Garlic Butter!! Creamed Corn Chicken! Oh my gosh, is there anything better? This chicken is made in under an hour, uses just one skillet, and is beyond delicious. It’s creamy, garlicky, packed with corn, and finished with fresh herbs and parmesan. Perfect cozy, summer dinner for any night of the week.

This is what I call summer comfort food. As you guys know, come the fall months I’m all about cozy, comfort foods, but I also think that summer can use a cozier recipe or two. Enter this creamed corn chicken.
It’s cozy, but yet totally summery at the same time, and I am in love with it.
Plus, it’s a one skillet, no oven, kind of recipe. So for those of you who don’t want to do a lot of dishes and can’t even begin to think about turning on the oven in the summer heat, this is your dinner.

Before I dive into all the details, I have to say thank you to everyone who commented on Monday’s post. I was so thrilled to see that so many of you enjoy my stories in addition to my recipes. Rambling on about life isn’t what most people recommend doing within a recipe blog post, but I’ve decided I don’t really care. I’m all about sharing my life stories with you guys!
I was also so excited to see so many of you commenting. Summer typically is a very slow time for the online/digital world, but it really excites me to see so many of you still reading away and commenting. I absolutely LOVE hearing from you guys and your kind words, feedback, and even (constructive) criticism, are what keep me energized and excited to share new content with you guys every single day.
So long story, short, thanks so much for reading and hanging out with me everyday! Hope you guys feel like we are friends cooking together in the kitchen…

Speaking of which, I finally posted my first IGTV video and now we can totally can be cooking together in the kitchen. Well kind of!
I made my favorite Blueberry Chamomile Galette and had a lot of fun putting it together…but I’m not going to lie, being on camera is hard, but in a weird way, I kind of love it too. It’s definitely difficult to watch myself though. Like I just can’t do it. Thank God I don’t have to edit these or I would delete everything.
This is just the first video I’ve done, and I am filming solo while using my iPhone, so it’s for sure not perfect, but then nothing in life is perfect! That said, hoping to improve the quality of the videos now that Kai is in town to film!

OK. Garlic. Butter. Creamed Corn. Chicken.
Here are all the delicious details.
Since it’s summer and it’s super hot, I wanted to create a recipe that was quick, simple, easy, required no oven, but was still delicious. That is this chicken.
It all starts with crisping up some bacon in a large skillet. The bacon is our first layer of flavor here, and while you can choose to leave it out if you prefer, I do think it adds so much flavor and pairs perfectly with the sweet corn. It’s up to you but…
I’d use the bacon.
Once the bacon is crisp, you’ll sear the chicken, then cook the corn with some butter, garlic, and herbs until it’s golden and smelling delish. Add a little white wine and simmer that all together until the chicken is cooked through.
Finish things off with some cream, some cheese, and fresh basil, and dinner is complete.

I really could not love this skillet dinner more. It’s simple, but yet so full of flavors that everyone really enjoys. I love serving this chicken over steamed quinoa for a healthy, protein packed grain, but brown or white rice is equally delicious. Make a side salad or some grilled veggies and you’ll have the perfect simple summer dinner.
SO GOOD. I know I say this every single day, but this recipe really is good. It’s one of those recipes that you’ll crave time and time again. Plus the sauce kind of just melts in your mouth. YUM!

Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh chopped thyme, plus more for serving
- kosher salt and pepper
- 1/4 cup all-purpose flour
- 4 slices thick cut bacon, chopped
- 1 small yellow onion, chopped
- 2 tablespoons butter
- 4 ears corn, kernels removed from cob
- 2 cloves garlic, minced or grated
- 1 teaspoon crushed red pepper flakes
- 3/4 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc
- 1/2 cup heavy cream, canned full fat coconut milk, or whole milk
- 1/2 cup grated parmesan or Asiago cheese
- fresh basil
Instructions

1. Rub the chicken all over with 1 tablespoon olive oil, thyme, and season generously with salt and pepper. Sprinkle the flour evenly over the chicken and toss to coat, adding more flour if needed to cover the chicken.
2. Heat a large skillet over medium high heat and cook the bacon until crisp. Remove the bacon from the pan and drain onto paper towels.
3. Add the chicken to the pan and sear on both sides until golden, about 5 minutes per side. Remove the chicken from the pan.
4. Add the remaining 1 tablespoon olive oil. When the oil shimmers, add the onion and cook until fragrant, about 5 minutes. Add the butter, corn, garlic, and red pepper flakes. Cook another 5 minutes or until the corn is golden.
5. Reduce the heat to medium low and pour in the wine and 1/2 cup water. Add the chicken back to the skillet and bring to a simmer over medium heat. Simmer the chicken for 10-15 minutes until cooked through. Stir in the heavy cream and parmesan, cook another few minutes until warmed through. Remove from the heat and top with bacon.
5. Serve the chicken topped with fresh thyme and basil. Enjoy!

What can I sub for the white wine? Can I sub cans of corn (since I have some), and if so, how much?

