Sweet and Savory Cheesy Bacon Wrapped Puff Pastry Twists…the holiday appetizer that everyone asks for…year after year. They’re quick, easy, and everyone loves these sweet and savory twists. Flaky puff pastry twisted up with cheese, wrapped in salty bacon, then tossed in a rosemary brown sugar. Bake these twists in the oven until the bacon is crisp and “candied”. There never seems to be enough of these…addictive, festive, and perfect for both Thanksgiving and Christmas entertaining.
Tis’ the season for all the appetizers and holiday cheer. We’ve entered Thanksgiving week and as you can guess, I’m ready for it. The holidays feel even more special this year and I’m really making an effort to do everything. Decorating? It’s in the works. Thinking up fun holiday giveaways? Yes, yes, of course (anything on your wish list?). Plotting out the best Christmas gifts for my family? Workin on it.
I’m being overly ambitious for sure, but something inside me wants to make both Thanksgiving and Christmas extra special this year. I blame it all on the year we’ve had. It’s been so crazy and I’m ready for the familiar happiness of the holidays. If you’re a Scrooge, I’m apologizing now for all the holiday talk yet to come.
With Thanksgiving only 3 days away, I’ve started to plan, prep, and roll out all the last-minute recipes that literally anyone can make. When my list of holiday “to-do’s” is a mile long, it’s the easy recipes like these twists that really come in clutch (as my brothers like to say).
The history on these twists.
These twists have been around since 2013. They’ve been so well-loved over the years. They’re a personal favorite of mine. I love them because they’re the easiest to make. And along with their ease, they’re also way too good.
I say way too good because stopping at just one twist is nearly impossible. The sweet and savory flavors make these fun twists addicting. When I originally made these, it was just a few days before Thanksgiving. I was looking for an easy appetizer to serve my family. With five (now six) brothers…all of whom love bacon, I knew these had serious potential to be very well-loved.
When I made them for Thanksgiving that year, it was also the year that I botched the cocktails. If I remember correctly, I believe I tried to make a candy cane martini. Let’s just say it wasn’t for them. Thankfully, I had these twists on hand, and thankfully, they turned out to be the star of Thanksgiving. They’ve now become tradition. Everyone looks forward to them each year…and I usually make them for Christmas too!
Here are the details.
These are pretty simple, and honestly, kind of fun to make.
Start with my go-to holiday ingredient, a little store-bought puff pastry. Roll it out, top it with cheddar, and a pinch of cayenne pepper. Now fold the pastry in half and cut it into strips. I tried to get a few process photos for you guys so you could see more of what I’m talking about.
Now twist the strips up, then wrap each strip in thin cut bacon. Using thin cut bacon is key here. It will cook more evenly and quicker. If you have thicker pieces of bacon, I would cut each in half.
The secret to these festive twists?
The secret to these twists is the sweet and savory mix of brown sugar and fresh rosemary that coats the bacon. Mix the two together, then roll the bacon twists through the sugar mix. Once baked, you’ll have a cheesy pastry, wrapped in sweet candied bacon.
It might seem like a rather odd combination, but trust me, it’s very delicious. And also what makes these twists addictingly good.
You can assemble these mini bites ahead of time, then just bake them up once guests arrive. They can be served warm or at room temperature. Though I think they’re best warm and fresh out of the oven.
So you see? These are pretty close to being the perfect holiday appetizer, and the rosemary keeps them flavorful and festive too.

Sweet and Savory Cheesy Bacon Wrapped Puff Pastry Twists
The holiday appetizer everyone asks for...year after year...quick, easy, and delicious!
Ingredients
- 1/2 cup light or dark brown sugar
- 1-2 tablespoons chopped fresh rosemary, using to your taste
- kosher salt and black pepper.
- 2 sheets (1 box) frozen puff pastry, thawed
- 1 egg, beaten
- 1 cup shredded sharp cheddar cheese (or a mix of your favorite cheeses)
- 1-2 teaspoons cayenne pepper (optional)
- 24 strips thin cut bacon, or 12 sticks of thicker bacon, halved
Instructions
-
1. Preheat oven to 375° F. Line 2 baking sheets with foil and place a wire rack on top. Lightly rub each rack with olive oil.
2. In a shallow bowl, combine the brown sugar, rosemary, and a pinch each of salt and pepper.
3. Place both sheets of pastry on a lightly floured counter. Brush the surface of each with a beaten egg. Evenly sprinkle about 1/2 cup of cheese over each sheet, then sprinkle with cayenne. Dust a rolling pin lightly with flour and roll the rolling pin over the cheese, gently pressing the cheese into the pastry. Fold the pastry in half, then cut each into 12 (1/2 inch) wide strips. Pinch the ends to seal, then gently twist each strip several times to enclose the cheese. It's ok if some of the cheese falls out.
4. Take a piece of bacon and wrap it around the twisted pastry. Repeat with the remaining twists. Dredge the twist through the brown sugar mix, tossing to coat, placing the twist on the prepared baking sheet as you go.
5. Bake 30 to 50 minutes, rotating the pans halfway through. My bacon took 50 minutes to cook, start checking the twists at around 30 minutes. Serve warm or at room temperature...though I love them warm!

