Healthier Slow Cooker Creamy Tortellini Vegetable Soup.
This super simple Healthier Slow Cooker Creamy Tortellini Vegetable Soup is the perfect fall dinner…great for nights when you’re craving Italian, but want something warming and healthy too. A mix of vegetables, simmered with Italian seasonings, a splash of wine, kale, and cheese tortellini. Finish each bowl off with an extra sprinkle of cheese and serve with crusty bread. It’s hearty, full of greens, and so delicious. Great for just about any night of the week. Plus the leftovers the next day make for the best lunch!

As promised…a new slow cooker recipe to start off the week. And a healthier one too. But don’t worry, it’s still creamy, cozy, and of course, delicious. I mean, it’s October, I wouldn’t share a non-cozy recipe at this point in the year. Cozy is always the way to go when the weather begins to turn cooler.
To be completely honest, I don’t love all soups. To me, a dinner soup needs to be hearty. It needs to be brothy, but it also needs texture, carbs, and preferably some cheese on top too. French onion? Yes – yum. Hearty, thick chili? Of course. Ramen with double the noodles? Yes, 100%.
But a brothy soup with just a few vegetables just doesn’t do it for me, which brings me to this soup. It’s vegetable soup, but it’s not your average vegetable soup. This one is creamy, cheesy, and made with not just vegetables, but cheese tortellini too.
It’s all the things I love in a bowl of soup, yet made on the healthier side too. Promise you guys, this one is good, and kid-friendly too!

Here is the story:
This soup just sounded good to me. I’ve never done an Italian-style tortellini soup, but oddly I’ve done a Mexican-inspired tortilla soup with tortellini. Not sure where I got that idea, but it sure is different. Nothing like this bowl of tortellini soup.
When I presented the idea of a vegetable-based tortellini soup to my sister-in-law, she gave it a double thumbs up. Granted Lynds loves a bowl of soup, but she’s also picky about her them. So instead of second-guessing my ideas, like I always do, I took her double thumbs up and I ran with it. And the verdict? I am very, very happened I listened. This is such a delicious bowl of warming soup. And I love that I was able to make it a touch healthier than the versions you might find in a restaurant.
And my favorite part…well, aside from the taste…this is actually the easiest soup to make. You can cook it low and slow in the slow cooker, or speed things up by cooking it in the instant pot, or you can even cook it on the stove-top.

To make this tortellini soup:
I love to start this off on the stove-top. I know it’s annoying, but I really think cooking your vegetables with the dried herbs and spices before slow cooking adds so much wonderful flavor. If you have an all-in-one browning slow cooker then you can do this all in the slow cooker bowl. I literally just hit purchase (before starting this post) on this all-in-one All-Clad slow cooker with a browning function. I cannot wait for it to arrive this week!
Cook the onions with a mix of my favorite Italian spices…the dried herbs, fennel, and smoked paprika. They are all KEY here. They add so much flavor, almost like Italian sausage, but minus any of the meat.
Once the onions have been seared, add everything to the bowl of your slow cooker. Then add tomato paste, a good splash of dry white wine, and plenty of vegetable broth. Cover and cook low and slow.

I like to just let my soup cook all day long. The house smells incredible as this simmers away in the slow cooker. But, as I mentioned, I’ve also included directions for the Instant-Pot and stove-top variations, in case you’re in a crunch.
Once the soup has finished cooking, before serving, stir in a few large handfuls of kale, cream or milk, parmesan cheese, and the cheese tortellini. Cook another few minutes and then that’s it.
Easy. EASY. But yet so delicious.

I’d highly recommend serving this soup with a side of crusty bread. If you own the HBH Super Simple cookbook, there’s a really good, really easy, no-knead bread recipe that’s perfect to pair with this soup.
If you’re planning to enjoy this soup leftover, be sure to first remove the tortellini from the broth before refrigerating. That way the tortellini won’t soak up all the broth. Then just add them back in before serving.

