30 Minute Spicy Miso Chicken Katsu Ramen.
This quick and easy 30 Minute Spicy Miso Chicken Katsu Ramen is for those nights when you’re craving your favorite bowl of Ramen, but need it fast and made at home. All cooked in one pot, using healthy, pantry staple ingredients. This ramen is flavored with miso and chili paste. It’s creamy, spicy, and yes…filled with plenty of ramen noodles. Each bowl is topped with crispy sesame Katsu chicken for the best bowl of homemade ramen…even better than a restaurant! Best enjoyed on cold days, because there’s nothing better than a steaming bowl of ramen on a cold winter’s night.
I’m sure I’ve told this story a million and one times by now, but growing up there was a time when my mom and I practically lived on ramen (we called it Oodles of Noodles). I must have been in third or fourth grade because I know I got out of school earlier than my brothers.
I’m not going to lie, these were the school years that were my favorite. It’s no secret that as the only girl growing up in a house with five brothers, I craved my mom’s attention more than anyone. And trust me, her attention was hard to get. With six kids, she always had something to be doing. But when I was able to come home from school two hours earlier than my brothers (my school got out at 2:45 pm, but the middle didn’t get out until 4 pm) it meant that I had my mom pretty much to myself for two hours. Yeah, my younger brother Kai was home too, but he always entertained himself and never needed much. And then Red was just a tiny baby, so though he required attention, it honestly wasn’t much. Those were my two hours, five days a week and I loved them.
On the cold, rainy Cleveland days, I’d come home and my mom would make up ramen. We’d eat sitting by the fire while she worked away on whatever she was doing and I chatted her ear off…or just watched Gilmore Girls.
I know it doesn’t sound like much, but I loved that time. And to this day, I love ramen.
So do you see where I’m going with this? Ramen will always be a special dish for me. I love creating new versions every winter. This year’s version is hands down my favorite yet.
It’s all about the miso broth and that crispy sesame Katsu chicken. I’ve never done anything like it, but I am fully obsessed. The chicken on top really makes it that much more delicious.
Making this ramen is quick, start with the broth.
This is quick, but you have to know, the broth is really the star of this ramen. It’s so simple, but the combination of miso and chili paste is just something extra special. I like to use white miso paste and my favorite chili sauce is Gochunchag, which is actually Korean chili paste. But it’s SO GOOD.
Crisp up some bacon in a big Dutch oven. I use the bacon only for flavor, but if you prefer to not use bacon, you can just omit it from the recipe and instead use a couple tablespoons of olive oil or sesame oil.
When the bacon is crisp, toss in lots of fresh garlic, shallots, ginger, and a good pinch of chili flakes. We LOVE this ramen spicy, but you can, of course, use as little or as many chili flakes as you’d like. Once everything is super fragrant, just pour in some broth, add some miso, chili paste, and a touch of coconut milk. Let this all simmer for a few minutes.
Now, onto the chicken Katsu.
Yes, the broth is the star, but the chicken has a major supporting role. Really, it’s the broth and chicken together. They make for the best bowl of ramen.
I made sure to keep the chicken simple and easy. I used chicken cutlets, then simply breaded them in Panko and sesame seeds. Super simple, but atop the spicy broth…so delicious.
For the actual ramen noodles, I love using Brown Rice and Millet Ramen noodles (which you can find at Whole Foods and in many grocery stores). These taste just like real deal ramen noodles, but they are much healthier, gluten-free, and vegan. Also, I recommend storing the soup and noodles separately, then adding the noodles just before serving. If you let the noodles sit in the soup, they will soak up all the broth and become very mushy.
And of course, no bowl of ramen is complete without the toppings, they’re the best part after all, right? I do soft-boiled eggs, plenty of green onions, toasted nori sheets, and lots of chili oil.
Each and every bite is so good.
My two younger brothers, Malachi and Red have both been to Japan and enjoyed plenty of ramen while there. But Kai said that this bowl has been the only bowl he’s had since Japan that actually tastes like the ramen they had there. It’s creamy, but spicy, and the flavor is spot on. They also very much enjoyed the excess amounts of chili oil I put on their bowls. I love a little chili oil.
So, I took that as a pretty darn good sign that this is my best bowl of ramen yet. It’s honestly perfect and the best bowl for cold nights. So how are we feeling? Monday night ramen? Promise it will not disappoint.

