I feel like, since it’s summer, a margarita popsicle is an appropriate Tuesday afternoon treat, I mean, right?

Full disclosure, you can totally leave the tequila out of these and you’ll have one yummy, pretty stinkin’ healthy, frozen snack. So really, it’s totally up to you on whether or not you want a boozy popsicle or just a yummy fruity one. I did half and half, since little Asher was dying for some two toned watermelon + cantaloupe popsicles. Both versions are equally delish, and ok, another disclosure…even if you do add the tequila, it’s not like you’re having an entire shot in your popsicle. No way! Since alcohol doesn’t freeze, we can only add just a little hint, but it does the trick, and like I said, it makes for a super fun Tuesday treat!

Okok, and are these not the funnest (yes, I know there is no such word… but there should be!) colors ?!? Just looking at them puts me in a chipper mood, which is kind of awesome, since sometimes Tuesday can still feel like Monday…UGH.

So you guys! On Sunday and Monday I literally had Christmas in July. I’m working on a really fun Christmas shoot this week and on Sunday Asher and I baked batches of Christmas cookies and made gingerbread hot chocolate. Thinking about it now, we really should have just went all out and put on the Christmas tunes. Dang it!

I even had my mom over for a bit, turning out fresh batches of butter cookie dough. I have to say, it was king of weird to even be thinking about Christmas this time of year, let alone actually decorating for it. Making cookies and holiday things…well you probably kill me when I say this…but it actually had me slightly excited for Christmas 2016?!?

I know, TOO SOON. I’m still with you, but for like a milla second, I was kind of excited. How could I not have been though, baking Christmas cookies just gets you in the spirit!

OK and DONE. No more holiday talk, let’s stick with summer and these margarita popsicles!

Here’s the deal. Last week I had Lyndsie, my brother Brendan’s girlfriend, fly in from Portland to work on that video shoot I did with Food Network. She did awesome, but more importantly, she inspired these fun pops.

You see, Lyndsie’s alcohol of choice is tequila. The girl kind of loves it, and her recent trip to Mexico with my family had me thinking about how to reinvent the margarita… just a bit. Since watermelon and cantaloupe are currently ripe and delish, and since I had some leftover homemade lemonade in my fridge, I decided on a lemon lime margarita popsicle.

So really, these popsicles were born out of the contents of my fridge, but it’s cool, cause they ended up being so DELICIOUS, and so refreshing!

In fact, perfect for a hot and sunny Tuesday afternoon. 🙂

They’re also beyond easy to make… just blend, pour, freeze, then pour in the second layer, and DONE!

Sprinkle with a little salt and lick, lick, lick! I just used paper Dixie cups to make these fun shapes, but you can any popsicle mold you have. I have to say though, the Dixie cups are really easy, they just peel right off. No running under hot water, and then um, no washing mold afterwards. Score!

Ingredients

  • 2 cups cubed watermelon
  • 2 cups cubed cantaloupe
  • 1 cup lemonade divided
  • 1/2 cup lime juice divided
  • 4-6 tablespoons tequila divided, optional
  • flaky sea salt for sprinkling
  • slices lime for serving

Instructions

  1. In a blender, combine the watermelon with 1/2 cup lemonade, 1/4 cup lime juice and 2-3 tablespoons tequila, blend until completely smooth. Pour the mixture among 10 popsicle molds or 14 Dixie cups. Freeze one hour.
  2. Rinse the blender out and add the cantaloupe and remaining 1/2 cup lemonade, 1/4 cup lime juice and 2-3 tablespoons tequila, blend until smooth. Pour the cantaloupe mixture over the watermelon layer, filling the molds to the top. Insert popsicles sticks. Freeze until firm, at least 4 hours. Serve with lime wedges and salt.