Ingredients
- 1/4 cup extra virgin olive oil
- 1 yellow onion, chopped
- 2-4 cloves garlic, minced or grated
- 2 tablespoons fresh thyme leaves (or 2 teaspoons dried)
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1-2 teaspoons fennel seeds use to your taste
- 1 teaspoon smoked paprika
- 1 pinch crushed red pepper flakes
- kosher salt and black pepper
- 2 tablespoons tomato paste
- 6 carrots, chopped
- 4 celery stalks, chopped
- 1/2 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
- 6 cups low sodium vegetable broth
- 4-6 cups roughly chopped kale
- 1/2 cup whole milk or heavy cream
- 1/3 cup grated parmesan cheese, plus more for serving
- 1 pound fresh cheese tortellini
Instructions
Slow Cooker
-
1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Remove from the heat and add to the bowl of your crockpot. Stir in the tomato paste, carrots, and celery.
2. To the crockpot, add the wine, broth, and a pinch of red pepper flakes. Cover and cook on low for 6-8 hours or on high for 4-5.
3. During the last 15 minutes of cooking, stir in the kale, cream, parmesan, and the tortellini.
4. Serve the soup topped with additional parmesan and fresh oregano, if desired.
Instant Pot

1. Set Instant Pot to sauté. Add the olive oil, onion, carrots, celery, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Stir in the tomato paste. Turn the Instant Pot off.
2. To the instant pot, add the wine, broth, and a pinch of red pepper flakes. Cover and cook on high pressure for 6 minutes.
3. Once done cooking, use the natural or quick release function. Set the Instant Pot to sauté. Stir in the kale, cream, parmesan, and the tortellini. Cook until the kale is wilted, about 10 minutes. Turn the Instant Pot off.
4. Serve the soup topped with additional parmesan and fresh oregano, if desired.
Stove-Top

1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion and cook 5 minutes, until golden. Add the carrots, celery, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook another 5 minutes, until very fragrant. Stir in the tomato paste. Add the wine, broth, and a pinch of red pepper flakes. Simmer over medium heat for 20-30 minutes, until the carrots are tender.
2. About 10 minutes before serving, stir in the kale, cream, parmesan, and the tortellini.
3. Serve the soup topped with additional parmesan and fresh oregano, if desired.

What an incredible soup! One of the best I have ever made. The flavours were perfect and the splash of Parmesan was delicious. I added spinach instead of kale and it was wonderful. The store was out of kale so we subbed for spinach and I realized after coming home that we were out of tomato paste. I had some delicious cherry tomatoes, so I cooked those in oil and blended it into the broth. We also wanted some meat so we browned up some sausage. I made this tonight using my Instant Pot the whole way through. I sauteed the veg in it, then set it to slow cook mode on the “more” setting for the rest of the steps. It cooked 4 1/2 hours and it was perfect! This is such a great hearty soup, perfect for chilly fall days. Made this soup the first chance I had! I’m dairy-free, so I subbed coconut milk for the cream, nutritional yeast for the parmesan, and non-dairy tortellini. Instant Pot instructions came together really quickly! I swapped the kale for spinach I had on-hand so I only simmered for 4 minutes instead of 10 to finish everything off (4 minutes was the recommended cook time for the tortellini I used). I was out of fennel and oregano which might have made this taste even more savory ~ I’d definitely make this again with spices as written! This was very, very tasty! I used my IP. I used dried tortellini and it was great. I had one of those kale salad kits and used 5 cups of that which was a mix of kale and other chopped veggies. I followed the recipe but did the IP on high 4 min, QR, then added the tortellini and kale mix and did another 2 min and QR. The textures were perfect. Hearty but not heavy! Win win!!

