One Bowl 8 Ingredient Irish Coffee Fudge Brownies.
So I felt like we all just needed a brownie today.

As I always say, Friday’s require chocolate, and these brownies are on the menu today. I’m pretty excited about them too…and the fact that it’s Friday…and that the sun has been shinning brightly since Wednesday…yes, it’s been awesome!
I always forget how much energy the sun can give me. Don’t get me wrong, I love a good, snowy winter day when you can just kind of chill, wear bulky sweaters, drink mug after mug of coffee or hot chocolate, and then snuggle up on the couch by the fire at night. Those days are awesome, but let’s be real, most of the time when it’s cold and snowy, we still have to work. And for me, it’s always just a little bit more difficult of a day. When the sun is shining though, its major go mode and it feels so good. Let’s just say that after a week of on and off snow, these last three days of sunshine have been awesome and so productive. I love ending a long week feeling like much was accomplished, it makes the weekend just that much better.
Also, all the sunshine has me feeling all the spring vibes…as you will see in my upcoming recipes! It’s still really, really cold, but the sun plus my purple tulips, currently sitting on my kitchen counter, are making me feel like spring is on the way…which I guess it is! I can’t believe it’s already March. <–craziness.

Speaking of March…ST. PATRICK’S Day is right around the corner! I find it really odd, but St.Patrick’s day is one my brother Creighton’s favorite holidays. I don’t fully get it, but he seems to have embraced his Irish roots more than the rest of us. But now that I think about it, he did do a semester in Ireland and even met up with extended family there. so maybe it does make sense.
Anyway, I always love creating fun holiday themed recipes and these brownies are probably the highlight of my St. Patrick’s Day recipes this year. I’m not planning on posting a whole lot of Irish inspired recipes, so I wanted to make sure that the ones I do share are kind of awesome. And trust me, these brownies are awesome.
Addictingly awesome.
Sidenote: do you call it St. Patrick’s Day or St. Patty’s Day? I know some people have a serious thing about calling it St. Patty’s Day…what’s your opinion?? I always use St. Patrick’s Day, to me it just sounds better. Plus, I’m not huge on abbreviated words, most of the time I can’t figure them out.

OK. So let’s talk one bowl brownies!
If you ask me, brownies are one of the easiest desserts to make. Cocoa powder, flour, eggs, sugar, butter, vanilla. That’s pretty much all you need for a good brownie. No leavening agents, no chilling, nothing hard. Um, yes please!
For me, creating a one bowl, 8 ingredient brownie was kind of just a no brainer…well, honestly it kind of just happened. I realized once I finished developing the recipe that it was all made in one bowl and with just 8 ingredients. Cool. cool. I’ll take it!
So what’s the secret here?
Coffee and Baileys. <–aka the combo that’s always a winner.

Here’s how these brownies break down…
…butter
…sugar
…Baileys
…eggs
…cocoa powder
…flour
…coffee
And this is optional, but highly recommend…chocolate chips.
Simple as that.

Honestly, these are the BEST brownies, fudgy, flakey on the top and filled with amazing chocolate flavor, thanks to that touch of coffee and generous amount of Baileys. The only bad thing about these brownies? The fact that they can be made, baked and ready for eating in about thirty minutes. Meaning these brownies can be a dangerous (but delicious) recipe to have in your back pocket. And if eaten warm…oh my gosh, there is no stoping. <–fair warning.
Alright, Friday night plans?
Brownie making, pizza eating, TV watching, brownie eating. Yup. Count me in!

