These 30 Minute Coq au Vin Chicken Meatballs…with browned butter mashed potatoes. Best for those cold fall and winter nights when you want a fancy slow-braised chicken, but you want it ready in less than an hour. Made quickly with healthy oven-baked chicken meatballs, using simple wholesome ingredients that you may already have on hand. This dish is warm, flavorful, hearty but healthy, and so delicious. The Coq au Vin sauce is made using rich red wine, root vegetables, and fresh herbs. Great for both a simple family dinner and holiday entertaining.
If I had to choose the recipe for you to all be making this week, tonight even, it would be these meatballs. And you know what’s funny? For someone who has really avoided making meatballs in the past, I sure have taken a liking to them this past year.
So far I’ve shared butter chicken meatballs, coconut curry chicken meatballs, sticky sesame ginger meatballs, and now these coq au vin meatballs. Without thinking twice, these are my favorite meatballs of the “bunch”. I know I shouldn’t be picking recipe favorites, but these are the flavors I love, especially this time of year. The weather in NYC has turned cold and deary (and very snowy in Colorado), and it’s just the time of year for recipes like this.
When I made these meatballs just last week, my oldest brother, Creighton, was in town. I, of course, fed him multiple dinners (the boy lives to eat!). But at the end of his trip he declared these meatballs as the best dish he ate all week. He LOVED them, so I think it’s safe to say this is a very good recipe.
And easy too, which is honestly just an added bonus.
Here is how you make these meatballs.
Start with the meatballs themselves. I always use the simplest mix of ground chicken (or turkey), an egg, Panko bread crumbs, and a little parmesan cheese.
Here’s my trick though, instead of pan-frying the meatballs, I bake them in the oven. Not only is this easier, but it also saves on time. While the meatballs are cooking away in the oven, you can be working on the coq au vin sauce…
This sauce…it’s everything.
If you could not tell by now, I love Coq au Vin so much. I shared a more classic coq au vin a few years back. Here’s a link to watch me prepare it on Hallmark Home and Family. And the thing that makes Coq au Vin so delicious?
The red wine based sauce. This sauce is truly one of the most delicious sauces you will make.
But today’s Coq au Vin is all about these meatballs. There’s also a little bacon…for flavor, along with a mix of hearty fall vegetables, rich red wine, and herbs. The wine is key as it’s what gives the sauce its signature “french” flavor.
Traditionally, Coq au Vin is a slow-braised chicken that can take hours to make. Using meatballs allows this classic French dish to turn into a quick-cooking weeknight dinner…that also happens to be fancy enough for a weekend gathering.
My favorite way to serve these meatballs is over my buttery herbed mashed potatoes. Spooning the sauce over the creamy mashed potatoes and topping with the meatballs leaves you with a cozy dinner that’s effortless to make.
And one that everyone really loves! My only other suggestion is to add a side of crusty bread for dipping. Perfect dinner, right? I’m excited t have this one in my back pocket for the upcoming holiday season. I already know it’s going to be a go-to recipe once my family arrives and the craziness begins!

30 Minutes Coq au Vin Chicken Meatballs
Key Ingredient: chicken
These 30 Minute Coq au Vin Chicken Meatballs...with browned butter mashed potatoes. Best for cold fall and winter nights when you want a fancy slow-braised chicken, but you want it ready in less than an hour.
Ingredients
- 1 1/4 pounds ground turkey or chicken
- 1 egg
- 1/3 cup Panko bread crumbs
- 1/3 cup grated parmesan cheese
- kosher salt and black pepper
- 2-3 slices thick-cut bacon, chopped
- 1 yellow onion, chopped
- 4 cloves garlic, minced or grated
- 4 carrots, chopped
- 2 cups cremini mushrooms, sliced
- 2 tablespoons tomato paste
- 1 1/2 cups dry red wine, such as Cabernet Sauvignon
- 1 cup low sodium chicken broth
- 2 bay leaves
- 4 thyme sprigs
- 1/2 cup fresh parsley, chopped
- mashed potatoes, for serving
Instructions