Made this for dinner and absolutely loved it! I swapped out spinach for kale, and it was great. I didn’t have tomato paste so I omitted it, but that definitely resulted in a slightly less appetizing colour of the broth so next time I’d be sure to add that in. Delicious recipe! My instant pot was in the dishwasher so I made on the stove. I found that the broth evaporated a lot when cooking so I had to add a lot more than the recipe called for. Ended up running out of broth, so it ended up more of a pasta and less of a soup. Might have to try again in my instant pot so it comes out right! Despite that, was really yummy. Just be aware that you might need extra broth if cooking on the stove!

I made this tonight and it was very good. I accidentally forgot the wine so don’t worry if you do that. I cooked it on low in my slow cooker and then cranked it up to high when I added in the tortellini. Everyone in family (including picky 3 year old) chowed done! Thanks , Tieghan!

I love the majority of the half baked harvest recipes I have made and was excited for this soup on a cold rainy day. While it is not inedible as written, it is also not very tasty. The flavors of the broth, and the overall soup do not seem balanced.

Delicious! I have been eating on this soup for days now. I am a big fan of kale in soup. The soup is light in comparison to the go-to tortellini soup I make for my boyfriend, which is packed with cream, meat and cheese. I much prefer this version as a pescatarian and one who can NOT just eat one bowl of soup. I was short a couple spices, but compensated with a spice blend from the pantry. I would recommend and also make again – very easy, filling and comforting.

This was SO delicious! My husband and I both loved it. We did swap out some of the dried herbs for fresh and it was an excellent swap as we like the texture of fresh over dried better. Additionally, while the recommendation is to take out the tortellini before storing any leftovers, we left them in because, well, weeknights, and actually both thought the leftovers were almost better! The tortellini does soak up some of the liquid but it makes them so flavorful and it becomes more stoup like, which we loved! Will definitely be making this again!! I followed the stovetop recipe and it was awesome. I love fennel in soup so I added the full two teaspoons of fennel seeds. I did a quarter teaspoon of smoked paprika just to be safe and the soup was still pretty spicy, which I like but definitely something to keep in mind. I was feeling courageous so I made my own cheese tortellini. It was all just so good. Perfect for a Fall Sunday afternoon. Thank you for another fabulous recipe!

I made this soup using two different methods, one batch in the instant pot and one on the stove. I took off one star for this recipe because the tortellini (yes, I used fresh like the recipe said) ended up absorbing too much broth. In the future I would probably double the liquid or maybe pre cook the pasta. I also would prefer the spices to come through a little stronger so I would also increase those, possibly even double. Overall, still a great recipe! Thank you!

I am not giving five stars only because of the herb quantities. I have an herb garden and cook with herbs all the time. I was suspicious of the 1 tablespoon quantity of dried herbs, so I used 2 teaspoons of each and less than one of fennel seed.
That said, this is an amazing soup! It was so delicious with some crusty bread on a chilly wet day. My adjustments came out perfect.
The other thing is that you must have a larger than basic crockpot, I had to finish mine off on the stove in a Dutch oven.
This one is in our rotation now.

I’ve been trying to make this soup over the past week. (Had to get more fresh carrots because I waited too long to use them) plus, I’m 50 and it’s the 1st time I ever bought kale! I made it on the stove top, followed the recipe ad is, and it was fantastic. So yummy for a cold rainy evening. I served it with warm crusty bread for dunking. I followed the instructions exactly… The blandest soup that has ever come out of my slow cooker. Needs drastically more salt as the recipe calls for low sodium stock. The parmesan should NOT be mixed in with 15 min to go—it just becomes gluey. The tortellini got mushy in that time frame. Carrots tasted good but everything else was totally disappointing.

Made this for dinner tonight and it was a hit! Perfect meal for a windy day. I was a little confused on the tortellini part. I made this last night because it was officially soup weather. My place smelled great! This soup has great flavor. I rarely use vegetable broth so I subbed chicken stock which I had on hand. Everything else I pretty much did by the recipe. I used my instapot which worked out wonderfully! My biggest recommendation is to use maybe 1/2 lb of tortillini or make way more broth. Tastes amazing! But the next day I almost just had a pasta in a sauce rather than a brothy soup. Most of the soup was soaked up. I added a little stock to help when I reheated it. Still amazing! I’ll definitely make this again, with chicken stock of course, (I also used the heavy cream.) Cozy weather soup!

