Homemade Chocolate Fudge Pop Tarts.
Channeling the inner child in us all with these (better than store-bought) Homemade Chocolate Fudge Pop Tarts. Easy homemade chocolate fudge sauce stuffed between two layers of chocolate sugar cookie dough, baked until toasted, and finished with a sweet milk chocolate frosting. These chocolate pop tarts are flaky, fudgy, and heavy on the chocolate. Finish each mini tart with a sprinkle of coarse sugar or pretzel salt for that classic “pop tart” look. Every bite is roll your eyes back delicious!

You guys, today is a special, special day. We have homemade chocolate fudge pop tarts to talk about!
And best of all? They take us back to the carefree days of being a kid, and that’s something we should all embrace right now. Less stress, more baking, and plenty of chocolate. Yess!
But really, what was your favorite pop tart flavor growing up? I only ever ate the chocolate fudge pop tarts and left anything berry-filled in the dust. It was always chocolate for me. What about you guys? Dying to know!
Funny enough these pop tarts are a very, very old HBH recipe that I pulled back into my kitchen and perfected. With everyone home right now baking up a storm, I figured these would be a fun weekend project with a beyond delicious outcome. Soo…these homemade chocolate fudge pop tarts are here to keep us entertained and well sugared-up this weekend.

Now, onto the process…
Because I have many words to share about these pop tarts.
Start with the chocolate fudge sauce. This is a simple mix of cocoa powder, sugar, milk, and chocolate chips. It’s melted together on the stove until it just begins to bubble up and thicken. Once the sauce starts to thicken, remove it from the heat and add a touch of butter for richness, and a splash of vanilla for the best flavor.
Simple, but so darn good. This sauce is rich, creamy, and perfectly sweet.
The key is to let the sauce firm up before you begin assembling the pop tarts. It’s should be thick and spreadable.

While the sauce chills, make the chocolate sugar cookie dough. If you can make cookies and roll them out, you can make this crust. It’s just flour, cocoa powder, sugar, plenty of salted butter, and ice-cold water. I like using the food processor to easily mix the dough, but you can simply use your hands as well.
Once the chocolate fudge sauce is chilled, roll the cookie dough out and cut into rectangles. Spread a bit of the fudge sauce over half of the rectangles, leaving a small border around the edge of the dough. Now, the next step is important. Brush the borders of the rectangles with the egg, then add the top piece of dough to enclose the filling. Using the tines of a fork, crimp the edges around the tarts to seal all that fudge inside.
Again, using the beaten egg is really important. It ensures that all of the chocolate fudge sauce stays inside of the pop tarts while they bake. For my first test round I skipped the egg and all of the sauce leaked out of the tarts. It was not good.
Bake the pop tarts up and twenty minutes later you’ll have homemade chocolate fudge pop tarts!

But, they need frosting…
Yes, they do need frosting….well they actually don’t NEED the frosting. They would still be good without. But in my opinion, the frosting is key. It’s what takes them to GREAT!
Plus, as I mentioned, I wanted these to be as close to the original version as possible.
The frosting is just a mix of powdered sugar, cocoa powder, vanilla, and melted milk chocolate. Simple ingredients that when combined together are so very delicious.
Now, if you wanted a shiny, glossy finish to your pop tarts, use a couple of tablespoons of either meringue powder or add one egg white into the frosting. Using meringue powder will give your frosting shine. It helps it to nicely set up and dry so that the frosting doesn’t smudge when touched. This is completely optional and honestly, I don’t often take the extra effort. But I did want to make the note to you all that this is certainly an option. It will give your pop tarts a more authentic pop tart look.
Once you’ve mixed the frosting, and the pop tarts have cooled, simply frost each tart. Let the frosting stiffen a few minutes, then sprinkle with either Swedish pearl sugar or a coarse salt. I like to use pretzel salt. It’s delish and adds a salty crunch with every bite.
Let the pop tarts harden…or enjoy them right away…so delish!

So the real questions you’re all wondering?
Can you toast these? Honestly, no I would not recommend it. Well, if you leave the frosting off of the pop tarts, then yes, you can easily toast these in the toaster. But if you frost the pop tarts, I wouldn’t toast them.
Do these taste just like real, store-bought pop tarts? Actually, they do…but they’re also better. Better because they have real ingredients and real chocolate flavors. And if you’re like me, add that sprinkle of sea salt for a touch of saltiness too.
Trust me here. These are GOOD, so much better than the stuff from the store that comes in a box.