30 Minute Spicy Miso Chicken Katsu Ramen
Made in the instant pot or on the stove...best for when you're craving ramen, and need it fast!
Ingredients
- 2 strips thick-cut bacon, chopped
- 6 cloves garlic, finely chopped or grated
- 2 medium shallots, finely chopped
- 1 inch fresh ginger, thinly sliced
- 1/2-1 teaspoon red pepper flakes
- 8 cups low sodium chicken broth
- 3/4 cup coconut milk (or preferred milk)
- 1/4 cup low sodium soy sauce
- 1/4 cup white miso paste
- 2-4 tablespoons chili paste, to taste (I use Gochujang)
- 4 squares ramen noodles
- 4 cups baby spinach, chopped
- 1 tablespoon toasted sesame oil
- soft or hard boiled eggs, for serving
- Toasted nori sheets, sesame seeds, green onions, and chili oil, for serving
Chicken Katsu
- 4 chicken cutlets, or 2 boneless chicken breasts, sliced in half horizontally
- 1 cup Panko
- 3 tablespoons sesame seeds
- kosher salt
Instructions

1. Heat a large Dutch oven over medium-high heat. Add the bacon and cook until crisp, about 5 minutes. Add the garlic, shallots, ginger, and red pepper flakes. Cook, stirring occasionally, until caramelized, about 3 minutes. Pour in the broth, milk, and soy sauce, then whisk in the miso and chili paste. Reduce the heat to medium-low and simmer 10 minutes.
2. Meanwhile, make the Katsu. Place the Panko and sesame seeds in a shallow bowl. Season with salt. Dredge both sides of the chicken through the Panko, pressing to adhere by using your fist to really pound the crumbs in. Place the chicken on a plate.
3. Heat a few tablespoons of oil in a large skillet over medium-high. Add the chicken and cook until golden brown, 3-4 minutes. Flip the chicken and cook until golden brown on the other side, about 3-4 minutes. Transfer to a cutting board and season with salt. Slice into thin strips.
4. To the soup, stir in the noodles, spinach, and sesame oil. Let sit 5 minutes or until the noodles are soft.
5. To serve, divide the noodles between bowls and ladle over the soup back overtop. Add the chicken. Top as desired with eggs, green onions, sesame seeds, and chili oil. Serve immediately.

This was the best recipe!!! I added the remaining coconut milk to thicken it. I also made soft boiled eggs marinated in mir, soy sauce, and garlic that took it to another level. This was amazing! I’ve been an admirer of your blog for a while, but this is my first attempt at one of your recipes. Just want to say that this cannot really be a 30 minute endeavor. I have not made this recipe but I’ve made lots of other ramen, and as a pretty experienced cook, i know this gonna take more than 30 mins! That said it looks delish and cant wait to try it.

Loved this recipe! Took me longer than 30 minutes, but I am slow and it was worth it. I added an extra tablespoon or two of miso because I felt like my white miso paste wasn’t packing much of a punch and pounded the chicken so it was nice and thin before frying in the Panko & sesame seeds to avoid burning. Otherwise, I followed the rest of the recipe precisely and it was a hit. Definitely a make again recipe!

Made this for dinner and it’s delicious! Deep flavor in the broth in a short amount of time, but a bit spicy for our taste. Ended up adding mor coconut milk and water to cool it down. This is an excellent, delicious ramen. I left out all of the heat except a few chili flakes because I don’t tolerate it these days. Took me way longer than 30 mins to get all of the components cooked and together for the soup. Tip: make it and eat it right away because the ramen will soak up the broth.

I’ve made this last night and it was delicious. I especially liked how easy it was to make the broth. I have to admit, I just topped the soup with cut up chicken nuggets (because my store was out of organic chicken breasts but I still had some organic chicken nuggets for the kids in the freezer), but it worked shockingly well. I made this last night for a ramen and movie kind of night… so delicious! I have made other ramens that took sooo much longer and broths that were much unhealthier 😂. The chicken Katsu was perfect with the broth and noodles. I used the millet and brown rice noodles from Costco. I really loved the spinach in it too! I also used the bacon but removed it before adding the shallot, ginger, and garlic. Will make again for an easy, quick but delicious ramen. Thank you for sharing this recipe!

Made this for dinner on a very cold Friday night. It was delicious and warming due to the spicy kick from the chili paste and red pepper flakes. The broth is very flavorful. There are a lot of ingredients, but it actually came together in less than an hour and everyone loved it. Leftovers were just as good for lunch the next day – but definitely store the broth, chicken, and noodles in separate containers.

This recipe is amazing! The broth is so delicious. We have lived in Japan and I love a beautiful bowl of ramen. This one fits the bill. I did use a thinly cut boneless pork cutlet instead of chicken but other than that I followed the recipe exactly.

Julia Child was not French yet quite a celebrate “French Chef”. She, as Teigan does, never claimed to be anything she was not. Teigan does a great job of bringing Asian recipes, as well as other cultures, to the home cook. We take them for what they are and enjoy them, Please stop with you internet anger and just go to a different blog, I enjoyed reading about other people’s substitutions and outcomes. We don;t all have miso paste on hand but want to try something new and do the best we can. Just take a breath and let it go. So. I lived in Japan so this recipe had a LOT to live up to. After I saw that your brothers loved it, I gave it a try. Wow. It was amazing. My mom and husband were so shocked!
For gluten-free katsu: pulse Simple Mills almond flour crackers in a food processor and no one will ever know it’s not panko. Your chicken will come out perfectly crispy and delicious.
I also added a pad of butter and a couple of shakes of fish sauce in the broth at the last minute. Butter ramen is a big hit in Japan and it’s delicious!!