These easy to make brownies are super decadent!
Ingredients
- 1 stick (1/2 cup ) salted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup Baileys Irish Cream
- 2 teaspoons vanilla extract
- 2 large eggs
- 3/4 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1-2 tablespoons instant coffee granules
- 1/2 cup semi-sweet chocolate chips (optional)
Instructions
-
1. Preheat the oven to 350 degrees F. Line an 8x8 inch baking dish with parchment paper.
2. In a medium bowl, mix together the butter, sugar, Baileys, vanilla and eggs until combined. Add the cocoa powder, flour, and coffee (I use 2 tablespoons) and stir until just combined. Stir in the chocolate chips, if using. Spread the batter evenly in the prepared pan. Transfer to the oven and bake for 20-25 minutes or until the brownies are just set. Let cool and then cut into bars.
3. If a chocolate drizzle is desired, melt together 1/2 cup semi-sweet chocolate chips and 1/4-1/2 cup Baileys until smooth and combined. Drizzle over brownies.

Fist pump for Fridays, and a delicious pan of brownies. 🙂
These look fantastic – I need to try a non-coffee version!
And jealous of your weather – it is like we had one nice day when I moved last week, but it feels like I only get sunshine in the countryside and rain in London at the moment!
Ah the whether is such a bummer sometimes! Sorry!
So happy you like the brownies!
I guess I know how I’ll be spending my weekend… : )

Hope you love them, thank you!
You always post the most beautiful and inviting photos and recipes 🙂
Thanks so much Laura (:
This is the kind of recipe I like! One bowl and only 8 ingredients! Perfection in my book, can’t wait to make these Tieghan!
Awh thanks so much!
As an Irish person – it’s literally not called St. Patty’s day. Ever.
St. Patrick, or Paddy. Patty is a woman’s name, short for Patricia, and incredibly rarely applied as a shortened version of Patrick.
So great to know! Glad I have always said St. Patrick’s Day! 🙂
It’s friday, let me have all the browinies, please.

Ah right! You have to try to make them!!
All your recipes look amazing and I love your photos. Yesterday’s post, Huevos Rancheros Scrambled Eggs, is not opening today. Hoping you can fix it…as I’d love that recipe too. Thanks so much!
Hey Sarah! Recipe is all fixed, SO SORRY for any trouble. Hope you love this recipe! 🙂
I know what I’m doing this weekend. I have all the ingredients in the house to make these. They’ll go great with my hot chocolate and baileys !
So perfect! Hope you love them Kristine!
Well, the sunny season has finally arrived to our place too, and I shall make these tomorrow ! Thank you very, very much !
Yay, hope you enjoy them! Thank you!
woohoo, these totally get me in the mood for st. patrick’s day! coffee + baileys + brownies, what’s not to love?? xx
Ah yay! Was hoping it would! Thanks Jess!
I will be trying these out on my family this weekend and then perhaps again at work. YUM!
Hope you all love them!
