Because there is a lot to celebrate today, and because it’s FRIDAY…and because everyone knows that Friday’s deserve chocolate.
So if there was ever a classic brownie recipe to have in your back pocket, it’s this one. Trust me on this. They remind me of the brownies I’d eat as a kid, and I’m really not sure there’s anything better. These are light, a little fudgy, extra chocolatey, perfectly sweet, and they have the most flakey, crinkly top ever. Oh my gosh, SO GOOD.
Before I dive into the delicious details, let me explain the reason I am sharing them.
As most of you know by now, my younger brother Red took home his first Olympic gold medal last week in Men’s Snowboard Slopestyle in PyeongChang, South Korea. If you missed my recap post, you can read part one here and part two here. I said from the start that I wasn’t going to make any fancy Olympic themed food. One, because I am not good with decorating food in fancy ways, and two, because I just didn’t have any great ideas.
That said, after returning home from Korea last week, I felt the need to create a recipe that I knew Red would love. I mean, he did win GOLD, so a celebratory dessert is certainly in order. Right?
Yes, yes, yes. For sure.
Here’s the thing, Red’s a semi picky eater, and doesn’t like anything fancy. His favorite desserts are Special K-Bars (cookbook recipe), chocolate chip cookies, and brownies.
I have a lot of brownie recipes on HBH, but I don’t have one brownie recipe Red would actually eat. Red likes his brownies simple. Chocolate, no frosting, maybe some powdered sugar, and preferably eaten slightly warm. So basically the brownies my mom would make us when we were kids. The ones that came straight out of the Betty Crocker box.
Not going to lie, I loved them too…which is why I am SO excited about these brownies. I really cannot stress enough just how good they are.
When I set out to make these crinkle top brownies, I thought for sure that I’d make them first try and they’d be perfect. I think I felt so confident because I’ve made a hundred and one brownie recipes. But guys, I tested these brownies over and over and over. It was so important to me that they would have the perfect texture, not be dense or cakey, and have the most flakey, crinkly top.
They needed to be perfect, just like the ones I remember eating as a kid with my brothers.
It took a while, used up a lot of eggs…and even more butter.
Like two full days of testing, way over a dozen eggs, probably pounds of butter. Six batches later (possibly more, I lost count), I finally got them right. My freezer is now full of brownies. It’s awesome and very dangerous.
So what’s the secret to that perfect texture and crinkly top?
Real melted chocolate, semi-sweet chocolate chips, and a good amount of whisked eggs.
The chocolate is obvious, but the whisked eggs? You need those to create that crinkly top. Whisking the eggs prior to mixing them in the batter creates air within the eggs that helps to create that crinkly top. It might seem like an unnecessary step, and a waste of a clean bowl, but just trust me on this, it’s what makes these brownies great.
While that and all the semi-sweet chocolate…and butter.
YUMMMMMM.
Red has yet to try these brownies, seeing as he’s still in South Korea, but I’m feeling pretty confident that he’s going to love them.
Speaking of Red, he is competing one last time tonight in Men’s Snowboard Big Air, alongside two of his USA teammates, Kyle Mack and Chris Corning. Kyle is a super close friend of the family, who’s honestly almost like another brother. Pretty excited for the both of them, but I have my fingers crossed for Kyle on this one, as Big Air is much more his event. Make sure to watch tonight at 8pm EST on NBC!
Annnddddd with that, I’m thinking these brownies are the perfect chocolate treat to eat while cheering the boys on.

These brownies are light, a little fudgy, extra chocolatey, perfectly sweet, with the most flakey, crinkly top ever. Oh my gosh, SO GOOD!
Ingredients
- 2 sticks (1 cup) salted butter
- 2 cups semi-sweet chocolate chips
- 1 1/2 cups granulated sugar
- 1 tablespoon vanilla extract
- 2 teaspoons instant coffee granules
- 4 large eggs, at room temperature
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
Instructions
-
1. Preheat the oven to 350 degrees F. Line a 9x13 inch pan with parchment paper.
2. In the microwave, melt together the butter and 1 1/2 cups chocolate chips (stir at 30 second intervals) until melted and smooth. Stir in the sugar, vanilla, and instant coffee.
3. In a small bowl whisk the eggs for 1 minute until bubbly on top. Stir the eggs into the chocolate mix. Add the flour, cocoa powder, and baking powder. Stir until just combined. Stir in the remaining 1/2 cup chocolate chips.
3. Evenly spread the mixture into the prepared baking pan. Bake for 28-30 minutes or until the brownies are just set. Let cool (or not) and dust with powdered sugar. Enjoy!

*For extra thick brownies, bake them in a 9x9 inch square baking dish and bake for 30-35 minutes.

