30 Minute Spicy Indian Butter Chicken…the perfect bowl of warming comfort food that’s incredibly delicious. Indian inspired butter chicken made with plenty of spice and creamy coconut milk for a slight twist. It’s cozy, creamy, a little spicy, and filled with warming Indian flavors. Finish each bowl off with steamed rice and serve with fresh naan. You’ll have the perfect dinner that can be enjoyed any night of the week. Bonus? This is quickly made on the stove, with one skillet, and in just about 30 minutes. And…the leftovers are even more delicious the next day.
I’ve said this before I’m sure, but the reason I love to cook so much is because I really love cooking for others. I find so much enjoyment in creating meals for the people I love most. It’s really what inspires me to keep cooking away every day. There’s nothing I love more than having a friend or family member inspire a recipe.
I love the opportunity to make something for someone with the hope that it will be a dish they’ll truly love…one of those dishes my brothers would say is, “fire”. Those are the words I strive for when creating a recipe, but especially when a recipe is created with a specific person in mind.
That was the case with today’s Butter Chicken. This one was inspired by my oldest brother, Creighton. He’s here in Colorado working remotely right now, and the one thing about Creighton?
He loves to eat…like really loves to eat. And one of his favorites foods? Anything Indian inspired and anything spicy. This leads me right into today’s recipe. With Creighton in town, I excitedly have been testing out a new Butter Chicken recipe, and last week I finally got it just right.
Creighton’s exact words…”it’s fire!”
What Is Butter Chicken?
For any of you who are are not familiar, Butter Chicken it’s one of the most popular Indian curries served around the world. I’ve made a few variations in the past, but aside from the coconut milk, today’s recipe is the most traditional.
Butter chicken is made with spices, tomato, butter, and cream. It’s rich and warming, but the spice blend is really what makes this dish. Using a mix of Garam Masala, turmeric, garlic, and plenty of ginger is key to getting an authentic flavor.
Traditionally, Butter Chicken is marinated for many hours in yogurt and spices, but I’ve adjusted that slightly to create a quicker but still super flavorful recipe!
Here’s how to make this 30 Minute Spicy Indian Butter Chicken.
With such a quick cook time, I’m sure you guessed, but this is pretty simple, quick, and easy.
Start with the chicken. Just like in a traditional butter chicken recipe, we’re first tossing the chicken with yogurt and spices. But instead of marinating overnight, I found that a quick ten-minute soak in the spices really does the trick.
While the chicken is sitting, I like to start in on the prep for everything else, chop the onion, garlic, and ginger, grab that coconut milk and tomato paste and get everything for the remainder of the recipe ready to go.
Once the chicken has had some time to sit, pan-sear it in a skillet until crisp.
To that same skillet, add the onion and all those remaining spices and a whole can of tomato paste. Just like my pasta alla vodka, I like to cook the tomato paste together with the spices for a bit to really help intensify the flavors in the sauce.
Then just stir in the coconut milk, or if you don’t enjoy coconut milk, use cream. Either is truly delicious and just as creamy. But I love the subtle coconut flavor paired with these Indian spices, they’re delicious.
Allow the sauce to simmer and thicken, then just stir in a bit of butter and plenty of fresh chopped cilantro. And that’s it, super simple, so delicious.
As this cooks, the aroma in the kitchen is truly incredible. It’s just like your favorite Indian spot in town…but maybe just a touch better. I always find anything made at home to be even more delicious.
I like to serve my butter chicken over steamed rice with some fresh naan for scooping up the creamy, coconutty sauce. Absolutely DELICIOUS. You can’t skip the naan either. It’s reason enough to make a good butter chicken.
So how are the leftovers?
I swear they taste even better the following day. The flavors have time to mend and the sauce is just that more intense.
I can’t tell you how much I love this recipe and how much Creighton loved this recipe. I already know he’s looking forward to it for dinner tonight. This butter chicken is SO flavorful, SO full of color, and a nice switch up from the usual cheesy December pasta dishes I’m always sharing (don’t worry, they’ll be back soon). The best part, well aside from all the deliciousness, is that this requires only one pot and is ready in just about 30 minutes. Perfect for these crazy busy cold December days.

