Over time I am sure you will meet all six of my siblings, but today we are talking about Red. He is more commonly known around here as Shred Doggy, Shredman G or Shredeo. Red (Ok, technically his name is Redmond, Redmond Baird Gerard – my parents have a thing for strange, well really odd names) is my 12-year-old superstar of a brother.

Well, he would not call himself a superstar, but in my eyes he’s a Superstar. He does things like front double tens, apparently it’s three spins while doing two flips 30 feet or more in the air. At least that’s what I think a front double ten is, I get pretty confused after the first spin.

I had to go over that last sentence like three times with him. Finally, he got too frustrated and walked away.

He is the most energetic kid you will ever meet. He was just telling me how tired his legs were while spinning himself across the kitchen floor. Even when he is tired, he’s still spinning. He does not stop.

He lives a life that probably any 12-year old boy would love to live. Wait, let me rephrase that, he lives a life that probably anyone would want to live. He travels all over the place. In the last month he has been to Switzerland, Park City, Lake Tahoe, Los Angeles, Big Bear and next it’s back to Park City. He wakes up and pretty much everyday and goes snowboarding. Oh, and he gets boxes and boxes and boxes (seriously, I am not exaggerating) of stuff from Burton, Arnette and a few other sponsors. Yeah, I told you he’s got the life.

Right about now I am guessing you are you asking your self “what about school”? Yup, you guessed it, he is home schooled.

Even though the kid has the life, he works hard. He loves snowboarding, and the attention he gets from magazines and his sponsors has not changed him in the least. He snowboards cause he loves it. He loves flying through air, he loves going fast and he just wants to have fun!

Check him out for yourself. I am not going to lie, it’s kind of amazing. And remember he is only 12.

I made you Mini Cinnamon Buns. Oh and I made them in 30 minutes. Yup, 30 minutes! Oh, and I healthified them fo you. So now you can pop like 3 of 4 or maybe even 5 and not feel guilty! I am not going to sit here and tell you that these are better than the real thing, but they way easier and still insanely addicting! Plus, you will not get the sugar comma you probably enter after eating one from the Cinnabon place ate the airport! It’s good to get some whole grain in every once and a while!

Healthy and Quick and insanely Delicious? Yup! I told Asher to leave some for tomorrow and she said “but, these things are so good”.

Whole Wheat 30 Minute Mini Cinnamon Buns (healthy)

Instructions

  1. Preheat the oven to 375 degrees. Spray a mini muffin tin with cooking spray.
  2. To make the dough place the flour, brown sugar, baking powder and salt in a medium size mixing bowl. Stir in the buttermilk until a dough ball forms. Turn out onto a heavily floured surface (if there is not enough flour the dough will stick to the counter when you are trying to roll the dough into a log). Roll the dough into an a rectangle about 1/4th inch thick. If the dough sticks to the rolling pin add more a sprinkle more of flour, but try and add as little flour as you can. The more flour you add the dryer the dough will be.
  3. Spread the melted coconut oil all over the dough and then sprinkle with the brown sugar and cinnamon. I like to use my hands to spread the sugar around the dough, again I ender up using probably a litte less than a 1/4 a cup. Roll into a log and cut into 15 or 16 equal buns (If some of the dough rips while rolling, just pinch it back together. It is no big deal, dont stress!). Place the buns into the prepared muffin tins. Bake for 12-14 minutes or until the buns are lightly browned. Allow to cool for about 5 minutes and spoon icing over top each bun.
  4. To make the icing mix the powder sugar, milk and vanilla in a small bowl until smooth. Serve with the cinnamon buns.