So with that, let’s all agree that this weekend’s quarantine project should be pop tart baking and eating.

Homemade Chocolate Fudge Poptarts

Ingredients
Chocolate Fuge Filling
- 1/4 cup unsweetened cocoa powder
- 2/3 cup whole milk or heavy cream
- 1 1/2 cups semi-sweet chocolate chips
- 2 tablespoons salted butter, cubed
- 2 teaspoons vanilla extract
Dough
- 2 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon granulated sugar
- 2 sticks (1 cup) cold salted butter, cut into 1/2 inch pieces
- 1 egg, beaten, for brushing
Frosting
- 2 cups powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon vanilla extract
- 2 ounces dark or milk chocolate, melted
- coarse salt or sugar, for sprinkling
Instructions
-
1. To make the chocolate fudge filling. In a small saucepan, stir together the cocoa powder, milk, and 3/4 cup chocolate chips. Set over medium heat and cook, stirring, for 5-8 minutes, until the chocolate is melted and the sauce has thickened slightly. Remove from heat, stir in the remaining 3/4 cup chocolate chips, the butter, and vanilla until smooth. Transfer to the fridge to cool and thicken, at least 30 minutes.
2. Meanwhile, make the dough. In a food processor, combine the flour, cocoa powder, sugar, and butter. Pulse until the mix clumps together to forms pea-size balls. Add 1/2 cup cold water, 1 tablespoon at a time until the dough comes together and forms a ball. If the dough feels dry, add 1-2 tablespoons additional water.
3. Turn the dough out onto a floured surface. Roll out into a 1/8-inch thickness. Cut the dough into rectangles, about 4 x 3 inches. Place a tablespoon of the chilled chocolate fudge on one half of the rectangles, leaving a 1/4 inch border. Brush the edges with the beaten egg. Lay the other half of the dough over the filling and seal the edges by crimping with the back of a fork. Repeat until you've used all the dough, you will have leftover fudge.
4. Place the pop tarts on parchment-lined baking sheets. Cover the baking sheets and place in the fridge for 1 hour or the freezer for 20 minutes.
5. Preheat the oven to 400 degrees F. Bake the pop tarts for 15-20 minutes. The pop tarts will still leak a little. Cool completely before frosting.
6. Meanwhile, make the frosting. In a medium bowl, whisk together the powdered sugar, cocoa powder, vanilla, and 3 tablespoons water until smooth. Stir in the melted chocolate. If your frosting is too thick, thin with 1-2 tablespoons additional water.
7. Spoon a thin layer of the frosting on top of the cooled pop-tarts. Allow frosting to harden 10 minutes. Sprinkle with coarse sugar or salt. Place on a baking sheet and allow the pop tarts to harden, uncovered, about 2 hours. Store in an airtight container for up to 3 days.
Recipe Notes
Crimping and Sealing the Pop Tarts: It's import to really seal the tarts well or your filling will leak out while baking. Using the beaten egg helps to seal the fudge inside.
For a Shinny, Glossy Frosting: Use 2 tablespoons meringue powder. In a medium bowl, using an electric mixer, whisk together the powdered sugar, meringue powder, cocoa powder, vanilla, and 3 tablespoons water for 7-10 minutes on medium speed, until smooth soft peaks form. Stir in the melted chocolate. If your frosting seems too thick, thin with 1-2 tablespoons additional water.
If you don't have a Food Processor: You can use use you fingers to mix the butter with the flour until the butter is pea sized. Slowly drizzle in the cold water as directed.

Best Friday post ever! I love pop-tarts! I’ve made them at home before and I too tried putting them in the toaster–never again. I find that just resting them on top of the toaster , icing side up, they get nice and warm without making a mess!

I just made them and they are very dry. Is there something you can suggest in helping me make mine more like yours. Mine were not dry at all, but it has been very moist were I live lately so I am sure that helped. To help moisten the crust add one tablespoon of water at a time until the dough feels moist and form a solid ball. Then roll the dough out between two sheets of parchment or wax paper with a little flour as possible. Just use enough flour to keep the dough from sticking. This should help a ton and I hope it works so much better for you! As for the fudge filling, I cannot believe your family did not like it! Whoa! Try it with all milk chocolate this time, hopefully that should do the trick! Glade you did like the frosting though!