30 Minute Spicy Coconut Butter Chicken

Ingredients
- 2 pounds boneless skinless chicken breasts or thighs, cut into bite-size chunks
- 1/4 cup plain Greek yogurt
- 6 cloves garlic, minced or grated
- 2 tablespoons fresh grated ginger
- 2 teaspoons plus 1 tablespoon garam masala
- 2 teaspoons cumin
- 1 teaspoon turmeric
- 1-2 teaspoons cayenne pepper, use to your taste
- kosher salt and black pepper
- 2 tablespoons extra virgin olive oil
- 4 tablespoons salted butter
- 1 large yellow onion, chopped
- 1-2 teaspoons crushed red pepper flakes, use to your taste
- 1/2 cup tomato paste
- 1 (14 ounce) can full-fat coconut milk (or sub 1 cup cream)
- 1/2 cup fresh cilantro roughly, chopped
- steamed rice and naan, for serving
Instructions
-
1. in a bowl, toss together the chicken, yogurt, 3 cloves garlic, 1 tablespoon ginger, 2 teaspoons garam masala, 1 teaspoon cumin, 1/2 teaspoon turmeric, 1/2 - 1 teaspoon cayenne pepper, and 1 teaspoon salt. Let sit 5-10 minutes.
2. Heat the oil in a large skillet over medium-high heat. Add the chicken and sear on both sides until browned, about 2 minutes. Add 1 tablespoon butter and toss to coat the chicken. Remove the chicken from the skillet to a plate.
3. To the skillet, add the onion and cook 5 minutes, until softened. Add 2 tablespoons butter, 3 cloves garlic, 1 tablespoon ginger, 1 tablespoon garam masala, 1 teaspoon cumin, 1/2 teaspoon turmeric, 1/2 - 1 teaspoon cayenne pepper, and the chili flakes. Season with salt and pepper. Cook until very fragrant, about 5 minutes. Add the tomato paste and continue cooking another 3-4 minutes.
4. Reduce the heat to low. Add 1 cup water and the coconut milk. Stir to combine, bring the sauce to a simmer, cook 5 minutes or until the sauce thickens slightly. Stir in 1 tablespoon butter. If the sauce seems thick, thin with 1/2 to 1 cup additional coconut milk. Add the chicken and any juices on the pan and cook, stirring occasionally, until the sauce thickens slightly, about 5 minutes. Remove from the heat and stir in the cilantro. Season with salt and pepper.
5. Serve the chicken and sauce over bowls of rice with fresh naan. Enjoy!

This looks delicious!! My husband and I JUST bought garam masala for the first time last night at the supermarket so I’m excited to try this! Two questions:
1) We do not have turmeric – any substitution suggestions? Or do you think it’ll be okay without?

I’ve made Indian butter chicken before but I knew you would have some tricks up your sleeve! I can’t wait to try this out. Garam Masala has become my go to spice for so many things lately. It’s delicious added to rice just before all of the cooking water is soaked up, I added it to a veggie pasta casserole last night along with a pinch of nutmeg and the dish had that warmth in your tummy and for others, “There’s something in this but I can’t put my finger on it” sort of reaction.

I followed the directions to a T, except I increased most of the spices, and this came out very bland for me. Plus between chopping and prepping all the ingredients, it actually took about 90 minutes. I’m very sad 🙁 I love most HBH recipes but I won’t make this one again.

Loved this – it was really good – especially on the second day. But I have to say (at least for me) 10 minutes prep wasn’t enough unless I wasn’t freshly grating garlic and ginger. It took me longer than that.

I have been wanting to make butter chicken for the longest time and when I saw Tieghan post her recipe on Instagram I knew this was the recipe to try! I am an amateur when it comes to cooking so when I say this recipe is easy, its easy! It did take me a lot longer then what the prep and cook time says but that’s only because I’m slow and I want to make sure I get everything exactly right. I also did the naan bread and that was amazing as well! Everything was family approved and kid approved. This was excellent, Tieghan. Even Mr. Fussy liked it! We love Indian food and the spices were perfect. I didn’t measure the cayenne but kept it on the low side, and it was just right—a bit of heat but not too much, so the other flavors came through. I used 1.25 lbs chicken and almost the full amount of the other ingredients. We enjoyed it tonight and have two more dinners in the freezer. I started the chicken marinating earlier, because I could 😉, but love having a recipe that doesn’t require choosing it the day before to allow enough marinating time.

