Sandwiches of any kind are one of the foods I struggle with most when it comes to photography. It’s stupid, but because I struggle with them so much I always avoid sharing any kind of sandwich recipe. I literally cringe at the thought of photographing them. The fear of an ugly food photo stops me in my tracks.
I know, I know, stupid. But hey, look at me today! Here I am with my favorite quinoa burger. I can’t say I find these photos gorgeous, but it’s a burger, and it may never be gorgeous. The brothers said they looked good, Mom said they look good. So I’m trusting their opinions and sharing despite what I think.
Point is that these burgers have been a favorite since the very, very beginning of HBH. And with the Super Bowl on Sunday, I obviously had to share them…these really are the BEST quinoa burgers.
Yes, these burgers are EVERYTHING. And that’s not an exaggeration in the least, they just have so much going on. These are what we call the “epic” crispy quinoa burger. Crispy, cheesy burgers topped with melted Gruyere cheese, buttery beer caramelized onions, spicy-sweet potatoes fries, fresh herbs, and even a little avocado.
Everything about this recipe is SO GOOD. These are not your average quinoa burgers.
The burger details…
Here is what I will say, this is not my most “super simple” recipe. But nothing about making these burgers is hard. There are a handful of steps, and you do need to have a little time to make them. But you can do so much ahead of time, and trust me, the extra time in the kitchen is worth it.
Start with the burgers themselves. They’re made up of quinoa, white beans, bread crumbs, and egg. The key to creating the best quinoa burger? The combination of the spices and cheese in the burgers themselves. You have to give them flavor, so I use a touch of chipotle chili powder and plenty of sharp cheddar cheese.
Form the quinoa mix into patties and keep them covered in the fridge while you prepare the sweet potato fries.
Now for those sweet potato fries…
They’re simply the best thing to ever be put on top of a burger. Dramatic, but true.
I like to cut my fries super thin and skinny and then toss them with a mix of chili powder and smoky paprika. Roast in the oven until crisp on the outside, but still soft in the center. Fair warning, these fries are addicting. You might just double the recipe. Some for the top of the burger and some to snack on.

Ah, and those beer caramelized onions…
Yes, you need these too, because you can never go wrong with caramelized onions. I know it seems like a bit much, but go with me on this.
Using beer to caramelize the onions not only adds additional flavor right into the onions but it also helps them to cook down and caramelize faster. If you love caramelized onions, you will love these onions even more. They’re truly so good, even onion haters enjoy them.
Once the onions are cooked, the fries are ready, and the burgers have been crisped in the skillet, it’s assembly time. Find your favorite buns, toast them up, then add a cheesy burger to each bun. Add the beer caramelized onions and sweet potatoes. At this point, you could be done. OR you can take the burger a step further with mashed avocado, a fried egg, and fresh herbs.
Do what you’d love most here, completely up to you as to how you finish these. Just be sure not to skip the onions or the fries. These are two key toppers that you really do NEED.
A few tips…
The burger patties themselves don’t need to be put in the fridge for chilling. I just recommend doing so while you make the fries. If you need to cook these up right after forming, that works just as well.
You can make the burgers up to four or five days in advance and keep in the fridge. Or you can freeze them for up to four months
If you don’t enjoy cooking with beer, just caramelize the onions without the beer following these directions.
These make for a fun Monday dinner. Or plan to make them on Sunday for the Super Bowl. Either is great, but once you make these, my hope is that you’ll be making them on repeat throughout the year! They’re healthy(ish), easy(ish), and so very delicious.