1. Preheat the oven to 450 degrees F. Line a baking sheet with parchment.
2. Add the turkey, egg, bread crumbs, parmesan, and a pinch each of salt and pepper to a bowl. Coat your hands with a bit of olive oil and roll the meat into tablespoon-size balls (will make 15-20 meatballs), placing them on the prepared baking sheet. Transfer to the oven and bake for 15 minutes or until the meatballs are crisp and cooked through.
3. Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes. Remove the bacon and reserve. If there's excess bacon grease, drain off all but 1 tablespoon. To the skillet, add the onion and cook for 5 minutes, until softened and fragrant. Stir in the garlic, carrots, and mushrooms. Cook another 5 minutes, until the vegetables are caramelizing on the edges. Add the tomato paste. Cook 1 minute.
4. Add in the red wine, chicken broth, bay leaves, and thyme. Season with salt and pepper. Stir to combine, bring the sauce to a boil, cook 10 minutes or until the sauce thickens slightly. Stir in the meatballs, cover and cook 5 minutes, until the meatballs are coated in the sauce. Remove the bay leaves and thyme and discard. Stir in the parsley and reserved bacon.
4. Serve the meatballs and sauce over mashed potatoes.
Recipe Notes
To Freeze the Meatballs: Bake as directed, then freeze on a parchment lined baking sheet in a single layer for 2 hours. Transfer to a freezer-safe container and freeze for up to 3 months. Thaw overnight in the fridge or simmer in the sauce over low heat for 20 minutes, until thawed, adding water if needed to thin the sauce.
To Freeze the Meatballs in the Sauce: Spoon the meatballs and sauce into a freezer-safe container. Freeze for up to 3 months. To serve, thaw overnight in the fridge, then warm on the stove until heated through, about 15 minutes, adding water if needed to thin the sauce.

I made this tonight and it tasted good but the sauce doesn’t thicken because there isn’t a thickening agent. Also the meatballs should simmer in the sauce for longer than 10 minutes to absorb flavor

Made this tonight! ran to the store at dinner time and came home and cooked this. I’m about to go into labor but this looked to god to not have right away. It was great! Totally made a mistake and put the whole can of tomato paste oops! (small can though) but the tomato was overpowering after it was reduced I ended up adding some balsamic vinegar and a little maple syrup to tone down the overwhelming tomato.. it was good! I don’t know what’s happening but the last few I have made have not been good. I knew when I was making this that there wasn’t a thickening agent so the liquid would be thin but on top of that the flavor tasted very “I’m a new cook”. I made this last night…one of our few cold days in Houston! I love any kind of meatballs and adding the coq au vin spin really caught my eye. I could have eaten the sauce all by itself. ? only reason I didn’t give 5 stars is the meatballs were very bland. They definitely needed more seasoning than the “pinch” of salt and pepper. Maybe some other seasonings also to amp up the flavor a bit? I will definitely make it again. Love your IG feed and just got your cookbook!

A+++ Tieghan, as always! Just made this recipe and it is definitely going into the rotation! I would echo a few other commenters that it is important to keep an eye on the meatballs to not overcook in the oven b/c they will be on the stove again at the end to marinate with the sauce (YUM). The sauce and veggies are the hero of this dish – you could make with many other types of meatballs or “mains” and it would be amazing. I made this dish with wild rice instead of potatoes because i happened to have on hand (MN!) and it was just fab.

Made this last night! I used turkey for the meatballs, they came out a little dry so I’ll have to figure that one out. I also used chopped up pancetta from Trader Joe’s instead of bacon because #easy. Super super yummy. I also used rigatoni in lieu of mashers and it made for a fabulous pasta! Will be making again!

This is a really solid recipe. Smelled amazing, tasted great, and everyone I made it for was a big fan. I feel like I am never let down by your recipes. It’s nice to be able to count on something found on the internet because that’s not always the case with other online recipes.
The only thing I will personally do differently is to cook the meatballs for less time in the oven and then put them in the sauce to finish cooking. I believe I let them overcook in the oven which was a shame but obviously my oversight, not the recipes.

Delicious! Made it last weekend. The meatballs smelled so good coming out of the oven I could have eaten them just like that. The sauce was the best part, though, really flavorful. I could have used more, because it either cooked down too much or got soaked up by the meatballs. I’d add even more mushrooms next time too, as they shrank while cooking. It took me about 1 1/2 hours but I guess I’m kinda slow in the kitchen.

