Easiest Overnight Eggnog Brioche Cinnamon Rolls.
I could not let Christmas pass by without sharing my overnight eggnog brioche cinnamon rolls. Buttery, eggy brioche dough made with seasonal eggnog, sprinkled with warming cinnamon sugar, and frosted generously with a browned butter and cream cheese frosting. There’s nothing not to love, every bite is melt in your mouth delicious. These rolls are a great make ahead breakfast, and perfect for your Christmas celebrations!

For a lot of you, today is probably your last day in the office for 2018. I hope everyone is feeling the excitement in the air like we are over here. There’s still a few things to finish up over the weekend, but that just goes with the territory of running your own business…it’s somewhat non-stop.
I feel like it’s super important to be real with you guys. The internet and social media can paint this perfect picture. But the reality is that nothing (and no one) are perfect. It’s so easy for me to sit here and type that out, but I really need to listen to my own words.
This week I let myself fall down the Instagram rabbit hole that feels lonely and miserable. I know a lot of you can probably relate. For some reason I let my guard down and broke all the Instagram rules I set for myself long ago. I played the comparison game all week long. It was zero fun and I’ve decided that I will not let that happen anymore. This means no scrolling Instagram for a while. Instead I’ll be focusing on what really matters. Cooking good food, spending time with my family (arriving tonight), celebrating Christmas, working to finish up a big project, and hopefully playing in the snow a little too.
No real reason for the life talk other than the fact that I know a lot of you can struggle with comparison too. When that happens, it’s really important to step away from social media and focus on what you really want to be focusing on. For me right now that’s family and work. And at this very moment, sharing these delicious cinnamon rolls!
I was out hiking yesterday morning and had a mild panic attack (not really, but going for dramatics) when I realized I never shared these cinnamon rolls with you guys. I have been planning to make these for months and months now. Yet somehow the last Friday before Christmas snuck up on me way faster than I could have imagined.
I had another post planned for today, but I knew I needed to share these first. So I spent all day perfecting this recipe. And here they are, my Christmas Cinnamon Rolls. They turned out better than I could have wished, and I’m really excited to be sharing them with you guys today. Hoping you still have time to fit them into your Christmas baking list.
Seeing as everything is hectic this time of year, I wanted to keep these as easy as possible. I took the base recipe from the salted brioche cinnamon rolls I have in my cookbook, sped up a few things, and flavored the recipe with seasonal eggnog. Now, I know that eggnog is rather a touchy ingredient. You either love it or hate it…I get the feeling there may be more haters out there than lovers.
I too am not the biggest fan. BUT, have you ever baked with eggnog? If you have not, you’re missing out. Using eggnog in sweet breads is truly my favorite thing to do during the holidays. The eggnog is flavored with cinnamon and nutmeg, so in reality it’s just like favored whole milk. And everyone, it’s delicious when used in a cinnamon roll recipe.
So add some eggnog to the brioche dough. Let the dough rise a bit, then roll it out and sprinkle with a brown sugar cinnamon. I like to use brown sugar for a nice depth of flavor. And I go heavy on the cinnamon…I mean, these are cinnamon rolls!
Roll the dough, cut into rolls and place in a baking dish to rise. Next, you have two options. You can do a quick rise or you can let the rolls rise overnight in the fridge. I love to make these a day or two ahead and let them rise in the fridge. That way, on Christmas morning, all I have to do is bake and frost them. This gives me plenty time to open gifts and drink coffee by the fire with little miss Asher (who’s really not so little anymore…enter sad face).
For the frosting, I stuck with my standard.
Browned butter + cream cheese + vanilla. Simple. Easy. And the best. I cannot think of a better Christmas morning breakfast. Very excited to be making these for my family this year. Hoping you all will be too!

