Making Friday even sweeter with these Healthier Dark Chocolate Chunk Oatmeal Cookie Bars. These one-bowl homemade oatmeal cookie bars with dark chocolate chunks and a sprinkle of flaky sea salt are the perfect way to end the week. They’re super easy and made a touch healthier with a mix of whole grain oats, whole wheat flour, coconut or olive oil, and a reduced amount of sugar. But most importantly, everyone LOVES these bars! Plus, they’re pretty difficult to mess up…they always turn out GREAT.
Going back to my childhood roots with these oatmeal cookie bars. For any of you that know anything about my mom, you know that when my brothers and I were growing up, she’d have dessert on the table before dinner was even a thought. Her staples were chocolate chip cookies, special K-bars, chocolate cake, and her famous oatmeal chocolate chip cookies that she’s been making ever since her friend Lora gave her the recipe (before I was even born).
Oh her cookies. My memories of them are so fond and perfect. We’d always eat them a little warm and gooey right after baking and always with a cold glass of milk. Very classic, right? To this day, these are some of my favorite memories. Baking in the kitchen with mom and zero brothers around.
Fun fact? My purpose in life as a kid was to figure out a way to get mom all to myself without any of my five brothers. It was tricky, but when I made it happen I loved every minute of our one-on-one time.
Anyway, when my mom wasn’t feeling like baking her round chocolate cookies, she’d make oatmeal cookie bars. Her recipe is EASY and it’s the BEST. You simply cannot beat a one bowl, ten-minute prep, and pantry staple cookie bar.
Mom would make her oatmeal cookie bars once a week. And there were definitely many weeks she’d make them twice. When a recipe is as easy and as delicious as her bars, it becomes a staple in the kitchen. But here’s the truth. Over the years I’ve adapted her recipe, making small tweaks here and there to adjust them to be a little bit healthier and maybe even better?
Maybe…
It’s hard to beat an oatmeal cookie bar baked by my mom, but these healthier dark chocolate chunk oatmeal cookie bars come very, very close.
Here are the very simple details.
This recipe requires just one bowl and a spoon…no mixer. It’s completely no-fuss, and takes ten minutes to toss together. You can’t mess these bars up. They are practically foolproof.
In your mixing bowl combine all of the dry ingredients. Now, add all of the wet ingredients. Mix away until you have a crumbly dough. Stir in plenty fo dark chocolate chunks, then press the dough into a baking dish. Bake twenty minutes and sprinkle with flaky sea salt once you remove them from the oven.
Smell the wonderfulness? Do you see the melty chocolate?
I don’t love the word perfect, but these oatmeal cookies are pretty close to it.
A few notes and keys to success…
Normally I’m all for butter, but with this cookie recipe there is no sub…oil is what works best, and is a bit healthier too. Over the years I’ve discovered that you can use melted coconut (which I prefer) or extra virgin olive oil (which is also delicious but adds a little flavor to the cookie).
To make these a heartier cookie, I replaced half of the white flour with whole wheat flour and reduced the sugar by half. And of course, was sure to stir in plenty of antioxidant-rich dark chocolate.
Oh, and you can’t forget a nice dusting of flaky sea salt. You don’t have to, but it sure is good…
One thing I do want to note is that these cookie bars are crumbly. It’s just the way they are, and it’s apart of what makes them delicious. So embrace the crumbly cookie bar. Promise you, it’s so good.
What I love about these cookies is that they’re so easy to make. They require no chilling and truly take just thirty minutes from start to finish. I almost always have these ingredients on hand. So when it’s Friday night and the urge for a delicious yet slightly healthier chocolatey cookie comes on? These cookies are always what I bake. Always.
They’re just perfectly crisp on the edges but soft and gooey in the middle. The best kind of cookie.
Bake these tonight, or sometime this weekend. Then make them again whenever you’re craving something sweet. Perfect for any time of the year bar, and such a great staple recipe. Hope you ENJOY!

