Pumpkin Spice Oatmeal Latte.
I’ve been keeping quiet about this pumpkin spice oatmeal latte, but now that October is here, it’s finally time to share the recipe with you guys!
I held out all September long, I didn’t share any pumpkin recipes…but now that we are two weeks into autumn, it’s time! And you guys? Let me put it this way, I have five too many pumpkin recipes to share this year. I don’t know what to do. I’m trying to space them out over the next two months, but I can’t share them all…because there is totally such a thing as too much pumpkin.
Thing is? I LOVE all pumpkiny the ideas.
Ugh. I can’t help it, fall recipes are my favorite. Please let me know in the comments what you’d like to see this month. Hoping you opinions can help me make some decisions.
Serious Question: How much pumpkin is too much? Still trying to figure this out…
Ok, and moving right along…
Ever since late last October, I’ve been dreaming about this pumpkin spice oatmeal latte. Yes, a full year ago. Here’s the thing, I first made this probably around the middle of last October, but I just never got the recipe or the photos the way I wanted to, and since neither were perfect I ended up scratching the latte because by the time November rolled around I was onto all things Thanksgiving (who’s excited…I am, but Halloween first!).
This year though, I was determined to share this fun latte recipe and I am happy to report that it is now perfected and delicious.
So, what is a pumpkin spice oatmeal latte?
Well, it’s pretty simple. Think of a pumpkin spice latte, add some oatmeal, whipped cream, and granola and you have the oatmeal version of a pumpkin spice latte…I know, kind of weird, but trust me on this.
It. Is. So. Good.
I was inspired to create this recipe by a little coffee shop in Breckenridge, Colorado, Cuppa Joe. They make an oatmeal latte that is probably one of the coziest things you could ever sip/eat on. If you’re in town visiting this fall, please go and try it for yourself. Yummm!
Their oatmeal latte kind of got me thinking, “what if I put a fall twist on this? Like um, pumpkin pie spice! yes, yes, yes, I need to do this”.
My brain, it’s weird, but at least it can come up with some pretty yummy recipes, so I got that going for me…
Anyway, once the idea was in my head, I knew it would be so good, and even though this recipe took a bit of time to perfect, it was well worth the wait.
Creating this latte is actually pretty easy. Just steam some milk with a little pumpkin, oats, pumpkin pie spice, and a splash of vanilla. Then give that milky/oaty mix a good whisk to create some foam. Then just pour into a mug, add espresso, and top with granola.
And yes, the granola is an absolute must. Again, just trust me.
You’ll want to both sip and use a spoon to consume this latte. The oats make it thick and creamy, almost like a smoothie, so it is still sipable, but you’ll be wanting a spoon for when you get down to the bottom of the mug. Those soaked oats and pieces of granola?
The best part.
And also? This is the perfect on-the go breakfast because you get your coffee and your oats all in one. Love.
So are you guys into this or what? I know the idea is a little out there, but I hope you will give it a try! It’s pretty much the perfect Tuesday treat, and that Starbucks pumpkin spice latte has nothing on this.
Nothing.
Lastly, I may just have a thing for creating homemade latte recipes, see this toasted coconut chocolate latte, this coconut pumpkin spice latte, and this gingerbread latte with caramel sugar (oh how I love that recipe).
And done. Happy Latte Tuesday!

ps. that granola on top? It’s my favorite granola recipe of all time…and it’s in my cookbook!
I say there’s no such thing as too many pumpkin recipes, as long as the recipes are palatable (meaning, don’t just throw pumpkin into the mix for the heck of it, haha). This sounds wonderful!
So happy you love pumpkin recipes, because I am super into them! Thank you Liz!
I looks delish, I’ll grant you that. Just marked it so I can try!!

