Whole Wheat 30 Minute Mini Cinnamon Buns…and they’re healthy!
Everyone. It’s time to meet Red. No, not the color. Red is my brother.

Over time I am sure you will meet all six of my siblings, but today we are talking about Red. He is more commonly known around here as Shred Doggy, Shredman G or Shredeo. Red (Ok, technically his name is Redmond, Redmond Baird Gerard – my parents have a thing for strange, well really odd names) is my 12-year-old superstar of a brother.
Well, he would not call himself a superstar, but in my eyes he’s a Superstar. He does things like front double tens, apparently it’s three spins while doing two flips 30 feet or more in the air. At least that’s what I think a front double ten is, I get pretty confused after the first spin.
I had to go over that last sentence like three times with him. Finally, he got too frustrated and walked away.

He is the most energetic kid you will ever meet. He was just telling me how tired his legs were while spinning himself across the kitchen floor. Even when he is tired, he’s still spinning. He does not stop.
He lives a life that probably any 12-year old boy would love to live. Wait, let me rephrase that, he lives a life that probably anyone would want to live. He travels all over the place. In the last month he has been to Switzerland, Park City, Lake Tahoe, Los Angeles, Big Bear and next it’s back to Park City. He wakes up and pretty much everyday and goes snowboarding. Oh, and he gets boxes and boxes and boxes (seriously, I am not exaggerating) of stuff from Burton, Arnette and a few other sponsors. Yeah, I told you he’s got the life.

Right about now I am guessing you are you asking your self “what about school”? Yup, you guessed it, he is home schooled.

Even though the kid has the life, he works hard. He loves snowboarding, and the attention he gets from magazines and his sponsors has not changed him in the least. He snowboards cause he loves it. He loves flying through air, he loves going fast and he just wants to have fun!
Check him out for yourself. I am not going to lie, it’s kind of amazing. And remember he is only 12.

Ok, switching gears. That was way too much snowboard talk for me, like way too much.
I made you Mini Cinnamon Buns. Oh and I made them in 30 minutes. Yup, 30 minutes! Oh, and I healthified them fo you. So now you can pop like 3 of 4 or maybe even 5 and not feel guilty! I am not going to sit here and tell you that these are better than the real thing, but they way easier and still insanely addicting! Plus, you will not get the sugar comma you probably enter after eating one from the Cinnabon place ate the airport! It’s good to get some whole grain in every once and a while!
Healthy and Quick and insanely Delicious? Yup! I told Asher to leave some for tomorrow and she said “but, these things are so good”.

Whole Wheat 30 Minute Mini Cinnamon Buns (healthy)

I made you Mini Cinnamon Buns. Oh and I made them in 30 minutes. Yup, 30 minutes! Oh, and I healthified them fo you. So now you can pop like 3 of 4 or maybe even 5 and not feel guilty!
Ingredients
Dough:
- 1 1/2 cups whole wheat pastry flour
- 1 teaspoon brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup buttermilk
Filling:
- 2 tablespoons coconut oil melted
- 1/4 cup brown sugar I actually used less
- 2 teaspoon cinnamon
Vanilla Icing:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions

Preheat the oven to 375 degrees. Spray a mini muffin tin with cooking spray.

To make the dough place the flour, brown sugar, baking powder and salt in a medium size mixing bowl. Stir in the buttermilk until a dough ball forms. Turn out onto a heavily floured surface (if there is not enough flour the dough will stick to the counter when you are trying to roll the dough into a log). Roll the dough into an a rectangle about 1/4th inch thick. If the dough sticks to the rolling pin add more a sprinkle more of flour, but try and add as little flour as you can. The more flour you add the dryer the dough will be.

Spread the melted coconut oil all over the dough and then sprinkle with the brown sugar and cinnamon. I like to use my hands to spread the sugar around the dough, again I ender up using probably a litte less than a 1/4 a cup. Roll into a log and cut into 15 or 16 equal buns (If some of the dough rips while rolling, just pinch it back together. It is no big deal, dont stress!). Place the buns into the prepared muffin tins. Bake for 12-14 minutes or until the buns are lightly browned. Allow to cool for about 5 minutes and spoon icing over top each bun.

To make the icing mix the powder sugar, milk and vanilla in a small bowl until smooth. Serve with the cinnamon buns.

WOW!!!! This sounds easy and more healthy for sure. I am amazed there is no butter or shortening in the dough. I have never made cinnamon rolls without using yeast bread.
I know it is is pretty awesome! I mean I am not going to sit here and tell you they are better than the real thing, but they are really yummy! Especially since they are actually pretty good for you! You would never know, though!

I only have Whole Wheat Flour, is that different than Whole Wheat Pastry Flour? I’m dying to try this, but don’t want the flour your recommend.
I would recommend using half white flour and half whole wheat flour. Using all whole wheat flour would work, but the cinnamon rolls will be more dense and dry. You can give it a try, but I can not promise the same results. Let me know how it goes! Enjoy!

You note in the directions to add in the “baking soda, baking powder” into the bowl, however you did not list baking soda in the ingredients so I am lost as to how much 🙁 am I reading wrong?

Tieghan, I made these cinnamon rolls a few times but instead of buttermilk, I substituted with milk. As a result, I found that after the cinnamon rolls cooled, they turned quite tough. Would this be because of the substitution or because I overworked the dough? Thanks!
Hey Hilary, I think it could be a combo of both, but mostly, I do think these are best eaten right away. To soften them try throwing them in the microwave for a few seconds. Hope that help you out.

Okay, I’m not normally one to leave comments, but this recipe required it.
First, let me set the scene: lazy Sunday morning, I wake up wanting donuts. But I’m trying to be healthier with my choices, so I start looking up baked donut recipes, which are all complicated and I don’t even have a donut baking pan so eff that. I try to think of alternative options and BINGO, cinnamon rolls. Which all require yeast and 2 hours of letting the dough sit so eff that. EXCEPT for this recipe.
Well I don’t have buttermilk but I do have Greek yogurt and almond milk, and I don’t have whole wheat pastry flour but I do have regular whole wheat and also white.
Let’s do this thing.
Those were the only modifications I made to this recipe (1 cup WW flour with 1/2 white, 1/4 cup Greek yogurt with 1/2 cup almond milk).
Smash cut to me taking these out of the oven, trying them, and ripping my shirt, yelling “I am victorious! I have made perfection with my bare hands! Bow before my greatness!” Which really was just me taking a bite and thinking “eff yeah these are good and I made them with ingredients I had on hand and I’m probably in trouble because I will be making these EVERY WEEKEND FOR THE REST OF MY LIFE.”
So, yeah. This recipe is the best. Seriously, though.

These were just what I needed this morning! They were super easy to whip up and taste almost like the center of a cinnamon roll the way they bake up in the mini pan! I used 1 c. of white flour and 1/2 c. whole wheat and they taste great. I love that these can easily be made vegan too!

My wife Laura gaped at me this evening on the way to church as I told her about the first US gold medalist at this year’s Olympics: 17-year-old Red Gerard, snowboarder, “the youngest American male to win gold at the Winter Games since bobsledder Billy Fiske in 1928.” I don’t think I’d ever seen her react with the least bit of interest to any athletic competition before. To account for her sudden interest, she pulled up this page. Congratulations on a really famous recipe! Oh, and on your really awesome brother and his Olympic accomplishment, too!