Just devoured this dish! A couple of thoughts: it does help to have everything ready to go if you want to have it done in 45 minutes. Also, some comments have indicated that the sauce was too thin. I added a slurry of 1TBS cornstarch/1 TBS water before adding the meatballs to simmer and it made it a little thicker for bread dunking!

Your picture of this dish looked absolutely amazing! It looked like the perfect “hygge” comfort food for my family. I enlisted the help of my three teenagers but it still took us almost an hour and 45 minutes to make this recipe. I followed your directions to a t and my (diced) carrots were still not soft and the meatballs lacked flavor and were a little dry. I will definitely make this recipe again as I think it can be incredible. I think the flavors just need more time to deepen, which cannot be done in 30 minutes. But thank you for giving us such a great twist on on Coq au Vin!

Made this for my husband. He loved the flavors and thought the dish was very rich but not overly rich. Vegetables cooked nicely. The chicken was not dry at all. I find some dishes that use ground chicken are very dry, this was Not. It was a well written recipe that was easy to prepare.

Tieghan, I wrote awhile back with a review of the Lamb Meatballs with Goddess Dressing that I said was one of the best things I’ve ever made in my 50 years of cooking. It now has a regular place in our rotation. I also cook for a 90 year old with only one tooth (!) and so looking for something easy for him to eat I decided to try these chicken meatballs. He has just finished eating them and said, “I think these are my new favorites!” So, you should know that your work has helped an old man eat healthfully, and happily. Well done! Most of your reviewers comment on your enchanting photos, but for any readers who decide to try this, let me just say you should! I doubled the amount of broth and wine, however, so that we would have more sauce on the potatoes. Next time, I might add a little pepper flake to the meatballs because we like things with a little heat. And, don’t skip the bacon in the sauce. It is absolutely essential. Again, well done! Lisa

I made this recipe to the letter and it smelled delicious! But the flavors fell a bit flat. Do you recommend a particular brand or wine or tomato paste? Would the flavors jump a bit more with increased thyme or simmering time?
Hi Leora, I always recommend a wine that you personally drink and enjoy. What did you use? As for tomato paste, I use Kroger Simply Organic. A longer cooking time will always add more flavor, but it really should not be needed with this recipe. Did you season the sauce with salt and pepper before enjoying? Any info will be helpful to help me problem solve and figure out what might be happening for you. It’s hard to know without knowing any details. Hope I can help you! xTieghan
Is there anything I can substitute for the bacon? I do not eat pork or red meat. Turkey bacon isn’t going to work in this, smoked turkey perhaps?

I recently made this for a small dinner party and it was wonderful. I wanted to have it done before our friends came over so I added an extra 1/2 cup or so of the wine and broth so I could simmer and reduce but still have sauce. I also sauteed the mushrooms in some butter before adding to the mix so they didn’t break when mixing. It was awesome, we all really liked it. I would never be able to do this in 30 minutes though. It took that long just to get out all the ingredients and chop everything, but I know I am slow. Thanks for another wonderful recipe. It was a hit for sure and I will definitely make again

I made this recipe and the flavor was out of this world. However cooking the meatballs, after following the size instructions, and preheating the oven to 450 and baking for 15 minutes they came out like little balls of rubber. Next time I make this recipe, I will simmer them in the sauce. Also, with the bringing of the sauce to a boil and cooking for 10 minutes, the sauce would have been reduced to nothing but a paste. As it was I did that for less than 5 and the sauce was so thick and sticky. I would say bring to a boil and then turn it down as you stir for 10 minutes if that’s the case.

Love this! Have made it twice and loved it both times, fairly easy to follow and I love to have the great taste of a traditional coq au vin without the long braising process. I cooked it for my parents, who said that they had already had coq au vin once before at a fancy restaurant and didn’t care for it, but they really liked this recipe! Don’t like. Chicken balls no taste. Balls don’t absorb sauce. Also too much wine. Better to use beef stock for deeper flavor, and maybe 1-2 Tbsp of sugar. This is weird unbalanced recipe.