The epic crispy quinoa burger!
Ingredients
Quinoa Burgers
- 2 cups cooked quinoa
- 1 cup cannellini beans mashed
- 1/2 cup Panko bread crumbs
- 1 large egg, beaten
- 1 clove garlic, minced or grated
- 1 teaspoon chipotle chili powder
- kosher salt and black pepper
- 3/4 cup shredded sharp cheddar cheese
- 1/2 cup shredded gruyere cheese
- 6 burger buns, toasted
- fried eggs, mashed avocado, and herbs, for serving (optional)
Sweet Potato Fries
- 4 sweet potatoes, cut into matchsticks
- 4 tablespoon extra virgin olive oil plus more for cooking
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon smoked paprika
- kosher salt and black pepper
Beer caramelized onions
- 2 tablespoons salted butter
- 2 large yellow onions, thinly sliced
- 1 cup beer, such as pumpkin, lager, or pilsner
Instructions
-
1. In a medium bowl, combine the quinoa, mashed beans, Panko, egg, garlic, chili powder, cheese, and a pinch each of salt and pepper. Form the mix into 5-6 equal burgers. Place on a plate, cover, and transfer to the fridge.
2. To make the fries. Preheat the oven to 425 degrees F. Place the sweet potatoes on a large baking sheet and toss with olive oil, chili powder, paprika, and a large pinch each of salt and pepper. Spread the fries in an even layer. Do not overcrowd the pan, if needed, divide the fries between 2 baking sheets Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes to be tender, yet crisp.
4. Meanwhile, make the onions. Melt the butter and onions together in a large skillet over medium-high heat. Cook, stirring occasionally until softened, about 5 minutes. At this point, you want to slowly add the beer, 1/4 cup at a time, until the beer cooks into the onions. Continue to cook another 8-10 minutes until you've used all of the beer and the onions are deeply caramelized. Remove the onions from the skillet to a plate.
5. Cook the burgers in the same skillet, heat a drizzle of oil over medium-high heat. When the oil shimmers, add the burgers and cook until golden and crisp, about 5 minutes per side. During the last minute of cooking add the Gruyere cheese, cover, and cook 2-3 minutes, until the cheese has melted.
6. To assemble, place each burger on a bun, top with caramelized onions and sweet potatoes. If desired, add a fried egg, mashed avocado, and fresh herbs. ENJOY.
Recipe Notes
To Make Ahead: the burgers can be formed and kept in the fridge for up to 1 week. Cook as directed.
Freezing: the burgers can be frozen in an airtight container for up to 4 months. To cook, thaw on the counter for 1-2 hours, then cook as directed.
Baking Instead of Pan Cooking: you can bake the burgers on an oiled baking sheet at 425˚ for 20 minutes, flip and continue baking for another 5-10 minutes, until crisped. Note that you will not get as crispy of a burger this way.

Made these tonight! Phew, it was labor intensive but definitely worth it. The burgers with the onions had all the right savory flavors and the caramelized onions with pumpkin beer (I happened to have it around) were phenomenal. It did take me a whole hour to do the onions and a little bit more than a cup of the beer. Loved it, and would definitely make again. Oh, and I skipped the egg because these already had enough fat from the cheeses.

Oh boy. Tieghan – you have outdone yourself. I made these burgers tonight, and the whole day, I kept telling my carnivore father that the menu was a surprise. Because, well, I’m pretty sure my father has never eaten a veggie burger…or rather, one that he’s liked (let alone loved). Everything was perfect – the seasoning for the sweet potato fries, the burgers, the beer caramelized onions. Everything came together so well (although prep/cooking took me close to 2hrs even with my mom’s help!). I didn’t add egg this time around but will def give it a shot next time.
Fast forward to sitting down for the meal. My father was so impressed simply at how the burgers looked (he sure loves his burgers)…and took one bite, and exclaimed, “Wow…this is really good beef. Is it grass-fed?” I legit thought he was joking. My mother, sister, and I could not contain our laughter. My dad meanwhile, looks confused. “Yea…grass-fed…from Whole Foods. Quality meat, eh?” I say. My dad nods his head in agreement…until he picks up on what’s going on. “Wait a sec…this isn’t beef? Oh…what? It’s SO good! Is it quinoa?” He basically completely thought it was meat from the mere looks of it. It was so delicious!!! Thank you for an awesome recipe. I have been looking for a stellar quinoa burger recipe, and after leafing through so many, I finally decided on this one. So glad I did. This burger will definitely be a staple in this household =)

I made these a couple nights ago for my boyfriend and I, and they were spectacular! I will definitely be adding this recipe to our list of frequent dinners. Hi Tiegen, your recipe for the Quinoa Burgers looks phenomenal! My daughter, who is a vegan, wants me to make them for her. I was wondering if you can suggest a substitution for the egg used in the burger (not the egg placed on top after the burger is cooked). I’m assuming the egg is used as a binder to hold the other ingredients together? Can you suggest something else I can use instead that is vegan that won’t alter the flavor or texture too much? I think that if you add some olive oil in place of the egg it should work fine. I would start with 2 tablespoons olive oil and see if the mixture it moist enough, if not add a tablespoon more. This should not alter the flavor at all, but the overall burger might be a little bit dry. Still good though!

