Better Than Takeout Dan Dan Noodles. For those nights when you’re craving spicy, warming, Chinese inspired noodles, but don’t want to wait for takeout. Crispy caramelized ground chicken in a sweet, spicy, and tangy mushroom sauce atop egg noodles in steaming, spicy broth. These quick vegetable-filled Chinese inspired noodles can be made and ready in just about 30 minutes. Not only are they a touch healthier, but these noodles taste so much better than your average takeout!
Tuesday night just got better with these yummy takeout noodles. Yep, switching things up again this week and swapping out my usual sweet recipes for something a bit more savory. Not typical of me, but I was way too excited to share these Dan Dan inspired noodles with you guys.
First things first. I want to put it out there that I’m very well aware that these noodles are not authentic Chinese. I do know this, and I don’t mean to offend anyone by sharing this recipe. This recipe is just my take on Chinese style Dan Dan noodles. My easier, much, much simpler, “short cut” take. These noodles are saucy, spicy, so very warming, and beyond delicious.
Quick and easy enough for a weeknight, but fun enough for a Saturday night Halloween movie marathon.
Some background.
If you’re not familiar with Dan Dan noodles, they are spicy Chinese noodles with a dark sauce that usually contains preserved vegetables, chili oil, minced pork (I’m using chicken), and green onions. From everything I’ve read, the meat is caramelized and made crispy, then served over noodles. You can serve the noodles either dry or in a spicy broth…
I went for the spicy broth, because it’s been snowing here and it’s cold. So spicy broth wins. Always.
Here are all the details on making these noodles.
As I said, these are not authentic Dan Dan noodles. I took some short-cuts to make the noodles weeknight-friendly, but still delicious.
Start with the chili. You can buy this of course, but I’ve yet to find a great chili oil I love. Plus it’s so easy to make. Simply simmer sesame oil with garlic and red pepper flakes until the garlic is fragrant. This takes only five minutes. Simple.
While that’s happening, make the sauce. It’s s a simple mix of hoisin sauce, honey, rice vinegar, and peanut butter or tahini. Hoisin is not traditional, but it adds so much flavor without having to add a million and one ingredients to the sauce.
Side Note: I’ve yet to find a great hoisin sauce that doesn’t contain tons of sugar…so I began making my own. If this interests you, the quick sauce mix-up is in the recipe notes!
Next, boil the egg noodles. You can really use any kind of noodle, but a good egg noodle is probably best. If you are gluten-free, use your favorite rice noodles. Those will be great too!
Drain the noodles, then add the broth and some of the sauce mix to that same pot. This is your “spicy broth” to mix the noodles with. Keep this on low while you brown the chicken.
The final step is to brown the chicken in a skillet with the remaining sauce and mushrooms. Finely chop the mushrooms, as they add not only a vegetable, but also flavor. You don’t even realize they’re there, but they add SO MUCH. Trust me.
Once the sauce coats the chicken, let the chicken get a little crisp in the skillet and begin to caramelize around the edges.
To assemble, ladle the spicy broth into bowls, add the noodles, and toss with the broth. Then top with that crispy caramelized meat, spoon over additional chili sauce, and add fresh green onions.
Find a spoon, find chopsticks. ENJOY.
A couple notes…
Be sure to serve the noodles as soon as you toss them with the broth. The broth is minimal and really thickens up once you toss it with the noodles.
If you want to make these noodles vegetarian, just double the mushrooms. I haven’t tested that, but I’m sure it would be so delicious.
And that is it…simple, quick, and easy. The ultimate cold-weather Chinese style noodles. Not really a soup, more like extra saucy noodles. AND SO GOOD!

For those nights when you’re craving spicy, warming Chinese inspired noodles, but don’t want to wait for takeout.
Ingredients
- 1/3 cup + 2 tablespoons sesame oil
- 6 cloves garlic, thinly sliced or smashed
- 1-2 tablespoons crushed red pepper flakes
- 1/2 cup low sodium soy sauce
- 1/4 cup hoisin sauce (make sure to use GF, if needed)
- 1 tablespoon honey
- 2 tablespoons rice vinegar
- 3 tablespoons creamy peanut butter or tahini
- 8 ounces Chinese style egg noodles, or rice noodles
- 2 1/2 cups low sodium chicken broth
- 2 cups fresh baby spinach, roughly chopped
- 1/2 pound ground chicken or pork
- 2 cups mixed mushrooms, chopped
- black pepper
- 1 medium shallot, chopped
- 4 green onions, chopped
Instructions