This is a great comforting soup. I made it a couple of weeks ago and forgot to review. I didn’t have any tortellini on hand so I added Trader Joe’s frozen Fiocchetti which worked perfectly. They’re slightly more delicate pasta pockets filled with cheese. And since it comes with frozen little blocks of pink sauce that melted right into the soup, I didn’t need to add any separate milk or cream. It was a very successful substitute. This is an easy, yummy, Fall and Winter weeknight meal.

I so wanted to love this but it wasn’t as tasty and rich as I had expected being that there’s dairy and the pasta adding richness to this soup. The temperature finally dropped enough for us here in Southern California that it now feels like autumn (of as autumn as we can have in San Diego). With the rain and finally being able to bust out the flannels, the day was made even better with this soup simmering away in a slow cooker. I can think of no other way to best stimulate an appetite than having something yummy cooking away all day 🙂 The soup, like all recipes I’ve tried of yours, was delicious. It was filling, healthy, and comforting. I did omit the cream/milk to lighten things up a little (I’m sure it would’ve tasted even better with it) and added slices of Napa cabbage since I had it available. Soooooo good. I put this in the slow cooker this morning and just realized I accidentally put an entire jar of tomato paste instead of only 2 tablespoons. 🙁 oops! We will see how it comes out. Excellent soup! Great flavor. I made some subs and additions that worked out—-spinach for kale, used chicken and vegetable broth 50/50 for the broth and wine because that is what I had and added shredded turkey. Also used frozen tortellini. Was so good, with rave reviews from the family, A keeper!

Wow, wow, wow! May be top 5 favorite HBH recipes. I used a 12 oz bag of chopped kale, added 1/4 more wine and cream, added 1 cup of broth because it didn’t seem like there was enough broth before putting in the tortellini. This was absolutely incredible! Bravo!

Oh, so, yummy. My husband Will eat soup but it needs to have Protein to make him happy. I cut two large chicken breasts in half, coated both sides with Italian seasoning and lightly pan fried them. I added the chicken in About halfway through. This recipe was a big hit.

I made this soup for dinner and it was very satisfying. I had most of the ingredients and ad-libbed the rest. I added mushrooms and used half and half. I didn’t have wine or fennel seeds and it was great without. I omitted the 1/3 cup of Parm and just sprinkled a bit on top of my bowl. Enjoy!

This soup is really easy to make. Even tough it’s delicious, I’m leaving out the smoked paprika next time. It’s too smokey for my taste and that doesn’t seem to go with the rest of the soup. Anyway…love your recipes! Regine

I’ve made both versions of this soup on the stove top and they both are delicious! It is a very flexible recipe… I subbed spinach for kale in round 2, added some frozen peas at the end (yum!) and used fresh basil at the end instead of dried early on. I love tomato so added about a 1/4 cup of tomato sauce in addition to the tomato paste and loved the flavor. Thank you for the delicious and easy recipe!

I made this with several substitutions and it was INSANELY good! Here’s what I changed:
cheese tortellini – used lobster ravioli from TJ’s
used fresh basil instead of dried
didn’t add fennel seeds
no celery
Used dry vermouth instead of white wine
used a 1/2 cup almond milk (didn’t affect taste surprisingly!)
I can’t wait to make this again — I had three helpings the first night!

I omitted the celery, added some diced sweet potatoes, and swapped out the kale for baby spinach! Next time, I would add more broth as there wasn’t a lot of actual soup, and I’d reduce the cooking time as the carrots and sweet potatoes were a lot softer than I like (I made it in my instant pot).
