fries seasoned up with chili powder, smoky paprika, and salt. Very simple to make and they come together quickly while the steak is cooking.
For the cilantro lime garlic sauce. It’s a simple mix of plain Greek yogurt (or sour cream), garlic, lots of lime, lots of cilantro, and some green onions too. Not too fancy, but it’s my favorite cooling tangy sauce to serve with a spicy street-style taco.
The rest of the toppings are all up to you. I like to serve with chipotle salsa (my homemade recipe is in the HBH Super Simple Cookbook), lots of lettuce, cilantro, lime, jalapeños, and crumbled salty feta cheese.
These are not a hardcore classic Carne Asada taco, but they are so darn good, and a taco that everyone will love and have fun eating too.
The steak can be slow-cooked all day, then everyone can build their own tacos for dinner. Easy, fun, and all-around good. And of course, if you have the perfect grilling weather, you can grill the streak too. Perfect for the upcoming summer months!
And with that, who else is getting excited for Cinco de Mayo next week? It’s something to look forward to and we all need that these days. Just add your favorite margarita to round out the meal. Plus extra chips, guacamole, and salsa too. Yummmm. Mexican nights are the best. Enjoy.

Crockpot Carne Asada Tacos with Cilantro Lime Garlic Sauce

This fun Mexican fiesta-style dinner comes together easily and is so very delicious.
Ingredients
- 2 pounds flank steak
- 4 cloves garlic, minced or grated
- 1 tablespoon chipotle chili powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- kosher salt
- 2 tablespoons extra virgin olive oil
- zest and juice of 1 lime
- 1/2 cup Mexican beer, such as Negra Modelo (or water)
- 1 tablespoon honey
- warmed corn or flour tortillas,
- avocado, feta cheese, jalapeños, pickled onion, and shredded lettuce, for serving
Mexican Fries
- 4 potatoes, cut into ¼-inch-thick matchsticks
- 3 tablespoon extra virgin olive oil
- 1 teaspoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- kosher salt
Cilantro Garlic Lime Crema
- zest and juice of 1 lime
- 1-2 cloves garlic, grated
- 1/2 cup plain Greek yogurt or sour cream
- 1/2 cup fresh cilantro, finely chopped
- 2 green onions, finely chopped
Instructions
Crockpot
-
1. In the bowl of your slow cooker, combine the steak, garlic, chili powder, onion powder, paprika, pinch of salt, olive oil, lime juice and zest. Rub the seasonings into the steak. Add the beer. Cover and cook on low for 6 hours or on high for 3-4 hours.
2. Preheat the broiler to high. Remove the steak from the sauce to a baking sheet. Let rest 10 minutes. Lightly shred. Add 1/2 cup of the cooking liquid, then drizzle on the honey. Transfer to the broiler. Broil for 2-5 minutes, until the streak caramelizes. Watch closely! Toss with additional cooking liquid, if desired.
3. Meanwhile, make the fries. Preheat the oven to 425 degrees F.
4. Place the potatoes on a large baking sheet and toss with olive oil, chili powder, paprika, garlic powder, and a large pinch of salt. Spread the fries in an even layer. Do not overcrowd the pan, if needed, divide the fries between 2 baking sheets. Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15 minutes more.
5. To make the sauce. Combine all ingredients in a bowl and mix until combined. Season with salt.
6. Stuff the carne asada into the warmed tortillas. Top as desired with cilantro, lettuce, avocado, fries, cheese, and additional sauce. Enjoy!
Instant Pot
-
1. Cut the steak into 4 pieces. In the bowl of your instant pot, combine the steak, garlic, chili powder, onion powder, paprika, pinch of salt, olive oil, lime juice and zest. Rub the seasonings into the steak. Add the beer. Cover and cook on high pressure/manual for 8 minutes. Once done cooking, use the natural or quick release function and release the steam.
2. Preheat the broiler to high. Remove the steak from the sauce to a baking sheet. Let rest 10 minutes. Lightly shred. Add 1/2 cup of the cooking liquid, then drizzle on the honey. Transfer to the broiler. Broil for 2-5 minutes, until the streak caramelizes. Watch closely! Toss with additional cooking liquid, if desired.
3. Follow the directions as directed above for steps 3-6.
Grill
-
1. Place the steak in a 9x13 inch pan. Add the garlic, chili powder, onion powder, paprika, pinch of salt, olive oil, lime juice and zest. Rub the seasonings into the steak. Add the beer. Marinate 30 minutes or in the fridge as long as overnight.
2. Preheat your grill or grill pan to high.
3. Remove the steak from its marinade and sear the steak for 5-8 minutes, flip and sear another 5 minutes or until your desired doneness is reached. Remove the steak from the grill and allow to rest 10 minutes. Slice steak thinly against the grain.
4. Follow the directions as directed above for steps 3-6.

