Weeknight style Crispy Cauliflower Tinga Tacos with Honey Lime Avocado Crema. Cauliflower seasoned up with smoky chipotle peppers and enchilada sauce, then mixed with cheese, stuffed into tortillas, and oven-baked. Each tinga taco is crunchy on the outside, but spicy and cheesy inside. Serve with a creamy, salty honey-lime avocado crema sauce, and a mix of your favorite toppings. These come together easily and are so delicious. The perfect vegetarian twist on a classic taco that everyone loves!
So, I’m sure I mentioned this, but brother Red has been in town since a little before Christmas. He’s here snowboarding until the end of the month. We almost never see Red since he’s constantly traveling, but because of COVID, his travel schedule is much mellower this year. It’s a huge bummer of course, but the silver lining is that we get to have him home for more than a few days at a time. Personally, I love having him around. He’s one of those kids that can always bring a smile to your face.
And let’s be honest, I’m a real sucker when he asks anything of me. But especially when it comes to the question, “what’s for dinner”? I cave-in and make him pretty much whatever he asks for.
Unlike my oldest brother, Creighton, Red actually enjoys a meat-free dinner. His all-time favorite…The Crispy Buffalo Cauliflower from the HBH Super Simple Cookbook. I’ve been making it on repeat.
But guys, while I love that recipe, I also love trying new things. Since Red is very, very into cauliflower right now, tacos seemed like a great idea.
Enter these crispy cauliflower tinga tacos…still cauliflower but presented in a whole new way.
The inspiration…
I’ve actually had this recipe on my list for a while, so when I realized just how much Red has been loving cauliflower I thought I’d make these while he’s in town. I drew inspiration from my chicken tinga taquitos that I shared last year. We all LOVE that recipe so much. I want to see if I could make something vegetarian, but with those same flavors.
I also really, really wanted to do crispy taco shells, since the cauliflower itself is saucy, not crispy. So I grabbed my hard shell taco recipe from my family’s favorite classic taco. I put the two recipes together, then added the cauliflower tinga. Guys, they turned out even better than I had thought.
I wasn’t sure how the cauliflower would hold up to the tinga sauce, but in all honesty? Everyone said they enjoyed the cauliflower, more than any other meat.
Making these tacos is pretty easy, here are the steps.
Aside from these tacos being delicious, they really are so easy to make. I start with the cauliflower tinga. If you’re new to Chicken Tinga, it’s a Mexican dish consisting of shredded chicken in a tomato-based chipotle sauce with sliced onions. It’s actually very simple, but the flavors from the chipotle peppers are KEY, and what is most traditional with any Tinga dish.
Cook the cauliflower and onion together in a super hot skillet. You’ll want to get a char on the cauliflower, but leave it tender, not mushy. Once the cauliflower starts to char, add in chipotle peppers and enchilada sauce. I use enchilada sauce as the tomato base for my tInga sauce. Once the cauliflower simmers in the sauce for a bit, it’s ready. It shouldn’t take more than fifteen minutes, then you can assemble the tacos!
Now onto the crispy shells.
Instead of using store-bought taco shells, I like to take corn tortillas and stuff them with the cauliflower tinga and a sprinkling of cheese. I throw them in the oven to bake until the tortillas are crispy.
This method is my GO-TO. It’s become a staple in a lot of my taco recipes. I love the crispy oven “fried” shells. Nothing beats them!
And finally, the crema.
While the shells bake, make the crema. I wanted something cooling and creamy to balance the heat from the chipotle sauce. So instead of using a classic cream-based crema, I went a little healthier and whipped my avocado in the food processor.
It is so creamy, and a touch of lime plus flaky sea salt makes it so delicious.
Serve up the cream with the crispy tacos and you’ll have the perfect dinner.
If you wanted to take the toppings a step further, I would recommend a pineapple salsa or mango salsa. You all know me, I love a good fruity salsa. The perfect way to liven up an average Tuesday night at home.
Oh, and yes, Red LOVED these (so did the rest of the fam). So I’d say I’m really close to winning that sister of the year award this year. Cool, Cool!