I had the same issue as Amy. We found the dough really difficult to form and to roll out. We ended up adding quite a bit of water, one tbsp at a time just to get it to hold together. Once baked, the dough seemed off. The filling was phenomenal, but the dough was kind of dry and bland. Any thoughts?

Found your blog through pinterest and I must say this looks amazing. I definitely plan on making them. I cannot imagine they will last very long but I was wondering if you have any storage suggestions. I have never made homemade pop-tarts ( I have seen some recipes for strawberry ones but I think I have been holding out for a fudge recipe) so I do not really what would be best.

I stored mine in a sealed container in a single layer and they lasted over week (I made over three batches so I had so many). Not sure if they would last longer in the fridge, but you could try that too!

Okay- I admit that they’re not the ‘prettiest’, but that’s the best part! They’re obviously homemade and that’s what’s so great! You wouldn’t want them to all come out so uniform that they lose that rustic touch that tells you they weren’t made in a massive factory by some automated system!
Homemade is the way to go- and I’m sure it’s much, much cheaper! But those chocolate fudge poptarts are a weakness of mine sometimes. I don’t care for the edges that aren’t covered in the frosting or stuffed with filling (they get kind of dry and boring) but yours don’t look like they’d be boring at all!! I was really excited to try making these, but the dough just hated me!! I started out making it and it was just so dry it was pretty much just lumpy powder even with the water, so I added more, but it was then really lumpy and felt like chewing gum. :/ So I tried again and that one was also really dry, so I added more water, not as much as the first try, but this was still too dry and barely stuck together, but I went with it anyways. The fudge was AMAZING and I did not want to bother with the icing because I couldn’t deal with any more mess ups today, so I dipped them in the extra fudge, there was like half of it left!! The pop tart was doughy and had no flavour, just tasted like flour, not like chocolate. 🙁 Maybe I just have bad luck but this recipie was a disaster for me. D: Any ideas on how to make them better? I probably won’t try this one again, but if anyone else runs into these problems I’m sure they would like some help! >.< I ended up just putting the extra fudge in vanilla ice cream and made milk shakes. :3

I am so sorry you had such problems with the dough. Dough can be really tricky, especially if you live in a dry climate. I love in CO, so it is very dry. I am surprised your dough was too dry, are you sure you mixed the butter into the dough properly? Also, the dough can be a little dry, but it should roll out into sheet for you. It is really hard to tell what might be the problem without being right there with you. Again, so sorry. Glad you liked the filling though! 🙂
I was totally stoked take these, however it was a huge fuss and not fun 🙁 while making the dough, I added tablespoon by tablespoon of water being cautious but it turned out I needed a whole cup of water which seems like too much but it seemed to need every last drop. I actually tried two doughs repeating the process except sticking to only half a cup of water like said directions. It was the same flop as the first attempt, so I stuck with the first ball of dough. Anyway, the texture of it seemed funky and not right, grainy kind of, and while rolling out it was not at all like rolling out pie crusts. But maybe I’m just being ignorant here. It was not rolling out well at all for me. Anyway by the time they came out of the oven I decided not to frost them because of the hardships they were giving me. So I tried one- not like I wad hoping 🙁 the crust wasn’t very chocolaty and fun, it was like a bland bread. I’m sorry, I totally feel like a failure, and wish so bad mine turned out like yours because yours look amazing and obviously inspirational. With the way yours look I was expecting them to taste like bigger better classier poptarts. But they were more of like a sad unfantastic dried out bread, which is confusing because of how much butter and chocolate it takes. I might have to wait 7 months too before I powerhouse this recipe again :’-(

Wow! I recently started buying poptarts since my local supermarket stocked up on American goods, and my favourite are the chocolate fudge ones. Thank you for coming up with this recipe, I can actually make poptarts at home 😀
I just finished making these and they were awesome. The filling is great by itself. I sat and licked the bowl clean while they were baking. I didn’t make the icing for the top though because I had a lot of filling left over. I accidentally rolled the dough a bit too thick but I poured the leftover filling over the top and they were fine. I didn’t have any problems with the dough at all. I saw others commented their dough was dry but mine was great. I put all the ingredients in the food processor and the dough mixed up in a few minutes. I added water tsp by tsp instead of just adding 1/2 cup like the recipe. I might have put more than 1/2 cup in it. I recommend for others just add ice water 1 tsp at a time until it is moist enough it doesn’t crack. These poptarts were really tasty and I’ll definitely make these again. Once they cooled I put half of them in some freezer bags in packs of 2 and froze them. I don’t know how they’ll be after being frozen but I’m hoping they’ll be fine. They’ll be a nice chocolate fix for a rainy day.

