Super Simple Coconut Chicken Tikka Masala.
If you often find yourself heading to your favorite local Indian spot for curry, you need to try this Coconut Chicken Tikka Masala. It’s likely healthier, has incredible flavor, and can be made using only a handful of pantry staple ingredients…that you may even have on hand. My secret is to blend up a quick homemade yellow curry, which becomes the base flavor. I also add coconut milk to the chicken, which keeps the masala creamy. It adds a hint of coconut flavor, which I find to be really nice with Indian cuisine. AND…the flavors get even better the next day, meaning leftovers are especially delicious!

We’re less than one week out from the release of Half Baked Harvest Super Simple. And today I’m sharing a recipe straight from the pages of the new cookbook! Some of you might recall, but I asked everyone on Instagram which recipe they’d like to see this week and the Tikka Masala won. It was a very close call between the TIkka Masala and Beef Bourguignon, but Masala won fair and square!
To be 100% honest, I’m not sure I’m really ready for the release of this cookbook. You guys, I am SO NERVOUS. I think even more nervous than the first cookbook, I just really want you all to love this book!! It’s very scary and I’ve had a nervous pit in my stomach for days now. But don’t take that wrong, because I am so excited too! I cannot wait to share this book with you all. My hope is that it brings to you so many new recipes to fall in love with.
And today, a sneak peek at one of my personal favorite recipes, the chicken Tikka Masala!! With homemade naan…of course.

The Details.
This recipe is well, Super Simple!
Start with the curry paste. I have a hard time finding a really good yellow curry paste locally, so I decided to make my own. It takes only minutes to put together and you probably already have everything you need in your pantry right now.
I toss an onion, shallots, garlic, plenty of ginger, and a couple of spices into a blender (or food processor). Then I process it all together until a paste forms. No chopping, no weird ingredients, nothing fancy. Just simple and delicious.
The cool thing about this curry paste is that it lasts for up to a month in the fridge. So if you love making curry I’d recommend doubling the recipe and keeping a batch in the fridge for incredibly fast weeknight curries. Perfect for cold and cozy fall/winter days.

Now, onto the chicken.
Since the curry paste adds all the flavor, the chicken just needs to be marinated for thirty minutes in the paste. Oh, and add in some Greek yogurt too. This tenderizes the chicken and makes for a creamy sauce. If you’re really short on time, you can skip marinating and just move right onto cooking.
Tip: Before you start the chicken, make a pot of rice. You can’t have Tikka Masala without rice.
Then simmer the chicken on the stove with coconut milk, and tomatoes paste. Minutes later your Coconut Chicken Tikka Masala will be done. And your kitchen will smell amazing, like deliciously slowly simmered Indian food.
Again, super simple.

So how does it taste?
SO GOOD. I know that the recipe feels simple and the steps are easy, but I promise, this tastes like real deal Chicken Tikka Masala…but with the slightest hint of coconut. It’s rich, creamy, perfectly spiced, and is best served over steamed rice with warm naan for scooping up all that sauce.
I was so excited to have the chance to make this again that I even shot some new photos, fresh for the blog. I filmed a quick Instagram story video as well. That sauce is just so creamy and brightly colored that I had to capture it.
Also? Recreating this recipe from the cookbook was especially well-timed. My oldest brother is in town and this is one of his favorite Indian dishes.

Super Simple Coconut Chicken Tikka Masala
Key Ingredient: chicken
No need for takeout with this Coconut Chicken Tikka Masala...it's healthier, has incredible flavor, and is made with only a few pantry staple ingredients!
Ingredients
Curry Paste
- 1 medium yellow onion, quartered
- 1 shallot, halved
- 6 cloves garlic
- 2 (1-inch) pieces fresh ginger, peeled
- 3 tablespoons garam masala
- 2 teaspoons ground turmeric
- 2 teaspoons kosher salt
- 1 teaspoon crushed red pepper flakes
- Zest of 1 lemon
Chicken
- 2 pounds boneless skinless chicken breast, cubed
- ½ cup full-fat plain Greek yogurt
- 1 can (14 ounce) full-fat unsweetened coconut milk
- 1 can (6 ounce) tomato paste
- ¼ cup cilantro, chopped
- 3 cups cooked rice, for serving
Instructions
-
1. To make the curry paste. In a blender or food processor, combine the onion, shallot, garlic, ginger, garam masala, turmeric, salt, red pepper flakes, and lemon zest. Pulse until a smooth paste forms, about 1 minute.
2. To make the chicken. In a gallon-size zip-top bag, combine 2 tablespoons of the curry paste, the chicken, and the yogurt. Seal the bag and massage the mixture into the chicken to cover completely. Marinate at room temperature for 30 minutes or refrigerate up to overnight.
3. Heat a large, high-sided skillet over medium heat. Add ¼ cup to 1/2 cup (use to your taste) of the curry paste and cook until fragrant, about 1 minute. Stir in the chicken, coconut milk, and tomato paste. Cover and cook until the chicken is cooked through, 15 to 20 minutes. Remove the lid and simmer until the sauce thickens slightly, about 5 minutes more.
4. Stir in the cilantro and serve the chicken over rice.
Recipe Notes
Curry Paste: You can double the curry paste and store it refrigerated in an airtight container for up to 1 month, or in the freezer for up to 4 months. Thaw in the fridge overnight. Alternately, you can use store-bought yellow curry paste.