I have a recipe I love that is very similar but it uses pretzel rods. I’ve been contemplating another ingredient because even with the sugar and brown sugars and cayenne that I LOVE…it’s still pretzel rods and I’ve never loved pretzels all that much. The puff pastry is a great idea; gotta try that!

You can pre-make these up to 3 to 4 days ahead of time and store them in the fridge. I would take them out about an hour before you want serve them so they can come to room temp. I personally think these are best warm, so well you can eat them at room tempt I would reheat them in the oven at 350 for 5-10 minutes.

My granny used to make the best pie crust I’ve ever eaten but they were always the ugliest too. She would barely even touch the dough (pretty sure she never used a rolling pin) but the pastry would be flaky and melt in your mouth all at the same time. I’ve come to associate ugly pies with better tasting pies. They definitely don’t take pretty pictures though and are a little embarrassing to give away as gifts 🙂

When you fold these in half, do you keep the cheese on the outside? And I’m assuming that you fold across the short end, is that correct?

I made these for an engagement party and they were a huge hit. One thing that I did that made it easier for me, was to fold the entire sheet of puff pastry in half after rolling the cheese into it and cutting the already half size pastry into 1/2″ strips-much easier and quicker for me! Wow! I made these for a Polar Bear Plunge party we hosted on New Year’s Day. Everything is better with bacon, but these were amazing!! Made these in the morning to take to our dominos night. Reheated them at 250 for about 20 minutes. Needless to say they flew off the plate. Froze several to see if that would work, will try the frozen ones next week.

Thank you for this recipe! My fiancé and I have used it many times any time we have a group of people over. It’s even been requested that we bring it to a New Years party we were recently at. It’s always a huge hit.
I did tweak the process a little bit to make it less time consuming, but the ingredients are all the same. Essentially, I cut the bacon strips in half and lay them over top of the puff pastry strips and twist each end in opposite directions. I do this instead of wrapping the bacon around the puff pastry. Works every time!

How far in advance can I make these to serve at an office party?
I have made and frozen these many times and they’re awesome everytime! Had so many comments from family and visitors and they never fail to impress!! So, i would say that these can be made as much ahead as you like and then freeze. Get out of freezer on morning you require them and then just reheat in oven for 10 minutes!

I made these today for my Family Christmas.
– I blitzed the sugar/rosemary/s&p in the food processor for a minute to really blend in the rosemary (aka i’m too lazy to chop finely) and the sugar alone smells amazing!!
– I found it easier to fold over the entire sheet of puff pastry/cheese and then cut the strips, less stretching of the dough than when I folded each strip individually
– I found the bacon twisting kind of tricky, so instead I cut all my puff strips, then dredged the bacon in the sugar and laid the bacon on top of each strip, and then twisted them together. I found this method to be way easier for me!

OH MY GOODNESS!!!! I just made these and I CANT stop eating them. I only made half the batch because its just my husband and myself….however, wish I would have made more. Directions were right on, didnt and wouldnt change a thing. I especially love the kick you get from the cayenne pepper. EXCELLENT RECIPE.

Okay, I know it’s five years since this recipe was posted but I just have to let you know how outstanding these are! I made them as an appetizer for Thanksgiving and everyone loved, loved, loved them. So much that it’s been requested that I make them for Christmas too. They traveled well too and tasted great at room temperature. I basically made them right before leaving and let them cool on the racks a bit then wrapped them in tinfoil to take along. I would double up on the lining the bottom of my pan next time and also really make sure I spray the racks good. Some of them stuck, but a spatula helped to free them. This isn’t the first recipe of yours that I’ve made so I don’t know why this one prompted me to write a comment. All your recipes that I’ve tried have been delicious!! I also have your book too. Wow and yum! I just made these and tried one while they were still cooling; but they are so, so good! WOW is all I can say, these were great. I made exactly as directed. The only thing I was lacking was a rack for my pan so if you find yourself in this situation, I improvised and rolled section of foil to make my own “rack”. I was determined to try these! Very thin bacon worked well, I tested with a thin and a thick before I made the whole batch, thick made it soggy on the inside. Thank you soooooooo much!

I just made these and they were amazing! A few changes. No bacon. After the egg, I coated the pastry with bourbon brown sugar spicing. I then coated the twist again with egg before dipping in the brown sugar so it would stick. Sweet and savory. Soft but crispy! My 3 guests ate every one in a few minutes. So so good!

After rolling the cheese into the TWO pastry sheets your video shows you cut the sheets then into 12 strips, right? then fold each strip in half, right? Then twist wrap with bacon and roll in brown sugar, etc? Bake.
So if using both sheets of pastry that would be cut 48 strips? Let me know please want to make for thanksgiving.

