This Healthier Instant Pot Coq au Vin is for those cold fall and winter nights when you want a fancy slow braised chicken, but you want it ready in less than an hour. All made in the instant pot (or the slow cooker), using simple, wholesome ingredients that you might already have on hand. This dish is warm, flavorful, hearty but healthy, and so delicious. Great for both a simple family dinner and holiday entertaining.
What better way to start Monday off than with an easier, healthier take on a fancy French classic? Especially one that involves cooking with red wine? Yes, this is a good Monday recipe.
Coq au vin is a family favorite. Every time I make it, I love it more and more.
Coq au Vin is the fancy French way of saying chicken braised in red wine. It’s a truly delicious and hearty recipe that’s perfect when served over mashed potatoes. Add a side of crusty bread to soak up all the flavorful red wine sauce…la perfection!
Today I’m simplifying the traditionally lengthy recipe by cooking this entirely in the instant pot in less than an hour. If you prefer to use the slow cooker I’ve included directions for that too, you choose. But by far, the most requests this past month have been for more instant pot recipes.
It seems as though everyone is getting on board with the instant pot. Which makes me happy, because I actually love it too. It definitely took me a while to get on the instant pot train. But once I got the hang of cooking with it, I quickly realized why everyone loves their instant pot so much. It’s kind of like cooking magic, and I do think it cooks the best chicken every single time…
Which is why I am excited for today’s recipe!
As mentioned, coq au vin is traditionally a French style chicken that’s slowly cooked in red wine on the stove top. Some recipes require four plus hours of cooking, multiple steps, a good amount of ingredients, and a lot of hands on time. That’s all great if we have the whole day to spend in the kitchen, but I totally get that most of us just don’t.
Enter this healthier, easier take on Coq au Vin that’s made entirely in the instant pot.
It’s simple, it’s quick, it’s flavorful…and just oh so good. The secret? A little bit of bacon, red wine, and plenty of fresh thyme (fresh herbs are my current obsession).
Here’s how you make it. You ready? It’s simple.
Cook up the bacon and get it nice and crisp. Add in the onions, garlic, and tomato paste, cooking until fragrant. Then add the wine, chicken and herbs. Cover and cook for a bit. In about 20 or so minutes, you’ll be done.
I know it sounds too good to be true, but I promise, it really is this simple.
A few notes.
Traditionally, coq au vin is made with whole chicken pieces. I used chicken breasts, which not only cook up quicker, but are also a lighter choice than skin on dark meat. The red wine helps to keep the chicken from drying out. The instant pot cooks the chicken until it’s perfectly tender and tastes as though it’s been slow cooked all day long.
It’s going to seem like a lot of wine to use, but trust me, it’s going to be great. The wine is the heart of the recipe, providing flavor while also helping to tenderize the chicken, so don’t skip it.

Healthier Instant Pot Coq au Vin
For those cold fall and winter nights when you want a fancy slow braised chicken, but you want it ready in less than an hour. All made in the instant pot (or the slow cooker), using simple, wholesome ingredients you may already have on hand.
Ingredients
- 2-3 slices thick cut bacon, chopped
- 1 yellow onion, chopped
- 4 cloves garlic, minced or grated
- 2 tablespoons tomato paste
- 4 carrots, chopped
- 1 1/2 pounds boneless chicken breasts
- 2 cups cremini mushrooms, sliced
- 1 1/2 cups dry red wine, such as Cabernet Sauvignon
- 1 cup low sodium chicken broth
- 2 bay leaves
- 4 thyme sprigs
- kosher salt and black pepper
- 1/2 cup fresh parsley, chopped
- mashed potatoes, for serving
Instructions
Instant Pot
-
1. Set Instant Pot to sauté. Add the bacon and cook until crisp, about 5 minutes. Remove the bacon. If there's excess bacon grease, drain off all but 1 tablespoon.
2. To the instant post, add the onion, garlic, and tomato paste and cook an additional 5 minutes. Turn the instant pot off.
3. Add in the red wine, chicken broth, bay leaves, thyme, chicken, carrots, and mushrooms. Season with salt and pepper. Cover and cook on high pressure for 8 minutes.
3. Once done cooking, use the natural or quick release function. Set the Instant pot to sauté and bring to a boil, boil 5 minutes or until the liquid reduces slightly. Turn the instant pot off. Remove the bay leaves and thyme and discard. Stir in the parsley and reserved bacon.
4. Serve the chicken and sauce over mashed potatoes.
Slow Cooker