Made these tonight. Used regular quinoa, provolone instead of gruyere, apple juice instead of beer, and skipped the fries and egg. Okay, I forgot about the egg. These were great! Even my “please-tell-me-we’re-not-going-vegetarian” husband liked them. I got 6 decent sized patties out of this. I cooked two and wrapped the others up for the freezer. Will remember the cooked egg next time.

Hi, I have a question regarding the amount of Quinoa. Your recipe calls for 2 cups cooked quinoa … do you mean to cook 2 cups of quinoa and then add 2 cups, because I think 2 cups makes a lot of quinoa. Thanks.

I can’t say enough good things about this burger! We ate them again last night, heated frozen in a pan with olive oil. They tasted extremely Fresh, like they had never been frozen! I made these twice and found them to be as delicious as the picture. The first time I didn’t have beer so I used Marsala wine to caramelize the onions I loved the flavor even more than the second time when I did use beer.

No way I could get my mouth around this concoction even though it sounds marvelous! I would stop at burger, cheese and onions and still have difficulty. Using red quinoa makes it look more like a traditional meat burger.

I made these last night and they tasted lovely but the patty fell apart while being eaten. I prepared and cooked them exactly as stated and the middle seemed a bit underdone. Has anyone had better results with baking the patties instead of pan frying?

Just made these~ just the burgers ( for breakfast! ) and had to make a few substitutions.
Swapped cooked mashed sweet potatoes for the beans, swapped 1/2 C parmasean for grated cheese. Fried in coconut oil.
serve with jalapeno relish on the side.

Made these AGAIN (BF pleaded for them) substituting for what I had on hand. Replaced Cannellini beans with half a cup Black beans and half a cup Chickpeas, 3/4C Mozzarella, 1 tsp cumin and 1 TBL nutritional yeast everything else the same as recipe. They were so good! Again just the burgers but next time I’ll try the onions too!

Yep I was able to make four nice size patties after they were in the fridge overnight. They turned out perfect when I cooked them in the pan-light golden brown. I served them with the carmelized onions (for those who like onions) and the sweet potato fries. I also offered bib lettuce and tomato slices and corn on the cob. Everyone’s plate was clean. Thanks!

Our burgers were delicious BUT fell apart at pretty much the first bite. Any ideas?
What I do: Have all your ingredients at room temperature ~ this helps them push together and hold~be sure none of your beans are still whole each should be at least a little mushed. Once mixed let everything rest together for 10~15 minutes to absorb and meld together.
To form the burgers ~ I thought about buying a hamburger press but didn’t want to spend the money~ so I take a wide~ish 1/2 cup measuring cup and pack it full (mine is stainless steel) pressing down ~ then I “fwump” it carefully down on a surface~ the compacted burg easily “falls” out, take a flat wide knife and carefully press it out as wide as I want it. then using a spatula, transfer it onto a plate ~ the last burger tends to be a bit smaller than the rest :). Then I cover and place in the fridge until cold.

Hmm, that is so weird. Is your quinoa super dry or a little moist from cooking? Are you letting them chill in the fridge?

Hey Leah! So happy you love these, THANKS! I have tried to do them on the grill and well they do ok, I really think they are best cooked in a skillet. If you have a cast iron skillet you could through that on the grill and then cook the burgers in the skillet on the grill. Hope that helps and have a great 4th!

Hi. I’m making these tomorrow night (Fri.) for dinner. Where the ingredients call for “1 cup cannellini beans, mashed”, is that 1 cup of the beans BEFORE they are mashed or should the mashed cannelloni beans measure 1 cup?

Like a few other reviewers, my patties fell apart, but that didn’t stop them from being ~amazing~ they’re just so meaty and hearty and delicious with just the right amount of kick. The onions and fried egg totally completed it.

These burgers were amazing! I knew when I first made the burgers that they wouldn’t fall apart. I’m not a vegetarian, and I LOVED it! My daughter (who IS a vegetarian) was impressed. The gruyere and caramelized onions were great additions. We had them with baked zucchini fries, and a cucumber ‘noodles’ and spiced pecans salad. The meal looked great on my square zebra print plates. The only disappointment? I forgot to take a picture.

Wow! Just had this burger again. I swear it’s even better the 2nd time. This time I had it with zucchini chips, made with ground almonds. I ground the almonds so the coating wasn’t quite as fine as almond flour. Crispy and delicious and dipped in a mixture of lite mayo, sraracha & lime, which, by the way, was great on the burger.

