Healthy Chipotle Chicken Sweet Potato Skins.
Keeping things comforting, but healthy with my Healthy Chipotle Chicken Sweet Potato Skins. Kind of like cheesy nachos, but instead of chips, we’re substituting crisp sweet potatoes skins…so better! Made simply with sweet potatoes, chicken, chipotle chilies, spices, a touch of lime, spinach, and a generous amount of sharp cheddar cheese. Each homemade, oven-baked, sweet potato skin is delicious…and pretty healthy too. Think crisp on the outside, soft on the inside. Stuffed with sweet and spicy chicken that’s full of protein and perfectly balanced. Each sweet potato skin makes for the perfect weeknight dinner that easily doubles as lunch the next day.
What I love so much about fall food is that it’s comforting, cozy, warming, and typically on the heartier side. Don’t get me wrong, I LOVE a good salad (though I do prefer warm, roasted salads over cold salads). But I think it’s obvious that I really shine when it comes to cozy, comfort food. In fact, I want one of my upcoming cookbook titles to be Half Baked Harvest Cozy. What do you think…cookbook #3…before cookbook #2 even rolls out? Yeah, I have issues.
Point is, I love cozy recipes. I even love the word cozy. And I really just love fall food.
BUT, sometimes fall recipes can get to be a bit on the heavy side. I prefer to lighten them up a little and get back to a more balanced, healthy dinner. To me, that still includes cheese, but also includes plenty of vegetables, lean chicken, and flavorful spices to keep us warm and our metabolism running quickly.
Enter in my go-to, healthy yet comforting, fall dinner – Healthy Chipotle Chicken Sweet Potato Skins
These are SO GOOD.
I’ve been making a version of these for years and years, but this year I added a few things. Things like crunchy chickpeas (because I’m obsessed with them), a touch of onion, and I also kicked up the spices.
I could not love these skins more. And? They are so simple and easy to make. They do take some time, because baking sweet potatoes just takes patience. But all the prep and hands-on time is under 20 minutes. Easy.
To make these sweet potato skins
Start with the sweet potatoes themselves. I like to bake the sweet potato whole, directly on the oven grates. Cooking the potatoes this way allows them to soften in the center, but also keeps the skins from getting soggy.
While the skins are baking, also bake the chicken and the chickpeas together in the same baking dish. As the chicken cooks, the chickpeas crisp. I do want to note two things here…
First, if you don’t like chickpeas, you can very easily omit these from the recipe entirely. Most of my family really dislikes any kind of bean, so I never even add the chickpeas when they’re around.
Second, if you are vegetarian, you can leave out the chicken and use double the amount of chickpeas. The cooking times will be the same. Also? Black beans would be equally delicious, but they will not crisp like chickpeas.
Now, and this is key, the chicken is where all the flavor is at. It’s seasoned with chipotle chiles, garlic, and spices like oregano, cumin, and chili powder. I also threw in some lime zest for a little citrus zing.
It’s that sweet and spicy combo that I love so much.
During the last few minutes of cooking, toss some baby spinach in with the chicken. I love the added greens and the spinach pairs well with the flavors happening in these sweet potato skins.
Next, scoop some of the sweet potato flesh out of the skin. Bake another 10 minutes until the skins become crisp, and then stuff the chicken into the sweet potatoes. Then add as little or as much sharp cheddar cheese as you’d like and bake. About 10 or so minutes later your kitchen will smell heavenly and your skins will be ready for eating. The smell of sweet potatoes baking is truly the most comforting smell and so very “fall”.
These are best enjoyed warm. Preferably with cilantro and a dollop of plain Greek yogurt. Super simple, but so delicious. Between the sweet potatoes and the cheese, this is one of the coziest fall dinners. And it just so happens to be healthy, score!

These skins are great any night of the week. But they feel especially great for Thursday, Sunday…or Monday night football.
And the biggest bonus…the leftovers. They make for such a delicious lunch the following day.

Healthy Chipotle Chicken Sweet Potato Skins

Ingredients
- 3 medium sweet potatoes
- 1 pound boneless skinless chicken breasts
- 1 can (14 ounce) chickpeas, drained (optional)
- 4 tablespoons extra virgin olive oil
- 4 cloves garlic, minced or grated
- 2-3 chipotle chilies in adobo, chopped (more or less, to your taste)
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- zest of 1 lime
- kosher salt and black pepper
- 2 cups baby spinach, roughly chopped
- 1 cup shredded white cheddar cheese
- 1/4 cup fresh cilantro, chopped
Instructions
-
1. Preheat the oven to 425 degrees F. Prick the sweet potatoes all over with a fork. Bake directly on the rack until tender, 50-60 minutes. Allow to cool.
2. At the same time, cook the chicken. Place the chicken, and chickpeas - if using, in a baking dish. Add the olive oil, garlic, chipotle chiles, chili powder, onion powder, oregano, cumin, lime zest, and a pinch each of salt and pepper, gently toss to coat. Transfer to the oven and bake 20-25 minutes, until the chicken is cooked through. During the last 5 minutes of cooking, scatter the spinach over the chicken and cook 5 minutes, until wilted.
3. Shred the chicken using 2 forks, then toss with the chickpeas, spinach and any oil left in the baking dish.
4. Scrape the sweet potato flesh out of the peel, leaving 1/2 inch thick layer of sweet potatoes. Brush the skins with a little olive oil and bake for 5 minutes, until crisping. Remove skins from the oven and stuff with the chicken. Top with shredded cheese. Return to the oven and bake for 10 minutes, until the cheese is melted. Serve with fresh cilantro and greek yogurt, if desired.

