So DELICIOUS and the leftovers make for an awesome lunch the following day.

Hope you all had a great weekend! Did you watch the Super Bowl last night? Did you hopefully make plenty of food and enjoy a low key Sunday? That is my hope! Over here we’ve been having some bitter cold weather, with snowy, blustery days. Perfect for staying inside, roasting up a chicken dinner, and doing plenty of weekend baking.
Which leads me to today’s recipe. I actually made this over the weekend. I found myself needing something easy to make on Saturday night. It was FREEZING, with blowing snow, so I wanted something comforting. I almost turned to pasta. But then for some reason, I was really feeling a dinner with more of a Greek twist to it.
It’s been a while since we’ve talked about a good Greek dinner, so I pulled out this recipe. It’s such a favorite, so easy, and I wanted something different.
The Idea.
I’ve been cooking up so much Thai and Italian recipes lately that I felt like I needed to break out of that pattern a bit.
I thought about what I hadn’t created in a while and Greek was at the top.
Since I wanted to keep things easy, I decided sheet pan chicken and potatoes, but all done up with my favorite spices, herbs, and sauces.
The quick and easy details.
The beauty of a sheet pan dinner is that typically, they’re pretty darn easy to throw together. It’s why we love them so much! But what is truly special about this specific sheet pan dinner? Well, cooking everything together on one pan actually allows for more flavor to really penetrate everything from the chicken, to the potatoes.
The first thing I like to do is do a quick marinade on the chicken. I toss it with a little balsamic vinegar, oregano, paprika, shallots, and garlic. I then add lots of olive oil and chili flakes and let everything sit for a bit at room temp.
While the chicken sits. I start roasting the potatoes since they take longer to cook than the chicken.
Once the chicken mix has rested for 15-20 minutes or so, add it to the sheet pan with the potatoes. Then add a couple of red bell peppers and onions. It’s important to slice the peppers on the thicker side so that they can cook for the same amount of time as the chicken and potatoes. For the onions, it’s the opposite, I like to cut those pretty thinly so they can caramelize while cooking.
Throw everything back into the oven to finish roasting.
And while that’s all cooking away…and making your kitchen smell incredible…mix up two things. First, I like to toss cubed feta cheese with sun-dried tomatoes and olives. The oil from the sun-dried tomatoes “marinates” the feta. It’s so delicious, you can’t skip this step!
I also do a little garlic yogurt. I love smearing this on the chicken for some creaminess, which is always nice on a sheet pan chicken.
When everything is done, layer it all together and top it with a good handful of fresh herbs.
The funny thing is that when I was working on this recipe, I wasn’t even trying to make it a one pan and done kind of dinner. It just made sense to roast the chicken and potatoes together so that the potatoes could cook-up in the oils from the chicken…making them just that much more delicious.

Easy Greek Sheet Pan Chicken Souvlaki and Potatoes
Made in ONE pan and done in under an hour, an easy, healthy, and well-balanced meal!
Ingredients
- 4 tablespoons extra virgin olive oil
- 1 1/2 pounds boneless chicken breasts or small thighs
- 2 lemons, 1 zested and juiced, 1 halved
- 2 tablespoons balsamic vinegar
- 1 tablespoon chopped fresh oregano (or 2 teaspoons dried)
- 1 tablespoon smoked paprika
- 1 shallot, finely chopped
- 5 cloves garlic, finely chopped or grated
- 1 large pinch each kosher salt and black pepper
- 1 large pinch red pepper flakes
- 1 pound russet or baby potatoes, cut into 1 inch chunks
- 2 red bell peppers, sliced
- 1 medium yellow onion, sliced
- 1/2 cup oil packed sun-dried tomatoes
- 1/3 cup kalamata olives, pitted
- 3 tablespoons toasted pine nuts (optional)
- 8 ounces cubed feta cheese
- 1/2 cup plain Greek yogurt
- mixed fresh herbs, for serving
Instructions