I was literally just searching for crinkly top brownies (the ones from my childhood as well!) yesterday on Pinterest lol but couldn’t find any that really matched what I wanted. These sound Perfect! If I halved the recipe and baked them in a 8×8 pan would that work out okay? I don’t need them to be extra thick, and 2 sticks of butter is a LOT for me to use in one recipe!

I made these brownies and the family all agreed……”best brownies ever”! Our new “go-to recipe”.
The baking time ended up longer than suggested but I attribute that to using Jumbo eggs rather than large eggs and the oval baking pan size was somewhere between 9×9 and 9×12 and also baking at 9100ft elevation often takes longer.

Excellent recipe! Just baked and tried. The consistency turned out well, and was baked just enough to have a slight gooiness. I had to make a slight adjustment – didn’t have baking powder and after listening to a podcast on opting for unsaturated fats, I cut the butter down to 1 stick instead of 2. For these two reasons I was very surprised by how well the texture came out. If I could make any change, it would be to add a bit less sugar as the semi sweet chocolate and cocoa powder gave it some too. Overall I’d say this is a win and sticking as a go to recipe for from-scratch brownies. Thank you!!!!

I made the double-thick version in the 9×9 for company. It took about 1 hour and not the 30-35… but omg it was well worth the wait. We gobbled up warm with good quality vanilla ice cream and dare I say… hot fudge. You could have heard a pin drop in the dining room if it weren’t for the scraping of plates. A definite keeper! First, thanks for practicing and getting the recipe just right. I’ve made these brownies twice now. And it won’t be the last! First time I baked them in the 9×13. Today I used my 9×9. Also, instead of adding the last 1/2 cup chips when mixing, I added 1/2 cup chopped walnuts the second time. I didn’t have instant coffee on hand either time, just some instant espresso, so I adjusted the amount added. These are excellent brownies. Thanks again.

Are these suppose to be very fudge? I keep baking and baking them (they have now been in and out of the oven for over an hour and they are still so liquidy that I can’t even pick one piece up without it all falling apart. I have followed this recipe to a T. I’m also at 1200 FT above sea level, if that makes any difference.

Just made this for a baby shower. I was very apprehensive to make them, as I have not have look with Teagan sweet recipes, and I don’t like brownies, and my only experience with them was “Betty”. But my children and husband love brownies as long as they are not too “fudgy”. Anyway I look at the recipe for days, did lots of research with books, was very concerned at the amount of butter and eggs, thinking it was going to make them too fudgy. Finally decided to make them, follow recipe exactly, and OMG!!!! They are amazing perfect cake-fudge brownies!! Not cake not fudge just a piece send from heaven… that’s what she said. First thing to go at baby shower I had to snatch the last piece for my 9 year old boy!! thank God when he came to the house he first word were where’s my brownie? I guess my days with Betty are done…. Oh yeah I melted the chocolate and butter in stove, low heat, as I was concerned about burning the chocolate in microwave, as I have done that before

My favorite brownie recipe! For years I only made boxed mix brownies cause I never found a recipe that I loved until this one. Thank you for sharing! One question though, if I freeze, will they keep their crinkly top texture upon defrosting?

I’ve just eaten half of it on my own !!! It’s divine. I’m making use of ingredients I have in the home which was bars of dark Lindt chocolate so used those instead of semi sweet chips. Only had half the amount of butter so made up the rest with coconut oil. I need to give the rest of this slice away before I finish it all … lol

I think all the baking powder in the recipe made it taste more like a dense cake. Although I did try to make it in cupcake trays, so maybe something went wrong along the way. I may be wrong but I’ve observed that usually brownie recipes don’t contain baking powder.

Just made these and easily one of the most accurate and easiest brownie recipes I ever found.
I followed each step to the letter and the brownies came out picture perfect. The flavor was rich, sweet without being too cloying, and had a wonderful consistent inside — smooth, gooey but with structural integrity so it did not fall apart. 350 degrees at 30 minutes worked perfectly for my oven; usually I have to adjust the temperature or time, but not here! I never knew to whisk my eggs before adding them to the mixture but it was a game changer as it made the batter smoother. Super accessible ingredients yielded perfect results.

EASY AND DELICIOUS! I’ve made these brownies multiple times. They are deliciously fudgey in the middle and have that great crackle crust on top. The texture of the two together is really wonderful. In addition to the yum factor, these are super easy to make! I never add the instant coffee (I never have it) and it’s still my favorite brownie recipe. I highly recommend this recipe (as well as many other Half-Baked recipes).