1. Cook the bacon in a large skillet over medium heat until crisp, about 5 minutes. If there's excess bacon grease, drain off all but 1 tablespoon.
2. To the skillet, add the onion, garlic, and tomato paste and cook an additional 5 minutes. Remove from the heat and transfer the mixture to the bowl of your slow cooker.
3. To the slow cooker, add in the red wine, chicken broth, bay leaves, thyme, chicken, carrots, and mushrooms. Season with salt and pepper. Cover and cook on low for 6-7 hours or on high for 4-5 hours.
3. Once done cooking, cook, uncovered on high for 15-20 minutes to reduce the sauce. Remove the bay leaves and thyme and discard. Stir in the parsley and reserved bacon.
4. Serve the chicken and sauce over mashed potatoes.

Hi Tieghan, happy to see another French recipe! It makes me smile because we make less and less of these traditional dishes here (the new generation is more into world food, which came pretty late on the market) but we love it when our grandmothers cook this for us! The traditional recipe calls for rooster, marinated in wine the night before (but as you mentioned it, we want quick recipes!) Not sure you have this in the US, chicken will do fine but I personnaly think chicken parts with bones, or a whole chicken cut up, will stay togeher and be tastier than breasts. Bon appétit !

Jeanne, I’m taking the gamble and will remove a piece and check it. If it seems cooked (which I think it will be), I’ll be removing all the chicken. Nothing worse than overcooked breasts; except maybe not getting an answer from the chef, harummmph. ?.

I made this tonight as I was looking for an Insta Pot chicken recipe and this came in my email! It was easy and delicious. I had bone-in skin-on chicken thighs which I browned before adding. I opened a Round Hill cabernet (inexpensive), and used shitake mushrooms because I had them. We served over rice!Don’t miss the last step (I removed the chicken to simmer sauce down and on my insta pot, I used ‘saute’). That 15 minutes turned the sauce into velvety goodness.We all loved it here!
My only other advice was use bacon you love…my bacon was very smokey which went well with this dish, but next time I might try a less smokey bacon! Thanks again, Tieghan!

I made this Halloween night and it was perfect! I put it in my slow cooker before I left that evening and kept it on low until I came home. I used bone-in chicken quarters and browned them before sautéing my aromatics. The chicken was falling off the bone and the sauce was rich. I quickly made mashed potatoes and was done. If you are concerned about making sure the alcohol is cooked off, add the wine after sautéing the onion, garlic & tomato paste mixture. Leave the pot on sauté function, and cook until the wine is evaporated. Then turn the pot off and proceed with the remainder of the recipe.

Hey Bri! Did you simmer the sauce the directed 5-10 minutes? You may just need to cook the sauce longer in sauté to thicken it up a bit or add an additional tablespoon of tomato paste, which would thicken it as well. Hi, we enjoyed this recipe, good flavor. One question-my sauce was not thick at all, it seems thicker in your photos. I cooked in slow cooker and did let it cook open at the end, turned on high. Sauce reduced but still was very liquidy.Any recommendations?

This tasted great. It did not thicken much after the 5 min boil so I added 1 T of cornstarch flurry to the liquid which helped a bit. I used a Spanish Rioja vs Cab as I had some open. Served on parmesan mashed potatoes. Thanks for an easy tasty instant pot recipe. Fitting for company.