Back in the day, when I first learned about computers, the first rule was ‘No Food Allowed.’ The second rule was ‘No Beverages Allowed.’ I guess that was what is listened to most. To this day, my computer doesn’t get to eat or drink my food. …except once when a grandkid managed to sneak a glass of water in and the promptly spilled it on the keyboard (yes, I had to get a new keyboard).
But, sometimes things like those Sweet Potato Skins are awfully tempting to carry along to nibble on while I check email, etc.

Was wondering if anyone has a calorie count on these??? They sound very VERY good and I want to make them soon.
Because you scoop out some of the sweet potato flesh, it’s hard to calculate precisely but I have numbers to give you an idea. I also changed it a bit so this reflects my version:
I used 1 pound of chicken thighs (instead of breasts) and 4 ounces of white cheddar (instead of 5). I also used 4 smaller, long sweet potatoes so it would make 4 servings (my nutrition info reflects using three sweet potatoes, which I figured was a good estimate since you scoop a lot of the flesh out). I cut the chipotle to one and about a tablespoon of adobo sauce.
With those changes, I get the following per serving (recipe serving 4):
427 calories
23g carbs
35g protein
462mg sodium
4g fiber
5g sugar
VERY filling and I like those macro ratios a lot. This will be a regular in our house.

As for calories, I calculated 339 for a whole sweet potato with 1.5 cups of shredded chicken, 1/2 cup of spinach, garlic, jalapeño (no chipotle on hand), and 2% mozzarella on top…no garnish. Delishhhhh!!!

I can’t even explain in words how delicious I thought this was. I totally overstuffed myself because I simply could not stop eating these! They were HOT, but adding some plain greek yogurt and guacamole helped cool things down. The added flavor of the sweet potato was out of this world. YUM!

These. Are. Amazing. Its a bit involved – baking the potatoes, baking the chicken, shredding the chicken, shredded the cheese, cooking the spinach, etc etc – but it was so worth it! They were DIVINE.
Also – I only used two chicken breast but they were pretty large and I ended up with so much extra chicken mixture at the end. So I just combined it with the filling I carved out of the sweet potatoes, threw it into a pie plate, and topped with more cheese and baked for a few minutes. Its delicious and I am bringing it to lunch tomorrow!
PS, I like it spicy so I added more chipotle peppers – if you do this, add a little honey, it really compliments the spicy.

This recipe is the BOMB. top 10 favorites ever. I recommend using canned chipotle peppers. They come in this amazing sauce that really brings the recipe together. GOOD FREAKING JOB!!!

I made these tonight, and they were literally one of the best things I have ever had in my life. This recipe contains some of my favorite things (sweet potatoes, cheese, cumin), so I expected to like these, but my goodness, amazing, truly amazing, and easy.
Oh, and I half cooked the sweet potatoes in the microwave for 7 minutes first to speed things along, worked out perfectly.

I started to make this, but didn’t have a use for the rest of the sweet potato, so instead of making it into skins, I put all of the baked sweet potato in a casserole dish, and then layered it the same as your recipe called for, baked again to melt the cheese, and then served it in a tortilla to take a little edge off the spice. DELICIOUS! i would have never put this flavor combination together on my own. Thanks for the recipe!!!
This is SO GOOD! I made it last night and ended up eating some of the leftovers for breakfast. It’s a new favorite. My boyfriend doesn’t like sweet potatoes so it might be a challenge to get him to try it, but I think if (when) he does try it, he’ll love it! Or at least like it. But I love it!

These are SO good! I ended up mixing in a can of black beans as well and it was a-ma-zing! I also added the sweet potato flesh back into the mixture and added a little extra adobo sauce to keep the spiciness up. One of my absolute favorite dinners now!

I found myself without sweet potatoes, and discovered that the chicken/spinach mixture topped with the cheddar is also amazing on a tortilla. I packed two for my DH to take to work and he took the time to text me and say “You can make those taco things anytime! They were crazy good!” 🙂 The kids liked them too. Alas, no leftovers.

These were super good! I made a few small changes as I didn’t have all the ingredients. I didn’t use any cumin and I used mozzarella cheese instead of cheddar. But I think even if I hadn’t made any changes these still would have been awesome!