Healthier Dark Chocolate Chunk Oatmeal Cookie Bars
Make your weekend even sweeter with these simple Oatmeal Cookie Bars...requires no chilling and made with pantry staples in only 30 mins!
Ingredients
- 2 1/2 cups old fashioned oats
- 1 cup all-purpose flour
- 1 cup white whole wheat or whole wheat pastry flour
- 1/2-3/4 cup light brown sugar, us more for a sweeter cookie (I use only 1/2 cup)
- 1/4-1/2 cup granulated sugar, us more for a sweeter cookie (I use only 1/4 cup)
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup melted coconut oil (see notes)
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 1/2 cups dark chocolate chunks
Instructions

1. Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish with butter or line with parchment paper.
2. In a large mixing bowl or the bowl of a stand mixer, mix the oatmeal, flour, whole wheat flour brown sugar, granulated sugar, baking soda, salt, coconut oil, eggs, and vanilla. Beat until the dough is moist and all the ingredients are combined. The dough will be crumbly. Mix in the chocolate chunks.
3. Press the dough into the prepared baking dish. It will seem crumbly. Transfer to the oven and bake 18-20 minutes or until the edges are set and the bars are golden. Sprinkle with flaky salt (if desired). Let cool and then cut into bars.
Recipe Notes
To Make Gluten Free: Use an equal amount of your favorite gluten free flour blend in place of the all-purpose flour and whole wheat flour. I recommend Cup4Cup gluten free flour.
To Replace Coconut Oil: use an equal amount of olive oil, melted butter, or canola oil.
Storing: these cookies keep well for 3-4 days at room temperature.

I feel like this title is slightly misleading. “No white sugar”. Brown sugar is *literally* just white sugar mixed with molasses. For a healthier version try raw cane sugar, or coconut sugar.

Great recipe, but I hate to tell you this…brown sugar is just as unhealthy as regular sugar. It’s not actually raw sugar. They add molasses back into it. Sugar by the Cane raw sugar is actually a healthier choice.

I actually know this, but I just prefer the taste of brown sugar. I am calling these healthier because I reduced the original amount of sugar by 75 percent (there was SO much sugar in the original recipe!), swapped in whole wheat flour, dark chocolate and coconut oil. I do realized they may not be the healthiest bar around, but they are an improved one! I will have to try cane raw sugar though, that sounds like a great swap!!

OMG! I made these and the whole family loves them. 2 months ago my son was diagnosed with type 1 diabetes and we have to watch his sugar and carb intake. I have been trying to be mother of the year baking low carb and low sugar snacks for him. He has told me he doesn’t like anything I have made. So I saw this recipie and thought… YUM!
And so I made it. However, I found that it wasnt sweet enough, which was odd – I’d actually put extra sugar in already. Our chocolate wasnt that dark, only 62%. And it was definitely mixed through properly.
However, I didn’t want anything to go to waste. More than that, actually – I wanted to save it! So I added some golden syrup and coconut (just cause I love coconut and chocolate as a combo), as well as a little bit more of the brown sugar. After stirring it through, I put it in the oven again for a few more minutes. Luckily, it worked! The only difference was that the mixture was a lot darker, not because of being overcooked but because the chocolate had melted during the first bake (yum) so then some of the chocolate got stirred through the mixture.
Just curious, did anyone else find that it wasnt quite sweet enough?

These were incredibly easy to make, I just tossed everything in my stand mixer! I halved the recipe and used an 8×8 pan, as well as 85% cocoa Lindt chocolate and I added walnuts. They were deliciously chewy and sweet and crunchy and I ate about half the pan myself! I don’t think I would gift these to anyone because of how crumby it was, but it is definitely a make-again for my family!