I doubled the garlic (standard with any recipe really) and used only a little cayenne pepper (since my kids are eating this). I used half chicken breast, half chicken thigh, which made a good mix of textures. It all turned out great — just a smidgen of heat, but not enough to put off the children, and a really warm and tasty curry for the wife and me.

This took me fooooorever, like a full 30 min, to prep because I am slow with grating ginger and garlic, but cooking it was relatively close to the time! That being said, my house smells AMAZING and it was quite delicious. I added a touch of yogurt on top assist with the spice level. Although, I was quite frustrated at one point with the time spent, I have given this 5 stars because it is so yummy. In the future, I might cheat and use squeezable ginger and just crush my garlic.
I had two different Garam Masala’s on hand, from two different brands, and one of them practically had no aroma at all. I think which blend was purchased might have something to do with the one reviewer who felt that it was bland.

Made this last night with half and half instead of coconut milk and marinated the chicken for a couple hours (because….kids) and it was the closest thing to restaurant butter chicken I’ve made at home!! I even skipped all the spice (cayenne and chili) because I was feeding it to my one year old and two year old. Rave reviews! The kids each ate two bowls. It was heavenly. Honestly, I was also distracted, so I even did a few things wrong (resulting in a super dark bottom of my Dutch oven after cooking the chicken) and it was STILL delicious. That’s how I know a meal works for busy parents!

This meal is DELICIOUS – I paired it with some basmati rice and naan from Trader Joe’s. Perfectly warming on those cold winter nights. I’m giving it four stars, however, because this is not a thirty minute dish. My boyfriend and I love to cook and are good at it, but this dish took twice as long to prep and cook than stated. Overall, definitely not a deal breaker, I just would have started prepping sooner had I’d known! This will be made again!

The whole family loved it including my picky 2 year old! Used 1/8 the amount of cayenne and there was no heat at all but still a hint of that flavor. Have to give it 4 stars though because prep alone took 30 minutes and the whole dish start to finish took about 1hr 15 minutes. The chicken took a lot longer to cook than stated. Will definitely make again but will prep the day before next time

Doubled the recipe so it lasted us for 4 days. It turned out so great! Leftovers were even better. I don’t know if it’s due to doubling the recipe, but this took me closer to 50 min to make rather than 30. Not a big deal, but there was more prep work than I expected. Will definitely make again! Delicious recipe! My husband and I did finally end up making this last night… after buying some turmeric per HBH’s reply to my earlier comment! Boy oh boy it ended up being too spicy for my husband haha, even when I added the lesser amounts of red chili pepper flakes + cayenne pepper. According to my boyfriend this is the BEST dinner I’ve ever cooked! This was delicious and tasted better than take out! I made this for dinner tonight. It came out great! I even made a little mistake ( added the whole 6 oz can of tomato paste instead of the 4 oz)- but I corrected the tomato taste a bit by adding a splash of half and half to the sauce. The flavors came together really nicely and the best thing was that the chicken was soft and tender- sometimes in these sauces it can get hard- but it did not- I was careful to follow your directions on cooking times. I made using suggested ingredients, but I made a big mistake in following the recipe, it still was delicious. I followed the recipe wrong and put the entire amount of spices in with the yogurt marinade! I anticipated having to add more spice when cooking the sauce. However, I swished the coconut milk in the bowl where the chicken had been marinading before adding the milk to the sauce. This picked up all the remaining seasonings and the sauce seemed spiced very well in the end. We loved this! I have more time/energy mid-day so I put the chicken marinade together 7 hours before cooking and precooked the rice. This worked out great, I will be making again and probably purposely making the same mistake since it worked well with how I like to schedule my prep time. Thank you for another delicious recipe!

We enjoyed this last night! I have a question about the point where the onions and spices are cooked. After taking the chicken out of the pan it did not seem that there was enough fat left in the pan to cook other things and the onion, tomato paste and spices pretty much burned in the pan. Should I split the olive oil or just add more when I cook the onion or maybe put the butter in with the onion? Thank you.