My only question is, I followed the recipe exactly (instant pot version) yet it did not seem to have the same “thickness” as portrayed in your photographs. I prepared as directed with the exception of using boneless, skinless thighs. I sauteed for 8 or so minutes and it never reduced by much and the chicken pieces totally fell apart; I was afraid to boil for much longer. I was disappointed to not have a silky sauce but lots of liquid. The flavor was good but not near as pretty as yours. Thoughts? BTW, your turkey and white bean chili is in the crock pot as I type! First of all, I don’t generally comment EVER on food blogs after doing a recipe. Maybe because it’s not usually worth commenting about. However, this is the first recipe from your blog I’ve tried (my boyfriend is French and I wanted to make him something comforting with the holidays coming up and his first holiday since his mom passed away over the summer). So I was thinking “Coq Au Vin” generally can be made in a slow cooker — and seemed like the easiest meal to make out of all the French meals lol. I was hoping this would turn out good and of course was doubtful, but good is an understatement. This recipe came out AMAZING! I just tried it this morning and I can’t stop dipping pieces of the baguette (I bought for him ??) into it. I am so excited to give it to him tonight! First off, coq au vin is not chicken. It’s rooster. Or a tough free range chicken. Which is why it needs the longer time braising. It’s a tough bird.
Second, chicken breasts are not made for braising. You can submerge them in whatever liquid you want, it won’t keep them from getting stringy if you cook them for more than a few minutes.
Third you use bacon. Replacing thighs with breasts in a dish that has bacon doesn”t make it healthy. It’s just as fat.
But good pictures, which I guess is the only thing that matters.

Love this recipe! The only thing is that you didn’t state to remove the bacon after cooking, even though the last step says to stir in the “reserved bacon.” I made it with the bacon in the IP the whole time, so we will see how it turns out :/. Fingers crossed it’s not a bunch of soggy bacon!

Yummy recipe! I didn’t have wine, so I just used chicken broth and a little wine vinegar, but it didn’t turn out as thick as yours looks. Is the reduction effect something that only happens with wine/cooking wine specifically? CRanberry or pomegranate juice sound a yummy—-I will have to try that next time! Thanks!

I’ve wanted to try making coq au vin for a while and this was definitely an easy way to try it! I used the crock pot version of the recipe and, to my husband’s disappointment, I left out the mushrooms because I’m not a fan. It turned out so well and was so delicious! I served it with the brown butter sage mashed potatoes on your other coq au vin recipe.

I just posted that I made your Coq au Reisling for my husband over Christmas. I tried this one last night in our new slow cooker. it was just as delicious! Hubby like the Coq au Reisling better but that’s probably because it was far more rich with the cream in it. 🙂 In my particular slow cooker, I could have used less liquid. It didn’t reduce as much as I would have liked. I’m sure all slow cookers are a smidge different so I’ll just make a note to reduce the liquid by a 1/2 cup or so next time — or try the real deal! I finally had a chance to make this tonight in the pressure cooker. It was so good. I did take out some of the sauce to make a slurry with corn starch to thicken it a bit. My chicken breasts were huge, so I cut them into pieces about the size of thighs. Perfect melding of flavors. I see looking at your pictures now, that I chopped mine much smaller. I’ll make them larger next time, and probably add more carrots. Mine didn’t turn out as rosy as yours, but I used a Pinot Noir and maybe that was why. I’m sure I’ll make this again.

This was amazing! I followed one of the reviewer’s suggestion to boil the wine for 15 minutes if you’re concerned it’ll taste like alcohol. We were pleasantly surprised with how beefy this dish tastes for being a chicken dish. Used cornstarch to thicken, the sauce was a wonderful gravy for mashed potatoes. We’ll absolutely make this again, thank you!

Thank you for this recipe! I had never made (or eaten!) Coq au vin before, but your gorgeous photos made me want to try! I used boneless thighs and didn’t have any bay leaves or fresh thyme, but it was still excellent. My sauce wasn’t nearly as thick as yours, so I used a little corn starch. Made this in the crock pot and couldn’t be easier! The flavours were excellent and the chicken moist with mashed potatoes for a cold, winters night. A few notes – in the recipe it does not say to put the bacon aside so I put it in the crock pot with onions, garlic, etc. When I got to the bottom where it said ‘add reserved bacon’ I was like what?! I’m sure it would have been better to add it back in. Another note, when you make it in a slow cooker and reduce it at the end to thicken it (with the slow cooker you need to reduce for 30 minutes to make the sauce thicken), keep in mind that reducing does make the dish saltier (liquid evaporating and leaving the salts, etc). So next time I likely will just reduce for 10 but add in a cornstarch slurry. It was a hit with everyone!