So I was thinking about making these and was debating if I should add some peanut butter chips and or raisins. Also thinking about using honey instead of brown sugar and all whole wheat flour, what do you think?
Hmmm…. Yes to the peanut butter chips and to the all whole wheat flour, but I am not sure about the honey. I love the idea of using all honey, but I think it will change the consistency and texture of the bars. Honestly, I think it would become more of a granola than a cookie. The dough would be too wet and would not be able to bake up properly. Also, if you do use all whole wheat flour the bars will be a little more dense and a lot more filling as well, but I would think still delicious!

I tried the canola oil swap because I didn’t have coconut oil on hand; they tasted amazing but were very crumbly, like I couldnt pick one up without it breaking. Maybe canola oil doesnt bind the bars as well as coconut oil does, however they tasted too good not to try again!
Generally, no matter what oil you use these are very crumbly bars. Most of the time we eat them with a fort, but we the love the crumbly texture!! Thanks so much for trying them and I am glad you like them!
I hate to rain on everyone’s parade, and although I can see that the author is being tongue-in-cheek, some of the commenter’s haven’t grasped that these are in no way healthy and that’s fairly worrying.
First of all, you need to compare the dark chocolate you buy with a common milk choc in terms of sugar content. You would be surprised but many dark chocolates have just as much sugar in them and milk ones – just less cocoa butter etc.
Secondly, coconut oil is not healthy in these doses. It’s still a saturated fat at the end of the day. Proportionately the amount of oil in a couple of these squares is over your daily saturated fat limit if you’re a lady 200 (oil) + 40 (choc) / 9 = 26 (your daily limit is 20)
I’m not having a go, I’m just saying that you need to sit down and use a bit of maths to decide if something is actually in any way healthy.

I do realize that these may not be the healthiest dessert bars around, but they are much healthier than my original recipe. I am I no way trying to say that these are health food, only just healthier and people can decide wether or not they are healthy enough for them and their families.
Also the dark chocolate I used for these was pure dark chocolate and as for the coconut oil, I have read many great things about its health benefits.

These are really good. They are a healthier option. I definitely should have added up the calories before I made these. I did make some substitutes right off the back. I used 1/2 cup of brown sugar, 1/2 cup of unsweetened applesauce. 1 cup of dark chocolate 1 1/2 cup of wheat flour. The oil is what really got me. I agree coconut oil has healthy benefits. But it is way to much. I am going to research how to minimize that and it should be a great recipe.
So I did a little research…you can also substitute applesauce for oil.
So i am going to do half the oil and half applesauce next time. See how it goes.

I asked my husband to make these for me last week so we could take them to friends. He accidentally left out 1 cup of whole wheat flour. They came out perfect – soft, chewy, and stayed together. I made them today using 1 cup of white and 1 cup of whole wheat flour (per the recipe). They are still delicious, but very crumbly. I think I’ll make these with only 1 cup of flour in the future! Thanks for a delicious recipe. My family loves these and they are safe for my son who has severe peanut and tree nut allergies!

I actually measure before I melt it, so I stuff in a glass measuring cup and then melt it. It normally comes out to the same measurement every time. Sorry if that was confusing!

I saw this recipe over the weekend while my husband and I were in a cafe waiting for the car to have its MOT. I only had to show my husband and he remembered- when i asked him the following evening if he wanted me to make anything ‘tasty’ (code for cakes treats muffins… basically something thats not a balanced meal!) and he said ‘oh how about those chocolate thingies you showed me the other day’…. so i managed to get the ingredients converted (http://www.onlineconversion.com/weight_volume_cooking.htm) to UK grams and ive made them! wow- they are delicious. i think my baking tray was a little shorter as they came out quite thick, but they were cooked enough inside. I WILL be making them again, but think i will make them a bit thinner. They taste great with a cup of tea!

I would not really recommend doing that. You could try replacing half the oil with bananas, but I think the bars will become cakey. Let me know if you have any other questions and I hope you love these!