I just mix the sweet potato back in to the stuffing mixture, actually. I also add a can of rinsed black beans to it, and it’s super tasty! Might want to mix in a little bit of the adobo sauce to keep the spiciness up.

This looks amazing! One question about the chipotle sauce. Do you chop the peppers on the first step? The instructions simply read “add the peppers”. I’m hoping to make this tonight so I can’t wait to hear back!
We love this recipe, and it has become a regular on our menu. I suppose you could do it different ways, but we always finely mince the peppers before adding to the other ingredients.

I used frozen Swiss chard instead of spinach and heated in a skillet until liquid was absorbed. Added shredded rotesserie chicken and heated through.added 1/2 can chopped green chilies instead of chipotle peppers . I used avocado oil instead of olive oil and organic garlic powder. My husband never eats sweet potatoes ,this recipe he said to me needs a name so he can ask for it again!!!!

This recipe is fantastic! I ground up the chipotle peppers in a grinder to really distribute the flavor in the sauce and topped them with blue cheese crumbles just before serving. Wow! Just wow

Made this the other night and it was incredible. I used the packaged rotisserie chicken breast from Costco ( left over chicken breast that doesn’t get sold that day, amazingly easy). I love this recipe. I made it twice so far, the last time for my book club and they loved it too. The flavors are great. I love chipotle and added double the amount. I also used the Costco rotisserie chicken they package in a sealed bag.(I believe they pull the breast meat off of the leftover cooked chicken and sell it for $11/pk.) This made the prep much easier. thanks for this delicious recipe it so delicious that I cannot explain by words .I just did it today for lunch but instead of chicken breast I did used boneless chicken thighs and the left over of the mixed chicken I added the leftover of sweet potatoes and served them with the potatoes, this will be in our menu thanks xxx

Personally I just mix it back in to the mixture being put into the skins…a little extra sweet potato never hurt anybody! I also add a rinsed can of black beans. 🙂

I just cooked this for Christmas lunch to feed 6 adults, it was an absolute hit (may have cooked it 3 years ago for Christmas lunch as well)! Bring in the southern hemisphere it suits so well eating something nice and light during hot weather. Very filling, plates may as well have been licked clean. Used one more chicken breast than specified, everyone got half a sweet potato each.

This is the second time I have made this recipe and it is so delicious! The chipotle that I find easily is in adobo sauce, so its a little spicer than intended, I think. But it is definitely a winner, especially for my spicy-food-eating Mexican husband.

I absolutely LOVE this recipe! I’ve made them so many times and am reminded every time of just how delicious they are! I usually end up doubling the amount of garlic and adding about a 1/2 a tbsp of cayenne powder just because I enjoy a good amount of heat. The only other thing I change up is that I mash the scraped flesh of the sweet potato and add about half of it back to the mixture to get sort of a “deviled sweet potato” kind of thing going. It provides a touch more sweetness and makes each one a whole meal on its own.

These were DELICIOUS! Lots of flavor! Will definitely make again. I used ground turkey like suggested in the actual cookbook, and made half of the skins with combining the turkey mixture with some of the removed sweet potato filling. My husband can’t handle a ton of spice, so this was a bit on the spicy side for him. He just added some some extra guac/yogurt to cut the heat 🙂

I made a version of this but subbed sautéed mushrooms, onions, garlic for the chicken, used manchego cheese, and just used the seasonings I had in my cabinet (paprika, chili powder etc.) topped with avocado and it was delish! A perfect fall meal!

The sweet potato and chipotle chicken somewhat clash because of the sweetness and the spiciness. Also the white cheddar blended in with the flavors too much I might suggest a sharper cheese. And yes everyone, they LOOK delicious!

I cant seem to a recipe exactly as written! I made mashed sweet potatoes and used baked tofu instead of chicken. Prepared it as per instructions for chicken. A big pile of tofu and chickpeas on a pile of luscious sweet potatoes, and it was delicious! The flavors were balanced and tasty.

I’ve made these twice now and they’re so delicious! if it were more important to me, I’d maybe give the recipe more like 4.75 stars since I followed the recipe and the sweet potato skins weren’t crispy either time, but personally I don’t really mind the soft texture of the hollowed out sweet potatoes. The flavor combination is 10/10, and the chicken recipe is *so* good. I also love that you can cook both the chicken and the sweet potatoes at the same time, and how colorful and simple the recipe is. Highly recommend trying it out 🙂

Made this tonight and really loved it! Especially loved the chickpeas! It’s hearty and nutritious without skimping on flavor (or cheese!). I will say that I didn’t manage to get my potatoes crispy (or my chickpeas for that matter) despite turning the oven up to broil and leaving them in a bit longer – though I didn’t think to put oil on the outside of the skins which may have helped. I will definitely make this again, but may simplify a bit by just chopping the sweet potatoes and roasting them in chunks and making a “bowl” of sorts – I did love the presentation as-is but am a bit lazy and think the flavors would still be just as good 🙂
