Brown Sugar Peaches and Cream Grilled French Toast.
Guess what, guess what?!?!
I made us french toast on the grill!! And you guys, it is officially my new favorite way of cooking french toast. INCREDIBLE.
You know how this summer, grilled bread, is like “the thing”?
Ahh ok, maybe it is not “the thing” for you, but it kind of has been for me. I think it is just awesome. Although, now that I think of it, I pretty much think most things on the grill are awesome. The flavor is just so good. I think it has something to do with being cooked outside an over an open flame. It’s the best.
I can’t really remember how the idea of putting french toast on the grill came into my head, but it was one of my “you have to sit at your desk and plan some recipes” days.
Ugh. The “recipe planning days”. They always sound pretty nice at first because I get to sit instead of being up on my feet all day long, but then they always turn out to be so annoying. Not because I hate thinking up recipes, no I really like trying to brainstorm and all that. It is more because literally after an hour of sitting, I can’t take sitting anymore. Can you imagine if I had a regular old desk job?
Oh my gosh, that would be horrible. I’d be so antsy all day.
My ability to focus is absolutely pathetic.
I have one thing/idea/recipe/task/and who knows what else, that I am thinking about, then all of the sudden I need to move on to another thought – before I even finished the first thought! It’s incredibly frustrating. And if you are wondering whether or not I have ADD…I am too.
But let’s just go back to talking about the grilled french toast.
I was thinking about recipes my mom would like because even though I am twenty and should probably not be missing my mom, I totally am. When I miss people, I tend to make food they love. Kind of weird I guess, but I think it reminds me of them. Anyway, I was thinking about breakfast because my mom, well she really loves breakfast. This would have been one of those meals she would have gotten for lunch if we where together. Unfortunately, we are not, and she is most likely wishing her lame cold turkey sandwich would magically turn into this french toast.
Super sorry, but I am pretty sure that is not gonna happen.
Let me just tell you the best part about this grilled french toast.
The peaches and brioche bread get a nice, generous sprinkle of brown sugar before hitting that hot grill. And you know exactly what that sugar does when mixed with buttered, egg soaked bread – and when mixed with peaches that have been brushed with a mixture of Kahlua, vanilla and umm, more melted butter?
It’s caramelizes. And it’s the most delicious, summery thing. Ever.
The caramalization that happens on both the peaches and the toast. Just wow! I am trying to keep my excitement to a non obnoxious level, but I am telling you it is really hard. And clearly I am not doing so well.
This french toast is super easy, low on dishes and ready to go in thirty minutes. Less if you are quick in the kitchen.
Oh, and the peaches and cream?? Yeah, that is a summer combo I am never going to tire of.
Actually, I am pretty sure there are more peach recipes that will be coming your way. Let’s just say that I am going through a little peachy phase right now. It happens, but I think you’ll love it!

Brown Sugar + Kahlúa Grilled Peaches and Cream French Toast.

Ingredients
Vanilla Bean Cream
- 1 ounce can full-fat coconut milk or 1 cup heavy cream cold (refrigerate overnight), 15
- 1/2 tablespoon powdered sugar
- 1 teaspoon vanilla bean seeds scraped or 1/2 vanilla extract
Peaches + French Toast
- 2 ripe peaches quartered + pits removed
- 4 tablespoons butter melted + plus more for spreading
- 2 teaspoon vanilla extract divided
- 2 tablespoons Kahlua divided (optional)
- 3 tablespoons brown sugar divided
- 6 slices thick Brioche or [Challah Bread | https://dev.halfbakedharvest.com/simple-whole-wheat-challah-bread/]
- 1 cup milk I used coconut milk
- 3 eggs
- 3/4 teaspoon cinnamon
- pure maple syrup for drizzling
- powdered sugar for dusting
Instructions
Vanilla Bean Cream

Tip your cold can of coconut milk upside down and open it. There should be around 1/2 cup of coconut water at the top. Pour this into a container and save for another use. Scoop out the coconut cream and place in a bowl. Whip the cream for 3 to 5 minutes, until soft peaks form. If you are whipping heavy cream, whip another 3-5 minutes or until medium peaks form. Beat in the powdered sugar and vanilla. Place in the fridge while you grill the french toast + peaches.
Peaches + French Toast

Preheat the grill or a grill pan to medium high heat.

In a small bowl whisk together 4 tablespoons melted butter, 1 teaspoon vanilla and 1 tablespoon Kahlua (if using). Place the quartered peaches on a plate and brush with a little bit of the melted butter, reserve the remaining butter for basting while grilling. Sprinkle 1 tablespoon brown sugar over the buttered peaches.

In the bottom of a shallow dish whisk together the milk, eggs, 1 teaspoon vanilla, 1 tablespoon kahlua (if using) and cinnamon.

Generously butter all sides of each piece of bread (front and back!!!). Place the bread slices in the egg mixture and allow them to soak 1-2 minutes. Flip the slices and sprinkle with a little brown sugar, then allow to soak another 1-2 minutes. Remove the bread and place the sugared side down on a plate. Sprinkle the other side with sugar. Repeat with the remaining bread slices.

Place the peaches cut side down on the grill and grill for 3-5 five minutes or until lightly caramelized. Flip and grill another 3-5 minutes, drizzle with the remaining melted butter/kahula mixture as they cook. During the same time add the slices of bread directly to the grill. Grill for 3-5 minutes per side, watching closely to make sure they do not burn. Drizzle with the melted butter/kahula mixture as they cook. You want the bread to be golden and lightly caramelized. Remove the french toast + peaches from the grill. Serve with whipped cream and a dusting of powdered sugar. Drizzle with maple syrup if desired. EAT RIGHT AWAY.

Won’t the french toast drip into the grill and create smoke/fire? And how can you drizzle the butter mixture on the peaches while they’re on the grill without it dripping down into the heat?

Yes, a little does drip down into the grill, but honestly I did not have any issues with smoke or fire. I was just careful to try an get the butter mostly on the peaches. If you are worried about it, you can place a piece of tin foil under the food on the grill to keep the drips under control. Hope that helps and I hope you love the french toast!
