Dark Chocolate Cappuccino Popcorn Granola Bars
Well, this kind of bites.

What bites?
Well for one, the mosquitos here in Oregon. I honestly hate their tiny little guts. Those things are awful. I have bites all over me, and the itch. I swear I am going to scar my skin from all the scratching I am doing. So annoying.
Two?
Fourth Of July was yesterday and today’s another workday. I feel like we got duped out of a true full on holiday weekend. I mean we had Thursday off, but then we have to go back on Friday?
Such a bummer.
Why not just make it a four-day weekend. Thursday, Friday, Saturday and Sunday. Ah yes, please!

Really though I know who is bumming way more than me right now.
My oldest brother, Creighton.
Today is his Birthday and I am pretty sure the last thing he wanted to do today was get up and go to work. No, I take that back I am positive the last thing he wanted to do today was go to work. The Fourth of July is one of his favorite holidays. Mostly because it is back to back 4th of July parties coupled with birthday celebrations the next day.

To celebrate his birthday I really wanted to make him a cake, but I am a lousy little sis and never got around to it…..
Yet!
Trust me there will be a cake on this blog sometime this summer. To me summer is just not complete without at least a few good layer cakes. Every summer party my mom ever threw had a least one chocolate layer cake. She is famous for her chocolate cake. Trust me it is so darn good. It has been known to convert vanilla cake eaters to full and hard-core chocolate cake eaters.
I am telling you, it has magic powers.

So no cake today, but I still have something awesome and easy.
Which I am guessing is pretty much all you guys want to hear today. Late night fireworks and stomachs full of burgers, corn, cake and ice cream are probably leaving you a little tired.
Or at least I am tired.

I pretty much spent all day playing around with my camera and trying to figure out this new lighting I have here in Mt. Hood.
So not fun and way too stressful.
Ugh, there is no light here.
So frustrating.

Anyway, these granola bars are far from frustrating.
They are delicious and healthy and energy boosting. Okay, well technically that is not proven, but I think so!

The popcorn is well, just awesome. White chocolate, vanilla, coconut oil and coffee. SO good.
Plus they take like 10 minutes to make. YES!

Another dangerously delicious appearing post from you! Wow! These are right up my alley! Your photography is once again beautiful as well, very nicely done!
Wow, thank you so much Dan!!
Everyone should have had today off too, for sure! And, I’m of the belief that no one should have to go to work on their birthday…EVER!
These granola bars look fabulous – even sinful!
That is a very good belief!
Thanks!
WOW! I think I would squeal if a plate of these showed up at my door right now.
Hehe! THanks Rachel!
Granola bars – with popcorn (love it and eat it almost every day!) with cappu with dark chocolate…you just named all my fave food groups and put them all in one recipe!
Haha! Thank so much, Averie! Granola and popcorn are such and awesome combo!
The 4th of July should always be celebrated on the first friday in July, that should be a new law. I’ve never really thought about it, but the 5th of July would be a terrible birthday because everyone is still recovering from the 4th! Unless you just always want bloody marys and greasy breakfast burritos on your birthday, in that case…
And can you make these for me on my birthday?
Yes!! Jackie, you are so right! That needs to be a new law! Oh and I would LOVE to make these for your B-day! Seriously, just tell me when and these will be there!
I am pretty much instantly sold on anything that involves chocolate AND popcorn ;). What can I say, I am a major sweet/salty combo lover!
Haha! I am with you! Thanks Hannah!
Oh gawd!! These are gorgeous. Your photos are beautiful 🙂
Thank you so much!
Those look amazing! I’ve always wanted to try to make my own bars like these. Thanks for the inspiration 🙂
Happy Blogging!
Happy Valley Chow
Thanks you!!
Having these instead of cake is not a bad trade-off! Not bad at at all!
Not sure about that, but they pretty amazing! Thank you, Mimi!
These are awesome! I was so happy my husbands’ work gave them the day off today. But I’m still online. 🙂 Love these bars, and happy birthday to him!
Yup, the online business never stops!
Thanks Dorothy!
These look so yummy, I’ve never had anything with popcorn mixed in. The layers looks delicious.
Thank you so much, Laura!
I can’t wait to see your layer cake girl!! 🙂 These granola bars have me wishing I had rice crispies to make them right now! Dang it!! Sometime soon though! 😉
Thank you, Jocelyn!
Happy birthday Creighton! I don’t think he’ll complain about not having a cake yet when he sees this 😉
I will tell him you said so! Thanks Nessa!
I think my new favorite thing ever just was made. Choc + popcorn + granola bar = very happy (albeit hungry!) me!
Haha! ya! So excited you like these Mary! Thank you!
Ah-maz-ing. Pinning!
Thank you!!!
Thank you for sharing this recipe! I just made these and they are so good! But I’m wondering how I should store them. Do they need to be refrigerated? And how long can they be stored?
Hi Teresa!
So glad you love these!! I stored mine in the fridge because it was pretty hot in my kitchen when I made them, but if your kitchen is cool the will probably be ok on the counter too. As for how long they will keep, I am not sure. Maybe a week, but the popcorn will probably become a little stale. The granola bottom will stay fresh for longer.
Thanks for making these!!
Thank you for getting back to me! I realized the storage question wasn’t necessary as they seem to disappear very quickly. 😉 Thanks again. I LOVE this recipe.
Of course! so happy you guys are loving these!
My lighting situation totally sucks, too. Argh. I’m envious of people with large windows in their homes. But these bars look PHENOMENAL!! My bday is tomorrow, and I’d love a batch of these. I have aaaaalmost everything on hand 😉
Happy almost birthday!! Hope someone makes you a batch of these!
These look delicious but I don’t drink/eat coffee. Do you have a substitute or shall I simply just leave it out?
You can just omit the coffee. Please let me know if you have any other questions. I hope you love this recipe. Thanks so much!! xTieghan ?
These look delish although I don’t care for white chocolate. Any substitutes I can use?
Hey Leslie,
You can use milk chocolate chips:) I hope you love the recipe, please let me know if you have any other questions! xTieghan
