Loaded Peanut Butter Chocolate Covered Potato Chip Fudge (+ A KitchenAid Giveaway).
You are going to want to read all of it.
Promise, I will make it short.
First, there is this fudge.
Man, I know the name is obnoxious, but it is crazy good. It’s sweet, peanutty, chocolatey and salty. Perfect combo for the week before Christmas.
This fudge is made of a base of dulce de leche, sweetened condensed milk, a touch of peanut butter and lots of chocolate. You guys, I made this fudge yesterday. I made two pans, gave one away and the other is completely gone. It is so good that today’s planned post got bumped.
Fudge – in for the win!
I was reading this gorgeous post yesterday and a light bulb went off in my head. I must use some dulce de leche before Christmas is over.
If you are unfamiliar with dulce de leche it is caramelized sweetened condensed milk and man, it is so good. Typically it is sold right next to the sweetened condensed milk. If for some reason you cannot not find it, swap in sweetened condensed milk or make your own dulce de leche by simmering sweetened condensed milk on the stove for four hours.
And the toppings?
Reese’s, Hershey’s Kisses and potato chips. Yep, I should have just called these fatty fudge, but my friend Naomi already made fatty bars, so I am leaving the awesome name to her!
Hey, it is the week before Christmas and these are one hundred percent acceptable! Plus, they are SO easy. No bake and done in under twenty minutes!
And now for the super fun part. A little Christmas gift for YOU!

Loaded Peanut Butter Chocolate Covered Potato Chip Dulce De Leche Fudge (+ A KitchenAid)

Ingredients
- 20 ounces semi-sweet chocolate chopped
- 1 (13.4 ounce) can dulce de leche divided, may sub 1 can of sweetened condensed milk
- 1/2 cup sweetened condensed milk about half a can
- 2 tablespoons creamy peanut butter
- 1 tablespoon vanilla extract
- 1/2 cup Hershey's chocolate kisses chopped
- 1/2 cup mini Reeses chopped
- 6 ounces dark chocolate melted, divided
- 1 cup ruffled potato chips
Instructions

Line a 8×8 pan with wax or parchment paper.

Add semi-sweet chocolate, 3/4 of the can of dulch de leche (leaving 1/2 cup in the can) to a double boiler, and melt completely. Once melted, remove from heat and slowly add in sweetened condensed milk, peanut butter and vanilla extract, stirring with a large spatula until mixed. The chocolate will be thick. Mixture is going to get super thick but slowly stir and just fold the chocolate mixture over until combined. Use the spatula or a large spoon to spread the chocolate into the pan. It will be very thick, just try and spread as evenly as you can. Place in the fridge for 10 minutes to set.

Melt the dark chocolate in the microwave on 30 second intervals, stirring after each interval until melted and smooth. This takes me about 1 minute and 30 seconds.

Remove the pan from the fridge. Pour 3/4 of the dark chocolate over the fudge. Using the back of a spoon, spread it evenly over the top of the fudge. Immediately cover it with the chopped Reese's and chopped Hershey's kisses. Take the remaining dulce de leche and melt in the microwave for 30 seconds. Let cool for three minutes and then drizzle over the top of the candy. Add the potato chips on top of top of the candy (crushing them if you would like). Now grab the remaining melted chocolate and drizzle over the potato chips. Let set in the fridge for 30 minutes or so.

Use a sharp knife to cut the fudge into 16 squares.
Now let’s make fudge!

What would I like form Christmas?? This year in particularly that is an extremely loaded question. I would love to carry on the tradition of my dad surprising me at my door step in California from his home in New Hampshire but that one is out of the question this year for the fact that he has adopted three little boys who’s mother decided that its no longer her responsibility to raise them. I know they need him over there more than I do. I would also love an opportunity to follow my dream and go to culinary school and start my journey of opening my own bakery but for financial reasons that wont be possible just yet. Though it is bitter sweet I must ad since ill be enrolling in community college to obtain my social workers degree and start a career in child protective services. That is my plan of action to save the money from that work until I have enough to start my bakery. An amazing Christmas gift this year would be all of these plans falling into place so I can get a start on helping kids in need of love and eventually tummies in need of pastries. 🙂

i want WARM WEATHER. oh my goodness living in new england is such a drag. i’ve lived here my whole life and i’m still not used to it! i would love some sunshine!
I would love a pair of Carson flats by Frye, but I honestly just want everyone to have a good Christmas. I want the homeless to have a home to go to, the sick to be healthy, the poor to be able to pay their bills, the hungry to be fed, every child to wake up to a toy under the tree, all the shelter pets to be adopted, grudges to be forgotten, families to come together, and most importantly, for us all to remember what Christmas is truly about. 🙂

I would like an embroidery sewing machine. I’m looking at the fudge recipe and trying to figure out how to adjust since I’m allergic to chocolate but use carob and to potatoes but I’m eating ranch dip from coconut milk on sweet potato chips so it just might work!

What I am looking forward to most this holiday season, is to have my daughter experience her first Christmas and to pig out on food( . .and really, who doesn’t look forward to that!)

I would love to climb into a time machine and spend Christmas with my mother and father. Both at the same time. He passed when I was 3 and mom has been gone since my youngest was 2. To hear them laugh together and to get sandwiched inside one big hug would be the best Christmas present ever, forever. I miss them so.