By the way, I used a pre-rinsed Roasted Garlic quinoa (not cooked) put out by Roland. It was just the right amount for the recipe. I added some smoked paprika along with the other ingredients in your recipe. So that, along with the chili powder, they were a nice color. Loved skipping the rinsing process.

This is delicious! I made the whole thing – yeah it took 2 hours before we ate it, but it was worth it. I got rave reviews from the 3 men in my family, and they were too full to eat more than one! I used white quinoa, and instead of the chipotle curry, which I didn’t have, I used smokey paprika and cayenne pepper. I also used ordinary toasted breadcrumbs and ordinary cheddar cheese. The overall flavour could’ve been stronger for my liking, so I’ll try and buy your ingredients here in Australia for next time. I used a hand-held mixer to mash up the cannellini beans, then mixed in the egg. The completed mixture was nice and firm and cooked well. The first batch were a bit crumbly (1/2” thick), so I made the second lot thicker (3/4”) and they were perfect. I used a dstsp marsala wine with the onions – fairly sweet tho, so will try regular beer next time. And yes, the egg was definitely great with it. I will make some mini patties to share for Shabbat. Me and the hubby loved these! We got 5 out of the batch, so two dinners and a lunch. We made them with just regular quinoa as we couldn’t find red in our area of the UK and they were just fine! Perfectly moist and never fell apart. I found this recipe whilst looking for a vegan burger. It looks amazing! I am totally inspired to do a vegan version tomorrow.
I am officially transitioning vegan (started 4 weeks ago) as I am eating some animal products, however, only those products that I already had in order to use them up. I don’t believe in throwing food away. Obviously vegan replacements will be found. So far it is going well and cravings for dairy etc have not been a problem.
I have hardly touched meat over the last two years. Giving it up has been relatively easy and I expected more issues with the products outside of meat. However, I don’t know what has happened but all I want is a big juicy burger. This meat craving has come from nowhere! Therefore, I hunted down some appealing recipes.

I have not had quinoa (much less a veggie burger with it) but I thought your recipe looked really good. I have only made veggie burgers once and they were just okay. These, however, were beyond delicious. I didn’t do the whole shebang, but the burgers themselves were fantastic. They had a crunchy outside and really reminded me of a meat burger. Oh my God, these were divine! The cannellini beans I had on hand were canned in tomato sauce and these cans often have sugar in them. So I opted to substitute them with black beans. Also, I used white quinoa and for the cheese I used an Egyptian cheese (that’s where I live), called “Roomy Cheese” which is aged like sharp cheddar; used it for the patties and for topping the burger. And I of course added a fried egg at the end – wow wow wow. Sooooo delicious – thank you so much for sharing! I love your blog!

These are fantastic!!! My family is very inclined towards actual meat burgers but will try any yumminess I create. Making them again tonight because this “burger” is the most requested burger I’ve made. In fact I was told by my 16 yr. old son to only make these. No more actual burgers, if that says anything. I make something very similar to this, but use black beans and add chopped/sauteed portabella mushrooms to the burger mix. Super tasty. I like the idea of the caramelized onions, the runny egg and the fries. YUMM!
OMG!! I just made this recipe and it’s FANTASTIC!! I did the recipe without egg using silken tofu instead. The sweet potato fries turned out so incredibly good. I didn’t use a bun. Instead I made a bunch of the patties using vegan mozzarella and vegan cheddar which I blended in. I topped the burger with lettuce, tomato, avocado, grilled yellow onions and, those fabulous fries. I am eating it right now and I promise you this is so delicious! So glad I have 8 patties which I have frozen. Hands down…best burger. Cruelty free. Many thanks!

I have been a vegetarian for almost 30 years and have never discovered a vegie burger like this one. It was kick arse! Thanks so much for sharing your awesome recipe.
My husband and I tried this last night. The quinoa burger was alright, it didn’t have a lot of flavor and fell apart while eating it. The combination of everything was great though! All together it had huge flavor with the onions, cheese, fries and eggs. The amount of fat added in my opinion kind of defeated the “healthiness” of a vegetarian meal. However, after eating it I wasn’t full of regrets with a greasy face. I felt full (to a good point) and guilt free after eating this burger combination. Oh, and my husband ate the whole thing without giving me any grief!

