Serve this skillet chicken over pasta, mashed cauliflower, or creamy polenta…though I am partial to pasta for this recipe. This dish makes great use of those delicious ears of summer corn. It’s the 30-minute dinner that everyone will love!
As we enter into these last few days of July (I can’t believe July is over), I’ve been really trying to come up with some new and fun ways to highlight summer produce. Sometimes I feel like summer recipes can actually lack in flavor a bit. Yes, I LOVE simple recipes, and I live for a simple buttered noodle dinner with a bit of garlic and fresh basil. But you guys know me, I also live for a dinner that’s full of flavor, color, and texture too.
It’s all about the mood I’m in that day. If I’m in need of simple and comforting I’ll make something like this lemon orzo or my garlic butter ramen. But when in need something with a bit more of a kick to it, I’ll turn to a recipe like this chicken.
Is it still simple and quick to cook? Yes, absolutely.
But is it also loaded with fun and exciting flavor, color, and texture? YES. ABSOLUTELY.
Sorry for all the caps, but I’m extra excited about this recipe. It’s just really good.
The inspiration…
Hmm, I’m not really sure. I saw a random recipe for chicken lazone over on Pinterest the other week. Also known as chicken in a creamy sauce with cajun seasonings. I was suddenly hit with the idea of a chicken lazone skillet dinner with the addition of my favorite blend of cajun inspired seasonings, summer corn, fresh herbs, and a splash of wine too.
It’s kind of a mix between my favorite garlic butter creamed corn chicken and my cajun popcorn chicken.
And trust me, it’s a very happy marriage of flavors. Guys, this chicken is so delicious. It even got the seal of approval from my oldest brother, who’s a rather tough critic these days.
Onto the process.
This is a skillet dinner, so it’s all pretty straight forward, quick, and easy. You’ll need chicken breast cutlets, fresh corn, some herbs, and a handful of pantry staples plus thirty minutes of time.
Here’s how this works.
Dredge the chicken through a beaten egg and toss in flour to coat. Pan sear the chicken until it forms a nice golden crust on the outside. Using thin chicken cutlets is key. The thin chicken cooks evenly and browns nicely in a short amount of time.
Once the chicken is crispy and the butter browned, pull the chicken out of the skillet. Add the corn plus some butter, some garlic, and thyme, and let that cook until it’s nice and golden.
Now add in pretty much all remaining ingredients, some wine, some cream, and a mix of cajun seasonings. Add the chicken back, and done. You’ve got crispy chicken in a lusciously creamy, spicy sauce, with herbed buttery corn mixed in too.
I know I say this every single day, but this recipe really is a favorite. It’s one of those dinners that you’ll crave time and time again. Plus the sauce kind of just melts in your mouth. Yum!
What to serve this with?
You’ve got a lot of options. As you guys can guess, I love pasta and usually serve this chicken overtop linguine or penne pasta. Both are delicious.
Other ideas include steamed quinoa, for a healthy, protein-packed grain, brown, or white rice. All would be equally delicious. Creamy polenta would also be a great option. Or for an even lighter option, my go-to cauliflower mash,
You can’t go wrong, so just pick something you love! Make a side salad and you’ll have the perfect simple summer dinner that can easily be carried into the fall months ahead.

Skillet Creamy Cajun Chicken Lazone with Herby Corn
One skillet, lightly breaded chicken seared until golden in a deliciously, creamy, spicy, cajun style sauce!
Ingredients
- 1 large egg, beaten
- 1/4 cup all-purpose flour or gluten-free flour
- 4 boneless skinless chicken breast cutlets (about 3/4 inch thick)
- kosher salt and black pepper
- 3 tablespoons extra virgin olive oil
- 2 tablespoons salted butter
- 4 ears corn, kernels removed from the cob
- 2 cloves garlic, minced or grated
- 2 tablespoons fresh thyme leaves
- 1/2 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
- 1 cup canned coconut milk, cream, or whole milk
- 2 teaspoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/4-1/2 teaspoon cayenne pepper using more or less to your taste
- 1/2 cup fresh basil
- lemon wedges, for serving
Instructions

