If there’s one thing that my mom really passed on to me it’s a love of soft, buttery dinner rolls. She’d make a point most Sunday nights to bake fresh bread for the family dinner. Just like dessert, mom would often have the bread ready to go before dinner was even a thought. That’s just how she does it, carbs and chocolate. Everything else was secondary. And for that, I love her even more.
Seeing as we both share a love for good bread, you can imagine that it’s a very important item on our Thanksgiving table. And that’s where these Parker House Rolls come into play. These rolls are on my 2019 menu. They are some of the BEST rolls to come out of my kitchen. They’re simple, but yet have “special touches” that make them worthy of any holiday table.
My two secrets? Salted butter and sweet honey butter.
The background…
The story is that Parker House Rolls were created by the Parker House in Boston. It was one of the great nineteenth-century hostelries. As you can imagine, the rolls have been copied by just about every cookbook author and baker that’s out there…myself now included. There are a lot of variations, but classic Parker House Rolls should be light, soft, and a touch sweet.
The dough is traditionally shaped into a folded over roll, but these days there are many ways in which to do it! I ended up rolling mine into coils for a fun, pretty touch.
To make the dough.
As you can tell, my recipe is a little different than the classic. I’m using honey in place of sugar and salted butter. Two simple ingredients that make ALL the difference.
For the dough, simply mix flour with Fleischmann’s® Rapid Rise Yeast, and a pinch of salt. Add warm milk, a touch of honey, and salted butter. Mix until smooth, let the dough rest for ten to fifteen minutes, and then it’s time to shape the rolls. And that’s the beauty of Fleischmann’s® RapidRise® yeast! We get to skip an entire hour-long rise. Yes, please!
To shape the rolls.
Shaping the rolls is easy. If you’ve made a cinnamon roll, you can make these Parker House Rolls.
To keep it simple, just take strips of dough and roll them up into a tight coil. I have a bunch of photos to help you guys visually with what your rolls should look like. Once you complete one roll, you will quickly get the hang of the process.
When all the rolls have been shaped and arranged in a baking dish, cover the dish and let the rolls rise until puffy, about twenty to thirty minutes. Then bake! Minutes later your kitchen will be smelling like glorious home-baked bread.
Let’s talk about that honey butter…
Of course, me being me, I had to include a little honey butter. You all know it’s my favorite and I cannot think of a better butter to pair with these soft rolls. The sweetness from the honey is mouth-watering on a warm, fresh out of the oven roll.
Especially when topped with a sprinkle of flaky sea salt as well.
What I love most about these rolls is that you really can’t mess them up. The dough and process are so easy and very forgiving. Trust me, if you’re fearful of making bread, start with this recipe. It’s SO GOOD every time.
And yes, you should make these for Thanksgiving. They’re perfect for soaking up all that gravy and then eating for breakfast the next morning. There’s nothing not to love.

Salted Honey Butter Parker House Rolls
The perfect rolls for all of your upcoming holiday dinners...Thanksgiving included!
Ingredients
- 3 1/4 - 3 1/2 cups all-purpose flour plus more if needed
- 1 packet Fleischmann’s® Rapid Rise Yeast
- 1/2 teaspoon kosher salt
- 1 cup warm whole milk
- 3 tablespoons honey
- 4 tablespoons salted butter at room temperature
- 1 large egg at room temperature
- flaky sea salt for topping
Honey Butter
- 6 tablespoons salted butter melted
- 3 tablespoons honey
Instructions