1. To make the chili oil. Heat a large skillet over medium heat. Add the 1/3 cup sesame oil, the garlic, and chili flakes. Cook, stirring occasionally until the garlic is fragrant, about 5 minutes. Remove from the heat and very carefully transfer the oil to a heat proof bowl or glass jar.
2. Meanwhile, combine the soy sauce, hoisin sauce, honey, vinegar, peanut butter/tahini, and 1/3 cup water in a bowl.
3. Cook the egg/rice noodles according to package directions. Drain and set aside. To the pot used to cook the noodles, add the broth and 1/2 of the soy sauce mixture. Bring to a simmer over medium heat, stir in the spinach. Keep warm.
4. Place the skillet used to make the chili oil, over medium-high heat. Add 2 tablespoons oil and the chicken. Season with black pepper and brown all over, breaking it up as it cooks, about 5 minutes. Add the mushrooms and shallot, and cook another 2-3 minutes. Slowly pour in 1/2 of the soy sauce mixture. Bring the mixture to a simmer and cook until the sauce coats the chicken and the meat begins to caramelize and get crispy, about 5 minutes. Stir in 2-4 tablespoons chili oil. Remove from the heat.
5. Ladle the broth into bowls. Add the noodles and toss combine. Spoon the meat over the noodles. Top with green onions and additional chili oil. Enjoy!
Recipe Notes
Homemade Hoisin: in a small bowl, combine 1/4 cup low sodium soy sauce, 2 tablespoons creamy peanut butter, 2 tablespoons honey, 2 tablespoons balsamic vinegar, 1 tablespoon molasses, 1 teaspoon Chinese 5 spice powder, and a pinch of black pepper.

All right Tieghan… I have to admit, I was skeptical of your homemade hoisin. I mean, balsamic and molasses and peanut butter and soy sauce in the same bowl? But I figured you’re YOU, and I’m not a big fan of supermarket hoisin sauce anyway, so what have I got to lose?

I made this recipe tonight as we are having a cold spell in Denver and I wanted something warm and cozy. I’m mostly vegetarian these days so I substituted beyond meat for the ground chicken and it was delicious! Looks delicious! One thing I would add though is Chinese peppercorn to the chili oil. Chinese peppercorn adds a wonderful, slightly numbing sensation, and is one of my favorite things about Dan Dan noodles. It almost makes your mouth buzz as you are eating the noodles! It sounds odd but trust me, it is addictive.

I made this and it was delicious!! The flavors were great and my hubby and girl loved it too! The only thing is I made it with all the amounts in the recipe and only three of us were eating and it was not enough. Maybe 6 servings as an appetizer. I will certainly make it again because it is rare to find something all three of us like and is not too time consuming with minimal cleanup (thank you for the instructions on reusing pans) but I will def double next time 🙂

Never had Dan Dan noodles in the LONGEST time–I think I was around 11 or 12 years-old the last time we enjoyed authentic Chinese food this indulgent! Anyways, this recipe looks phenomenal. I’d love to try this with a different sweetener (could plain sugar work?) and rice noodles! SO YUMMY!

Just made this after a beautiful Saturday with my family hiking through the woods. It was a perfect ending to a Fall, weekend day. Man is it tasty! I mean really, really good. Wow…this recipe absolutely blew our SOCKS off!! Being vegetarian I subbed the meat for crumbled up tofu and it worked a treat. I also simmered some broccoli in the broth instead of using spinach to make it a little more hearty. Bok choy would work well too. Absolutely will be making this one again!

These were quite tasty! I have never had the original takeout dish, so I have nothing to compare them to, but they were tangy, salty, spicy and good. The only adjustments I would make are to cut down the amount of peanut butter and add more mushrooms, since they were really delicious (you almost don’t need the meat).

So I have a couple questions for next time. With the chili oil do I transfer everything to the bowl/jar or just the oil and a few bits of chili and garlic? Do I need to wipe the pan before cooking the chicken? How much broth should I plate? Thank you!
Hi James! You should transfer everything in the oil to a jar, don’t leave anything out.
I would recommend wiping the pan, but you don’t have to do this.
You can serve with as little or as much broth as you would like. I use about 1/3 cup per bowl.

I have to echo the incredibly long list of sentiments that this is seriously one of the best things EVER. I made it extra brothy, because I wanted it to be like a proper Ramen, but followed the recipe to the letter. At the end, I added a soft boiled marinated egg, and some additional sliced red hot chilis to the green onions for extra kick. SO GOOD.