Hi there! Any thoughts on how to sub roasted cauliflower in for the chicken to make this vegetarian? Would I still need to coat it in the curry paste and yogurt before or after roasting? Hey Rebecca! I would recommend using 1 large head of cauliflower cut in florets. I would toss them with the curry paste + yogurt AND let them marinate too. Then cook as directed for the chicken. So basically just swap in 1 head cauliflower and then follow the same directions for the rest of the recipe. I think that will work so well! Please let me know if you have any other questions. Made this and is was good and easy. Used store bought paste(hard to find-tried Whole Foods and Publix before I finally found some at another Whole Foods), chicken thighs were marinated overnight. Bought frozen rice from Whole Foods that turned into a hockey puck when heated, so have to find better options for that. Also, naan from Whole Foods was also just ok. Would love ideas on how to up the heat.

I wanted to love this, but I was worried after I tasted the spice blend. I was certain that 3 tbs of garam masala had to be incorrect, and after i tasted the spice blend, i was worried that the chicken would be awful. I added some brown sugar and extra salt and lemon juice to the marinade to try to bring down the bitterness. Luckily, the chicken turned out great, and the paste was not as bitter once the coconut milk and other ingredients were added. It ended up being enjoyable but I doubt I’d make it again.

Firstly, I’ve enjoyed looking through this cookbook and my first executed recipe was a hit last night (carne asada tostadas). I’m so bummed this didn’t turn out tonight. The curry paste recipe makes about 1 1/2 cups of paste yet it only calls for 1/4c to be added to chicken. It was missing a lot of flavor so I added the majority of the paste yet still not right and my son it tasted more like tomato soup. Not sure if an ingredient is missing or a typo in book but this was a miss for me. But will keep trying more recipes!

This was so delicious, thanks so much for the recipe. One question.. Whenever I cook with coconut milk my sauce never comes out smooth/cohesive, there are always little specs of white throughout. Do you know how to get the sauce to meld together better? It doesn’t affect the taste, it’s more of an asstetic thing.

I’m making this recipe and I think there is an error in its. I used the 2 tablespoons Of paste in the marinade and put the quarter Cup into the pan but there is about a half cup left over of the paste. Do you mean to add that to the curry and if so when? Thanks!

Can i replace the Chicken with TOFU? If so, do you recommend baking the Tofu after its been marinated and then adding it to the rest of the sauce to cook or just let it cook with the rest of the ingredients?

I made this last night after some instagram votes between this and your Kai favorite sesame orange chicken. Granted I’m still going to make you sesame orange chicken I wanted to tackle this one first. I love Indian food and during quarantine it’s very hard to find a place open that delivers.
Yes practically EVERYTHING was already in my pantry minus the spices which were easy to find in the local supermarket. It was surprisingly super simple, I never thought that cooking something so delicious would be this easy. I did marinate my chicken overnight because I love to food prep and it took me 10 minutes to blend everything up and throw it on my pre cleaned & chopped chicken.
I added a dash of cayenne pepper because I love extra spicy food, but before adding my cayenne pepper the sauce was so delicious. My fiancé loved it and we can’t wait to eat it for lunch today!