Perfect! I hope you love it!
This is looks so goooood! I have never heard of an oatmeal latte! But from your description and photos, I think I’d love it. Will be trying this as soon as possible 🙂
I think you will, but try it and let me know! ? Thank you Kelsey!
Never too much pumpkin! I feel everyone is holding back on pumpkin this year?
I’d be interested in a few interesting savory-type recipes. Something out of the. Ordinary. Also interested in something with pears.
I love that you said that, I am loving all the pumpkin! haha. Thank you Joyce!
Honestly, I can never get enough pumpkin, so I wouldn’t even mind all of the recipes
? Thanks Pika!
This sounds awesome!! And no, there’s no such thing as too many pumpkin recipes – I hope you can squeeze them all in! We grew 8 different varieties of winter squash this year so we have enough for many months to come and I really appreciate some creative ideas to deal with the bounty (might you be interested, we’ve just filmed a video about the different squashes: https://youtu.be/1X2lEslMAvY) We’ve got spaghetti squash and a hubbard and a Delicata but also a naked seeded variety so I even have homegrown seeds for the granola (I immediately looked up the recipe in your book ;-))
Wow that sounds amazing! I will have to look into doing more recipes with those. Thank you Vera!
Never would have thought of oatmeal in a latte. Looks delicious though. It doesn’t take much pumpkin for me. Pumpkin bread/muffins is enough for me. HA!! Sweet potatoes is my fave over pumpkin.
Ooo love sweet potato as well! I hope you love this latte, Charlotte! Thank you!
My niece is a vegan and I located an almond creamer that was pumpkin flavor. I bought four. That should hold me for a long while and when my stock is depleted, I will experience sadness. Bring on the pumpkin recipes full force, please~!!
Haha I totally need to! Thanks Judes!
I’ve never heard of an oatmeal latte, but since everything I love was just put into a cup, I’ll have to give it a try 🙂 And while everything Pumpkin Spice is a win for me, if you’re looking for inspiration, the new “it” flavor seems to be maple pecan.. another wonderful combo!
Yes, that combo is so yummy! Thank you Natalie, I hope you love this!
Hi Tieghan, I’d like to see something where you use a raw pumpkin and roast/cook it. I’m a little intimidated by carving into a pumpkin, but I would love to try! Canned pumpkin is fine, but I’d love to try to make something (be it sweet or savory) from scracth!
Great idea! Thanks Andrea!
YUM! Sounds like the perfect way to enjoy your oatmeal and your latte at the same time!
Gorgeous photos, as always! 🙂
Thank you Emily!
You may have just inspired me to finally try oatmeal. This looks and sounds incredible!
I hope you love this! Thanks Tamar!
Yummmy! This looks fabulous and your photos are stunning! Can’t wait to try!
Thank you Ashlyn!
Wow this looks so amazing, like beautiful Autumn in a cup! Perfect for staying nice and cozy on a gloomy and rainy day!
Yes! Completely agree. I hope you love this Lili!
This looks fantastic. I can’t wait to try it — this week or weekend, I’m sure! I notice there is no sweetener (other than the whipped cream, I guess). I don’t sweeten my coffee or oatmeal too much but need a little something. Do you ever add honey or sugar to this or does the whipped cream do it? Thanks.
Hey Megan! I actually use maple in the recipe! I’d add it to your taste level. Let me know if you have other questions. Hope you love the recipe. Thank you!
More savory pumpkin/butternut squash recipes please 😀
Sounds great! Thanks Laura!
I’m just gonna say what’s on all our minds……Day-UM GUUURL! This looks insane. Thanks for yet another incredible recipe, Tieghan!
Thank you Tori!! So happy you like this!
In college I used to eat my cereal with coffee and various nut milks. This recipe looks so beautyfull! I am definitely trying this out; Returning to the good days when life was so free, explorative, and fun. Thank you for this one!
Thank you Sabell! Enjoy!
I showed this to my boyfrrriend, and he says He already gobbled up the picture .. Arrrrummmm! We will be making this tomorrow 😀
I hope you two love it!!
This looks amazing!
Do you recommend a certain type of granola? Do you home make your granola?
Hey Haley!! I used the homemade granola out of my cookbook! Let me know if you have other questions. Hope you love the recipe. Thank you!
This looks amazing!

Hey Tieghan,
This looks lovely and made me smile when I saw your photos. It’s starting to get windy and I’m really enjoying the cozy weather! I don’t think there can be too much pumpkin! I’d love to see more cozy baked goods (bread, loafs, muffins) or maybe potato dishes? Also, fall breakfasts are always nice! Haha either way, your recipes seem wonderful and I’m looking forward to all of the pumpkin. ?
Yay, so glad you’re loving the pumpkin as well! Thank you Kristin!
This sounds incredible! My dream fall breakfast and I love these cozy photos! 🙂
Thank you Laura!
What an interesting idea! I love it! I’ll definitely give it a try soon. I’m also all things pumpkin at the moment, so I’m okay if you post all of your pumpkin recipes. 😉
Perfect! Thank you Caroline!
Hi, just wondering with this recipe would it still work if you combined all the ingredients the night before apart from the coffee as like an overnight oats. Then in the morning heat in the microwave and add the cream, coffee and granola?
Thank you
Hi! I have not tried this, but I think it would just fine. Great idea! Let me know if you have questions and I hope you love recipe! 🙂
I am head over heels about all the pumpkin recipes, I don’t mind whether you post billions of them, every single one looks so freaking good. Funny though, I made something similar. Pumpkin spice Chai tea with whipped cream cheese. I don’t like coffee, but LOVE tea, so I went for it. If you’re curious, here is the blog post, unfortunately, not in english.. but you can guess what’s going on, I suppose..