Yum! Yum! Yum! I made these last night (minus the garlic). My daughter who is vegetarian and on a special diet loved, loved, loved them! We have been having so much trouble finding meat substitutes that do not contain wheat, onion, or garlic. This was perfect! I can’t remember if I ever commented on this recipe. But I just have to say, I make these ALL the time. I was always searching for the perfect veggie burger and this is it! The only negative thing I would have to say is that mine always come out a bit crumbly, but it’s obviously not that big of an issue since I make them all the time because the flavor is amazing lol. My husband is a carnivore and he says these smell and taste like a real burger. This is a meal that the whole family eats, which is very rare!

Sorry, too unhealthy for me. Replacing beef (no carbs) with something that has of carbs, then adding more carbs on top? This is one huge fat pill, the only healthy thing on here would be egg and cheese.

True Kerry you’re not the sharpest tool in the box. In the US 11% of the population is diabetic and it’s growing. Not to mention 35% are obese. Carbs primarily in the form of sugar and fast food are the reason, so I see no reason to encourage increasing carb intake out of a misguided belief that all fats are bad. Maybe you should do a little research instead of jumping on the band wagon and insulting those that have.
There’s nothing unhealthy about carbs in vegetables or grains like in this burger and the factors that are tenuously linked to diabetes are also not present in this burger. The cause of type 2 diabetes is largely unknown, but genetics and lifestyle clearly play roles. Type 2 diabetes has been linked to obesity, genetic risk factors, and inactivity. What carbs have got to do with the onset of diabetes I do not know and seemingly neither do you. Carbs do not play a role in Diabetes and there is absolutely no evidence to suggest that. This burger isn’t ‘fast food’ and if people ate this healthily they would have very little risk of getting diabetes caused by a diet consisting of the ingredients in this burger. The fast food connected to diabetes is the McDonald’s of the worlds menu and also processed foods full of nitrates, sodium and refined sugars, not a healthy balanced nutritional burger such as the above. I think you’ll find you were the one who jumped in with misinformation when you decided to announce carbs aren’t healthy which undeniably makes you a fool. Then to cap it off you decided to correlate carbs to diabetes. Ill send you a spade so you can keep on digging.

You folks need to chill! I am Keto but I don’t go to nonKeto sites and berate people. I make these for my boyfriend ( he’s not Keto). PreKeto I made and ate then and they are delicious! What people put in their mouths is their own business. Lead by being an example, not criticism!

To be honest I wouldn’t put them on a BBQ. They are pretty fragile in the pan.
One thing that is a definite though is they don’t freeze! They turn to mush when you defrost them.

I made these last night for dinner – with the sweet potato fries on the side- and they were so tasty! Mine were just a little bit crumbly…not too bad, but I wish I had cooked them in a 12-inch skillet rather than a 10-inch…I think the fact that I didn’t have much room to work with when flipping made them fall apart a little! I added a handful of hemp seed for extra protein. ??They were SO filling. I think I probably could have made 6 instead of 4!

I’ve been making these for my family for about 6 months now. I have the PICKIEST son (getting him to try new things usually requires an hour of crying) and his dad isn’t exactly adventurous either. They LOVE these!!! I am not a 10/10 cook, but they are easy to make and prep ahead of time. It’s practically impossible to find things that fit into the venn diagram of “I can cook it”, “I can afford it”, and “they will eat it” (and god forbid “it’s moderately healthy”)… so this recipe is a keeper! I have made these burgers a few times for my family (minus the sweet potato fries and the fried egg) and they love it. My daughter very much dislikes frozen pre-made veggie burgers, she loves these…plus they are so easy to make! I’m going to try grilling them this time, but since they can be a little crumbly to flip I found a grilling basket that supposed to help with flipping delicate foods…hope it goes well

This is a fantastic veggie burger recipe, best one I’ve made to date. Easy to throw together, not fussy. All five patties held together beautifully. I used black beans and white quinoa because that is what I had on hand. Very flavorful and texture was great. The finished burgers were something you’d grab your camera for and like a big dork, brag to your friends about on social media. I was too busy putting this in my belly to bother but next time, probably I will be that dork. 🙂

Wow! Truly one of the best burgers I have ever had. Next time I will make triple the batch so I can have more on hand. I turned mine into mini burgers with Hawaiian rolls and my toddlers absolutely LOVED them. They freeze beautifully and I can cook them right from frozen. I wanted to eat it before I posted my thoughts, and I have to tell you that this was a hit! I didn’t add the egg (ran out his morning during breakfast) or sweet potatoes yet. I did cut an avocado on top of it, and for lack of gruyere cheese, I added a little Manchego…
I made it yesterday and left it in the fridge until I cooked one today. The onions are amazing. I’ve caramelized onions before, and it is a lot of work to do it the way restaurants do it. This way is not as time consuming, and the beer was a phenomenal touch flavor flavor.
Very happy with this recipe, and I’m not a veggie type person…Tomorrow I will cook me another and will add egg and sweet potatoes…and munchies avocado which matched really well with it….