I wanted to love this. But it just doesn’t work. The paste, although convenient, in the finished dish just didn’t have clean flavors. The flavor was muddy and nothing could be distinguished, it didn’t taste of Indian spice at all. The sauce is OVERPOWERED by tomato purée. A few people thought it was an Italian sauce. If I hadn’t know what was in it, I wouldn’t have been able to guess. It’s just doesn’t work. It’s not as if one puts it in their mouth and immediately spits it out. But one eats it so it doesn’t end up being tossed out. Nice idea. Just isn’t a good recipe

Hi! Thanks so much for the recipe! I don’t have a food processor so I used a small blender to make the curry paste. I had a hard time getting the blender to make a uniform mixture (i.e. larger pieces of onion) as the paste would instantly stick to the sides of the bowl when pulsing or turning on. This dish was absolutely delicious. I’ve used prepared simmer sauces in the past but this was very easy and as a deep rich flavor. I made this last night and it was very good. However I don’t think it tasted much like tikka masala. The zest of one lemon was far too much and it was very lemony as written. The next time I make this I would cut the zest by at least half. I had a hard time getting all the dry ingredients to make paste with the onion and garlic without adding a little olive oil to the food processor. Overall it tasted good but it didn’t fix my craving for chicken tikka masala.

This is the most authentic-tasting tikka masala recipe that I have ever found. I was excited to make this recipe because I’ve made several of your recipes and loved all of them, but I was ecstatic when I read that the recipe has you make your own curry paste. I’d never done that before and it turned out to be so delicious.
I added a drained can of chickpeas and some cauliflower to mine (simply because we love those two things in all of our Indian food) and they were great additions.

Indian is one of my all-time comfort foods. Your Creamy Cashew Paneer (although I use Chicken typically instead of panner)) has been a staple in our home for like five years. I make it so often, I don’t even look up the recipe anymore. Thought we’d mix it up and try this one last night. The whole family loved it. I threw in a bunch of chopped kale at the end and served it over a mixture of cauliflower rice and long-grain white rice. We scooped it all up with our naan. So. Good. This will be a new staple. I typically loooove all of the recipes I’ve tried from half baked harvest, but this one is not it. I followed the recipe exactly and the food was very bland and lacked the spicy flavor that is so prominent in Indian foods. I wouldn’t waste my time making this dish.

I have made this so many times. It is a family favorite. Tonight, I made it for my parents and they loved it so much. It really is so easy and be sure to double the recipe because it taste just as good after freezing the curry paste.

Made this last night for the roommates and it was amazing! I added about 3/4 of the coconut milk you did and added a bit of heavy whipping cream to thicken it and mellow the spice/tanginess. Overall it tasted great! Loving your recipes

Fantastic! I woke up in the middle of the night thinking about how good it was. I like that this recipe isn’t too salty. I did about 1/3 cup of the paste (recipe recommends 1/4-1/2), and added a couple grinds of salt in my bowl. I adjusted recipe by using only 2/3 can tomato paste, thinning sauce with about 1/2 cup chicken stock, subbing vegan yogurt for Greek yogurt, and I added 5 dried Thai chilies to kick up the heat. I am SO fond of all the aromatics, flavors and colors in Indian and Thai cuisine, so this recipe won my heart.

I made this last night with the garlic naan recipe on halfbaked harvest. All in all, I would say it was good and pretty easy to make. The ease of cooking it was major plus because sometimes I find Indian dishes to take quite a while to make – making the paste in a food processor was fantastic. I didn’t find it the most flavorful dish, but maybe it just needed a bit more salt. I will likely make it again, but I’m not sure what tweaks I’d make. The naan recipe was great, but I did have a few slight tweaks I’d make to that. That recipe is definitely worth trying!

Made this for dinner tonight. So yummy! Will double or triple next time to freeze for leftovers. Added sweet potato and spinach to get rid of some fridge extras. Definitely has a good kick – my bf loved the spice level, I was sweating 😅 may dial down the red or black pepper next time for myself.

I LOVE LOVE LOVE this! It always turns out perfect! I also add potatoes, cauliflower and/or peas. I want to try to create a vegetarian version using chick peas sometime. : )

Making this again tonight for the umpteenth time; it’s a hit in our house! Packed with layers of flavor, but not too spicy. So simple to throw together. I use boneless skinless thighs and marinate in the yogurt/spice mixture for several hours if I have time- it comes out sooo good, tender, and mouth-wateringly flavorful. Yummy! I made the curry and only used about half in one recipe, froze the rest and it was so easy to pull out for a quick dinner! I am dairy free so used coconut yogurt for the marinade and it worked great! Highly recommend for anyone intimidated to cook Indian – this was simple and delish!

I made this exactly as written and we all thought it was really delicious. I like the technique of processing everything in the food processor, super simple. The turmeric did stain my processor bowl and plastic part of the blade, bummer!. I guess I’d recommend you add turmeric after removing the paste from your processor. I have made other more complicated versions of tika masala but this one stands up to those and you cannot beat the ease of preparation! Thanks!