Crispy Cauliflower Tinga Tacos with Honey Lime Avocado Crema
Crunchy on the outside, spicy and cheesy inside...easy to put together and so delish!
Ingredients
- 2 tablespoons extra virgin olive oil, plus more for rubbing
- 1 large head cauliflower, cut into small florets (about 6 cups chopped)
- 1 yellow onion, chopped
- 2-3 chipotle peppers in adobo, finely chopped use to your taste
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 cup red enchilada sauce homemade or store-bought
- 8-12 corn tortillas, warmed
- 1/2 cup shredded pepper jack cheese
- 1/2 cup shredded cheddar cheese
- salsa, shredded lettuce, and pickled onions for serving
Honey Lime Avocado Crema
- 1 large avocado, halved
- 1/2 cup fresh cilantro
- 1-2 teaspoons honey
- 1 clove garlic, grated
- juice from 2 limes
- kosher or flaky salt
Instructions
-
1. Preheat the oven to 425° F.
2. Heat the olive oil in a large skillet over high heat. When the oil shimmers, add the cauliflower and onion. Cook, stirring occasionally, until the cauliflower is charring, about 5 minutes. Add the chipotle peppers, enchilada sauce, oregano, salt, and 1/3 cup water. Reduce the heat to medium and simmer until the sauce has thickened slightly, about 10 minutes. Remove from the heat.
3. Warm the tortillas for 30 seconds to 1 minute in the microwave, until pliable. On a baking sheet, rub the tortillas with olive oil. Lay each flat and then layer evenly with cheese and cauliflower. Fold the other half of the tortilla over the filling, gently pushing to adhere (see above photo). Transfer to the oven and bake for 5-8 minutes, then flip and cook another 5 minutes more, or until the cheese has melted and the tortillas are crisp.
4. Meanwhile, make the Honey Lime Avocado Crema. Combine all ingredients in a blender and blend until smooth and creamy. Season with salt.
5. Serve the tacos topped with avocado, lettuce, limes, and any other desired toppings.

Tase was great! These were delicious but I had a really hard time making them into tacos. I think I might have overstuffed the shells and everything just fell apart. When I served them I just said I made nachos…HAHA. Anyway, will definitely make these again and will try to make them prettier!

Holy Moley, these were good. Made these exactly as written with the exception of using a whole can of enchilada sauce. The 1/2 cup of it and 1/3 of water just weren’t enough liquid for my 6 cups of cauliflower. I made the leftovers in a toaster oven at work, and they are still good! I don’t miss the chicken in this tinga taco!

5 stars is NOT enough. You guys! These tacos are re-(curse word) diculous! I topped mine with the avocado Creme and pickled onions and these we the best tacos I have ever had. Hubby is vegan and I just used vegan cheese and he devoured these right up! We made retired beans on the side along with a little salad. Run, don’t walk to make these! Followed directions to the letter. Corn tortillas did not become pliable and just broke apart. After ruining two, went with open-faced flour tortillas baked.
One teaspoon of honey is more than enough. I used two and it became a dessert dish.
Love the cauliflower mixture (homemade enchilada sauce). Best be ready to think on the fly or make some changes up front.

So I would like to retract my previous comment about the sweetness of two teaspoons of honey. Eating it plain, it was sweeter than I wanted. These are so good! I did have a lot of problems with the tortillas sticking to the pan after the first 5-8 minutes even with oil, so some tacos fell apart. Next time I will be trying parchment paper or baking the tortillas into shells first.

Delicious! I used leftover flour burrito tortillas, which weren’t the easiest to flip, but they turned out crispy and were easy to eat with a fork (a quesadilla feel). I see myself making the crema in the future on other tacos or just to snack on with tortilla chips.

Very flavorful and was a hit with my family for Meatless Mondays! I will say that if any cheese gets on the pan, the tacos might stick. I also wasn’t sure if the tortillas need to be piled on both sides or just the outside?

Easily the best thing I’ve eaten in 2021 so far (it’s the end of January)! My corn tortillas did not crisp up beautifully like in the photo so I ended up on frying them for a minute after taking them out of the oven. Overall delicious flavors and I’ll definitely be making it again!

I had a big head of cauliflower in the fridge so I thought why not try these as I liked the chicken tinga tacos quite a bit. I made them per your instructions exactly even bought frontera enchilada sauce as I was not impressed with some of the flavors of the other can sauces. The tacos were delicious! My husband will not eat cilantro so I left that out … I thought the avacado crema a little too limey for my taste so I added an extra avacado. I would have liked the tacos even crispier. Not sure if I just let bake a little longer? I’ve must buy your book as I just love a lot of your recipes!

HI! Long time cooker/lurker first time responder to this website. I have tried this recipe with both cauliflower (for the vegetarians) and shredded leftover chicken (for the omnivores). The flavors are great! easy to pull together and great bang for the buck as far as taste and effort. One caveat (and the reason it is not five stars)… I have tried this recipe with several types of corn tortillas, though admittedly not the exact brand she mentions from Whole Foods. The corn tortillas fall apart and are hard to work with. I LOVE this recipe with flour tortillas or the flour/corn blend tortillas. A family favorite! But just be aware that many brands of corn tortillas fall apart with this particular recipe.