You could omit the sugar and integrate certain substitutes such as honey (considered a “superfood”), which still contains fructose; but there’s actual nutritional value in honey and antioxidants. You could also add in fruits or dates for natural sweetness. That’s what I would do, anyway. Other than the sugar and all-purpose flour, it’s pretty solid. I appreciate the recipe as a base, I’ll make my own adjustments as needed. This should make a good post-workout snack after I add some protein powder and it’s a good way to integrate oats into my diet.

I just made these and I was totally disappointed because they were crumbly! The batter didn’t stick together after mixing it but I thought it would melt together in the baking process. I used whole wheat flour, not white whole wheat flour and not the pastry whole wheat flour and I used canola oil instead of coconut oil but other than that I followed the recipe exactly. I guess I am worse than idiot.
Hey Jerri, you are not an idiot. These bars are just crumbly bars, but they are meant to be. If you do not like crumbly bars than these are not for you, but we really love them. The crumbly factor makes them different and in my families opinion delicious.

In the instructions, you said the dough should mix together and appear oily. Mine was not sticking together at all and didn’t look oily. Should I have added more oil or another egg?

OK I have made these several times now and I absolutely love them! They are so easy and the dark chocolate is amazing with the oatmeal. I just did a blog post on them. They don’t look as yummy as yours but they still taste so good! Next time I’m definitely adding more dark chocolate.
These are fantastic. I actually substituted some almond meal and coconut flour for some of the white flour and used a 5 grain mix rather than just oats. My picky daughter LOVES them! And they keep so well! As good on day 5 as on day 2 (we actually liked them best after they sat a bit. THANKS!!

These are amazing. They have been my go-to cookie bar recipe for a while and now that I’m no longer eating dairy, I’ll be making these even more!
My method for preventing my granola bars from being too crumbly works pretty well for these. Just lay a sheet of foil on top of the dough in the pan and push down really, really hard so that the dough is packed as tightly as possible. Cuts down on a lot of the crumbliness!

Also, I agree with commenters that have said they are better the next day. For most cookies and cookie bars I like them warm and gooey but these actually taste SO much better once they’ve cooled completely. Next day=best!

I make these all the time to have with my coffee in the am. I reduce the brown sugar to 3/4 c., and you can’t tell the difference! May try reducing the sugar a little more..Sometimes I top with walnuts before baking! Also yummy!! Great, versatile recipe. Thanks:).

Hi! I made this earlier today, and made some substitutions (sunflower oil, flaxseed, all whole wheat flour, semi sweet choc chips) and additions (chia seed). I think I over baked, especially since I put them in muffin tins. Also smashed the dough in to be less crumbly as some commenters mentioned theirs to be crumbly. I love the taste, but prefer them to be a little more doughy, just my taste. I’m not an avid baker and don’t know if I should increase oil/applesauce/banana or decrease oats… What should I do? I’ll be making them again and experimenting with measurements.

For the people who wanted these heaven bars to be a little healthier, I just made them and substituted apple sauce for the oil. You can also change it to all whole wheat flour and substitute half of the sugar for honey. But these are great the way they are, and if you make the changes they won’t be quite the same. 🙂

I made these this afternoon and they are delicious! So easy and quick. I love the one bowl. I did make a few changes: I used 1/2 coconut oil & 1/2 to 3/4 cup peanut butter(natural) and 1/2 cup brown sugar with about 1/4 cup sugar free syrup, chopped walnuts and dark chocolate chips. I didn’t have the chunks. Oh yes, I used a grated apple and enough buttermilk to get it to combine better. Didn’t overcook them either.

Made these tonight for a Fundraiser and my son and I were really disappointed that we only brought back home 4 tiny bars. I always make the first batch exactly like recipe before I decide to substitute/add/delete ingredients. Wouldn’t change them at all. As for healthy, maybe not but found them to be be satisfying and filling. Thanks! Oh, even had a few parents thank me for making them because they remembered their mothers making them and I am sure it wasn’t with the healthier substitutions!