1. Preheat oven to 425° F. In a medium bowl, combine 2 tablespoons olive oil, the chicken, lemon zest, lemon juice, balsamic vinegar, oregano, paprika, shallot, 4 cloves garlic, and a large pinch of each salt, pepper, and red pepper flakes. Toss well to combine. Let sit 15-20 minutes.
2. On a rimmed baking sheet, toss the potatoes with 2 tablespoons olive oil. Season with salt and black pepper. Add the lemon halves. Roast for 20 minutes, or until tender.
3. Remove the potatoes from the oven and nestle the chicken around the potatoes. Arrange the bell peppers and onions around the chicken, arranging everything in an even layer. Drizzle over 1 tablespoon olive oil, season with salt and pepper. Return the pan to the oven and roast for 20-25 minutes more, until the chicken is cooked through.
4. Meanwhile, combine the sun-dried tomatoes and their oil, the olives, pine nuts, and feta in a bowl. In a separate bowl, combine the yogurt, 1 clove garlic, and a pinch of salt.
5. To serve, divide the chicken, potatoes, peppers, and onions between plates. Spoon the feta mix and yogurt over the chicken. Top with a handful of fresh herbs. Eat and enjoy!

I made this for the first time last night- very tasty!.
But, I would make a few adjustments for next time.
1. I used a yellow and orange pepper- for the sake of colour, I would use a red instead of one of those.
2. I would cook the chicken breast for less time- very dry. Or I would try with boneless skinless chicken thighs.
3. Definitely use a sheet of parchment on my rimmed baking sheet!

This turned out horribly overcooked. The chicken cooked for way too long while the potatos were barely done.
Hi Albert, I am sorry for the trouble. With sheet pan dinners it is important that everything is cut into similar sizes so that they have similar cooking times. Was your chicken on the smaller side? We really enjoyed this, although I had the same problem with the chicken being done long before the potatoes. I pulled the chicken out of the pan and kept it warm while the potatoes cooked longer. Next time I think I’ll parboil the potatoes for a bit before adding them to the pan. I did think there was a bit too much paprika, but that’s my own personal taste. We served it with tzatziki and warm pita, and everyone loved it. Can’t wait to eat the leftovers tonight!

Another winner though my husband didn’t like it as much as the first. My granddaughter is half Bulgarian and spends every other summer there and she said that it tasted like Bulgarian food (close neighbor to Greece) so the flavor is very authentic. I try and use what I have in my fridge/freezer for these meals. Luckily I had everything. I used drumsticks for the chicken though and cooked it about 10 minutes longer because the potatoes were still firm. Chicken was nice and moist. The tzatziki really set off the other flavors. Definitely a winner.

Made this last night along with the Peach Shortcake. Both were a hit! My husband loved this dish and we’ll def make it again. I had lemon balsamic so I used that and it ramped up the lemon flavor. I tossed the feta/sundried tomato mixture right onto the finished dish before serving. Amazing!

We loved this Sheet Pan Chicken Souvlaki! So easy and flavorful! My husband doesn’t like dill so I left it out. I cut my chicken breasts lengthwise so I cooked the potatoes, onions, and peppers for 20 minutes and then put the chicken on for the last 25 minutes. Well, I understand your “artistic” name for this recipe…mixture of meat and vegetable…therefore your SOUVLAKI, but traditional Greek souvlaki should be prepared as skewer…and if referred as Greek souvlaki then it has to be on skewer…

Just made this and it turned out really well! Was a bit worried about how much liquid was present halfway through, but it really cooked off. Will definitely make again. Wish I had made more since there aren’t any leftovers. I really love it when recipes turn out based on the directions with almost no variation. Can I substitute for chicken legs with skin on and same cook time?
I am not sure of the cooking time, but I think skin on chicken legs will be great! I would guess that they need 15-20 minutes longer in the oven, but again I cannot say for sure a I have not cooked chicken legs with this recipe. Please let me know if you have other questions. After reading other reviews, I decided to cube the chicken while the veggies cooked and toss it with the marinade, to have it cook for less time (following the guidance of the Meal Prep Chicken Shawarma recipe, which is an absolute gem) . I added the chicken in at the 20 minute mark. The result was very moist and delicious, but the potatoes took far longer than 40 minutes, potentially because of my very very juicy lemon slices? Who knows, but it was a little difficult since the other veggies and the chicken were done, but the potatoes needed more time. I couldn’t fit everything onto one sheet pan, which may also have contributed to the longer cooking time. Regardless, the meal was very tasty and well worth experimenting with again 🙂 Thank you, Tieghan!