Made this last week. It was great! Only change I made was to use street size flour tortillas. Hubby was hesitant to try it (he is a huge meat eater), but once he did he said it was a keep me recipe. I took some to my son and his family. They were a big hit.

I really like these! Better the second time around because I added the shredded lettuce and diced mango. I usually end up with extra, so I bake up the rest, cool, and store in the freezer wrapped in parchment paper for and easy lunch (bake at 400 for about 7 minutes).

I’m rubbing both sides of the tortillas with olive oil and putting them on foil on a baking sheet and they’re sticking so bad the two times I’ve tried this recipe, delicious but the end product is really hard to eat because they’re sticking so badly 🙁

These were so good that my husband didn’t realize they didn’t have meat in them! The tortillas I bought through grocery delivery were much smaller than I expected, and I didn’t trust myself to make mini tacos. I ended up making them as tostados and they were still good!

These are so tasty. I did have some problems with actually making them into tacos. My shells split open which prevented me from flipping them halfway through. When I did try to flip them all of the filling came out so I just left them as is. But they still tasted great. I sprayed my tortillas with cooking stay and just made “traditional” guacamole. Will definitely make again (this recipe makes plenty and we have about 1/3 left for leftovers today!).

These tacos deliver! My 11 year old made them and they were excellent, so flavourful! BUT do not skip out on the honey-lime, avocado crema, it makes the dish! Even my carnivore husband admitted that these were knockout good, and then asked to make them again using shredded beef which we definitely will.

Hello Tieghan! I made this last night for my family (my father in law is vegetarian) and they were a HUGE hit. Everyone was a little skeptical when I they saw me stuffing the cauliflower into the tortillas, but were WOW’d by the flavor. Because I was chatting as I was cooking, I completely forgot to brush oil on the tortillas, so a couple of them cracked and they weren’t staying closed. I stuck toothpicks through and that did the trick. I have been making your recipes throughout the last year or so (a friend recommended your blog) and every single one is delicious. My family now gets excited when I say I’m trying a new HBH recipe; and I got one of your cookbooks for Christmas. 🙂 Thank you for your creativity!

This recipe is fantastic. I have now made it 3 times, once with chicken and twice with cauliflower. I think I finally got it right the third time by 1) using the toothpick trick mentioned in the other comments to keep the tacos closed while baking 2) using only one chipotle pepper because mine are super spicy. Good to sample a bit of the pepper before using to see how much of a kick it has 3) The biggest innovation was BROILING the tacos for the last 1-2 minutes, this was the only way I was able to get the crispy texture.
In future I might consider doubling the avocado crema because you just can’t get enough of it, so good.

Just delicious! So, so yum! I made it for just my husband and me, and my girls hovered over me in the kitchen as I prepared it, drooling (they can only handle a little spice and I warned them this would be spicy) — they begggggged me to try a bite and then beggggged me to make it next time without the chipotle, which I will gladly do. I topped it with your spicy ranch from your cheesy gordita crunch recipe (that I plan to make later this week — do you use 6” fajita tortillas or 8” soft taco tortillas? I bought 8” ones, but I’m wondering if they’ll be too big and eclipse the hard shell! 😩)Thanks for such a great meal!

Best tacos I’ve ever had! This tastes like a restaurant-style taco would. Super delicious, totally vegetarian and loved by even the meat eaters. It’s full of flavour and both the cauliflower and avocado crema compliment each other so perfectly. Easy to make and definitely a hit!

These tacos were great. However, we fought a losing battled with the corn tortillas and just could not get them to stay closed. We tried using toothpicks to pin them closed (didn’t work) and in the end we wrapped the corn tortillas with a flour tortilla and THEN used the toothpicks to pin them closed. I revised the recipe slightly using less chipotle pepper and increased the enchilada sauce. We’ll definitely make them again!

These were delicious! I had a problem getting the tortilla crispy all the way around. I followed the instructions above and they got crispy on the edges but the middles were still soft. Any advice?

First time making it and flavors are amazing!. The filling is perfectly spicy and the avocado crema is super good as a cold and creamy condiment. I prepared this with steamed brown rice on the side. It was definitely tricky to crisp up the corn tortillas, but I think that’s because my tortillas were on the thicker side. Just ate it with a knife and fork! Leftovers the next day were just as good, and I added a fried egg on top. Yum!