1. In the bowl of a stand mixer, combine the flour, yeast, and salt. Add the warm milk, honey, the egg, and butter. Using the dough hook, mix until the flour is completely incorporated, about 4-5 minutes. If the dough seems sticky, add the remaining 1/4 cup of flour. Cover the bowl with plastic wrap and let sit at room temperature for 15 minutes or up to a few hours at room temperature.
2. To make the honey butter. Combine the butter and honey together in a small bowl.
3. Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
4. Lightly dust your work surface with flour. Turn out the dough, punch it down, and divide the dough in half. Roll each half to a 12-inch square, about 1/4-inch thick. Brush each square with honey butter, saving any leftover butter for serving. Cut each square of dough into 6 strips. Roll each strip into a coil (see above photo) and arrange seam side down in the prepared baking dish.
5. Cover the dish and let the rolls rise for about 30 minutes, until they're puffy. Alternately, you can let the rolls sit in the fridge overnight.
6. Bake the rolls for 18-25 minutes, until they're golden brown. Remove them from the oven and brush with the remaining honey butter. Pull them apart to serve warm with flaky sea salt.
Recipe Notes
To Make Ahead: prepare the rolls through step 4. Do not let the rolls rise at room temp. Cover the rolls and place in the fridge (up to overnight). When ready to bake, remove the rolls from the fridge 30 minutes prior to baking, then bake as directed.
To Prepare and Freeze: assemble the rolls through step 5, then cover the pan and freeze for up to 3 months. Thaw the rolls overnight in the fridge or on the counter for a few hours. Once thawed, bake as directed.
To Bake and Freeze: bake the rolls as directed and let cool completely. Cover well and freeze for up to 3 months. Thaw and warm before serving.
To Use Active Dry Yeast: Mix 1 packet (2 1/4 teaspoons) active dry yeast with the warm milk and honey. Let sit 5-10 minutes, until bubbly and foamy on top. Add the flour and follow the directions as listed for the remainder of the recipe.

What are you subbing the yeast for? Active dry yeast? If so, use 2 1/4 teaspoons active dry yeast and be sure to proof the yeast with the warm milk and honey before adding any of the dry ingredients. The metric conversion of cups to grams appears off. From my understanding 1 cup flour = 125 grams, so 3 cups should be 375 grams not 800 and sum the conversion states.

So good, Tieghan, thank you! Ive already made these, started the dough as soon as I saw your post on Instagram, before even reading your post. Skipped right to the recipe because I KNEW I had to make these. Testing for Thanksgiving was the justification for a fancy Wednesday night dinner. My family said these were the best rolls I’ve ever made….and I have made a lot of bread/ rolls over the years! Honey butter made them unforgettable.
Just a few notes for anyone who cares: I started the rolls at 350° and turned the oven down to 325° after about ten minutes, baked for a total of 25 minutes.

Hi Tieghan! Thanks for a delicious recipe! I live in the metric part of the world so I really appreciate your conversion option. However, in this recipe, are you sure it’s correct? I think there’s an error in the conversion to metric. If I’m correct, 3 1/4 cups flour should be 468g flour (assuming 100ml flour weighs 60g). Tried to make the dough with 844g flour and I ended up adding about double the liquid to get it anything like bread dough. They’re still delicious, but probably not as rich in flavor as they should be.

Could you share instructions for these rolls without a stand mixer? I tried to make by hand as well as with a food processor – by hand was a total fail (dough became very stiff immediately) and food processor worked ok, but my rolls came out really tough. I love all your recipes and so want to make this one work for Thanksgiving!
Hey Stephanie!! Sadly, everyone seems to be having an issue mixing these by hand. I think this is a roll that needs to be mixed with a stand mixer. If you wanted to try again, I would add more milk to the dough and really knead the dough for a good 10 minutes with your hands. If you do this I think the rolls should come out nicely. The rolls really didn’t have much flavor- very bland. More rising time is needed than what is allotted for. I would also add quite a bit more salt to the dough. Not my favorite recipe, sorry.

These turned out really well – after I came back and saw the updated recipe. I used my new mixer 🙂 and the dough came out perfectly. Honey butter was great and the salt flakes really made the flavor pop. Great recipe.
As a side request – I usually save everything to my recipe folder in Google Drive when I see interesting sounding recipes to try on my fav food blogs like yours. I do also usually take a quick peek at the original before I start in case the recipe has been updated. I don’t know if it’s possible, but if you might consider putting an asterisk or something just noting it’s been “updated” since original publishing, that would be so helpful. I wasn’t in a headspace yesterday while cooking all the things to really stop and think – i know better – rolls can’t cook in 12-15 mins at 200. It wasn’t until they were the last thing in the oven that I was finally able to say, wait. that’s never going to work and then saw the recipe had been updated on both temp and time.