Hey Susan! I would recommend cooking the meat over a higher heat to get it crispier. Also, make sure you are using a large pan so that the meat has room to cook and get crispy. This is definitely not a 30 minute recipe. It took me an hour to make. If you’re a professional chef, it’ll probably take you less time, but the rest of us should definitely dedicate an hour to an hour an a half to this meal.
As for the taste, it’s definitely very spicy. I’m not sure how I feel about the sesame oil as it has a very distinct flavor. However, it is a pretty good dish, although it is not my favorite from HBH. Probably won’t make it again.

This was amazing. I made it for my family tonight. FYI I didn’t have mushrooms but had snap peas instead and added them in at that point. It added a great texture. This was good! Instructions were a bit confusing I made my own hoisin and at end of recipe I ended up with a bowl of sauce leftover? Not sure if I made double hoisin sauce by repeating for homemade? In step four I put in two tablespoons of chili oil not sesame. Can you indicate sesame oil instead of oil because I thought you meant chili oil. I plan to make this again when I am not busy I will just make chili oil and hoisin sauce ahead of time so as not to be confused.

The homemade hoisin sauce is a separate recipe and will make about 1 cup of hoisin sauce. For the Dan Dan noodle recipe, you only need to use 1/4 cup of the hoisin sauce. Is this what you did? Any more detail you can give would be helpful.

Made this dish tonight on my voluntary self quarantine and it was so good! My husband loved it and can’t wait until I make it again. Wow. My family loved this! I had all the ingredients to make the chili oil and the sauce, but since it’s quarantine and all, I was forced to use what I had in my fridge and pantry for the rest. I made the recipe as written except I used yellow pepper instead of mushrooms and broccoli instead of spinach. I only had thin Chinese wheat noodles. None of the substitutions mattered- the flavors were amazing and the process of of cooking was so flexible this turned out great! It would be great with tofu instead of chicken, as well. Absolutely will make this again. I can’t wait till garden season, because I’m going to use the hoisin sauce and chili oil on EVERYTHING we grow! Thanks for an awesome recipe.

I love a LOT about this recipe, but I had to make due with what I had, and had to tweak. (Only had 1.5 tsp pepper flakes). The main thing was that I only had regular soy sauce, but still added the same amount in the recipe…too salty! But that was MY fault. We needed more than 8oz of noodles, though. (Family of 5). The only other thing is that I think I will just add enough broth next time to “coat” the noodles so they don’t stick (maybe just toss them in it as opposed to it being a “soup” in the bowl). That’s because I found that when that beautifully caramelized meat fell down into the broth, all that coating just sort of washed off into the liquid. That was a bummer because the caramelized meat was SO good! Will for sure make again!

My husband loved this. I used a variety of mushrooms and that gave it great flavor and I had pork mince. Couple of comments: When I made the chilli oil I used 1/3 of a cup but after simmering low there was maybe only 2T left. I could have put a lot more oil in and then been able to save some. Also, my soup was very broth and I think that is because I had fresh noodles so they didn’t soak up much of the broth as dried would have. I might just cook the noodles in the chicken broth so they absorb the flavor next time. Can’t wait to try the homemade hoisin when my jar is finished.

Delicious. I skipped the chili oil because kids, and used plain sesame oil. Drizzled some Sichuan chili oil on grownup portions at table. Used broccoli instead of spinach. Also didn’t have low sodium soy sauce so only used 1/4 cup. So good and easy. My picky five year old had two helpings.

This is such a great recipe. I’ve already made it twice in quarantine, even though my goal has been no repeats. Our weekly cooking zoom group is obsessed with it too. I use ground pork because it breaks up into nice small bits. The recipe inspired me to make my own sesame paste, so for my last batch I used half peanut butter and half of the sesame paste. The key is getting it to brown and caramelize at the end. I add cilantro to the green onion garnish. The only problem is that hubby and I fight over the leftovers. Thank you!

I was so excited to try this recipe and ended up being terribly disappointed. Too much sauce and the tahini just gave it a rather nasty sandy mouthfeel. I cooked the sauce as directed but the graininess remainEd, almost like the grit In the bottom of the pot from mussels or claims that weren’t properly cleaned. Also, the chili sauce would have been more to my liking if the oil used was a Mild veggie oil, rather than the sesame. Perhaps a 1/2 of sesame with peanut or canola would allow better integration of the pepper flakes and the garlic because the chili from the recipe hadn’t any flavor of garlic and the chili’s were underwhelming. Won’t be making this one again.

This is the 2nd time I’ve made this dish and it’s super flavorful and warming. This time I added eggplant and zucchini as well. I think any popular stir fry vegetable would work pretty well in this for folks who are looking to get creative with leftover and/or get more veggie forward!