Overnight Eggnog Brioche Cinnamon Rolls
Buttery, eggy brioche dough made with seasonal eggnog, sprinkled with warming cinnamon sugar, and frosted generously with a browned butter and cream cheese frosting. These rolls are a great make ahead breakfast, and perfect for your Christmas celebrations!
Ingredients
- 3/4 cup high quality eggnog, warmed (you can also use whole milk)
- 1 tablespoon instant yeast
- 2 tablespoons honey
- 3 large eggs
- 1/2 cup (1 stick) salted butter, melted
- 3 1/2 - 4 cups all-purpose flour, plus more for dusting
- ½ tsp kosher salt
Filling
- ½ cup dark brown sugar, packed
- 2 tablespoons ground cinnamon
- ½ cup (1 stick) salted butter, at room temperature, plus more for greasing
Frosting
- 6 tablespoons salted butter
- 4 ounces cream cheese, at room temperature
- 1¼ cups confectioners' sugar
- 2 teaspoons pure vanilla extract
Instructions
-
1. To make the dough. In the bowl of a stand mixer, combine the eggnog, yeast, honey, eggs, butter, 3 ½ cups flour, and salt. Using the dough hook, mix until the flour is completely incorporated, about 4-5 minutes. If the dough seems sticky, add the remaining ½ cup of flour. It's better to have a sticker dough rather than a dry do, so add flour 1 tablespoon at a time.
2. Cover the bowl with plastic wrap and let sit at room temperature for 1 hour or until the dough has doubled in size.
3. Meanwhile, make the filling. In a small bowl, combine the brown sugar, and cinnamon. Line a 9x13 inch baking dish with parchment.
4. Lightly dust your work surface with flour. Turn out the dough, punch it down, and roll it into a rectangle about 10 x 16 inches. Spread the softened butter evenly over the dough. Sprinkle the cinnamon sugar evenly over the butter and lightly push into the butter. Starting with the long edge closest to you, carefully roll the dough into a log, keeping it fairly tight as you go. When you reach the edge, pinch along the edge to seal. Using a sharp knife, cut into 12-15 rolls. Place the rolls in the prepared baking dish. Cover with plastic wrap and let rise 20-30 minutes or transfer to the fridge to rise overnight (this is ideal if you have time).
5. Remove the rolls from the fridge. Preheat the oven to 350 degrees F. Bake the rolls for 25 to 30 minutes, or until golden brown.
6. Meanwhile, make the frosting. In a small saucepan, melt the butter over medium heat. Cook for about 5 minutes, until the butter is lightly browned and smells toasted. Immediately remove from the heat. Let cool.
7. In a medium bowl, beat together the cooled browned butter, cream cheese, confectioners' sugar, and vanilla until smooth. If the frosting is too thick for your liking, add a tablespoon of eggnog or milk.
8. Spread the frosting over the warm rolls. Sprinkle with flaky sea salt (if desired) and serve.

Ahhhhhmaaaahhhgaaaaahd. These look absolutely gorgeous. I love the rebellious ones in the lower right that popped out in the center! Seriously heavenly. I love eggnog, but have to make my own, because I can’t find it in stores in Scandinavia. (Or I haven’t managed to yet.)
After a few depressing and really not very productive trips down the rabbit hole myself, I deleted all social media accounts about a year ago. I don’t really “need it” for personal use, and I don’t miss it at all. I’m about 1,000 times happier and more confident since I stopped getting immersed in all of that. In your line of work, I know using social media is important, but I do advise not getting stuck in the trap of surfing around on there – yikes, right?!
That said, in comparison, in my humble opinion, you, your blog, your recipes, your photography – are really outstanding and you have a unique and genuine way of doing what you do that stands out as very heartfelt, cozy, and real. In other words – you are doing awesome and have nothing to worry about, comparatively speaking or otherwise. 🙂 Keep up the great work!

Add maybe a half cup of half and half over the rolls prior to baking, this is the secret for super moist, cinnabon-esque rolls.

Quick question! I couldn’t find instant yeast so I got dry active yeast. I read online if I’m going to use active vs instant I just need to do the yeast and liquid separate before adding to the whole mixing bowl is that correct? I was contemplating using your other roll recipe with the active yeast just to be safe but keep this icing. What do you think?

These were FABULOUS! Made them for hrismas breakfast today and will be making them every Christmas from here on out. The browned butter in the frosting makes all the difference in favor. I added a couple tablespoons of egg nog to the frosting as I prefer it a like thinner. Now I want to try the gingerbread cinnamon roll recipe!

Fantastic recipe!! I added a dusting of cinnamon to the dough before mixing it. And 3/4 of a cup of egg nog to the icing (you’ll need two cups of icing sugar to make up for the extra liquid). These are perfect! Thank you for the great recipe.