This was… unbelievable. Made this dish last night, and during the night I woke up and couldn’t stop thinking about it. I wanted to sneak into the kitchen and finish the leftovers behind my husband’s back haha. He said it was the first thing he thought of when he woke up. No joke. Half baked harvest recipes literally never disappoint, and this one was the farthest thing from disappointment. This dish is now going to be a staple in our house. This was INCREDIBLE! I found the recipe so easy to follow and was ecstatic with the end result. I am a baby about spice so I omitted the red pepper flakes and stuck with 2 tablespoons of the gochujang and it was perfect! Enough of a kick to make it interesting but not too much. I also subbed out spinach for cabbage since that’s what I have in season from the farmers market right now and I loved the texture! 10/10 will be remaking this.

This was delicious! I, too, used gochugang and 1 tsp of hot red pepper flakes, which made it pretty spicy, but not overpoweringly so. I also liked using 4 packages of ramen so there was enough left over for a lunch. I did end up boiling the sauce for a few minutes after I put the noodles in because they didn’t seem to be cooking just sitting in the pot.

My husband was on chicken duty and cut up the chicken before panko/sesame seeds. A little more time consuming but he dredged each chicken piece in panko/sesame mixture and the dish turned out great! Took us a lot more than 15 min. prep. time but we got it done and it was delicious!

This is the best ramen we have ever eaten! Thank you for this incredible creation. It will be on our repeat list for many years to come. We made it exactly as written, found the Lotus millet/brown rice ramen, used 3TBSP of Gochujang which made it medium spicy, and then also added some sauteed shitake mushrooms.

I cannot express how much I loved this ramen. I used a different ramen noodle from my local East Asia grocery store was all I did differently. This turned out great and I loved it so much. I don’t normally come back to leave recipe reviews (although i should more often), but I have made this multiple times and I currently am waiting on a delivery of the ramen to make it again. It’s delicious and my husband and I really enjoy it. Even wih very big bowls, there is enough for leftovers so I always make the noodles separately. I end up readings the comments to see if something is really worth it, so to anyone like me, make it. You won’t regret it. However, I will say for me, it is NOT a 30 minute meal. It takes longer for me (more of like an hour) so that’s just an FYI. It also creates a tad bit of the mess (pot for soup, pan for chicken, and pot for ramen) so to me, it’s not a quick weeknight meal. Don’t let that discourage you from making it, just plan accordingly.

I made a few modifications since I didn’t have a few of the ingredients. I used Unsalted Chicken Broth instead of low sodium and also cut out the bacon since I didn’t have it and the dish was still so amazing! This is becoming a staple in my house 🙂 Thank you so much for sharing this recipe!!

We have an extraordinary ramen shop – one of 3 locations in the US – that we regularly visit. As soon as we smelled it cooking and then on first slurp there were sighs and vigorous nods all around. This ramen is JUST as good as our friends at the shop make.

I loved everything about this dish. My only note would be that it took me closer to an hour to prepare ….. I think in part because it was the first time I made it, but 30 minutes would be a serious stretch for me.

I just made this tonight and it was beautiful and excellent. I used 3T of Gochujang, and 2T would have been enough. I can see it taking 30 minutes if everything is prepped. It took me an hour and a half with all the chopping etc. I also made jammy 6 1/2 minute eggs and I marinated them for a few hours in soy sauce and Mirin.

Soup and chicken were good but I failed on the noodles. Even though boiled on the side they came out way too gummy. So bummed but the leftovers will go well over rice🙂

I made this on a cold day and it was amazing! I’m not big on the egg in ramen so I decided to add shiitake mushrooms and pickles cucumbers. The recipe itself if amazing and I will definitely be making it again soon!

We love ramen but the closest places for us is like 40 minutes away. This was my first attempt at it beside just plain old Mr Noodles! It was delicious! I skipped a couple ingredients and added a couple that weren’t listed, but it was the same general recipe. Will definitely be making this again. My chicken didn’t cook the way I wanted it too so I may attempt a different protein next time.

LOVED IT! We have ate at restaurants with really good ramen but could never make it the same ourselves. This recipe is better than any ramen we have had and it was so easy! I used a heaping 1/2 teaspoon of red pepper flakes and 2 tablespoons of gochujang and it was perfect for our spice level. We also used pork loin instead of chicken katsu since we needed to use it up from the night before. So good! You have to try it if you love ramen.