Hi, I love your recipes so I hope this doesn’t come offf rude. I’m just curious why you always have multiple components to every recipe you create. I think they taste great but I usually have to pick and choose pieces from them and manipulate them to fit my schedule. Its rarely possible for me to come up with them time to make any of these dishes after a 10 hour work day the same way that youdo. I was really excited about this one but you still had french fry & sauce recipes. Thats completely fine but just made me realize very few recipes you do are simple and practical for people people with long jobs and commutes. Maybe you should consider sinpler recipes with fewer ingredients once a week?

We grilled our meat, because we didn’t had time to put it in the crockpot, we used parsley instead of cilantro, because my hubby can’t stand the taste of cilantro, and made the fries with sweet potatoes. The recipe looks good! However, I have to say that carne asada is NEVER EVER prepared in a crock pot. Carne asada is always either grilled or barbecued. In Mexico, the type of beef used in this recipe is known as “carne deshebrada”. It’s cooked slowly and then shredded.
I have to agree with Lily! This recipe doesn’t produce “carne asada”. “Asada” means “grilled” or “roasted,” which a crockpot can’t produce. Haha! But most united-statesians wouldn’t know that, and most “Mexican” food places in the U.S. are fake Mexican, so if it tastes good, who cares?!
I was hoping that you could help me with something please: if I wanted to use pork instead of beef, how long should I cook it in the slow cooker? I would use the same cut as a pulled pork (which I believe is a pork butt(sp?)). Thanks!

Ok I’ve made these three times because I absolutely love carne asada. However after all the flavors that go into the crockpot and all the amazing smells coming from my kitchen, I was very disappointed by the lack of actual flavor in the carne asada itself. Thankfully, the fries more than make up for the lack of flavor in the meat. I think I just need to add more salt to the meat or bring in some other flavors. Overall as long as you make it all together, it’s bursting with flavor. Just not the meat by itself.

Where did the pico de gallo recipe go?
I did not like this. To say it was too citrusy would be an understatement. The toppings made it more bareable, sure, but the meat was not good. No amount of salt or spice could counteract the citrus overtones.

Hmmm, I am not sure. I have had some trouble with recipes after I swited to a new recipe app. I am going to look into this ASAP. SO sorry for the trouble. Usually my salsas are 1 (14 ounce) can tomatoes, 1 jalapeono, juice of 1 lime juice, 1/4 cup cilantro, pinch of cumin, and a pinch of salt.

I noticed in your video you do not sear the meat in a pan before putting it in a crockpot. Does it have to be seared first or can you just put it straight in to the crockpot?

I think this could easily be made in an Instant Pot, if someone didn’t have time to use the crock pot. Just brown the meat, scrape the bottom of the pot when you add the liquids (otherwise the pot might think something is sticking and burning and might turn off) put all the seasonings in and turn on for 45-60 minutes. The meat would be fall apart tender and delicious. I haven’t made this recipe YET, but I’m sure going to. The recipe looks perfect and the pictures make my mouth water! The Instant Pot makes short work for those with little time due to working long hours and having long commutes, and all the rest of us! ?

These look fabulous! But can flank steak really come out tender cooked in a crockpot? There doesn’t seem to be a lot of liquid either, I’m afraid they would turn out too tough. I’ve only done flank steak on the grill and even then sometimes it turns out tough and chewy. I don’t have very good luck cooking red meats.

Oh my gosh! I tried this recipe last night for the family and it was SO GOOD!! So easy because of the crockpot and the extra step of putting it under the broiler does add a little bit of crunch to the steak. I wasn’t sure about the fries but I ended up making them and I am so glad that I did. They added heat to the meat which had a little bit of sweet heat – trust me, try them. The whole family approved. There is nothing remotely resembling Mexican tacos in this recipe and there is no such a thing as “baked Mexican fries.” And the sauce is actually called Chimichurri in Argentina. This is recipe is what American people think of Mexican tacos. Remove the word Mexican from the name and I might give it another star.

This recipe was ridiculously good, the meat was so tender! The cilantro ranch was v sharp but that could be a measurement/ingredient difference between countries (as we are not in the USA). I even made a lot of the toppings and made my own tortillas….so worth it! Thanks for the inspiration!

I saw this post and knew that I wanted to give it a go for Cinco de Mayo.I used just a little over 3lbs of flank steak because I have 2 teenage boys. I doubled the spices and prepped the meat with the spice rub the night before. In the am I added the beer and started the crock. I went for it and tried my hand at making yuca fries instead of regular ones. I will DEFINITELY make this again! It was AMAZING. Thanks for another great recipe.

We followed the instructions of 1/2 a cup of beer added to the slow cooker but by the end of the 6 hours on low, we had barely any liquid left to add before broiling it. Should it be 1 and 1/2 cups of beer added?