Looking forward to more pumpkin goodnes here!
Have a wonderful daym

That sounds so yummy! So glad you’re loving all of the pumpkin, because I totally am as well. Thank you!
Aw! Thank you so much!! Means a lot. I will check it out!
What a nice post is it. After reading this information I want to say that you have created very interesting information. Keep doing the great work up.
Thank you so much!
Hmmmm yummy, i think oatmeal is health food 😀
It definitely is great for us! Hope you love this!
I am so excited to make this! I don’t drink coffee or milk though so I’m going to make it an almond chai!
Sounds delicious! I hope you love it Rachel!
In the end, this is more like a cup of oatmeal with some coffee in it. The 1/2 cup of oatmeal is a large amount. I would omit the oatmeal if anyone is actually looking for a drink. This is not a drink, or a sipper. It is a spoon dish.
Ooo sorry if that is too much oatmeal for you. I hope you still liked the latte Trish!
You sound unfriendly, have you actually made this?!
I did and it was delicious! Just had it for breakfast and nearly ate the whole thing by myself! I didn’t have whipped cream so just foamed up some dairy-free milk and put that on top. Perfect for this season, really warmed me up.
Has anyone tried this with Chai?
I have not, but I am sure it would be delicious! Please let me know if you have any other questions. Hope you love this recipe! 🙂
OK, I usually drive myself crazy sifting through all the ‘oooooh, this looks great!’ posts to find someone who has actually tried it… and now I’m doing the exact same thing, HA! It does look great, and I love oatmeal lattes- my daughter always requests the one from How Sweet It Is, and I’m making this one next week for a fall twist! I’ll report back! But the real lame reason for my comment- the print button seems to not be functioning? I’m a paper-recipe-in-my-binder kind of girl, so I really want to print! Could be my finicky printer, but I wanted to see if the problem was on your end. THANKS, Teighan!!
Hi Kate! I am so glad you are liking this recipe and I hope it turns out amazing for you! The printer button is working for me, try it again and let me know!
This was really great!!! Made for kids movie night lol! watched Paranorman. Made cinnamon whipped cream to go on top. Son wanted drizzle caramel syrup too, lol. This is like drinking fall in a cup. Love the crunchy granola on top too.
Will make again!!!!
Thank you!
I am so happy you loved this Karen! Thank you!
I was on your website and read it thoroughly. I just want to say that it is the best read of the day. Keep updating me.
That is so nice! Thank you!
How are you making your espresso in this? (Or are you just using strong black coffee?) I’m debating getting a Moka Pot, an AeroPress, or investing in an espresso machine…not sure yet! Right now all I own is a french press.
just use strong black coffee as I dont have an espresso maker. The french press will be great!! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
This looks truly amazing – can’t wait to try it on oatmeal day. Once, i was eating oatmeal and drinking a chai latte, and the oatmeal was a little dry, so i poured some of the chai latte in and it was delish. Surely not as good as this recipe, but a similar idea, so I’m betting your recipe tops it by a mile+.
One more thing: for people not big on dairy, surely macadamia milk would be amazing for this…. (That’s what i’ll use.)
That sounds so good! I hope you love this latte Sonya! Thank you!
Hello your pumpkin spice oatmeal latte sounds delish.,do you think I can make this using a microwave?
I think the microwave would work. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much! xTieghan
Hi. I love all things pumpkin too, but would also love to see some Fall Brunch dishes, butternut squash recipes, and my favorite ingredient Potatoes!! My ultimate comfort food! I made homemade pumpkin pies last month from a sugar pumpkin grown in our organic garden at church. Process was a 1/2 day event, but the outcome was super delicious and so different from canned pumpkin pie! Loved them! Thank you for your delicious recipes!
I am so glad you liked this Jackie! Thank you so much!
Your time and effort was well worth the wait, I agree! This is delicious! Truly, I cannot get over how good this is. Thanks for all your creativity and sharing!
I am so glad you like this! Thank you Brittany!
I don’t like the heat and im so ready for autumn and today the temperature dropped so I decided to finally try this and its AMAZING. I made the pumpkin puree myself & also just mixed everything for the pumpkin spice and its SO INCREDIBLY GOOD. Will definitely have this more often. Told some friends & they can’t wait to try it aka come to my place and have me preparing it for them.
Ah so happy that its getting cooler for you! Thank you so much ! xTieghan
I would like to make a traditional pumpkin pie, thanks…from Brazil.
Thank you! xTieghan
I’m 2yrs late, but I found this recipe! It’s awesome! i cooked the oats a little longer than recommended because I wanted a thicker latte thing. Used oat milk rather than dairy milk and ultimately created a kinda of soupy oatmeal bowl – delicious! Great flavor combo ideas, thanks girl!
I am so glad you did! And loved it! Thank you so much Heather! xTieghan
This was awesome! I had opened some pumpkin to make your granola and this caught my eye so I made this too! So yummy!
Thank you so much Abby! xTieghan
Very milky. Next time I’ll used almond milk. Mine wasn’t nearly as frothy. Thanks, though!
Thank you so much Amy!! xTieghan