1. Place the egg and flour in separate shallow bowls. Season the chicken with salt and pepper. Dredge both sides of the chicken through the egg, and then through the flour, tossing to coat. Place the chicken on a plate.
2. In a large skillet set over medium heat, add 2 tablespoons olive oil and 1 tablespoon butter. When the oil shimmers, add the chicken and cook on both sides until golden, about 5 minutes per side. Remove the chicken from the pan.
3. Add the remaining 1 tablespoon olive oil, 1 tablespoon butter, the corn, garlic, and thyme. Cook another 5 minutes or until the corn is golden.
4. Reduce the heat to medium-low and pour in the wine. Simmer over medium heat for 2-3 minutes, then add the cream, onion powder, paprika, chili powder, and cayenne. Season with salt and pepper. Slide the chicken into the sauce, simmer 5 minutes, until the chicken is cooked through and the sauce has thickened slightly. Remove from the heat.
5. Serve the chicken topped with fresh thyme, basil, and a squeeze of lemon. Enjoy!

I made this for dinner today. It is absolutely DELICIOUS!! It will definitely be added to our regular rotation of meals. I only made 2 small adjustments- I used chicken broth instead of wine and I didn’t have smoked paprika so I substituted a portion of regular paprika with some cumin. I served it over penne noodles.

This beautiful dish is as easy and delicious as presented, and would have 5 stars except it’s sooo spicy. My husband is sensitive to spicy heat so I literally divided each spice in half, in anticipation of his sweating. I think the halved spices were just right! I love basil, so might add more. So I was looking for a recipe to add a little variety to my normal eats. Having lived in New Orleans in the past for 3 1/2 years, the cajun in the name reeled me in. Never seen a Cajun recipe quite like this before, but trusting my success with your recipes in the past, I went for it. And I was glad that I did!
One option you give us is to go with 1/4 to 1/2 teaspoon of cayenne pepper. I went with the 1/4 teaspoon and thought the recipe and fire were perfectly balanced. The fresh corn adds a lot of taste and character to this recipe.One substitute I made was to go with boneless, skinless thighs versus the recommended breasts. I find thighs are so much more flavorful than chicken breasts.
I served with penne pasta and green beans and the meal was perfect!

This recipe is a flexible one since it can be made vegan (I made half of it with chicken and the other half with breaded tofu cutlets). The coconut milk keeps it nice and creamy. However, it needed more spice — I added a bay leaf, a few teaspoons of Bayou Blast, and some Louisiana hot sauce to give it a bit more taste. We served it over gnocchi but with the corn in the sauce as well, it all felt a bit starchy. I think next time I’d start with the usual trifecta of Cajun vegetables (diced pepper, onion, and celery), cooking those down and adding a bit of diced tomato, before putting in the cream sauce. I might skip the corn and instead do something less starchy, like green beans. But overall everyone liked it and it was gone by the end of dinner 🙂

I’ve made this twice this week. First time with orzo and my kids loved it so much that they said I needed to make it when daddy returned from his trip. So tonight I made it again, added red peppers and a local chili pepper to the corn and served over polenta. Hubs loved it too.

OKAY made this tonight and my husband said it was one of our best dishes! The spicy flavors, CORN, and lightly breaded chicken automatically made this a winner for me. I’m clearly very excited. The recipe scored extra points because basically all the ingredients were in my pantry/fridge AND it didn’t take a lifetime to make/clean up. Made this tonight. My first of your recipes. No onion powder so sautéed some finely chopped onion prior to adding the corn and used coriander instead of basil. It was soo good. I was lighter handed with the spices than the recipe called for and I won’t do that again! Can’t wait to Try more!

Recipe is great. Tasted delicious!!! 4 stars because it says cook time is 15 mins but chicken alone takes 10 then another 5+ for corn then another 2/3 for wine then another 5ish to simmer with the chicken…..I’m no mathematician but that’s way more than 15 mins 🙂

I made this for dinner on Sunday and it was amazing! It will definitely go into my dinner rotation. I used fire roasted frozen corn instead of fresh and forgot to add in the lemon juice and basil at the end. It was still fantastic. I served it over rice, which was great, but I think I’ll try this with pasta next time. While cooking I was kind of worried the sauce wouldn’t thicken since it was so soupy to start, but it got nice and thick after only a couple of minutes simmering. This is one of the best things I’ve ever eaten. The only thing I added was diced onions and grated zucchini to the corn mixture. I also used Penzey’s cajun seasoning just to make things easier. It’s a really good spice blend. Thanks for the delicious recipe!

