Chocolate Covered Toasted Sesame Fortune Cookies.
Because everything covered in chocolate is just better.
And also because it’s Fat Tuesday, so chocolate today is most definitely a must.
But that’s not really the reason I made fortune cookies.
It’s totally because I wanted to write my own fortunes and then pretend like they’d really come true. Yeah, right.
Ok, ok, the real, real reason? Well I don’t know if you know this, but the Chinese New Year is Thursday. Normally I don’t pay a lot of attention to this, but this year I just felt like partaking in the celebration.
And when I say celebrating, I really just mean making some dang good homemade Chinese food. Sadly, I live in a place where the Chinese cuisine is not really all that awesome. If you want good Chinese around here, you just have to make it yourself. Not gonna lie, this doesn’t bother me in the least, I am kind of weird about restaurant eating. I know, huh? See, I just really like knowing what’s actually going into my food and how it is prepared.
I will 100% admit this is due to my “must control everything” mind-set. Some day I hope to outgrow this…but I am not holding my breath.
Anyway, I have always wondered how fortune cookies are made. Growing up, I always used to love cracking mine open, but I never really understood the fortune. What’s up with that? Half those fortunes never made any sense to me. And to be brutally honest, I always ended up eating only half the cookie because I thought they where kind of bland.
Like where is the flavor? Where is the CHOCOLATE?
So I added flavor AND… basically drowned my cookies in chocolate. It was the right thing to do.
Here’s the catch, fortune cookies are easy, but actually forming them into the cookies is kind of a pain. When the cookies come out of the oven you have to work fast to form them, if you don’t you will just end up with a flat cookie. That’s fine, but it’s just not the same.
Surprisingly, folding the cookies is not all that tricky. I used a coffee cup to help me get that classic shape and it worked really well. Once the cookies are formed, they should harden up immediately.
And then it’s time for that chocolate bath. YUM.

Chocolate Covered Toasted Sesame Fortune Cookies.

Ingredients
- 2 egg whites
- 6 tablespoons salted butter - or unsalted butter but add 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup flour sifted
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 teaspoons toasted sesame seeds plus more for sprinkling
- 8 ounces bittersweet or milk chocolate melted
Instructions

Preheat the oven to 350 degrees F. Line two baking sheet with a silpat or parchment paper.

Add the egg whites to the bowl of a stand mixer (or use a hand held mixer) and whip until stiff peaks form. Carefully slide the whipped whites into a small bowl and place in the fridge.

To the mixing bowl, add the butter and sugar. Cream until smooth and fluffy. Add the flour and blend in, then add the vanilla and almond extract, blend again. Add back the chilled egg whites and mix on low until well incorporated and the batter is smooth. Stir in the sesame seeds.

Using a 1 tablespoon measure, scoop out the batter and spread into a 3-inch circle, it should be a thin layer. Do three cookies per baking sheet.

Place one baking sheet in the oven, wait a few minutes and then add the other baking sheet. While the cookies are baking, prepare the remaining batter so that it's ready for the oven when the first two batches come out.

Bake each pan until light golden brown, 7 to 8 minutes. Remove the pan from the oven. Working quickly and with one at time, place a fortune message across the center of the cookie with a bit hanging out. Use a flat spatula to very carefully release the cookie from the pan. Fold it in half to make a semicircle. Place your semicircle onto the edge of a coffee cup, and quickly fold the ends down, to shape into a fortune cookie. Stick the cookie in a muffin tin to let it cool and hold its shape. Don't worry about making them perfect!

Line a cookie sheet with wax or parchment paper. Melt the chocolate. Dip each cookie into the melted chocolate, covering the cookie completely. I used a chopstick to dip my cookies and it worked really well. Place the chocolate covered cookie on the prepared cookie sheet and sprinkle with toasted sesame seeds. Place in the freezer for 10-15 minutes to help the chocolate harden quicker. Store in an airtight container in a dry, cool place for up to one week.

My Fat Tuesday choices would be beignets or Grater’s (the local bakery-I don’t care what they put in them–they’re good) or Sweet Tooth’s peanut butter meltaways or Unos pizza–gee I’m on a roll but snowed in so I got to get out to my car today and get to at least one of these places or go to the store to get groceries to make something.

Yes, they do. For some of them I added the fortunes after dipping, but then they just fell out.