Thank-you for this recipe! I have a Family Birthday Party for my 3 yr. old Grandson tomorrow and these are the perfect addition. Thank goodness I always have Baileys Irish Cream in the house and the other ingredients are staples as well. Just to be safe I’ll make a “test” batch today!!
SO perfet! Hope everyone loves it! Hope you love the test batch (:
Since I don’t drink alcoholic drinks I’m going to try these with maple syrup – similar consistency to the liquid.
Perfect! Hope they’re delicious!
I baked these yesterday and I *love* the flavor – but mine were very dry. I had to sub in Salted Caramel Bailey’s – do you think there would be that much difference in the alcohols? I followed the rest of the recipe to the letter. Your thoughts?
Hi! So I am thinking maybe they just got cooked a little too long. That is the only reason I can think they would be dry. How long to you bake them? So sorry for the trouble, but happy you enjoyed the flavors! 🙂
I’m acting brand new. My comment to Maureen is “how did the maple syrup work out?’ and the other post is meant for Tieghan.
Sorry, it’s Monday lol
Haha! Now worries…Monday’s are hard!
Oh gosh, YUM. Fridays need brownies, ALL days need brownies.
Also, I first read that as “brownie in your back pocket” instead of”brownie recipe.” I thought, that sounds like a fun mess 😀 sorry. I’m super immature.
HAHA! Such a fun mess! So funny!
Thanks Annie!
They look so good, and I love the touch of Baileys Irish Cream. I like my desserts with some alcohol in it.
Me too! Adds a perfect flavor!
We so needed a brownie today, I just love these! 🙂
Every friday deserves brownies! Thanks Laura!
Yum! And I love the St. Pat’s theme =)
Its so fun! Thanks Sara!
Love this. Me too, the sun has me just smilin from ear to ear. And this 8-ingredient brownie, perfecto! You have now launched my happy place with sunshine to the moon and back. Bring on the brownies. Thanks for sharing.
Yay for happy place (: So happy you like them Cindy! Thank you!
As an Irish mama. It’s st. paddy’s day. My son Patrick goes by Paddy not patty. Will be making this for our March 17th celebration! Thanks for the recipe!!
Oh awesome! Thanks so much Erin (:
These will be a treat while I work overtime at home. Just want to make sure salted butter is required.. you don’t see that a lot in Baking but it would be good because o bought two bricks by accident;-)
Beautiful pictures and wonderful recipes
Thank you,
Susan
Hi Susan! Yup, salted butter. Hope you LOVE these! Thanks! 🙂
Catholic School teacher–so St. Patrick’s Day.
Woke up to freak snow storm this morning about an inch lots of accidents, closed I75 in places for several hours and now the sun is shining and snow is gone.
This has been one weird winter.
But brownies would make it better!
Okay!
Wow! sounds like a lot of snow! Brownies can almost always make it better!
Looks so delicious! Do you think I could substitute Kahlua for the Baileys?
Yes, I think that will work great! Hope you love these!
Ooh – hoping for answers on your Kahlua question – I have the same thought 🙂
Hey Teri! Kahlua will work great! Hope you love these! 🙂
Utter noms!! I adore your photography, everything always looks amazingly good!!