I made these with all whole wheat flour and coconut sugar and they were yummy! I will be making them again! I would suggest to change the title though. These are not healthy. They are HEALTHIER and are a great option for your sweet tooth. But in reading the comments, people are believing the truly are healthy and good for you. Sugar and white flour are considered very unhealthy, so the title is misleading.

Desperate for chocolate I made these but with semisweet as it was all I had on hand. Flavor still great, but my chips were dry and crumbly instead of melting. Any idea why? So bummed I don’t have the gooey melty chocolate. Otherwise delish!

I read the comments before making these, and I wanted them to hold together to be portable in my husband’s lunch box, so I decreased the AP flour by 1/4 cup. I also used half coconut and half canola, just because it’s what I had. These are great! I made them in muffin cups, and it made exactly 12 firmly packed in muffins. They stay together really well. A bit crumbly when eating, but in a good way! Thanks! This is a recipe I’ll make again and again.
I made these and omg they are so yummy! I didn’t have the size pan you recommended though and just used a square one so they were a little thicker but they came out perfect still!

Hi! Made these a couple nights ago. Kept the ingred list the same…except I used mini semisweet choc chips because that’s what I had and I just mixed into the dough and patted into the pan. Made these yesterday. The dough came out very dry and the bars ended up dry as well. I don’t know if it was the flour I used or the way I measured the coconut oil, but they were not moist at all. Maybe clarify whether the coconut oil is measured before or after melting? They also had no flavor. But thank you for sharing your recipe.

Quick, easy, and a healthier recipe than most chocolate chip cookie bars, but I found it too dry. Next time I am going to reduce the oats from 2 1/2 to 2 cups and try it that way. It is tasty so I will keep tweaking it until it is the consistency we like. Thank you!

Love the recipe and we have made them several times with great success. But last time I made them, I tried to double the batch and realized that I had forgotten to add the baking soda. So I added the baking soda right at the end, and…well, they didn’t exactly turn out as we had hoped. They were very crumbly. Not 100% idiot proof ?.

The recipe states 1 cup of white whole wheat flour or whole wheat pastry flour. Is this supposed to be 1 cup of white flour AND 1 cup of whole wheat flour? I used one cup of white flour and seemed like dough was very sticky, hard to spread and too little for a 9x 13.

Why do you think coconut oil is a healthy oil? It is not – any of the tropical oils are high in saturated fats. According to Dr Lichtenstein of Tufts University: “there’s virtually no data to support the hype”.

Alright…. these have fabulous flavor!!! I use my vanilla infused salts which adds additional vanilla flavor. I can’t imagine my life without Half Baked Harvest… we have been making everything so far!!! These bars are fabulous and they are crumbly for sure… I am probably going to follow one of the comments and decrease the flour to make them more bar like. Will definitely make! I saw your story making these and I had to have them immediately! How did you know I’d been craving chocolate hardcore but was still holding out for the perfect healthy(ish) hearty cookie recipe to bake? In my opinion, the best kinds of cookies have oats in them. These were just as easy as you said they’d be (I don’t have a mixer of any kind, so that can sometimes be the obstacle for me) and they were done before I knew it! The coconut oil really complements the flavors perfectly, and that little bit of salt is the perfect contrast to all that gooey dark chocolate (I probably used closer to 1.75 cups of chocolate chunks – 100% intentional). I’ll definitely be making these again! Your recipes have seriously been getting me through quarantine – no exaggeration! Thank you!!

Made these today. Result was quite lovely. Very easy recipe to whip up quickly. Used the lower sugar amounts listed and grape seed oil in place of coconut oil. Am thinking I will add walnuts next time…just because I love nuts in my chocolate chip cookies 😄

My sister and I just made these this morning for dessert tonight. Our dad loves oatmeal cookies so we wanted to surprise him with something fun. Let me tell you, WOW. They are so good. These were great! I had to make a few adjustments based on what I had. And I halved the recipe as my husband doesn’t eat sweets so….they are ALL MINE (used 8×8 and baked for about 5 mins less I think)! I added walnuts and coconut flakes. RECOMMEND!
I only used all purpose flour, did half coconut oil/half butter (I was almost out of oil) and used all white sugar with about a teaspoon of molasses (out of brown sugar). They came out great. I pretend that they are healthy enough for breakfast too!