Hi Tieghan. Have to share a not-so-funny story about making this recipe. You also have to understand I’m terrified of making recipes with dough, but because you said it was so easy, I decided to add it to my Thanksgiving menu. So I added the ingredients to my Kitchenaid, and the dough climbed around the dough hook in short order. Very easy! Covered it to rise for an hour or so, which it did, and I was ready to roll. BUT then I noticed my room temperature egg still sitting on the counter!!! Oh no; now what do I do??? Instead of throwing it all out, I decided to try to add in the egg with the extra 1/4 cup of flour. Success! It looked good, and I started the rising process once again. Long story short, I got them rolled up and stored in the fridge overnight. They rose for 30 min and baked up beautifully!! They were so delicious, soft and tender and everyone LOVED them! Just in case anyone else makes this faux pas, they should know that the dough is very forgiving. The hardest part for me was trying to roll the dough into a square to cut out straight strips. I’ll work on that next time as I’ll definitely be making them again! But would appreciate any tip you have for that! This recipe will be a keeper and helped me to break down my fear of dough! Mine didn’t rise much during the 15 and 30 min resting times. Is it supposed to? It also seemed to take a longer time to bake than the 18-25min suggested. But then ended up baking okay. Would there be any reason for this? Otherwise super delicious! And love the honey butter!

I made this recipe and found out that the egg has to be tempered with the milk!! I tried it twice adding it straight in, and each time I ended up with scrambled eggs, and the milk was barely warm. However, my dough is resting at the moment, and I am excited to see how they turn out! 🙂

As lovely as these rolls must be, the caloric information is wrong. For 12 rolls from this recipe, the flour alone is about 120 calories per serving therefore 80 calories per roll is definitely off 🙁

Delicious! Absolutely delicious! My mouth is watering thinking about them and I’ve already eaten two. I made these today as a test run for thanksgiving and they did not disappoint. I’ve never baked bread and these truly could not be easier. I was a little confused on how much butter to add for the dough, but I decided more is better than less and it worked out perfectly. Having the visuals on your Instagram stories was a huge help. My only complaint is they did brown as much as I wanted, but I was scared of over baking. I’m in slightly higher altitude and ended up baking them for 35 minutes and they are a light golden brown. The bottoms were perfectly browned and crisp yet soft. My house smells delicious and I am thrilled about my first successful baking attempt with bread! Thank you for this easy recipe!

Please correct the metric measure for the flour. I have made this a number of times but I normally do the conversion myself. Last night I just used your recipe conversion and it is DOUBLE the flour you need for 12 rolls.
Recipe 3 1/4-3 1/2 cups flour should be 390-430grams of flour and your recipe is calling for double!

I tried the rolls and something went wrong. They took extra long to cook and didn’t seem to rise as high as yours. I did use an organic yeast that just said instant but not rapid rise. Would that made the difference? I’m going to try again using the Fleischmann’s Rapid Rise. I don’t know that much about how yeast works, but the rolls were really simple to make.

These rolls were hands down the star of my thanksgiving. I couldn’t wait to eat them again today, so I had one for breakfast! I’m just in love, and I want to share them with the world. I did make small edits based on a tiny bit of knowledge about yeast that might help someone. I used active dry yeast and cold milk to get a longer first rise (2 hours), refrigerated for 6 hours, and let rise again for 2 more hours. The flavor developed was worthwhile x10000. I made them for thanksgiving. I didn’t have a stand mixer so I used a wooden spoon and then just mixed it by hand and for about 5-6 min. and they came out amazing! I’ve never made a bread, was always kind of intimidated by them and this was easy. The hardest part for me was getting the dough rolled out into a square. Mine was sort of amoeba ish but it worked. SOFT, BUTTERY, FLUFFY, FLAVORFUL, DELIGHTFUL are just a few words to describe these rolls! The taste reminds me of the king Hawaiian rolls but they are nowhere near comparison! These turned out excellent! I’m in the CO mtns at about 7500 feet so I reduced the yeast to 1.5 tsp (might try 1 3/4 tsp next time) and proofed for about an hour in my cold oven with a pan of boiling water. My house is cold usually so that’s the best baking tip I’ve learned this year. I need to work on shaping them a little better as my rolls weren’t really a consistent size but they turned out great!

