7 Layer Oatmeal Chocolate Chip Cookie Bars
Yesterday was all about the salad. It was healthy and delicious.
Today?
We’re balancing things out a bit. It’s all about the balance……..Right?Balance is a good thing.
And really every salad NEEDS to be finished off with dessert.
Preferably a gooey, chocolatey, oh so indulgent one.
Like these bars.
7 Layer Oatmeal Chocolate Chip Cookie Bars. Yeah, I am totally serious. No messing around. That would be just cruel.
It is no secret that I have been pretty obsessed with coconut. Examples? Toasted coconut caramel cupcakes, dark chocolate coconut mudslide cookie, Whole Wheat Chocolate Chip Banana Bread Pancakes with a Vanilla Coconut Glaze. Trust me this is just the beginning, coconut everything is pretty much running through my head at all times. But for your sake, I’ll try to space um out fo ya!
When I saw that traditional 7 Layer Bars have a whole layer of coconut I pretty much jumped with excitement. I would have done a little dance, but there were people around. Way too many people for my liking.
Alright, so here is how these go down.
I am not one for traditional. I like to play with things, switch um up, give them a whole new look. Traditional 7 layers bars just sound way too predictable and well, just plain boring. I mean don’t get me wrong, I am sure they are delicious, but these are better. Way better.
Instead of a graham cracker base I did an oatmeal chocolate chip cookie base. It is PERFECT. So goood, so much better than graham crackers. Then I did layers of coconut, semi-sweet chocolate, butterscotch, dark chocolate, sweetened condensed milk, chopped cashews and then as a finishing touch, a drizzle of melted butterscotch and chocolate. They’re gooey, coconuty, doughy, crunchy, chocolatey and all in one bar! It’s is just killer.

Oatmeal Chocolate Chip Cookie 7 Layer Bars

They're kind of like an oatmeal chocolate chip cookie bar on steroids. Yeah, on steroids. It's just awesome.
Ingredients
Oatmeal Cookie Crust
- 1 1/4 cup old fashioned oatmeal
- 1 cup all-purpose flour
- 1/4 light brown sugar
- 1/4 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup canola oil
- 1 egg
- 2 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
Layers
- 1 1/3 cups shredded coconut
- 1/2 cup semi sweet chocolate chips
- 1/2 cup dark dark chocolate chips or milk
- 1 cup butterscotch chips
- 1 (14 ounce) can sweetened condensed milk
- 1 cup finely chopped cashews peanuts would be good too
- melted chocolate and butterscotch chips for drizzling (optional)
Instructions

Preheat the oven to 350 degrees. Grease a 9x13 inch pyrex pan (you can also line the pan with parchment instead).

In a medium size mixing bowl combine the oatmeal, flour, brown sugar, sugar, baking soda, salt, egg, canola oil and vanilla. Using a mixing spoon, mix until a dough forms. The dough will be crumbly, just keep mixing until all the ingredients are combined. Stir in 1/2 cup to 3/4 cup chocolate chips (I used 3/4 cup, but we like it real chocolaty around here). Press the dough into the prepared pyrex pan. Make sure the chocolate does not get clumped into one spot. Place in the oven and bake for five minutes.

Remove from the oven and spread the coconut over the top in an even layer. Next layer the semi-sweet chocolate chips, butterscotch chips and dark chocolate chips. Evenly drizzle the sweetened condensed milk all over the top. Sprinkle on the chopped cashews.

Place back in the oven for 25 minutes or until the top has turned a golden brown color. Remove from the oven and if desired drizzle the bars with melted butterscotch and chocolate chips. Allow the bars to cool at room temperature for at least two hours before cutting.
Oh yeah, balance is definitely a good thing!

Ok…WOW!! Tryin’ them out on some ladies at my daughter’s school tomorrow. :)))) No butterscotch chips but do have butterscotch/caramel dip so may just drizzle that on top.. mmmmmm.
found some butterscotch chips in the freezer…YAY! And did try it with coconut oil instead of canola and no nuts (‘cuz I didn’t have any)..we’ll see how it turns out. It smells soooo good in my house right now! Bet it’s filling my sleeping kiddos heads with happy thoughts. 🙂

Ok, the ladies at school LOVED THEM! 🙂 they were a huge hit. I however wasn’t too excited with the butterscotch (not a huge fan anyways…) but I LOVED the gooey yumminess of the ‘cookie crust’…mmmmm!!! so I will be making them again but just with chocolate chips (milk and semi-sweet…not dark). Ah Sally! You are to nice! I have to say though, using an oatmeal cookies base is so yummy! It really puts the bars over the top! Although your snickers 7 Layer bars are pretty over the top as well!!! Hehe. I guess we love over the top bars!
I’ve made Magic Cookie Bars since I was your age. But, I will make your new-and-improved version next time. I’m thinking my work family would LOVE to try these! The old version is great for a make ahead, or even to put in the freezer, and that would also apply to your recipe.
Additionally, I agree, Government Camp, Oregon is no place to be in the summer. We live on the Central Oregon Coast, and although, our weather is not great, it’s better than Mt. Hood. And, we have a ready supply of fresh seafood that any foodie would enjoy. I hope you will head west the next time you’re in Oregon.

I love 7 layer bars and yes, the more coconut the better. The oatmeal cookie base instead of crackers BRILLIANT!!! And since we’re talking oatmeal, totally acceptable to eat a few of these for breakfast. It’s oatmeal after all 🙂

I came across your website looking for a 7-layer bar. These are excellent! They’re not the usual ones you find out there which is probably why this recipe looked interesting. The oatmeal crust makes them exceptionally delicious and decadent. I used a mixture of semi-sweet, dark, and white chocolate and butterscotch. Baking time is right-on. I’m bringing these to my church’s Polish Festival on Sunday for the bake table. I’ll be putting two bars in a small cellophane-type treat bags and tie with red and white ribbons (Polish colors). This is a keeper of a recipe! Thanks Tieghan!

Delicious! I was so glad to find an alternative to the graham cracker crust (I’m not a huge fan). I did find that my oatmeal cookie base was a little “oily” and I ended up mopping some of it up with a paper towel after I pressed it into the pan. I might decrease it to 1/3 cup next time. But they were truly tasty and devoured quickly at work. Thanks!

I’m a little confused on the sweetened condensed milk. It says 1oz can and then has a 14 at the end of that line. Am I supposed to use a 14oz can or just 1oz?

Tieghan, this is an older recipe and there don’t seem to be any comments from people who have actually made this. I’ve made this DOZENS of times. I bring them to all get togethers and my friends call them “crack bars.” I don’t like coconut in desserts (save that for curry) so I omit that, and I leave out any nuts on top. I do find that they are super gooey so they are best stored in and served right out of the fridge but ohhhhh man, they are so good! So good that when we are having an Open House at our place in a few weeks instead of a rehearsal dinner before our wedding, I’m serving them then, too!
