I just felt like our Tuesday needed a little boosting in the color department, so here ya go! Two ultimate, healthy smoothies to cure-all. Well, maybe not ALL, but they will sure make you feel oh so good. And umm, yes, they do taste just as delicious as they look!!

Alright, I want to get right down to it because I have some fun news to share at the end of this post. Hehe, if you skip down to the end, I will not blame you. I probably would too!

I have been wanting to put a fun spin on my go-to smoothie for a while now. I will not lie, when in doubt, I pretty much always go with strawberry + banana + greek yogurt. I mean, you can really never go wrong with those ingredients.

BUT, I this time I wanted to have a little fun and be a bit more creative. At first I was dead set on creating an immune boosting, yellow beet smoothie full of all the good things in the world… well, let me just tell you what a major fail that was. Like no. Just NO. I took one sip and it felt gritty from the turmeric and tasted… well, just so not good. It went to the goats in the big blue bucket. And yes, they downed it in about two seconds, but they’ll eat anything.

After my major fail, I was pretty discouraged, I really wanted a non-traditional smoothie. One that tasted yummy, but was not full of the typical red berries. So this time I adjusted some things, lost a little of this and a lot of that (aka the turmeric, which I guess I am just not a fan of) and then ended up with the pretty orange/yellow Citrus Sunrise Smoothie you are looking at… it’s YUM!

Full of citrus, sweet flavors, a little vanilla and yes, a yellow beet. Promise you do not taste the beet. PROMISE. Here’s my trick with the whole beet thing in a smoothie though. If you do not have a super high-powered blender, I recommend shredding the beet before adding it to the blender. This will ensure no weird beet chunks in your smoothie, which trust me, unlike strawberry chunks, beet chunks are no good.

OKAY, so why do you also see a pretty purple/pink smoothie? Ahh well, because as much as I loved my Citrus Sunrise Smoothie, I just missed my pink berry filled smoothie, AND I did have a red beet in the fridge that was just dying to be blended.

Sorry, I just really love my berries. Hard as I tried I just couldn’t leave them out, so along with my beets, into the smoothie they went. 🙂 So yes, two smoothie recipes are what you get today! Hey, two is always better than one, right? YESS.

The Strawberry Acai Smoothie is the best. The BEST. Like I said, the Citrus Sunrise is also delicious, but it’s a totally different flavor. If you want something full of fruity berry goodness, this is so your smoothie!. I packed in frozen berries, a banana, half a red beet, acai powder, greek yogurt and some coconut milk. I mean, I mean – too good!! You have to give this one a try, nothing weird about it, just completely delish flavors and all the healthy things in the world. SCORE.

Oh, and if you are wondering, acai powder is exactly what it sounds like. It’s acai berries in powder form. I use it in all my smoothies. You can buy it at Whole Foods, but I just order mine through Amazon, I find it’s cheaper and easier this way.

And real quick before I leave you all for the day, I have some exciting news to share! Strawberry Acai Smoothie.

Ingredients

  • 1/2 red beet peeled and roughly chopped (or grated if you have a weak blender), 1 small
  • 1 cup frozen strawberries or fresh
  • 1/2 cup frozen raspberries or fresh
  • 1 ripe fresh banana or frozen
  • 1 teaspoon acai berry powder*
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 cup milk of choice (I use coconut almond or goat milk)
  • 1/2 cup plain Greek yogurt use coconut yogurt if vegan
  • 1 tablespoon dried goji berries optional

Optional Toppings

  • plain Greek yogurt
  • bee pollen chia seeds, hemp seeds or ground flax
  • granola
  • fresh fruit and or goji berries
  • almond butter or other nut butter

Instructions

  1. Combine all ingredients in a high powdered blender and blend until completely smooth and creamy. Add a handful of ice if desired and blend once more until smooth, making sure there are no chunks of fruits or veggies.
  2. Divide between 2 glasses and top as desired. DRINK...OR EAT with a spoon. 🙂

  • 1/2 raw yellow beet peeled and roughly chopped (or grated if you have a weak blender), or 1 small
  • 1 orange rind removed (I used a cara cara orange)
  • 1 fresh or frozen banana
  • 1/2 cup fresh or frozen mango chunks
  • 2 tablespoons pitted medjool dates or 2 honey
  • 1 inch knob of fresh ginger peeled + grated
  • 1 teaspoon chia seeds
  • 1 teaspoon bee pollen optional
  • 1 teaspoon vanilla
  • 1 cup milk of choice (I use coconut almond or goat milk)
  • 1/2 cup plain greek yogurt use coconut yogurt if vegan
  • 1 tablespoon dried goji berries optional

Optional Toppings