I made this recipe last week and it really is SO tasty! I was skeptical about how it would come out being made in the instant pot, felt like it wouldn’t be enough time to meld all the flavors together but I was really wrong. Lovely gravy, and amazing depth of flavor. I served mine over mashed cauliflower so that I could get the effect of eating over mashed potatoes but without some of the guilt. Replying to Cristina’s comment about a bacon substitute: Liquid Smoke can add some of that savory flavor back without the bacon. We are on a low sodium diet and can’t eat any kind of bacon or ham, turkey based or pork based. The liquid smoke adds the flavor of smoked something, with none of the meat, sodium or fat.

I made this tonight for dinner and loved it. The only thing I did differently is sauté the bacon, then the onions and tomato paste in a pan on the stove. When they were done, I browned the chicken on both sides. Then I put everything but the wine in the Instant Pot. I used it to deglaze the pan and then added it. Thank you!

Bottom line this recipe is absolutely amazing! I made it in the crockpot and it turned out perfect, not to mention made the house smell like heaven on a fall night. I followed the recipe exactly except I added in a shallot and red pepper flakes (I don’t make anything without them). After reading reviews about the sauce being too runny, I deglazed the pan after sautéing the veggies and tomato paste with a 1/4 cup of the red wine and let it reduce in the pan. I left the lid off the crock pot for about half hour at the end and I thought it was perfect. I served over mashed cauliflower which soaked up all the delicious flavors. The leftovers the next day were even better! I have made quite a few recipes from this site and nothing ever disappoints! Thank you for another great one!

Absolutely delicious. I cut the chicken breast up in large chunks and they came out tender and full of flavor. We ate it two nights in a row, it was so good. Had to make more mashed potatoes the second night. 🙂 Left out the mushrooms because DH won’t eat them, but I will add them next time. I really didn’t miss them though. My husband could not believe I made it in the Instant Pot. It looked and tasted like I toiled over a hot stove for hours to make this gourmet meal. I spooned the chicken and gravy over a bed of mashed potatoes and it looked gorgeous. I would send you a picture, but not sure how I can here.

Made this last night and it was delicious! The only difference I made to the recipe (because I didn’t read previous comments saying to leave chicken breasts whole) was that I cut up the chicken into 8 chunks before throwing them in the instant pot. I also boiled on sauté after cooking for about 20 minutes to reduce the sauce down to a nice thick stew like consistency. I took the chicken chunks out after about 10 minutes of boiling because I was worried they might dry out… but they were fall apart juicy and delicious! I probably could have left them in the whole time and been fine. Served with a riff on the butter herb mashed potatoes… it was amazing!

This recipe was super flavorful, but what I ended up with was super runny. I’m not sure if I did something wrong but I ended up adding a roux with flour to try and thicken it up, and it still didn’t work. I let it boil to hopefully let it reduce further, but it also didn’t work. It was still very delicious and the flavor was wonderful, but the texture wasn’t what we expected from coq au vin.

I have never eaten much less made this dish. I made it in the instant pot and it was easy and delicious … Nothing wrong with this so not much to add … I used boxed Cabernet Sauvignon from Target which worked just fine. Make sure you read the recipe … I mixed my carrots and onions and my parsley and thyme not realizing they are added at different times so I ended up cooking the onions and carrots together and just added some dry thyme and then the mixed herbs at the end. It was still was delicious.

This recipe is so easy and delicious! I followed all the steps as directed – only change is I added 1 TBS of flour mixed with 2 TBS water to thicken up the sauce. Definitely going to keep this one on a regular rotation of recipes!