While you say its a great Monday dinner, I just finished eating my Friday prepared dinner…it was AWESOME!! Haha! Seriously, I’m Greek and grew up on good Greek cooking. I also LOVE that lemon is used in my so many Greek dishes, but my husband is NOT a fan of lemon, so I was a bit nervous about this dinner. Well, let me tell you…he LOVED it! We each ate our portion and were full but HE said that he wished he wasn’t so full because he’d love to eat more because it tasted so good!! Now, THAT’s a victory!! Delicious, and makes a perfect meal for serving at a dinner party. I used skinless, boneless chicken breasts and only needed 25 minutes to cook. This would have been amazing if I didn’t screw it up! I hate smoked paprika, which is all I had, so I switched it out for hot Hungarian paprika and used 2/3 tablespoon thinking the spicy level would be okay. I was very wrong. Our mouths and stomachs were on fire! I did have to take the chicken out at 45 min and let the potatoes cook 5-10 min longer. I will be using this recipe again, without the ridiculously spicy paprika. But very flavorful overall with the lemon, oregano, and dill. I also loved the sun-dried tomato/feta/ olive tapenade for the chicken + tzatziki.

As always…AMAZING! Only thing I would do is leave out the sun dried tomatoes. The flavors were so strong the tomatoes competed a little too much. But otherwise – DELICIOUS!!

This was a delicious chicken dish. Easy to prepare, this meal has interesting new flavors. I will definitely make this again. I didn’t have red peppers and I used mushrooms instead. The marinade for the chicken was so flavorful I scooped it on top of the chicken before cooking the chicken. I served this dish with a side of spinach cooked in a little olive oil, garlic and Costco bacon bits.

Just made this for dinner and it did not disappoint! For the marinade, I skipped shallots, since I sadly did not have them on hand, and opted for fresh marjoram over oregano, since that’s what’s growing in my indoor herb garden. I didn’t have any sun-dried tomatoes in oil, so I just chopped up some that I had in the pantry and tossed in feta with a sun-dried tomato pesto I recently found at Costco! Delicious. I also didn’t have yogurt, but I did have sour cream. I opted to do a tahini-sour cream sauce for this dish! Needless to say, I can’t wait for the leftovers tomorrow. Will they make it to dinner, or be our lunch? We’ll have to wait and see 😉 Love the simplicity of a sheet pan recipe and the fresh, but savory mediterranean flavors. Would love to see more of both of those things together!

Tastes wonderful and if you prep ahead of time, it’d be very quick. I think the feta mix could be cut in half; we’ll be using it in wraps with falafel tomorrow, so I’m very happy with leftovers. I cut my olives into slices and used scissors to cut my sun-dried tomatoes into strips. I used store-bought tzatziki I had on hand, so I did not make the yogurt sauce. I used sweet potatoes as that’s what I had on hand. I cubed mine for faster cooking. Highly recommend this recipe.

I threw this together on the fly with what I had on hand. It was a knockout even without following the recipe 100% The chicken was so flavorful. I tossed the marinade with the vegetables, and in error mixed the sundried tomatoes, garlic and feta with the yogurt. Didn’t matter, it was a delicious topping. Super easy, one pan weeknight dinner!

I used pumpkin instead of potatoes, red onion instead of shallot for the marinade, and 1 lemon + 1 orange instead of 2 lemons (had to play with what was available). Chicken breasts were the choice. I made this for our family a couple of nights ago and we mostly loved it. It wasn’t difficult at all, wasn’t too time consuming, and I love the idea of spreading all that yummy goodness on a baking sheet to cook together.
There are two things that could have gone better for us, and I think I’ll try again. 1) We must have used lemons that are much bigger than yours because it was way too lemon-ey. I like lemon but it was too sour. I think that next time if all we have are big ones, I’ll just use one. That would be plenty.
Also, I shouldn’t have left the finishing off of the dish to my husband (I had a Zoom meeting and the timing was just too tight). I had hoped it would look nice and browned on top like yours, but it definitely DIDN’T look like that, even though everything was cooked completely. I think next time I’ll maybe finish it off with a couple of minutes under the broiler. I think that would have raised the yum factor from very good to amazing.