Great veggie burgers!!! I just exchanged the cannellini beans for adzuki beans and the Chipotle powder for smoked paprika (I didn’t have these ingredients) and they turned out great. I also baked them in the oven. Yummy and very, very sturdy, which is not that usual for most veggie burger recipes I try. Thanks!

Hi Tieghan, I came across this recipe and made it staying pretty close to your ingredient list, even the fried egg! I did eliminate the chipotle chili powder simply because I didn’t have any, and had mozzarella instead of Gruyere. Anyway, it was very good. My husband who hasn’t been fond of other “veggie” burgers ate the whole thing. I’m a new fan, looking forward to following your work.

Hey Liz! Was there anything you changed about the recipe? I have not had issues with these crumbling so any input on how you made them would be really helpful in problem solving. You could try chilling the burgers before cooking. That may help!

You nailed this one! I have printed out so many meatless burger recipes, but never made one, they all seemed so tedious. This recipe was perfect! Simple ingredients and yet so much flavor. As usual, I had to make a few adjustments for what I had in the pantry.
I could not find red quinoa, so I used regular. I also used dry beans, I had white, but decided to use black beans. To make it look a little more like a burger, I cooked the quinoa in the bean juice. I fried up a couple of burgers, delicious! I can’t stop thinking about how I can use this simple recipes for so many other dishes. Thank you again Tieghan!

After reading a lot of the comments I decided to make a triple batch so I’ll have them in the freezer ready to go! I got 14 burgers total. Cooked three for dinner tonight and they are delicious! Exactly what I was looking for! Husband and Daughter loved them. I used plain quinoa, mashed the beans with my stick blender, used high quality garlic powder in place of grated cloves, reduced the salt a little, and omitted the cheese in the burger. I used a trick from an old (2014) comment and packed a 1/2 cup measuring cup and “fwumped” it out and pressed into a perfect bun sized patty. I did not put an egg on it but I will next time. I also only made the burgers, not the fries (It’s 105 degrees out today) or onions. Thanks so much!!

So, I didn’t do the sweet potato or add the egg but this burger patty is the bomb. I didn’t have chipotle so just used a “burger” spice. Seriously good. Love the crunch.

I work in a store (retail and food). We have a daily special that we have to take a photo of each day to send to a mailing list. It is hard! We usually cut them in half (diagonally, of course) and arrange the two halves to look as appetizing as possible. Since they are served with chips and a pickle spear, we include those in the photo.
That being said, I think your photo is great! It makes me want to make it and I don’t like quinoa. When the sandwich pictures are too perfect, they always look like I couldn’t fit it in my mouth or it wouldn’t look like that if I made it.

These quinoa burgers are delicious, the absolute Best recipe! I ALWAYS have a bag of these ready in my freezer for weeknights when I am too tired to cook and they never disappoint us! Topped with an egg, onions, pickles, with or without bread (we like them open face), the combos are endless. Guaranteed you will not miss the meat! In fact, they taste like meat! Don’t skip the smokey chipotle chili powder, it’s not too spicy and I believe what gives these their meaty flavor. My cousin from Spain is in Love with these burgers (and he is a big meat eater!) Whenever he is here with us, it is always the first meal he asks for! Make these burgers ASAP

These “burgers” were amazing!!! My 16 yr old son who is not so into eating plant based things housed his!! The onions and seasonings make them irresistible! We made this quinoa burger last night on the spur of the moment with tricolor quinoa, pinto beans and a mad dash across the street to Traders Joe’s for brioche buns. I normally dislike veggie burgers but these were fantastic! However I had a hard time keeping the sides from crumbling apart while cooking, especially once I turned over the burgers. Any suggestions?
Hi Merrill, using pinto beans likely caused the burgers to crumble. They are a drier bean and I don’t love them in veggie burgers. Next time I would try using with canellini beans. So I didn’t have sweet potatoes or burger buns, but I had everything else so I figured I’d try this recipe out this morning. It was soooo good! And that’s just with the burger, caramelized red onions and some avocado slices. I made my patties a bit smaller, so I ended up with 8. I’m very excited to eat the rest these over the weekend. I will definitely be making these again (hopefully with all the ingredients).