What can I say…..being from India this is the best butter chicken we have eaten….superb combination of spices and the coconut milk takes it to another level. Plus the gravy was ample to be eaten with naan/roti and rice.

We have so many Indian restaurants in our area and I’ve always wondered how hard it would be to replicate this dish. After making it, I think we nailed it!! I’ve made this a few times now and find it a little spicy. I’m not against too much spice, but I am a bit sensitive to it. We made the recipe last night, and were very very pleased!! The taste was amazing, just as good (if not better) than from our local Indian Place.

The recipes are very similar but this recipe uses cumin (and less greek yogurt and tomato paste), while the meatball recipe uses curry powder. This is truly a winner of a recipe. So rich in flavor with the perfect amount of heat. Although the quick marinade is great, try starting it in the morning – TRULY next level! I also opted for the cream, since I had some on hand, but the coconut milk is great too, although once in a while you get a can seems more oily than creamy. The garam masala is definitely a must. I saw someone say this was bland… and I don’t know what they were talking about! This dish was more flavorful than any carry out I’ve had in a very long time!!! How was this a 30 minute recipe lol it took me nearly 2 hours with prep and whatnot. It also says the chicken should brown for 2 minutes…that can’t be right. I used too much tomato paste on accident but it is a tasty recipe. Not as authentic as I’d like but good.

This was really good but WAY too spicy for my family! We even backed down the spice to 1/2t cayenne total and 1t red pepper flakes. I’d take it down to a sprinkle of cayenne and leave the red pepper flakes at 1t and I think it would be perfect if you’re a spice baby like me. Also I only had sour cream on hand so we used that in place of yogurt and it was perfect!

I’m Indian and butter chicken has been my favourite dish since I was a child. While this doesn’t taste like a traditional/restaurant style butter chicken, it’s still absolutely delicious. My family really enjoyed it! Will be making this again.

Good evening, Tieghan! First off I am a huge fan and recipe user. At least once a week I cook from your blog or cookbook. And this meal was super flavourful and delish! I always have a mason jar of my homemade Garam Masala so that was helpful to have on hand! As you asked for feedback, here we go! I have 2 comments to make. Firstly, there is no way this was a 30 minute meal and I am a fairly proficient cook at 65 years of age who cooks for prolly 15 people every weekend at my lake house. Secondly, I had a hard time talking to my husband while I was making this meal, let alone dinner guests. Please take this with a superfan grain of salt; I think that perhaps what you make alone in your barn (with days to perfect) is not what works when you are in the kitchen with your family and friends talking and pouring wine and trying to read the long recipe while they’re asking when the hell this 30 minute dinner is gonna be ready? Had I been alone in my kitchen (as you probably are in your barn) I might have made this in 45 minutes. I would love to see more recipes that can be cooked in the bosom of family and friends without losing my mind having to refer every 2 minutes to a faint, small print recipe that claims to be simple and quick but is, in fact, not. Love all your recipes but just giving feedback, as you requested! Thanks for the inspiration you give me to try new recipes outside my comfort zone!

This was delicious! It was super simple to make. I was able to substitute the butter and yogurt for dairy free versions. I served it with Basmati Rice- definitely spicy for me but so yummy!

I made this with tofu because we do not eat meat and it’s truly fantastic. We served it with basmati rice, steamed green beans, and whole wheat garlic naan. It was pretty perfect. Vegetarians give it a go.

Butter chicken is one of my favorite dishes, and this recipe is perfect! I love that it is so quick to put together but has so much flavor. You can easily adjust your spice level as well. I also served it with the homemade naan recipe, which was a ton of fun to make.

Very tasty but it is SPICY!!! be careful how much cayenne you put in. I omitted the chilli flakes as I was already nervous about the cayenne amounts. Would also love to know a good vegetable pairing with this dish.

This recipe is amazing! The best butter chicken I have ever made at home. I marinated my chicken for the better part of the day, used the lower amount of cayenne/red pepper flakes, 400 mls of creamo (half & half), left out the water and used a couple of glugs of 2% milk to thin the sauce a bit. I also dumped the sauce into the blender to make it less chunky before I added the chicken back. Definitely a keeper!