Awh thank you it means so much (:
I could use this brownie every day. 🙂
Ah yes! You deserve them!!
These are making me drool just looking at them! If I had to pick one dessert to eat the rest of my life it would be fudgy brownies. The Irish coffee kick in these just makes them even better!
Ah no doubt would be my choice too! Thanks Gina!
Love the Irish Coffee addition in these Tieghan! Need these on the St. Patty’s Day dessert menu!
Yes!! The best dessert for St. Patricks!
I am Coffee Lover and i am going to love to make this. Thank you so much for writing such a great Recipe.
Yay, I hope you love it! Thank you!
Everyday requires chocolate, especially in brownies like these!
So agree!!
So beautiful! How do you take your pictures when you’re in them? I love seeing pictures that are during the process, but haven’t been able to figure out a set up that works.
Thanks Sara! So your camera should have a timer on it. One for 2 seconds and one for 10 seconds. This is how I do it. I set the timer and it goes off when I am in the photo them! 🙂
Just made these! They’re absolutely DELICIOUS!!! 🙂 The sauce is a must with it – compliments it so well! So easy to make too! Thanks Teighan!
So happy you liked it Natalie (: Thank you!
These look gorgeous and will definitely be on the cards for me to bake…I don’t do enough of it and this looks like the kicker!
I hope they turn out awesome for you! Thank you & Let me know how you like them! Enjoy!
When you say “coffee” in the ingredients – do you mean actual coffee [i.e., the beverage] or do you mean the instant coffee granules? I’m planning on making these for St. Patrick’s Day!
Hi! I mean instant coffee granules. Let me know if you have questions. Hope you love these!
I’ve already noted the recipe, I’ll do it here at home, I’ll tell you how it was! Hehe
Awesome! I hope you love it and can’t wait to hear how it goes! Thank you Vera!
Wow, these look so incredible and I’m looking forward to making them. I’m going to need to make two batches – do you think just one batch of drizzle will be enough, or should I plan on making more?
Thank you!
Hey Kat! I think one batch should be enough…unless you want to cover the bars completely. Hope these are a hit! 🙂
Good morning.
Of course you know me..I have to sub. Just went to the cities yesterday…sigh.
I do not have Baileys. have not replaced since Christmas.
I have Kahula. I have heavy cream. What should I do ?
Thank you my dear.
Happy St Patrick’s Day.
Kahula will be awesome! 🙂
Made this last night. The flavor was AMAZING!! I think I messed up with the timing. Mine came out super dry as another person said before. I did it for 23 mins. I am definitely going to try again with less time since these tasted soooo good.
I am so glad you still enjoyed these Jason. I hope they turn out great for you next time, thank you!!
These look so good! I really want to make them but don’t have instant coffee. Could I omit from the recipe or is it necessary?
Thanks!
PS . I made your cranberry brie pull-apart bread for Christmas and since then I have been cooking basically only your recipes for our dinners. They’ve all been incredible!!
Hi! You can omit it from the recipe, no big deal! 🙂
SO happy the cranberry brie was a hit!! yeah!
These brownies are soooo good! I’ve never tried Bailey’s before and who knew I was missing out on so much. It’s a great hint of flavor to the brownies, and I added some extra coffee bc why not.
How can I make them more moist for next time? They came out a little dry for my first batch (followed the recipe exactly but baked them for 5 extra minutes)
So happy you loved these! Just bake them for 5 or 10 minutes less next time. That will fix the dryness! 🙂
Just made these. Now my apartment smells like a bakery. THANK YOU!
YES!! So happy you made them, thanks Kait!
Tieghan you genius. I just made these and can’t believe how amazing they turned out, and how easy it was. I too used maple syrup rather than Bailey’s. I’m taking them in to work and I will be very popular! 😀
I am so glad you loved these! Thank you Janina and I hope your work loves them as well!
By far the most moist brownies I have baked! I dint have choc chips so ommitted it. But the result was fab! This recipe is a keeper!
I am so happy to hear that! I am so glad these turned out so well for you and you enjoyed them! Thank you!
Can I double recipe for a 13 x 9 pan, or better to bke two batches? I need a lot of these for aa party, and tht they have no daiary except butter works for one of my guess! Thanks.
You can double the recipe, just add on about 5 minutes of baking time. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much!! xTieghan
Oops, sorry out all the typos in my prior question. It was late…
Hi! These look AMAZING – might make them this weekend! Been looking for something new for this holiday. Thank you…also, I’m of Irish descent and a bit of a word nerd. St. Patty’s is wrong because Patrick is the American version of Padraig (male). See where St. Paddy’s comes from?! 😉 Happy St. Paddy’s to you!
Wow I did not know that! Thank you so much for this information, Stacey! xTieghan
I have made these before and LOVE them! They’re my go to brownies as matter of fact, because they’re so delicious and super quick and easy to make! I am making them now and just discovered my instant coffee is gone, but I do have some instant epresso. Do you think I could use that instead? Maybe use only 1 TBSP instead of my usual 2? Thanks for an awesome recipe! .
Hey Cindy! I am sure instant epresso will be great! I would use 1 tablespoon. Please let me know if you have any other questions. I am so glad you love this recipe! Thank you! xTieghan
Hi,
Just wondering if it’s ok to freeze the brownies after they’re made 🙂
Thanks!
Hey Abbey! Yes, you can freeze these. Please let me know if you have any other questions. I hope you love this recipe! Thank you!! xTieghan
This looks brilliant. Thankyou! I’d love to try what Bailey’s brownie would taste like. Can you please guide me how do you process the liquids? Do you melt the butter and then just add all liquids and mix it or you cream the softened butter and sugar, beat the eggs separate and then combine all one by one?
Hi Shweta,
I am confused about this question? Are you asking how to make the brownies? All of the steps are here on the page. Please let me know how I can help in any other way. xTieghan
Hi! Can I use regular ground coffee instead of instant? Thanks!
Hey Anna,
Sorry, you will want to use instant coffee for this recipe. I hope you love the recipe, please let me know if you have any other questions! xTieghan