I just made these tonight (minus the onions for sake of time) and they were delicious! When I added the cheese for the last minute I turned the burger cheese side down in my non stick fry pan for a minute so the cheese got all brown and crispy. Soooo good! I made these tonight. The flavor of the patty was really good! The BF and I enjoyed them bun less and I even found cheddar gruyere cheese at Trader Joes! I did have a small problem cooking the patties, it seemed to take a lot of oil to make them crisp. Perhaps I was expecting more of a “meat” texture doneness? Firstly, I was so impressed by your photography for this recipe it was nothing short of perfect!! When I saw this picture I couldn’t wait to try the recipe. It’s not something I would ever think to make.but I’m glad I did. Everyone I showed the recipe to said to me they couldn’t wait to make it themselves. I just wish my sweet potato fries were more crispy. The first time I put it at 425 and before I even flipped them over they were starting to blacken. By the time I finished the other side they probably would have been good. I put them under the broiler that was a mistake they were way overdone. The second time I tried them in a skillet for like 5 min each side then put them in the oven at 400 for around 15 mins per side and then did the broiler. I was so worried about burning them again wasn’t sure what to do. What is your secret for making them a bit crispy?? The beer caramelized onions were excellent it adds such great flavor thank you!! Lastly, I picked up your newest cookbook at the library. I feel like I am gong to be in cooking heaven very soon love it!!
Hey Mike! for the fires, make sure you lay them in a single layer and do not overcrowd the pan. If needed, use 2 baking sheets. This is KEY for getting perfectly crisp fries. My 13 year old invited a friend over for dinner last night. She’s vegetarian. Found this recipe. Wow. Both she (and her mom) asked similar question: where did you buy the “burgers”, Trader Joe’s? When I said I made them from scratch, they couldn’t believe it.
The burgers were moist – the onions were delicious and I loved putting the fries right on the burger (okay – truth: I did buy TJ’s sweet potato fries, but then added in the spices. So good!)

OMG! These burgers are better than they look! I followed the recipe exactly with the exception of using garlic powder in place of the garlic (I was not in the mood to deal with grating the garlic!). I don’t know how, but my burger almost tasted like it was grilled, perhaps the cheese burning a little bit as it oozed out but whatever it was it totally worked. This is the 4th recipe of yours I have made and every single one of them I love! (Especially Chipotle Turkey Taco Salad which I made several times). I am excited to try the next one!

Super yummy!!! Loved the sweet potatoes as a topping, they added a nice kick. My only suggestion would be to edit the wording on step 1; when I saw “add cheese” I added both the cheddar and the gruyere to the patties. They were still delicious, excited to try again with the gruyere on top 🙂

I just made these burgers and I am in love!! The flavor and texture were both excellent, not to mention the onions which were divine, and those lovely sweet potato fries!! I felt inspired, so I also whipped up a spicy chipotle mayo (just by combining mayo, chipotle peppers in adobo sauce, smoked paprika, garlic powder and lemon juice to taste in a food processor) that was delicious as a topping that brought all the flavors together, or as a dip for the fries. My husband added a strip of bacon to his, which was a nice addition to the other smoky notes. So fun, Tieghan. If these took a little less time to make, I would make them multiple times per week!! Recently, I have been making veggie burgers once a week and currently these are in 1st place for the best option. I made half the recipe with cheese and half without. Both were great. Only other substitution was I used 1/8 of a cup of GF flour instead of the bread crumbs. Yummy!

These were my first ever quinoa burgers and used hot sauce + gochujang since that’s all I had for replacement on chipotle powder and these were fantastic. I’ll definitely be making these again!

Made a double batch of these today because I was pretty sure they’d be awesome and they were!! I didn’t have white beans so I used pinto and they were great. Made your onions but added a couple seeded jalapenos and that was delicious! Served the burgers with the onions and a side of cabbage and corn saute, it was amazingly good. We’re going to try them as actual burgers on buns tomorrow night and I have 5 in the freezer for the future. Thank you for another wonderful recipe!! I’ve been in a bit of a recipe rut lately so I’m committed to trying at least one new recipe a week, and the last two were both yours. I think I’ll just keep working off Half-Baked Harvest recipes for a while! YUM.