I’m in Germany and weighed all the ingredients when I made the poptarts. Pastry and filling came out perfectly. I used a different icing, so I can’t give you any measurements for that, but here are the amounts in grams for pastry and filling:
Pastry: 420 g flour, 14 g cocoa, 12 g sugar, 170g butter, 120 ml water. I used a teaspoonfor the salt, because it’s such a small amount.
Filling: 30 g cocoa, 72 g brown sugar, 160 ml milk or cream, 168 g chocolate (I used Callebaut 35%), 28 g butter. Again, salt and vanilla were measured with a spoon.

Hi! I live in Ecuador and we cannot get poptarts here. My kids jumped for joy when i ound your recicpe! I just tried my hand at these with half hearted results though! Filling is awesome but had many of the same issue with the pastry, just didnt come out chocolaty enough. Do you think I can add more cocoa powder ( as i said..I live i Ecuador, land of chococlate but it seems the cocoa powder I used is not as potent!) The boys of the house had no complaints though!

chill these and make some really thick pie filling, or buy some, and make a thin layer in the middle of two about the same thickness as that then chill in the fridge then dip half in coating chocolate, let it set, then dip the other in half of a contrasting chocolate. hahahah omg

I have a theory regarding the differences in results between people. After trying the recipe myself i also found the dough to be horrendously dry. Living just a few hours from the coast in a fairly humid environment i found it impossible that the air could be drier than Colorado. But CO does have a very high elevation and i know elevation does things to baked goods so maybe that’s the cause of the discrepancy.
Anyway with a bit of research i was able to tweak the recipe for us ‘dry dough’ folk and it came out phenomenally. All it took was 1 egg blended together with 3 Tbsp milk to make the dough malleable. I also had a splash of vegetable oil from before i thought to add the egg, so 1-2 tsps of it won’t hurt anything.
Due to comments that the dough was bland i also added another 1 Tbsp of cocoa powder, and about an even amount of sugar and cocoa mix. Note that the dough was still only lightly flavored and semi-sweet. If you want it more like the stuff at the store you’ll need a lot more chocolate and sugar, maybe even going so far as to melt down some chocolate chips.
I should also note that i used dark chocolate instead of milk chocolate for the filling, and cut down the brown sugar to 1/4 cup. This gave the tarts a stronger chocolate flavor without so much sweetness. Kids might not enjoy them if they’ve ever had the packaged version before but as someone who doesn’t like too much sugar I thought they were amazing. And the leftover filling made a great dip 🙂 I nixed the frosting because i wanted to be able to toast them,

The concept of a homemade pop tart was intriguing. But for me, these were far more trouble than they were worth. While the filling on its own was good enough to be eaten with a spoon, I did not find that the overall end product was tasty enough to justify the amount of time and effort it took. I had high hopes, but I still prefer the store bought variety. Thank you in any case for sharing a recipe that you’re excited about with all of us. Perhaps others will enjoy it more than I did.

Can you clarify how much butter you put in the dough part? It says 1 1/2 cup sticks… is it 1 1/2 sticks or 1 and 1/2 cups?

The dough needed way more than 1/2 cup of water to come together and it was very hard to roll and handle once I finished adding liquid. I rolled the dough out to 1/8 of an inch but it took more than 10 minutes to cook in the oven. The filling is yummy but the flavor of the crust isn’t that nice.

I haven’t tired you recipe yet however while reading it feels like 3/4 cup butter is not enough for 3 1/2 cup flour. I guess you meant to say 1 1/2 cup butter and not sticks. That will also explain the dry texture people have issues with.
A typical pie crust uses 1 cup flour to 1/2 cup or 1/3 cup butter.
Hey Sam! This is the correct amount of butter. You need 2 sticks of butter which is equal to 1 cup or 16 tablespoons butter. If you prefer, you can us more butter to your liking. Made these last night, absolutely delish. I would update the recipe to say up to 1/2 cup ir 1/4-1/2 cup of water in the instructions . I found the dough to be OK after 1/4 of a cup, but second guessed myself and added a bit more since it didn’t seem right that i only needed half the amount written. I ended up having to add extra flour in order for the dough not to be too soft to roll out. Tastes good without the frosting if you prefer a less sweet version.