Yes, in the notes I state for a thicker brownie to use a 9×9 pan, so using an 8×8 will definitely make them super thick. The recipe is correct with the baking powder. Gooey and fudgy and moist and amaaazing!! I don’t even like sweets, but ai made these for my boyfriend and I tried one… OH BOY!!! Sooo good! Coffee gives them an extra kick! Love these!! Left them in the oven for about 40 min after they didnt seem totally ready at 30 min. But turned out great! Especially nice and warm with a scoop of ice cream!

These were incredible!!!! My boyfriend loves brownies, and I’ve been trying to find a recipe that is delicious and not out of the box. And boy, did I find it with this recipe! They are chocolatey, fudgy, gooey, and the crinkle top is perfect. My boyfriend was very impressed and I will definitely make them again. The instant coffee adds a rich, complex flavor to it. My brownies did not have much of a crinkly top and I am not sure why. I had to.cook them for longer than 30 minutes until the toothpick came out dry. They were very goey and was not sure if this is how they were supposed to be? I accidentally melted all of the chocolate chips before I realized that 1/2 cup should have been added later so not sure if this affected them. I had trouble getting the parchment paper to stay and looked up what to do and it said to spray the bottom of the pan, then added the paper.

Hi! Just made these brownies today and they came out more cakey than expected, but the chocolate flavor was still good! I don’t want to rate them just yet as I did change up the recipe a bit (I was concerned about the amount of butter and am not used to using that much in a baking recipe). Instead of 2 sticks of salted butter (which is 16 tablespoons), I used 10 tablespoons of Smart Balance buttery spread (about 1.25 sticks of butter). I also reduced the granulated sugar to just 1 cup (I believe the chocolate chips already add some sweetness), omitted the instant coffee (I had none on hand), and baked for 30 mins. Would the reduced butter or type of butter affect the consistency and texture of the brownie? I know stick butters are generally more dense and fat than tub butters. I’d greatly appreciate some input!

Second time making this recipe in less than a month because it is SO good!! so quick and easy, and this time I made them with dark chocolate chips and they have an even richer flavor! We love the crunchy top and soft middle, and we have to hide them from ourselves or we’d eat them all in one sitting. Served it with some ice cream on the side for a perfect Monday night treat. Only regret is not finding this recipe sooner because my boyfriend wishes I had been making this recipe instead of the (still tasty) boxed brownie mix.

So sorry you are having issues with the recipe. What size pan are you using? This will have an effect on how the brownies bake. I do not understand how these could possibly be cooked in 30 minutes in a 9×13 glass dish. I did 30 minutes and have continued to check on them every five minutes for an additional 25 minutes and they still don’t seem to be done. I’m hoping at this point they will carry over while they cool down but I am so frustrated.

These are the best brownies I’ve ever made! I am the first to admit to using box brownie mix to make things easy but these take 5 minutes longer to prepare and are 10000x better. It is going to take everything in me to not eat this entire pan. The pregnancy cravings are real!

Hey there – was so excited to finally try non-box brownies! I followed this recipe to a T, baking 9×9 pan, and even after ~50 min I still wasn’t seeing the crinkle and it wasn’t even cooked through! Anything I should watch out for next time? Eggs were room temp and everything.

These brownies were delicious! I’m usually disappointed when I make homemade brownies (I’m someone who loves them out of the box), but there were incredible. I had to bake them a few minutes longer than the 30 minutes since they were so gooey. Can’t wait to make a cream cheese version of these.

I was super excited to try these but disappointed in the result. Maybe you can help me trouble shoot. They seem overcooked and really dry but I took them out after 23 mins because they looked done. It’s taken a long time to come across a recipe that beats boxed brownies, but she did it again! I subbed King Arthur gluten free flour and added xantham gum. Use the best quality cocoa powder you can because it’ll shine in this recipe. I halved the recipe and baked in an 8×8. They were perfection!

Made these tonight to go in the No Churn Fudge Brownie Coffee Ice Cream tomorrow and wow, they’re amazing! So fudgy, soft, and chocolatey. I baked mine in a 9×13 glass pan and bumped the temperature down 25 degrees and cooked them until they were set so they wouldn’t burn on me. Such an easy recipe! I’ll be returning to this one for sure.

These are amazing. Have made them a couple times now. Exactly how moist should they be? They seem to come out more on the fudge-like side, dense but definitely hold their shape/are not runny. Toothpick/knife test no matter how long we keep them in does not come out very clean. First time I baked maybe 10-15 mins or so extra, the second used the whole 30 mins. It didn’t seem to make much difference honestly other than the first batch were a bit tougher in texture versus drier which we didn’t like at all. Still ate them though cuz brownies. Second batch is better I just worry they may be too raw. I am not used to such fudgy brownies. Just wanting to check!