Was very easy to make. Taste was wonderful! Only issue i had was cooking the burger all the way thru. Outside was nice and crispy, but the inside was a bit mushy. Any advice on cooking these all the way thru would be much appreciated

Change of plans and I ended out making this on my wife’s birthday (I cook 50% of time). Matchstick sweet potato started to burn after 10 minutes. Looking back at the recipe, the picture is sweet potato fries.
Tried to salvage using mushrooms and peppers. But still had to cook the patties for at least an extra 20 minutes before they set, Eventually they reached a crab cake texture, but nothing like something I could serve on a bun. Served with a side of sliced tomatoes, lettuce, basil, avocado.
After rereading the review, noone actually made this recipe. Now I know why.

So far my absolute favorite recipe of yours. For anyone making these, DO NOT skip the beer caramelized onions. My boyfriend said “I never knew quinoa could taste so good”. Love these and will be making again soon. Thanks Tieghan!

I literally make these at least once every week. They are soooo good and so easy! I usually don’t have gruyere so I just sub with more sharp cheddar. I also usually don’t follow the recipe with making the sweet potato fries and onions but it’s still delicious! I usually top with avocado or guac, salsa, and a fried egg and it is so good!

These were a really great meatless Monday meal! I skipped the fries (I’m sorry!) and the bun but man the onions and avocado mash were delicious atop the crispy burger. Really excited to have been able to freeze the individual patties for a quick Monday night meal in the future.

Loved these! I appreciate the fact they can be frozen as I usually buy frozen veggie burgers to have as a “just in case”. I did “cheat” and use Alexia frozen sweet potato fries instead of making them by hand but it was just as great! Thanks for a new staple!

Just made these tonight and they are amazing. I’ve already shared the recipe!! The only thing I would change is the wording on the cheese. It says add cheese to mix so I added both cheeses. Didn’t realize I was supposed to hold the gruyere to melt on top. It was still delicious!! Best quinoa burger I’ve ever made.

My first time commenting here even though I successfully tried a couple of your recipes (I’ll leave a comment on the others I promise :-)). I’ve made these over the weekend with homemade buns and, avocado mash and the onions… They were so amazing!!! I’m glad I finally found a patty recipe that I really like and that would hold together either in the over or on a grill or in a pan! (and I’ve tried countless of them)
I left out the sweet potatoes because personally not a fan (or just not a sweet tooth), and the burger was already sweet enough from the onions imo.
Anyways, just wanted to say that you’re an inspiration with all of your wonderful photos and recipes! So looking forward to your posts each time

You should edit the first step of the instructions. It says to “add the cheese” but it doesnt specify to only add the cheddar. Then later t it says to put the Gruyere on top…. I had already mixed it into the patty because the instructions said add the cheese. I havent cooked them yet but I am afraid the cheeae will burn before the patty is done cooking. I read the recipe over vefore starting but I still missed that and obviously it was not super clear.

Sadly not our fav. Followed exactly but quinoa didn’t hold together fully and not enough flavor. Maybe a buillion (sp?) cube in the water as quinoa cooks would help?

Did you use black beans? Because the recipe calls for canneli beans and your video looks way better than how mine looked. I just tried this and it’s way to earthy tasting for me. I do like quinoa but maybe it’s too much?

I wish there were a section within the recipe comments for users who had actually made the recipe to get helpful tips! Lots of people just gassing up the blog post, which yes, is beautiful, but it’d be nice to be able to filter for helpful comments from people who actually tried the recipe 🙂
Anyway, if you are about to make this recipe, here are my notes!
1 – Seasoning: this may just be my personal preference or the brand of Chipotle powder I bought, but I added way more chipotle powder to the burger mix than was called for and I still found them a bit bland. I probably used 1-2TBSP. I would up the salt and chipotle powder both to really bring out the flavor since the quinoa and beans are pretty tasteless on their own!
2 – Caramelized Onions – this was a genius technique to caramelize with beer! Seriously only took 10-15 minutes to get them jammy and brown. Couldn’t believe my eyes – I will always caramelize this way now!
3 – More Egg: Again might have just been my particular mix of ingredients, but my patties didn’t stay together too well. I would add an extra egg next time to make sure they really bind together and don’t break apart in the pan or air fryer!
Overall, really great filling vegetarian recipe! I also served it with a Chipotle mayo (mayo + hot sauce + the chipotle seasoning) and it was divine. Will definitely make these in the future – I have a ton of patties left over for lunches this month!