Imagine having a recipe called “crockpot grilled chicken.” That literally makes no sense. This is why people have wrong ideas about what Mexican food is, lol. I mean there’s even someone commenting “this looks so authentic!” I get some people get inspiration from us, but by labeling this as Mexican you’re making it seem like this is something we actually eat. Not to mention the “Mexican fries.” There’s literally nothing Mexican about that. You can obviously eat what y’all want but when you start calling things Mexican you’re gonna get actual Mexicans questioning you.

This was pretty good. The seasonings were nice, although not very spicy so you might want to add more if you like things hot. We loved the crema, I’ll probably make that by itself just as a dip!
I think the 15 minute prep time must be assuming you’ve already zested the limes, grated the garlic, chopped the cilantro, sliced the potatoes, etc. It took me an hour or so to get everything together and was more work than I’d realized from skimming through the recipe before I started!

This recipe is amazing! The beer in the steak is incredible and such a cool idea. I didn’t have any potatoes so I did it without the fries and it was still incredible. I definitely recommend also pickling your own onions (it is super easy!). The crema garlic sauce of this recipe is also amazing! I had leftovers of this meat and made a taco salad and steak and eggs. I wondered if I charred the meat on the grill and then put it into the slow cooker afterwards if it would work ok? I just made this, following the recipe for the instant pot. The meat was not done and I had to put it on for another 10 minutes. I reccomend any instant pot users cook at least 25 to 30 minutes in order to achieve the tenderness needed. Mine was very difficult to shred and I cooked it for 8, then 10 on high pressure. The flavors were great.

I’ll start by saying I’ve made about 100 of Tieghan’s recipes and never ONCE not liked one. This recipe was no exception! I made it for my family tonight, and while I may be partial to crock pot meals (because really, does it get easier?), this recipe was delicious! I did not make the fries, but the steak was perfect and the sauce was an amazing compliment. No leftovers tonight!

Made these tonight and they were delicious! I marinated the steak over night and I actually used a domestic beer (Coors Light) instead of a Mexican beer because that’s what I had. I grilled the steak because my hubby preferred that and I didn’t add the fries and still DELICIOUS. I didn’t feel like cutting the fries since I also have an infant to attend to. I loved the saltiness the feta cheese brought and the pickles onions, yum! My favorite, again, is the sauce. I love using yogurt now instead of sour cream. Thank you for sharing!

Made these yesterday (my first Half Baked Harvest recipe!) and holy cow, they were insanely delicious! Didn’t make the fries, but made the carne asada in the slow cooker and the cilantro garlic lime crema. Didn’t have Mexican beer so used water, and the meat was still SO insanely flavorful! Our meat was a 1.5 pound cut but still used the same amount of spices as the recipe called for. Opted for coating both sides of the meat in kosher salt rather than just using a pinch. The cilantro garlic lime crema was also amazing. At first I thought it was way too much cilantro and onions for the amount of yogurt, but it had a really delicious flavor we absolutely loved – was perfect following the recipe. 10/10, will be making this again (and have to try the fries next time!). Made this today for lunch and it was delish! I usually prefer using the Low cook setting, but I didn’t start in time, so used High in the slow cooker for 3 hours. It was very tasty. I skipped the french fries and and used butter lettuce cups in my attempt to be healthier. The crema was delish as well! I used garlic powder instead of fresh garlic out of personal preference.

I was really excited to make this in my instant pot but unfortunately 8 minutes was not nearly enough. After 8 minutes in the instant pot, the flank steak was no where close to shred-able. I tried putting it in for another 8 minutes, and again for 10 additional minutes, finally it was somewhat shred-able, but I believe the multiple start and stops somewhat ruined the meat. Afterwards, I noticed a few other people pointing this out that the cooking time for instant pot is not nearly enough. Overall, I’m very disappointed with this recipe.

Made this for dinner last night and after the first bite my husband said “Is this one of the recipes from that girl you follow on Instagram?” I said yes, and he said “Wow, everything of her’s is always SO good!” – So, needless to say, this recipe (among many other HBH recipes) is husband approved! Amazing – I mis-read the directions and cooked on high for almost 6 hrs (the horror) but my flank steak was a tiny bit bigger and it certainly came out delicious! The blast under the broiler really amped up the flavor. Don’t normally like cilantro – but the combo with the cheese and all the other fixings was fantastic! Used corn tortillas and some what burnt sweet potato fries. Partner liked it so much he had 5. Just amazing. I live in San Diego so know tacos and carne asada – these were as good, albeit a bit different, then my favorite taco shop. Well done!!!

The fries and the crema were excellent. We used the instant pot, and found the flank steak tougher than I would’ve imagined and difficult to shred, any suggestions on ways to improve that?