Recipe was great but I think it would REALLY help in the ingredients list to make sure you mention dividing the garlic, ginger, gram marsala, … I know I should read through first, but if you mention it in the ingredients, we can prepare. So flavorful and delicious. I did 1 lb of chicken and a bunch of Bella mushrooms instead of the 2lbs. I live alone so to eat all that meat in a few days would be hard for me. My sauce came out too thin – then I watched the video amd realized I don’t think it was really 1 cup of water and you also let it cook off a little before adding the coconut milk. Will try that next time! I feel like the water took all the flavor away :/

I have made this recipe twice and both times it was a real hit. Everyone was fighting for the leftovers for lunch the next day! The only thing I would say is that it takes longer than 30 minutes to make. This is now a family favourite. I made naan to go with it and coconut rice which made it the perfect meal.

This.was.so.good! I made this last night and it was a serious hit. I accidentally added chili powder to the marinade and THEN cayenne, so it had some real kick but it was a very delicious accident. This recipe was an instant hit tonight! Two bites in my daughter said “put this in the rotation!” First time cooking with Garam Masala and Turmeric and it has such good flavor! I don’t usually eat Indian food b/c I don’t like spicy, but I was able to modify and it was perfect! (Used a sprinkle of cayenne and 1/4 tsp of pepper flakes and it was totally manageable heat.) I was a bit intimidated by the thought of making naan but it was so easy and so good and you can freeze leftovers and heat them up in the toaster. I’ve made this recipe a few times and love it; thanks! However I like the flavor of grilled chicken better than sauteed so I grill the chicken chunks first, coated simply in coconut oil. Then while still warm I add it to the yogurt. It absorbs the flavor nicely. I do the saute using ghee and then add everything to the Instapot for @10 minutes. After I release the pressure i let it simmer to the right consistency. Sometimes I add chickpeas and greens…spinach works well. Oh and chunks of cauliflower and peas go really good too! Its such an adaptable sauce.

This recipe is incredible! There is another recipe on the site for butter cauliflower, so I used both recipes to have a chicken cauliflower combo. The flavors were out of this world! Making the homemade naan was so much easier than I thought it would be and was totally worth it.

Just made this today for my parents, who don’t like things super hot and they loved it so much! I did, too. Such a delicious flavor! 😁 I have been to 3 stores in the last week and not one had garam masala at the moment, so I used a recipe I found to make up a substitute. I also forgot Greek yogurt so I used sour cream. Still so good! I put the chicken, sour cream, and spices in the crock pot, making sure the chicken was covered, did the onions, spices, and then tomato paste in the skillet and added them in. Let it cook for a few hours. Then I added the coconut milk, stirred it, and let it warm through. It worked perfectly! I love using a crock pot because it’s super easy, but I would totally make this recipe as written, for the stove top, another time. It was delicious and delightful!! Thank you!!

This was amazing! Went easy on the cayenne and it was still pretty spicy. One issue- after I browned the chicken and put the onions in the pan, the bottom of the pan burned pretty bad. So I switched pans. How would I avoid this next time?

Wow wow wow!!! Made this for dinner last night and my husband and I were blown away! The spices and flavoring were so on point! We used light coconut milk (because we had it in the pantry) and it was still delicious. Thank you for such a simple recipe that packs a punch. Will definitely be making this one again!

When do you add the yogurt part back in? I don’t see anything about it after it says to let it all sit for 5-10 minutes?

I have tried so many variations on Indian food at home. They never pack any punch and taste home made. THIS recipe is AMAZING. I followed it exactly as is. Admittedly, it was too spicy for my 11 year old. But I will make it again with less spice. It is so good the second day too. I just had it for lunch and wish i would have doubled it. SOO SOOO YUM.

I made this tonight and it was putstanding!!! I made it exactly as the recipe stated,but I added some Indian Chili powder that I had. I Used the optional heavy cream rather than coconut milk. Will make this again for sure!!

I lost my usual butter chicken recipe and tried this one after a quick search on Pinterest, and oh my, I’m not disappointed!! It’s sooo good. I just added a teaspoon of sugar, because I believe that butter chicken has to get a teensy bit of sugar. This is definitely my new favourite!