I’ve been trying to find “healthy” dessert options to bake during quarantine, and loved these! I ended up using only 1/2 cup of oil and cut down the sugar a bit and they still turned out great. I also added a splash of milk to help bring the dough together since I cut down some of the wet ingredients.

Another fabulous HBH recipe! It was like a monsoon here yesterday so I was in the baking mood. First of all, these were so easy to make with ingredients I always have on hand. I love that I only had one mixing bowl to wash! And they turned out super tasty. I used the lower sugar amounts like you did and I find them perfect. They are not decadent like your browned butter chocolate chip cookies that I love making, but this is not a criticism. It means I won’t stand at the kitchen counter stuffing one after another in my mouth as my anxiety rises over this pandemic! Thank you for your recipes. I have everything ready to go to make your Caprese Farro salad this weekend. I love any recipe with Farro! And I pretty much love any recipe you create!

These turned out quite well! I edited the recipe just a bit to better suit my dietary needs. I replaced the eggs with flax “eggs”; I used avocado oil; and used sprouted whole wheat flour instead of AP flour and pastry flour. I ended up having to add a little bit more liquid to the recipe but it worked out well despite my substitutions. Overall, absolutely delicious — would make again!

SOO GOOD. Truth be told I used the max amount of sugar, subbed canola oil, and all AP flour so I probably can’t call these healthy lol but they are absolutely delicious, easy to make, and are still holding up well after 2 days. I accidentally underbaked them a tad so they were pretty gooey but that was not a problem for me 😉 my husband said I should make these “over and over”. Thank you!!

Absolutely delicious! I did the lightest sugar version & threw in some toasted coconut because I only had olive oil and wanted some coconut in there! So darn good. As mentioned they are very crumbly- like fall apart in your hand so don’t over cook.

My husband ate the last of these bars last night, and I’m already baking another batch now — we couldn’t go 24 hours without them in the house! The chocolate — i used 75% dark — is a lot, and perfect, the bars have a rustic quality to them with the oats, and using the very smallest amounts of sugar, they’re not too sweet, but balanced. LOVE.

3.5 stars – these weren’t my favorite coming right out of the oven and I thought the dark chocolate was too bitter for my taste. But, we ate some the next day and after it had set a bit and were a little chilled (they were in our picnic cooler) and they were really delicious.

My only question is about the storage instructions. How did anyone even find OUT these are still good after 4 days? Did a recipe tester forget they were in the house? I’ve made this recipe twice: once following the recipe exactly and once with 2 cups of oats instead of 2.5. I thought the cookie bars turned out absolutely perfect with only 2 cups of oats! They were great the first time too, but a bit more dry. Great recipe and I don’t feel too guilty eating joes than one. 🙂

Just made a half batch of this and it turned out perfectly. Used less sugar so I could have it as a coffee snack. Coconut flavor is a bit strong for me but I think it depends on the type of Coconut oil used. I do miss that buttery flavor but understand how it wouldn’t work as well! So so so easy and quick!!!

I made these last night. They are so quick and easy, really good recipe to have on hand when you need a last minute dessert. I didn’t have pastry flour, and most stores are sold out right now so I did 2 C AP flour – they do come out kind of dry doing this so just a heads up. They still taste good but the pastry flour really is necessary.