I cooked 1.5 lb of skirt steak in my Instant Pot for the recommended time (mind you I had 1/2 lb less meat) and it was a littttle tough prior to shredding and broiling. I’m not going to lie I was a little sad, but know that HBH recipes ALWAYS and undeniably come through for me. So I kept going, shred the meat and braised a little in the juices, laid on the pan, drizzled with honey – oh my GOODNESS. That totally changed the meat and made it to die for, that little caramelization, brilliant! I also added some shredded sharp white cheddar (Vermont girl in me) to the tortillas and broiled ‘till bubbly and slightly crunchy. Add the sauce (HBH sauces are always worth the extra step), truly DIVINE. One of my favorite recipes for sure.

This recipe was great! One adjustment I would recommend to anyone that doesn’t love spicy is to use 1 teaspoon of chipotle chili powder instead of a tablespoon and the other two teaspoons of plain chili powder.

Would you slow roast the meat in the oven? What temp and how long? Our crockpot is so iffy (sometimes low is high and sometimes high is low ugh!). I’d much rather crockpot or oven roast than grill. We have the meat in the crockpot now, and it smells so good already!! We can’t wait for them to be done 🙂

Hi, I’m a big fan of your blog and recipes. I really want this recipe to work out but I’ve made it twice now and both times the meat was very tough and hard to shred after 6 hours in the slow cooker on low. In addition, the first time I tried it, it turned out very bitter. It thought it was the lime so I omitted the lime juice the second time and added it once the meat was ready to be taken out of the slow cooker. Not bitter the second time but still very tough and chewy. I followed the recipe to a T. Any suggestions? Do I need to cook it longer?

I made this recipe last night and it was absolutely delicious!! The beef was so tender and packed with flavor. I used a 1.5lb flank steak and it took about 8 hours in the crock pot for it to be super tender. I also added honey before and after broiling, AMAZING.
The cilantro garlic lime crema is genius, this will now be my go-to sauce for tacos. To our tacos I added the crema, guacamole, pickled red onions (way easier to make than I thought) and feta, like you recommended. 10/10!

Tieghan: We have been great Canadian fans of your recipes for the last 6 months now. We’ve enjoyed many new takes on familiar recipes and some new ones we have loved. You have a very creative take on many dishes.
We had great hopes for your crockpot Carne Asada because we are very familiar with marinated flank steak (skirt US?) grilled on the BBQ and thinly sliced. After following the crockpot recipe for 6 hours on low, we were left with a steak that was hard to pull apart, tough and very dry, even with extra sauce, and broiling for a couple of minutes dried it out further. Slow cooking with this lean cut did not tenderize it. The rest of this recipe with Mexican fries and sauce were wonderful. Next time, we will marinate the steak overnight, then grill and slice thinly across the grain. Other Carne Asada recipes we looked at, all marinated and grilled this cut of meat as suggested at the end of your recipe.
Just wanted to give you some feedback.

My roommate and I made these carne asada tacos. Simply amazing. Eating them right now. SO flavorful, perfect amount of spices and seasoning. We can’t stop raving about these tacos!! Hello! I just started my carne asada in the crockpot and re-reading the recipe I realize I made a mistake and added the honey up front to the crock pot. Will this be a problem? Or should I just add additional honey later for the broiler?

These tacos were delicious and I will definitely make them again! Such a great combo of flavors. One note for instant pot users – 8 minutes is waaaaay too short. More like 45 mins to an hour. I also will skip the honey next time as I don’t think it really needs it and comes on a little strong.

I love reading through the comments since 2013(!! 👏🏻) to guess how this recipe has evolved.
Made this last night for dinner using the instapot & shaved steak (meant to get flank steak but oops!). Super straightforward meat prep. Once cooking in the instapot, I went to work chopping my potatoes. Since they were so small, they ended up cooking in time, but I was nervous the short instapot cook time (-2 min due to thin beef & knowing it would have extra oven time) would mean I’d be stuck waiting for those to cook. Super tasty, but perhaps a bit too spicy for me. I also might have piled on too many of a friend’s candied jalepeños onto my tacos 😂 Thanks for a fun dinner!

This was incredible!! I’ve been stalking for a while and finally decided to try something to wow my husband and this was it! It was a home run! All three of my kids liked it too which NEVER happens!! It was so good!! The sour cream mixture was my favorite. I want to dip everything in that! So happy we gave this a try. Definitely adding to our rotation. Love love loved it! Made it to a tee except maybe didn’t add as much like because we don’t have a juicer tool, I just squeezed what I could with my hands lol

WOW- So delicious!!
It’s the little details that make this dish- the creama, the pickled onions and broiling the meat at the end, Wow! The pickled onions were very simple to make and really complimented the tacos.
I used my instant pot. My flank steak was quite thick, I cooked for 30 minutes and 20 minutes slow release, added more beer (had corona on hand) and spices. It was moist and pulled apartment easily.