I followed the recipe to a tee using the Instant Pot Max but 1) the sauce did not thicken; I boiled it on sauté for a little more than 5 min, added extra tomato paste and cornstarch but in the end the sauce did not look anything like the pictures. It was more of a red color and runny, 2) while the sauce tasted delicious despite being watery, the chicken itself was really bland. I did season the meat with salt and pepper as per the recipe. Any tips on what I could have done differently? Thanks

Wow, I made this recipe last night and it was fabulous!! My package of chicken was almost 2.5 lbs so I increased the sauce/herb ingredients to be 1.5 times the recipe. I did remove the chicken & carrots to reduce the sauce. It didn’t thicken enough so I mixed some corn starch with chicken broth and it was perfection. Shredded the chicken then added it along with the carrots back into sauce. Thanks for an amazing and easy recipe ❤️

So good! So. I made it twice. First time I used bone in chicken and didn’t use thyme. I also tried to thicken with cornstarch. It was…ok. Good enough that I wanted to try again. Used breasts the second time, bought some thyme and just followed the recipe (almost). Soooo much better! The thyme really adds something. My only change – put your potatoes in the pot! Just peel and half them. Then pull them out and mash them. Why waste a pot?

This was AMAZING! Depth of flavor made this feel like one of mama’s prized Comfort recipes handed down. However i felt that mashed potatoes are a MUST as the sauce by itself was very brothy and the dish really benefitted from that creamy foundation- I don’t think I would have liked it nearly as much without the mashed potatoes but boy was it excellent with! Hi, I asked a question a couple weeks ago regarding quick release vs. natural release, and I’m not able to reply to your answer for some reason. I just wanted to pop back over and thank you for your response, and let you know that I love this recipe, and the family did too! Since I was making it the first time without your answer (I was determined to try the recipe immediately!), I just compromised a little…when the cooking time was up, I puttered around the kitchen for a few more minutes before releasing the steam. The recipe is very forgiving, and the chicken was perfect. But again, thank you for clearing up that it should be a quick release at the end of the cooking time! I’ll probably be making it again soon, but I’m about to browse your site to figure out what I’m going to make tonight! 🙂

This recipe was kind of elegant by name, and easy by instructions. Like a special chicken stew. I did not have fresh parsley and that would have added to the taste. I served with mashed potatoes as suggested. Could have added potatoes with the carrots, too.

I thought this was an instant pot recipe. I was quite disappointed that it turned into a slow cooker recipe. The only thing you use the instant pot for are tge bacon an onions. VERY MISLEADING.

Did this in the Instant Pot. Very flavorful but chicken was very very dry. Cut it into pieces and threw back into sauce. Made twice the amount of sauce because we have noticed that 99% of the time InstantPot recipes never have enough sauce or salt.

I made it from the Half Baked Harvest Cookbook and it never thickened up….really thin red wine sauce. It says cook for 10 minutes once it boils, I cooked it for half an hour as the carrots were not cooked. The family did not enjoy it at all!

I don’t usually make rich meals like this and it was amazing ! I used shallots instead of onions, and I also swapped in dehydrated and canned chanterelle mushrooms that I harvested last fall. I didn’t have bacon so I just added olive oil as a fat. At the end I wanted to thicken it so I added some tapioca four which made it like a gravy. It was So. Good. Thanks for sharing !

This recipe was a HUGE hit in my house! We have someone with a mushroom allergy so we substituted large cubes (approx. 1″) of eggplant and it worked great! We used to whole eggplant, and that roughly equated to 3 cups of eggplant. The eggplant did breakdown a lot in the instant pot, but it was so flavorful we didn’t mind at all! I will definitely be making this recipe again. The only change I would is switching from breasts to either bone in thighs, or a whole broken down chicken. When I first served it my husband was not happy that it had so many carrots. He is not a big carrot fan. But after he ate it he said the carrots didn’t taste like carrots. The red wine sauce really socks into then.