You hit it out of the ballpark again, Tieghan! I’ve always wanted to make cinnamon rolls at Christmas, but convinced myself they were too hard to make. Because I trust you because I’ve loved all of the recipes of yours I’ve tried, I decided to go for making this recipe. They were amazing! I had to change a few ingredients to make them anti-inflammatory for me (used white spelt instead of white flour, xylitol (1/2 the amount) for sugar, and coconut sugar instead of brown sugar. We absolutely loved this recipe and the cinnamon rolls were promptly devoured. Super idea of using a brioche based recipe for the dough, eggnog instead of milk. I thought that the butter amount for the filling was too much…until I tried them. Loved the overload of cinnamon and how magically the rich dough soaked in the butter, brown sugar and cinnamon! I made these for Christmas morning and they were excellent! I made the dough the evening of Christmas Eve and let rest for an hour before completing the filling and rolling. However, the dough didn’t double in size. It had gotten a bit bigger and I had run out of time so I popped it in the fridge and hoped for the best for them to rise overnight. However, they didn’t rise at all. My mom and I were a bit panicked but we knew if we set them out for a while on the counter, they would get at least big enough to bake. They rose so fast then! I’m wondering if it was a user error? Did anyone else have issues with them actually rising in the fridge? I’m new to the cinnaroll game and I haven’t found the recipe winner yet that’s satisfied all family members. My dad LOVED these because he tends to enjoy things on the drier side but the rest of my family was yearning for more of a soft/chewy cinnamon roll. P.S. the dough smelled AMAZING because of the addition of eggnog.

These are quite possibly the ,let delicious cinnamon buns I have ever tasted. I was worried that they would be difficult to make since they are made from scratched … but the recipe was simple and turned out excellent! The browned butter cream cheese icing was the perfect finish for the soft, moist buns. I used the Kirkland brand eggnog from Costco Liquor store. The additional flavors from the rum just made these taste of perfection.

I can’t bake. I can barely make a cookie without people questioning whether or not my husband helped me. I naively volunteered to make these for breakfast two nights ago and while I messed up within the first thirty seconds, I was able rectify my blatant baking mistake (cold milk plus yeast) and make the.best.rolls.ever.
I’m a bit sad that our stores here stopped carrying eggnog before I could snag some for this recipe. BUT even with milk, they were amazing and fluffy and had depth in the flavor. We can’t wait to try them in the future with nog. These were a crowd pleaser all around.
I intend to try my hand at baking (and reading directions…) in 2019, and I must admit I’m probably going to bake my way through the blog. I’m so looking forward to it.

Made these today for New Years day. Admit I did skimp on the butter in the filling by quite a bit, at least half. I also only had 1/2 tbsp yeast left (oops) but just left them to rise 2 hrs before rolling out to double in size.
They were delicious. Forgot to add the half and half tip, next time!
I may up the cinnamon next time in the filling or add a bit to brown butter icing as I really enjoy cinnamon. Pastry turned out beautifully. Good way to use up some eggnog from the season, not very really noticeable in pastry but suspect added to depth of flavor. . I let it sit overnight in fridge but then again at room temp in am for a couple of hours as they hadn’t really risen in fridge. Would leave out before putting in fridge over night next time. Surprisingly easy.

Just wondering why you use melted butter instead of softened, and can you change and add soft butter?

I stumbled upton this recipe when I decided, at the last minute, that I needed another option at my table for the Christmas brunch I was hosting for my family. I am more of a “cook” and not a “baker” but these cinnamon rolls looked to delish and the recipe seemed doable for a novice baker such as myself. So glad I went w/my instinct on this. I had just enough time to let the rolls rise in the fridge on Christmas Eve night and placed them in the oven mid morning on Christmas Day. My family absolutely loved the rolls. They were the hit of the meal. And when my husband bragged about how I baked them “from scratch” everyone wanted the recipe and requested that these cinnamon rolls be added to our family list of Christmas traditions! My daughter in law made these for us and were delish. But now I am having a hard time with 2nd rise. The 1st rise is happening and then I roll out the dough and put softened butter on dough and then sugar and cinn. Roll it, cut it and put in buttered pan and cover with plastic . They do not rise. Any suggestions? House is 68 degrees.
Hi Sandra! Are you following the recipe exactly? Using all the same ingredients as I? If so, I would recommend finding a warmer spot in your home to allow the rolls ti rise, ideally above 70 degrees. Or place the rolls on the warm stove-top while it is preheating. This will really help them rise. Also, if the rolls do not double after 2 hours, I would bake as directed. They will rise in the oven. Second successful time making these. Didn’t have eggnog or instant yeast, so used whole milk and 1 1/4 T active dry yeast. Still rose quickly. Easy, turned out great. One suggestion that I noticed when reading the instructions…you might want to add to the step by step to warm the eggnog or call out in the steps that the eggnog is warmed. Made these and loved them! However, as another reader commented- the approximate times on your recipes are misleading, as the time it takes for the dough to rise is often left out. Only rating this a 3 because there was zero eggnog flavor in this cinnamon roll recipe. I knew right off the bat that 3/4 cup of eggnog only in this recipe was not going to do much and I was right. Aside from that though this recipe is so delicious! The dough is perfect and fluffy. Again, only a 3 star rating because it says it’s an eggnog cinnamon roll but I tasted zero eggnog in the finished roll. Tasted just like a regular ol’ cinnamon roll.