Quick question about cutting the recipe in half, I used the built-in serving adjuster when I go to print the recipe but noticed it will say “.5 egg”. Do I really use half an egg or still just use the whole egg.

These were insanely good! Made for just our family of 4 but will definitely bring to future gatherings. They are a little labor intensive but worth it. They also a little messy and didn’t look the best to me; however, once out of the oven they looked just as good as they tasted. The rosemary sugar really made the app feel special. I would recommend spraying your grate/rack with oil spray. Mine stuck pretty good, not sure of that’s avoidable with the sugar and cheese but might help. Thanks for another amazing recipe!

These are SO DELICIOUS!! OMG… A little challenging to make the first time, but we discovered a trick: Lay the bacon on top of each pastry strip and wrap them together at the same time, then dredge in the brown sugar mixture. The only bummer was that they stuck to the racks, even though I sprayed them with avocado oil. Trying to figure out how to prevent that from happening next time, ’cause my family has already decreed that I need to make these again at Christmastime!

Great recipe, but your video does not align with your recipe. The recipe says to cut the puff pastry into 12 half-inch strips, but in the video you cut it into 10 strips. Also, on the side-bar where it lists “servings,” you state the recipe will make 26 twists. 12 + 12 is 24. 10 + 10- is 20. Not trying to be rude, or a know-it-all, just wanted to offer the corrections.

I commented above that these tasted good but turned out soggy. You said they need to be cooked on a baking rack. I was unable to reply directly there, but I actually did use a rack. I even tried reheating in an air fryer on a rack. Still soggy. And extremely smoky in the oven. Maybe just the specific bacon I used? Or can it be partially cooked first?

Just made these for an intimate little ugly sweater gathering and they were the standout! I used 1 tsp of cayenne and that was plenty and we love spicy food. I love Rosemary so I went with 2 Tbsps in the brown sugar mix. After placing the twists on the rack I chunked on whatever sugar was still leftover. The flavor combo was amazing! Savory sweet and a little spicy – absolutely perfect…100% making these again! I will they say they were a little trickier to work with than I thought bc the dough got soft and sticky as it warmed up. I arranged them a good 5 hours ahead of time and just kept in the fridge until my guests arrived and that worked out perfectly. Mine were done in about 40 mins.

I made these with thicker bacon and it was more difficult, particularly when the bacon caramelized and stuck to the racks. Also, the burnt smell was less appetizing in my house. They did taste good. Going to try again with thin bacon.

Love these! I used Trader Joe’s croissant dough in the rolls so mine turned out a bit puffier but still taste DELICIOUS! I also Found it easier to lay a half strip of bacon on them, then start twisting and lost less cheese this way! So easy and fun to make can’t wait to share them with friends in the morning! Thank you
Oh and DONT try and cool them on paper towel, my first batch got the sticky sugar parts stuck to it and was a hot mess to get off.

Made these with thinly rolled out pizza dough, and microwaved thick country smoked bacon stuffed between the layers of dough before twisting them. 20 minutes for 4 twists at 375 degrees. Great Xmas morning breakfast. Than you!

These look so good I just cooked them but am not sure at what point the bacon is done? I used thick cut and put them in for 40 minutes but after biting into one it is definitely less cooked on the bottom. Confusing to me because it is black on some parts. When is the bacon done ? Thanks:)

I made most in the oven and the extras in my air fryer. Both tasted great but the oven ones puffed up more. I don’t think I had the air fryer hot enough to make the pastry puff up. The family loved them though!

Let me start by saying all your recipes look amazing, including this one. I made these for New Years eve and they were delicious, devoured in no time. That being said, I was very frustrated in that I did everything, as per the recipe, regarding the baking pan prep. I wish I had followed the video which shows the twists being baked on parchment paper and not placed on an oiled rack. My twists cooked beautifully, but stuck miserably to the rack. I was very disappointed in that they could not be removed from the rack uniformly. Plus, clean up of the rack was a chore. I’m not sure why the video differed from the recipe instructions, but this was my only complaint. I will make these again, the video way!

This is such a brilliant way to put together these delicious flavors. I think a lot of people would be intimidated by this recipe, because of the “twist” part, but the video that’s included in the blog gives a perfect illustration of how to master that. Since I love pairing artisan jams and dips with a lot of what I eat, so I couldn’t help myself but try it with these sweet and savory twists. No regrets with that decisions. In my opinion, they’re delicious with or without some type of dipping sauce or jam.

I have made this 3 sewerage times for holidays and birthday celebrations because it has been a constant crowd favorite!

I’ve made these 4 times already and everyone loves them. I did find that I needed a cup of brown sugar to coat two puff pastry sheets. I also alway line my sheet pans with a generous piece of heavy duty foil. It makes sure none of the drippings and the sugar don’t burn on my pan and make for a tough clean up (learned from experience, lol)