We made this dish recently in our online cookbook club and none of us liked it. The sauce doesn’t get absorbed by the balls so the chicken balls were all dry and bland inside. I don’t know why I wasted 20min of my life deboning, skinning and grinding chicken breast meat to form balls that don’t absorb the sauce… It probably would have been better if I just used chopped up chicken pieces.
Also, I think your recipe rating system is rigged. We noticed that even after the low ratings we gave the average rating goes up instead of down. Shady.

So it was good but maybe I used the wrong Cabernet Sauvignon 🤷♀️ The sauce in the pic looks like a gorgeous brown and mine was so red! Including my veggies! The chicken meatballs were so sticky and could barely make into balls and the sauce wasn’t as much as I anticipated. In the picture it looks like it makes a lot of sauce but mine had enough to just coat the meatballs. So not a lot for the potatoes. Anyway just wondered if anyone else experienced this? Other than that it was tasty.

This was really delicious. My roommate loved it too. My only complaint is that is takes me about an hour to complete. You would have to be super woman to get it all done in 30 minutes.

I made this for Halloween dinner, swapping out the wine for tart cherry juice, and it was delicious, though I think I let the sauce reduce a smidge longer just so it would be thicker. I don’t see how the Prep times is 10 minutes- Mixing and making the meatballs alone would take 10 min. Then there’s chopping onions, carrots, mushrooms, and- measuring & adding the wine, stock, tomato paste… (Also, no vegetables are going to “caramelize” in 5 minutes). More ‘prep’ at the end, adding bacon, removing thyme… I’d say bare minimum in “real time” 45-60 minutes. And that doesn’t include any of the making of the mashed potatoes or brown butter sauce. It looks delicious and probably is, but it just seems silly to say the prep time is 10 min. & cook time is 20.

I made this last night. It was super delicious, but it definitely took just over an hour (approx 65 minutes) from beginning to end, there’s no way it was even close to being done at 30 minutes. I’m not sure how that would be possible since mixing the meatballs, rolling them, baking them, frying bacon, cooking up onion and carrot until they’re starting to caramelize, and reducing the sauce are all time-consuming processes. It’s not *that* quick of a meal, but it was definitely worth it. It was warming, hearty, and crowd-pleasing. I also found that the amount of meat in the recipe is somewhere between one and two packages (the pre-prepared packages of ground turkey from the store, I know I could have gotten exactly the amount I needed if I’d gone to a butcher counter). So I ended up with extra meatballs since I wasn’t going to leave half a package of opened ground turkey sitting around. Not that I’m complaining! Anyways, I’d recommend this meal and I’d definitely make it again, but don’t start it 30 minutes before you want to get dinner on the table!

Absolutely delicious. I followed the directions exactly and the result was sooooo good. My whole family loved it. I did find the ground chicken a bit sticky to roll out but I just popped it in the freezer for about 15 minutes and then they rolled better. Im not sure I’ll make mashed potatoes any other way now! This was absolutely delicious! I left out the mushrooms because of an allergy, but it still came out perfect. I made this with the browned butter mashed potatoes which were awesome, but served the leftovers over buttered egg noodles with fresh parsley & garlic which were just as good and a little bit easier to make. Will definitely be making this again.

SInce a lot of comments are from readers who haven’t tried the recipe, just wanted to throw in my two cents having made it twice. It’s absolutely fantastic and SO easy to make. I’ve tried it as written with turkey meatballs which was great, and last night I made it with beef (which my family prefers). The sauce is rich and forgiving (I ran out of the amount of red wine called for and subbed extra broth for the amount missing). After making that substitution, the sauce seemed a little thin, so I mixed a bit of corn starch with broth to get it to the right consistency. However, everything else remained the same — no need to make any changes. Served over mashed potatoes, it’s the coziest and most delicious meal that my family loves. Going to put this one high on my rotation list.

This recipe was a lot of work, even with two cooks. It took us about an hour and a half to two hours to finish cooking everything. The flavor was good, but after spending so much time frantically cooking, it wasn’t as enjoyable as I expected. I liked the texture and flavor of the mashed potatoes but there was a bit too sage for me.

Maybe I’m a slow chef but this recipe took way longer than 30 minutes. It was flavorful but a little more work than I would probably spend for a mid-workweek recipe. I liked the mash potatoes and the flavor of this recipe was good, i just don’t think the recipe is a long term favorite for me.