I’ve had this recipe saved for a few weeks and finally found myself with some corn and chicken that needed to be cooked so it was the perfect opportunity! Overall, this was great and easy to make. I feel like it would benefit from seasoning with salt and pepper a few more times during the process and overall the seasoning felt a little unbalanced to me at the end. I think the combination of smoked paprika and chili powder was too heavy and deep of a flavor for a chicken dish like this. I sprinkled some extra cayenne and regular paprika on during the last simmer and that helped. I’ll definitely make it again but will probably do half smoked, half regular paprika and maybe equal parts chili powder and cayenne. I served it over whole wheat shell pasta that was perfect for catching the extra sauce and corn!

Great flavors and so so delicious! Followed the recipe exactly and served with rolls. I opted for coconut milk and didn’t get any noticeable coconut flavor, but it still gave a great creamy texture.

SO good! I normally am not a fan of coconut in my savory foods, but the light touch of coconut cream was perfect. Also, Vons delivered turkey cutlets instead of chicken, but it was so BOMB. Yum. This was awesome, however, I followed the recipe exactly and wound up with a mountain of corn! Because of this, the corn to sauce ratio was way off. That being said it was delicious and I would absolutely make it again! I don’t know if my corn was maybe just absolutely massive or what? To me they just looked like your standard ears of corn, but truly, I had an entire salad bowl of corn just overflowing.
Next time I do this with my apparently massive earns of corn, I would use 2 rather than 4.
Like the suggestion, I served this on top of pasta (linguini) and it was to yummy! Definitely a recipe to make again and again!

This was so good! Glad I came across this recipe before the good corn was all gone. It made plenty of sauce, so today I scooped some into a bowl of leftover quinoa and added avocado and tomato. Made a delicious lunch.

I had high hopes with this recipe because of the reviews. But I just found the taste to be boring. I did make twice as much “sauce”, because I wanted to serve it over noodles, but then the sauce was so very thin. I finally resorted to adding in a bit of a cornstarch slurry to thicken it up. I am putting my comments on here, only to give real feedback. I am huge fan of HBH, but just not this recipe.

This was soooo good! We made it a little less creamy by subbing in 1/2 c. cream and 1/2 c. of chicken stock and it turned out perfect!

This was yummy and liked by all. I made it as directed, and served it over pasta with a salad. There wasn’t nearly as much liquid as in the picture, so I’ll need to play with that next time, especially if I serve it over pasta again.

This is so yummy! I didn’t have white wine so I used chicken broth instead. Did add a bit of corn starch to thicken the sauce at the end and enjoyed over penne. Definitely putting on the monthly rotation!

This was absolutely delicious but the milk curdled while simmering on low and the flour coating on the chicken got soggy and came off. It’s not the recipe’s fault, just my own inexperience. Any suggestions for how to fix this? I do plan on making it again. 🙂

So sorry about this! Next time, be sure that you don’t have a lot of flour on the chicken, a light coating is good and then make sure your milk is at room temp, this should help with the curdling. I hope this helps! xTieghan
Love the idea of this recipe but don’t love the smoked paprika. I think next time I’ll substitute Cajun seasoning for the smoked paprika. And add spinach and tomatoes. Thanks for the recipe tho! Super fun to try and gives me a great base!

I made this today and it was SO GOOD. My boyfriend raved about it and added it to his “approved recipes” list. We had it over wild rice – I added a bit more cream, red pepper flakes, lemon juice and served it with a little parm. It was fab. Highly recommend!

Made this last night and it was great! I didn’t have any white wine (drank it all out lol) or chicken broth so i was freaking but I used apple cider vinegar instead diluted with some water. I also added some peppers. I didn’t have smoked paprika so I mixed regular paprika with chipotle chili powder. Plus I used canned corn. I threw it over some udon noodles because that’s all we had, and it was such a hit. My fiance said let’s add it to the roster (which includes your peanut chicken and coconut curry meatballs). I made this yesterday and loved it! My fiancé is not a fan of coconut but I am lactose intolerant, so I made it with coconut milk without telling him and wouldn’t you know it… He cleared his entire plate! My only remark would be that the total cooking time listed of 15 mins is off. The recipe states to cook the chicken for 5 mins per side, then the corn for 5 mins, the wine for 2 mins, and the sauce for 5 mins, which would give you a total cook time of 22 mins. Not a big deal but it just isn’t as quick as expected. We had ours with spaghetti, and planning to do the left overs with your cauliflower mash tonight!