We only got 8 pop tarts, not 16? And I made sure we only rolled the dough to 1/8”? In the end who needs 16 pop tarts, that’s ok, but we had a ton of leftover filling. Still delicious!

These are AMAZING! Woah, woah, WOAH!! Such a decadent and delicous take on a poptart- like these way more ;-). The patience in allowing them to *fully* cool off before icing and post icing, and even enjoying, make a big difference to the final product. Also, found myself scouring the comments of the recipe because though I used generously, I still ended up with so much extra filling and frosting (recipe says there will be extra choc filling but didn’t mention if we’re to use it?), didn’t know what to do with all of it! Next time I’ll cut down the recipe for those parts. 🙂 This time to use the remainder of those, I made the recipe again, halfing everything and not using chocolate powder at all in the pastry dough (subbed more flour). Added in some almond extract the the dough and made almond flavored white pastry dough to go with the chocolate filling and frosting- YUM! Thanks so much for the recipe <3

These looked so fantastic I tried them today. This was out of my cooking norm – I’m not a baker – but they were a childhood favorite and I gave it a shot. All in all they were very good. I learned some tips that will help next time. You can easily half the fudge and frosting. I had so much of both left. I only got 6 total pop tarts (around the dimensions given) so I may double the dough next time. Also, the dough was so sticky after adding the water that I had to add a lot of flour to roll it and be able to work with it. All that said the results were yummy and I’m looking forward to trying the brown sugar!

Made these and the cinnamon Pop tarts last night for breakfast this morning. I could not get 16 out of the dough. I got 10 of these and 11 of the cinnamon. I know they weren’t all as thin as she said… Flavor was great and I thought the dough came together easy. I don’t have a large food processor so I just used my hands and I added ice water until it came together which was less than 1/2 c for me.

The fudge filling??…to DIE for!! The chocolate frosting??…SO good!! The dough??…I need help lol I’m relatively new to baking so I’m sure it is just me, but I could not get the dough to be flaky. :'( Now….my guess is that its a combination of possibly adding too much water to the dough ~and~ not baking for long enough ( I live in an apartment and the oven is pathetically weak, so I always have to bump the heat and the time to every recipe, but even doing that didn’t make my dough flake). These are TO DIE FOR. Fudgey, flakey, and delectable. There was definitely a surplus of filling and frosting, so if you want to use up all the leftovers, I would double the dough recipe.

Note: you will have to make two batches! The most decadent spot on, no wait, actually 100 times better than the real thing. I was a bit lazy to measure and cut so I used and extra large heart shaped cookie cutter and the results were amazing!

My daughter (8) and I were so excited to try these! They are delicious, and we ended up with enough fudge and icing to make another round. Similar to a few other recent commenters, there’s no way we could get 16 4×3 pop tarts…we got 6 whole ones at the most, 12 individual rectangles. What did we do wrong? With as labor intensive as they are (albeit fun), it’d be nice to get more out of them, or at least have a more accurate expectation on how many we’ll end up having. Thank you for a great recipe!

This is the first review I have ever written, and it’s because these are so dang good. Like blow your mind good. I usually think recipes that are copycats of some store bought item don’t taste like the real thing, and are definitely not as good. This recipe though is what it says. Hello just got finished with this awesome pop-tarts. While I’m not a huge fan of using semi-sweet chocolate chips it worked for this recipe. I did how ever use milk chocolate for the frosting. Allowing them to cool in the fridge for almost three hours stopped leaking completely. They aren’t very time consuming and require mostly repeat ingredients. I wasn’t able to get a food processor so I let the butter take the chill off then cut into smaller pieces. 7 out of 10 would make again

Second: These are the first poptarts I’ve ever made. My favorite flavors are the fudge and brown sugar cinnamon, which you have. The recipe was easy to follow and I had no trouble making the dough. However, my dough was a bit bland, but I realize I used unsalted butter (I bit a pinch of salt would have remedied this). The filling is like a truffle and I can’t stop eating it.
Have you ever used vodka in your dough (specifically pie)? It’s my new favorite trick, I wonder if it would work with this dough too.

Really delicious especially the fudgy filling! My dough ended up a bit too floury but everything else came together perfectly.