My husband and I love trying your recipes. It’s been a therapeutic activity during COVID that we have really enjoyed. We decided to try this recipe last night and quickly became frustrated with all the different steps and how it flowed. I was complaining until I had my first taste. Salty, spicy, comforting goodness! this is simple to make and we loved it!! i accidently used 1 lb of ground chicken which made enough for easily 6 (or 8) hearty portions. i didn’t achieve the caramelization i had hoped for still super flavorful. i followed the directions and ingredients closely with the exception of 1 lb of chicken and i used linguine. will be a repeat for cooler months when comfort food is in order. a fun meal to make. thanks tieghan.

So so so delicious! Easy to follow and fairly quick to make. I ended up using ground turkey, just because that was what I had in my freezer. I love spice and so does my husband but you can control the spice level by adding as much or as little chili oil to taste. I cut this recipe in half since it was just for 2 people, but wish I made the whole thing to have leftovers. Will definitely be making this again!

I made this recently and it was INCREDIBLE. The flavor was like nothing I’ve ever had before. Your food blog has become my absolute favorite and I decided a while back to pull a “Julia and Julia” and cook my way through as many of your recipes as I possibly can. My husband loves your recipes, my sister loves your recipes, my parents love your recipes, my friends love your recipes, I love your recipes, and even my kids (age 5 and 10) love your recipes!
Where do you find your thin egg noodles? I can only find the short curly ones or the thick pappardelle ones. Or are the thinner noodles in the photos typically rice noodles?
Also, what do you mean when you say “mixed mushrooms”? Cremini and shiitake and whatever else we like, or is there an actual mix of mushrooms that I can buy?

Made this tonight. I used ground beef bec that’s what I have. It tastes really good! I also didn’t have egg noodles, but have Korean fresh noodles so I used that and it’s quite good. I think any type of noodles will do great in this recipe. Thank you for sharing this! 👍🏼

I just read one of your comments of people being mean! Well, let me tell you something, my daughter introduced me to your Dan Dan noodles and that was amazing, I used Beyond Hot Ssusage! Also your unstuffed shells were delicious, I could on but I have limited space here. So that being said I been following you since and your recipes are my go too! I hope that brings a smile to your day!!!
This dish takes longer than expected to make, but it’s worth it! First bowl was intensely-flavored and VERY salty. Second night I added at least a half cup water to the assembled noodle bowl and enjoyed it so much more! The great thing about that is the dish goes a lot farther in servings, and the leftovers are delicious!

This was sooooo good! It came together pretty quickly and easily, and best of all, two out of three of my kids liked it! None of my kids like anything that remotely tastes like Asian food, but two of them went back for seconds on this AND said I should make it again! The third liked it, it was just too spicy for him. This was so good!! We were in search of a Dan Dan recipe similar to the one from our favorite Dumpling House. While it was different, boy did this exceed our expectations! I sautéed veggies (broccoli & mushrooms) instead of meat & used kale instead of spinach. I also used all of the chili oil (the halved recipe’s worth), so good!
I halved the recipe & it was perfect for us. We had all the ingredients & it was delightful, we’ll definitely be making this again!!

Made for dinner tonight and my husband stuffed himself so full that he couldn’t get up to help with dishes after!! I was out of spinach so subbed broccoli and loved it. I think we added too much chicken broth, might skip that entirely next time. Also, I misread directions and added the half soy mixture to the noodles after draining and really liked that the noodles were coated in it. We went light on the pepper flakes for the chili oil and it was just right for us. We’ll be making this again. Thanks for another great recipe!

We made this tonight because we just bought a new chili crisp oil that we wanted to try out. The recipe turned out so, so well! We skipped the oil step since we had our own and we also held off adding the oil until the end to our individual bowls as opposed to the 4-5 Tbsp to the meat. We finished the bowls off with some chopped peanuts too! It was so satisfying and will definitely be in the regular rotation.

This was so good and such a hit with my family that I’ve made this 3 times in the last week and a half. I love that it is quick especially for a weeknight. The only changes I made was to add a full pound of ground meat instead of a half pound and add more spinach. It still turned out perfect. Definitely better than take out! It is definitely a family favorite going forward.

This was delicious! Only mistake is that I read the instructions too fast and let the noodles sit too long in the broth and it all got absorbed! Still delicious! My son hates mushrooms so I substituted red and yellow bell peppers and it was still perfect. Thanks for the recipe!

Decided to do without the chicken and swapped plain cooked brown lentils to fry with the mushrooms and shallot instead—definitely didn’t have the same texture as ground chicken, but so yummy all the same! Maybe would try French puy lentils next time since they hold their shape better and crisp them in the oil first. Highly recommend the lentils route for anyone looking for a vegetarian sub to the chicken!