The first time I made the recipe I used the metric instructions and my trusty kitchen scale – as others have commented, this was a big mistake resulting in a very stiff dough that wasn’t that tasty when baked. But after seeing many, many positive reviews, I gave the recipe a second try using the US Customary measurements and let me tell you – they.were.FABULOUS! Definitely worth the second attempt and I will be keeping this recipe for sure!

So the unmelted butter goes in the dough and the melted butter gets combined with honey? Seems backwards. Currently letting my dough rise but the honey butter seems to want to separate as its cooling. I feel like that should have been the room temp butter that gets mixed with the honey so it’s spreadable.

I made this recipe for Thanksgiving and they were incredible!!! The recipe is super easy to follow and very easy to make. The rolls are fluffy, melt in your mouth, and buttery, but the buttery flavor is not too overpowering. Highly recommend any time you feel like making dinner rolls from scratch!

This recipe has the wrong amount of flour in the metric conversion. Everything else is correct, but the flour has been doubled what it should be. 1c flour = 136g or so. You should correct this as multiple people have commented, and having the correct metric conversion is especially important for bread.

I feel like melting the butter for the honey butter made the rolling process very messy (unless I was just greedy and shouldn’t have put all the honey butter on the dough?). Would it be ok to just soften the butter and spread it instead?

These were delicious. My kids ate two! I was wondering about the baking dish size. In the video you use what looks like an 8×8 pan but in the recipe you note 9×13. When I did that my buns barely filled the pan.

Hi! Similar question to one of the steps…. “let sit at room temperature for 15 minutes or up to a few hours at room temperature.” Do they only rise for 15 minutes?
Seems to me, if you use the instant rise yeast, then you let sit for 15 minutes. If you use regular active dry yeast, then you need to let rise for 2 hours???

Hi Tieghan – Some readers have asked if this can be done without a stand mixer. The dough reminds me of my babka recipe, so perhaps users can mix with a wooden spoon. It will take a good 10 – 15 minutes of mixing, and add any extra flour until the dough begins to pull away from the wooden spoon. Then move to your counter, dusted with flour, and knead a few times. Then put in the bowl to rise from there. Just a thought

This recipe is one of those recipes that becomes your tried and true, no-fail kind of recipes. I have made these rolls so many times for so many different people and the reaction has always been, “this is hands down the best roll I have ever eaten in my life. Like ever.” The only slight change I made was melting the butter in the milk while I warmed it, and I do two rises, the first for about 90 minutes, the second for about an hour. Definitely not necessary, but I find the rolls become lighter and more pillowy. Thank you for a phenomenal recipe!

Hi Tieghan! I see that it’s been pointed out before, but the flour conversion from US customary to Metric is still not fixed. In the ingredients list, it says 3 1/4 – 3 1/2 cups of flour when checking in US customary. However, when changing to Metric, the amount is converted to 843 g which is wrong. 1 cup of flour should be 120 g, therefore 3 1/4 – 3 1/2 cups of flour is 400-420 g. Hope you can correct this.
I guess this is most relevant for the Europeans here as we don’t use cups but rather grams (which is more precise). Thankfully, I noticed this mistake in the recipe before making the dough and the rolls turned out amazing!

If you use the active dry yeast method you don’t add the egg? Just the milk, honey and dry ingredients?

You definitely need the egg. You will follow these instructions:
Mix 1 packet (2 1/4 teaspoons) active dry yeast with the warm milk and honey. Let sit 5-10 minutes, until bubbly and foamy on top. Add the flour and follow the directions as listed for the remainder of the recipe. So this is the very first part of the recipe, then start at step 1. I hope you love the rolls! xTieghan