Super amazing and flavorful! I ate it with some naan I had and its so delicious. I skipped the olives because I dont like them but I dont think it needs them. The pine nuts really add such a nice accent on top of the meal. This is definitely going to be made frequently in my home.

I made this a few nights ago and it was fantastic, just delicious and a party of flavors. Reading the comments was super helpful, so I knew to halve the very large chicken breasts I buy, so they were cooked through in about 25 minutes. I only wish I was faster at the prep, as it took me over an hour just to prep the marinade, but marinating the chicken for about 5 hours made it really delicious.

Nice flavor. Prep time is far more that stated. Takes 20 minutes just to grab all the ingredients haha. Next time I’d add less potatoes and more chicken. We also added tzatziki sauce which really helped to add depth to the flavor. The yogurt recipe above is pretty basic and bland so didn’t add enough flavor for us. The whole dish tasted even better day 2.

I just made this for the 2nd time last night and I’m struggling with the cook time. I followed everything exactly, but the chicken is producing too much liquid, so nothing browns. I kept cooking it the first time I made it and finally got there, but I think it went for another hour after adding the chicken. Last night I had company and used a full size sheet pan, followed exact again and ended up having to bump the heat up to 450 and in the end I used connect to brown the veggies and absorb all the liquid, but then my chicken was dry. I absolutely LOVE the flavors and want to figure out how to get this right! HELP!! Thank for all of you INCREDIBLE recipes, they are all works of art!!!

Fabulous recipe, made it last week to rave reviews, Making it again tonight for a different group and am substituting green beans instead of the red peppers ( due to a allergy) I hope that it will be equally as good roasted along side the chicken and potatoes.

This is not a Greek souvlaki..even the igredients are not right..Mat be a pan sheet chickwn with feta cheese and olives or find another name of dish but for sure not a Souvlaki.
We loved, loved, loved this recipe!! Going in my favorites file! My 17 yo son said it smelled like a restaurant and he gobbled it up, too!

This is absolutely delicious.! I have made it 3 times now. I found that I didn’t need to roast the potatoes as long as the recipe calls for (maybe mine were smaller pieces). I used well trimmed boneless chicken thighs which came out moist and tender. Some my family does not care for olives so I skipped those. The feta tossed with the sun dried tomatoes and some of the oil from the jar is delicious and a step that shouldn’t be skipped. This will become a regular for us!

This was a hit! My thinly sliced onions didn’t carmelize and the potatoes didn’t crisp up but the flavors were excellent. We threw some of everything into a Greek pita and it was awesome! Thanks!

I made this a couple of weeks ago and was blown away by the flavors. I followed the instructions for the most part, but I marinated the chicken for about an hour and didn’t have sundried tomatoes which bummed me out. Tonight I’m making it again and will be going HAM with the sundrieds. This meal was a definite hit in my house and wonderful for leftovers. I cut my potatoes pretty large so I made sure to roast them longer, and I cut (in half) and tenderized my chicken breasts before marinating to cut down on cook time. I think I’ll do this again as it came out really nice. Thanks for such a wonderful dinner staple, I’ve already shared the recipe with many friends/family.

When I was making this dish, I tried just the chicken to see if it was cooked and honestly I wasn’t a fan (I never liked balsamic vinegar). BUT!!!! When you eat the chicken combined with the other ingredients in this dish, WOW! The flavors were amazing. I really like how all of your dishes are full of flavor.

I was disappointed with this recipe. It took me nearly twice as long to make as the recipe suggests; prep alone took close to an hour. I had to split the chicken and veggies between two separate trays since there was far too much food for one tray, so the veggies weren’t cooking and the chicken was just steaming from sitting on top of the veggies. The potatoes were strangely dry, and the dish had little flavor without the kalamata olive/feta mixture. Would not recommend or make again.

This is one of the best sheet pan meals I’ve ever had. It’s in my regular rotation at this point. Anything with a tbs of smoked paprika is a win for me, but this is above and beyond, not to mention super easy. I don’t change anything (rare for me!), although I sometimes use crumbled feta when it’s all I have and it’s still great. Your recipes always turn out to be delicious. Thank you for sharing this with us!