These Dark Chocolate Chunk Oatmeal Cookie Bars are insanely good. I had never used coconut oil before this recipe, and so initially I used butter, my preferred ‘fat’ for baking. They were Ok but I could see the texture looked different from your version and the flavor was just Ok. I then tried Canola oil which I also had on hand. I could taste the flavor of the oil, which I did not like at all. I realized then that I needed to learn about coconut oil and how to use it so I could make the recipe as you shared. (Each of my test batches were 1/2 the recipe, and I prefer an 8 inch square pan as I like a thicker bar.) I’m SO glad that this recipe pushed me into using coconut oil. They are moist and chewy and ‘chocolatey’ and flavorful (with no coconut taste)! I use the low end sugar amounts that you provide, otherwise follow the recipe as stated and it’s a WINNER. I’m a big baker and I’ve made this recipe a ton in recent weeks. Thankfully I have discipline to limit my daily consumption! Thank you!!

The sugars made it too sweet and I used maybe 1/4 less than the recipe. So def go with the 1/2 and 1/4 or even 1/4 and 1/4 because depending on the chocolate used, that’s enough for me. The coconut oil is great but it always makes an oily product. It was a good chocolate craving fix but wanted more of a crunchy bar than a cookie.

Loved these. Didn’t have any whole wheat flour, and was down to the last cup of all purpose flour, so used that plus almond flour. Probably a little less crumbly than using the wheat flour, but delish. Husband & 14 year old probably won’t think they’re sweet enough, (won’t keep them from eating them) but I thought they were perfect with the lesser amounts of sugar.

Loved this recipe because it was only one dirty bowl and I had dessert 30 minutes later! Mine came out a little drier than I expected, though. The only difference I can think of that might have caused this is I used whole wheat flour not whole wheat “pastry” flour. And, only about 1/2 cup chocolate chunks cause that’s all I had. Baked for 18 min in a 9×13 glass dish. Do you think any of these could have given me a drier cookie?

Tieghan, I was drawn to this recipe because I love to make cookies and bars. I followed your recipe but used regular whole wheat flour instead of white whole wheat flour, only because that is what I had. They went together well and I baked as directed.
The bars a a bit crumbly around the cut edges but they are soft and have wonderful oatmeal flavor. My husband and I are enjoying them on this cooler evening with a cup of tea. Now to make more for the other members of our family!

These are legit ridiculously delicious.
Just don’t do what I did the first time I made them — I scooped in more coconut oil than what might be necessary in a pourable measuring cup…then I forgot to pour off the extra, so mine were not crumbly like the recipe implied (didn’t clue me in yet) and made going #2 very, very easy (finally clued in to my mistake…). I made them again with the correct amount of coconut oil and still damn delicious without the colonic. lol.

I have made these many times and they never disappoint. SO DELCIOUS! I usually eat them for breakfast with my morning coffee – a perfect combination. I love that these are relatively low in sugar (I only use 1/2-3/4 cup between the brown and white sugars), yet are perfectly sweet. My kids also love these as an after school lunch treat. Went back and re-read, didn’t miss any steps and followed instructions to a T. Not really a cookie-like texture like anticipated at all and they were difficult to slice and package. I like the idea of oatmeal chocolate chip bars but this wasn’t it :-/

I cooked down 3 cups of cherries and I added crushed cherries to the mixture and cut out the white sugar. I added a little more vanilla and used the juice from cherries that I cooked down in its place. I topped it with some of the crushed cherries mixed with melted chocolate. It worked perfect. Great breakfast bar!

I just made these and I’m not quite sure where I went wrong. They are very dry. They seem like the taste would be there but too dry. I used a cup of whole wheat flour and a cup of pastry flour. Wasn’t entirely sure as the instructions were confusing. One area said 1 cup all purpose flour and 1 cup pastry flour then in another area I seen 1 cup all purpose, and 1 cup whole wheat so I was really unsure

Hey! I just made these using extra virgin olive oil. The olive oil has a very distinct taste. I would recommend using coconut oil or olive oil instead. Overall i love this recipe + its all in one bowl! Thanks Heaps

Baked these bars today to freeze and have for when I go into labour! Bonus all the oats for milk production!
They are amazing, perfect amount of moist and chocolatey. Slightly crumbly, but that was noted in the recipe and is normal 🙂 I did the lower amounts of sugar, and baked for 18 minutes.