While these do taste delicious, the baking time was way off for me. I had to bake them for almost an hour and they still seemed pretty underdone. I prefer my brownies a little firmer so these were a little too rich and fudgy for me.

I’ve made lots of brownie recipes over the years and always thought none were worth the effort over Ghirardelli brownie mix… but these are my new favorite! So happy I couldn’t resist following Tieghan’s Instagram story. They’re gooey but not straight fudge. I’m going to try these with some butterscotch chips for Valentine’s Day 🙂

Hi there! These are amazing in flavor, but mine did not turn out fudgey like the picture. When I was baking my brownies in an 8×8 pan, they were pretty soupy during the baking process. I baked them for 35 minutes and in the end they turned out a little oily, crunchy on the outside but also a little flakey/dry on the inside. Any tips?

The flavor is delicious, but mine didn’t turn fudgy nor crinkled as the pictures, I don’t know where I made a mistake, this is the first time a recipe did not work for me, did everything by the book but they turned out a bit oily, crunchy in the outside and flaky (soupy) during the baking time.

So sorry you had issues with the recipe. Was there anything you adjusted? What size baking pan did you use? The key for the crinkle top is to really whisk the eggs. A little more information would help me to better answer your question. xTieghan
I was super excited about these, but they didn’t work for me. I’m not sure where I went wrong. The butter was bubbling up through them while the baked—like oozing. And I used a glass pan—maybe that didn’t help. I also melted the entire two cups of chocolate chips, which was my mistake! I didn’t realize the two cups were “divided” until it was too late.
I appreciate the melted chocolate and the resulting taste!! Not just cocoa is always a plus!! But personally, they were too sweet for me. Maybe less sugar next time for me? They did make the house smell divine though! I will keep trying!

Made these tonight and they are EASILY the best brownies I’ve ever made! I ran out of semisweet chocolate chips halfway through so I used a mix of those and dark chocolate chips. Amazing! My new go-to for sure!

OMG your recipe is THE best!!! Thanks for that! Everyone loved them. What I struggled with was to know when to take them off the oven though. I felt like the inside was still runny at 28minutes so kept adding time in the oven by increments of 1 minutes. But would love a trick to help know when to take them out based on how they look.

Omg your recipe is THE best!!! Thanks so much everyone loved them and it was my first attempt. Will definitely make them again. What I struggled with though was to know when to take them out of the oven. The inside was still runny at 28minutes so I kept them in the oven while checking on them every minute, until by min 32 I turned the oven off and left them inside for 3 minutes or so. They were still goey inside . Do you have any tip to know when they are ready based on how they look or something to try to make sure they’re done? Thank you!!!

The brownies are great! I halved the recipe for an 8×8 and omitted the instant coffee granules bc I don’t have them. They baked for almost 40 min tho but they are so fudgy and a seriously crinkly top!

The perfect brownie recipe! I accidentally only melted 1/2 cup of chocolate chips with the butter, and then only added 1 cup to mix in before baking. They actually turned out fantastic, they were so light and wonderful.
The second time I made them I followed the instructions properly, except I substituted 1/2 cup of chocolate chips for peanut butter chips. So good!
The crinkle top is just perfect.

I just made these and the flavor is great. I followed the recipe but I melted the chocolate and butter in a double boiler. They crinkled on top but the inside did not cook. It was like warm batter. I’m not sure what went wrong. I guess I need to keep them in the oven longer?

We use to make these often as they were our favourite brownie recipe. I recently went gluten-free so we tried these with sweet brown rice flour. I also only had coconut sugar in the house so that is what we used for sugar. They turned out great! Definitely a different brownie – a little more cake-y than fudge-y but still quite good! The coconut sugar definitely took away some sweetness, but that was ok with me as I don’t like things too sweet anyways. Next time I may try reducing the amount of rice flour to see if they come out more fudgey. Someone also mentioned they added xanthan gum so I may try adding that or some tapioca flour next time.

I substituted 1:1 gluten free flour, and used crisco instead of butter- the brownies still had a great gooey texture with crispy crinkle top, an they were a hit with my gf/df classmates!

I am really blown away by how incredible these brownies were. Of note, I used 1C semi sweet and 1C 65% chocolate chips but it was spectacular. I’m excited to try it again with two cups of semi sweet. Also, my brownies were still liquidy after 30 min so I put them back in for an additional 10. Def saving this recipe. Thank you!

I baked this in a glass 9×13 pan and 31 minutes was not nearly long enough. I’m guessing 35-38? I’ll try it again because they had a really good flavor!

I wrongly melted all the choco chips….
but it was still sooooo gooooood!!!
Only thing is it’s kinda too sweet for me eventhough I used dark chocolate….
Do you think I can use less sugar? Or texture will be completely different if I can change amount of sugar?