Delicious and very easy! I used 8 pieces of bone-in chicken from Trader Joe’s (a whole chicken broken down) and seared/browned the chicken in bacon grease before removing and starting with the onion step. Very impressed with the flavorful broth and moist chicken. Yum!!

Typically “Coq au Vin” is made with a rooster or a spent laying hen both which are lean to begin with because they are older chickens. The best tasting are the open range chickens used to produce open range eggs that are raised traditionally (or backyard chickens) where they are put outside during the day to feed and back into the coops in the evening to sleep safely away from foxes and racoons. Boy, they were stinky to clean!! I worked at such a farm for a summer when I was a teen and my parents bought their eggs and spent hens from her for years if not decades. Back then they were cheaper than supermarket eggs. From time to time you can also find inexpensive mature chickens in the supermarket which are also leaner and older than regular chickens.
Your recipe looks good though! I wonder how long I’d have to pressure cook one of these older chickens to tenderize it!

Tasty, no fuss recipe. I cooked this for 5 hrs on high in my Instant Pot (slow cooker mode). Love being able to saute in the same pot first. The gravy did need to be thickened- no big deal. Someone else mentioned adding eggplant. I had a couple of small eggplant that I added. The eggplant really kind of got lost in the dish, but it you have a crazy garden and have tons of veggies to use, I can see throwing them in. I will likely add 2 lbs of chicken next time, as this makes a lot of gravy.

Sounds good. I will try it soon as we love coq au vin. One caveat: most red wines can dye the chicken a purplish color. If you find this off-putting, use a dry white wine instead. Not as traditional but just as tasty.

This looks amazing! I don’t have an Instant Pot, so thank you for the slow cooker directions. Would bone-in chicken legs work just as well as breasts? Would the cook time on the slow cooker be the same with the legs?

This is a great recipe, but I’m sure I did something wrong. It didn’t reduce well and came out like shredded chicken with broth. Carrots were yummy…. but maybe I needed it to boil for the full 5 min…. LOL. But I will try again. Thank you for the wonderful recipes.

Hi! I want to make one of your Coq au Vin dishes next week- I have the recipe in your cookbook and this one. Are they mostly the same other than cooking style (dutch oven vs. instant pot)? My one issue is that sometimes (through faults of my own I am certain) the sauces in my dishes come out thinner/more watery than intended. Any tips/advice to thicken the sauce on this dish is highly appreciated. Thank you!

This dish is amazing! I left out the bacon because I forgot to buy it. I added a cornstarch slurry to thicken it up a bit after letting it boil for ~10 min. Other than those two differences this turned out AMAZING! and made the house smell good 🙂

This is my first recipe in an instant pot (just got one), and it was delicious !!!. I have made coq-au-vin many times the traditional way, and this recipe compares quite well to the slow-cooked versions I have made before. One of the biggest appeals to me was the use of chicken breasts (instead of thighs). Will definitely prepare it again and again.

I made this for my family tonight and they loved it. I used boneless chicken thighs and I did cook it for a total of 18 min (added a 10 min after the 8 min was up) as I didn’t think the chicken looked done in the instant pot. I also made a slurry (2 tbsp of cornstarch 1 tbsp of water) to thicken the sauce faster.

Holy Cow!!! I have to admit, I was a tad skeptical about using chicken breasts but decided to try it as I had some in the freezer that I needed to use. I didn’t have fresh thyme so I used dried and a pinch of Italian seasoning. I did make a slurry to thicken the gravy at the end. This is a dish I will be making regularly. It was perhaps the easiest, quickest, tastiest meal I’ve ever made in my Instant Pot (and I use it a lot), absolutely fantastic!

I wanted to this have some more depth but I think only cooking it for 8 minutes made it lose out on tasting anything like dried white meat chicken and some broth. The red wine needs all day to cook, avoid doing this in the Instant Pot.

I love this recipe!!! Quick easy and tastes like it’s been cooking for hours. I’ve sometimes made it with a little chorizo instead of bacon. And I’ve thrown in tiny potatoes and let them cook along with everything in the instant pot instead of making mashed potatoes. So good!