It tasted wonderful and I will definitely make it many more times. The recipe description should be altered though because the prep time is not 30 minutes as described. The proving time(s) should be included making the prep time a minimum of 2 hours. That was a surprise at midnight on Christmas Eve. It was wonderful though. Best I’ve eaten and easy to make

The most delicious cinnamon rolls ever! Found your recipe on Pinterest and I took the advice of another commenter and poured a little cream (they suggested 1/2 and 1/2, I used cream) over each roll before I baked them. WOWZA! I also used a little eggnog to thin the icing a bit and get more eggnog flavor. These were not overpowering with the eggnog flavor but it was still there. Very good balance. We will make this recipe a family tradition!

Made these for our family Christmas Brunch this weekend. This was my first attempt to make from scratch cinnamon rolls. So impressed at how easy these were to make. They turned out fantastic! I did not put in the fridge overnight for the second rise, but made them early in the morning instead and just let them sit on my warm stove top for a few hours before baking them right before guests arrived for our brunch. They rose quite a bit by then. I poured just a little extra eggnog on top of them before baking as well as added a little more cinnamon, nutmeg, and sugar on top. I agree that the browned butter icing is so yummy and adds that slight depth of flavor that is unmatched. Thank you so much for this deliciuos recipe. It will become one of our many family traditional favorites.

I have made these rolls a number of times and they are always a huge hit. Just so delicious. As suggested in the comments, I do pour 1/2 cup of half-and-half over the rolls before baking just to make sure they are moist. The browned- butter icing is a delicious finishing touch!

These are AMAZING! I’ve always been unsatisfied with cinnamon rolls I’ve made in the past – they’ve usually been a little dry and biscuity. This dough is so rich and soft and fluffy and delicious. I added dried cranberries soaked in cognac to the filling, and that was a fantastic little bit of boozy tartness in each bite. Thank you so much for our Christmas morning breakfast!

This recipe has potential, but mine went off the rails. I overproofed the dough, but this was exacerbated by a shortage of flour vs. the amount of butter in the recipe — the texture ended up a bit greasy and spongy. The recipe definitely require at least 4 cups (not 3.5) for sure. Though I only let the first rise go for an hour, as instructed, the texture was not great as it got rolled out for the cinnamon mixture.
The cream cheese frosting is great, with one adjustment: it needed a hit of acid to offset the sweetness and richness. This got solved with a teaspoon of fresh lemon juice, and then it was perfect.
I’m going to try this again, because I have some really good quality eggnog to use up. Thanks!

This is a good recipe. It needs some further tweaks in my opinion but it’s a good recipe.
1) After I warmed the eggnog I added the butter. Stirred till melted. Putting on and off the heat. Then I added the honey and yeast. Stirred till honey dissolved.
Added all the warm Liquid to 3/12 cups of flour and salt. Added eggs and kneaded till smooth. 4 cups of flour would be way too much.
2) Filling. Cream the sugar and cinnamon together with the butter. . Loose way too much filling in the roll up otherwise. You can push as hard as you want into the butter you still loose too much filling in the roll up.
3) Icing. Mix all the wet ingredients. Then add the icing sugar 1/2 c at a time. If you add 2/12 cups of icing you loose the cream cheese taste. It is way too sweet and the cream cheese becomes just a binder instead of a flavour. I also added cinnamon to the icing. I would agree with you can never have too much cinnamon in a cinnamon bun as long as there is the right balance of sugar.
I am Looking forward to trying your other cinnamon bun recipes. A cinnamon bun is my absolute favourite treat. My favourite to date is one make with croissant dough. I do not have a sheeter and wanted an easy recipe. Which your is but if you are not a baker the directions lack a bit. I am an avid baker amd had no issues but every time I make these I think of a beginner making them.