Sooo good.. My husband doesn’t like cheese, so I left it out and it was still delicious. We try to avoid gluten, so I breaded the cutlets in oat flour made by whizzing rolled oats in the blender. It worked fine. A friend of ours who is a super taster (has super sensitive taste buds) really liked it too. This recipe is definitely going to be in the dinner rotation! I was also going to ask about the chicken skin. Maybe you should add “skinnless” to the recipe for clarity? I do prefer bone-in, skin-on chicken thighs. I assume I might increase the cooking time a bit for that? This looks delicious, so it’s going on my menu for this week!

This was so good! We made some slight alterations: used a large Dutch oven instead of a skillet, sautéed the onions before the chicken, used bone-in chicken thighs and the BEST substitution ever, used thick cut beef bacon (since I can’t eat pork). My friends said it tasted like real bacon and left behind a less smokey flavor. They’re still raving about the meal days later.

I made this dish tonight for my husband and I, and it was splendid. I admit I made a few changes, as I usually do, using the recipes as more of a guide. Used frozen corn in place of fresh. I also replaced the wine with chicken stock using almost the same amount of stock as wine and using all but 3 tablespoons of the cream, replacing it with chicken stock, and only using 3 tablespoons of cream, effectively cutting the fat and calories. It was fantastic! Thankis so much for this recipe!! My husband loved it and I am sure to be making it many more times!!

Wow this recipe was absolutely amazing! I didn’t end up using cream because when I opened my (newly purchased) cream, it was spoiled 🙁

Made this last night and it was yummy. Loved the bacony chicken combined with the crunchy creamed corn and fresh herbs. As I was making it, I realized it was also a saturated fat bomb! The bacon grease, butter and heavy cream although delicious, are tough to metabolize.
I’d love to know any creative alternatives you may have that will deliver the same taste. Will make again, but only with substitutions!

I was searching for a new chicken recipe and stumbled on this. Made it for dinner tonight, fully expecting enough leftovers for my lunches at work for a couple of days, but came away empty handed. I made this a few weeks ago and it was a hit! It’s been added to our list of favorites! Our grocery store was only selling yellow onions by the bushel so I used a shallot. Made this this evening. Very tasty! I used bone-in chicken thighs, and added sage to my herb mix. It was difficult to evenly stir in the cream and cheese at the end with the meaty thighs in my way, so I took them out, and then added them back. At the end there was a little grease that had separated out, which is not visually or texturally ideal, but didn’t bother me (though I do wonder if it will separate even more when I re-heat the leftovers tomorrow? I nearly always cook for one, but still keep forgetting to think through how these recipes will fare on the second and third days). I also topped with fresh quartered cherry tomatoes from my garden before serving, which made me feel healthier and brought a nicely balancing tartness to the plate, I highly recommend.

This meal was everything it’s cracked up to be. I made this for my boyfriend and I, but I cut the recipe in half which was actually perfect for the two of us. I thought the red pepper flakes were a little spicy (I’m sensitive to spicy things) but it was a great contrast with the sweet corn and the cream. My boyfriend didn’t mind the slight heat and he said he would add like more bacon. They always do haha. I didn’t take a picture this time but would definitely make again. Great meal!

Ours didn’t look as pretty as yours but it tasted as great as yours looks! I like spicy food so I added a small jalapeno. My wife and I ate it with your “chickpea stuffed zuchini”. Wow. So. Delicious. I made this for dinner with a couple of tweaks in my Dutch pot. Added 2 red potatoes chopped into bite size pieces and swapped out the 1/2 cup of water for 1 1/2 cups of broth in order to oil the potatoes. I used whole milk. So many flavors in this dish. Loved the spice, and pretty much everything about it.

Can’t get enough! I love the taste, it’s the perfect amount of creamy and savory. Best part – not a lot of prep or dishes used! I used applewood smoked bacon and a mirin / apple cider vinegar blend instead of white wine. The combination added a nice sweet / sour edge to balance the other flavors. Such a tasty dish! Hi Tieghan, I have now made this several times. Because I am vegetarian, I substitute the chicken with Quorn chicken pieces. It is really lovely. If I have a few people for dinner it is really nice to make this, plus a tomato based dish, plus some new potatoes and something green (I like to have all colours covered on the table!) and then people can help themselves. This dish is very popular with the cream lovers!!

I just made this for dinner and it’s absolutely incredible! I used 1 1/4 cup chicken broth + a splash of white wine vinegar instead of the wine, dried thyme instead of fresh, boneless skinless chicken thighs, and skipped the parmesan cheese. I ended up with a deeply flavorful, creamy dish that I will make again and again.

Hi Tieghan! My 9-year-old son pulled your cookbook from our public library shelf to choose recipes for us to make together. He practically went through an entire pack of post-it flags selecting the ones he wanted to try so I ended up buying our own copy (and one for my best friends who shares my love for cooking). Tonight was the first night that we had a chance to try a recipe and this chicken was hit with the whole family – especially with my 3-year-old. He even asked to pack the leftovers in his lunchbox which, sadly, means that we had to actually leave some leftovers to pack. Had this last night as I saw it in your ’25 summer favorites’ post, and it was amazing! The extra crunch from the bacon is absolutely divine, those were my favorite bites! 🙂 The addition of wine to the sauce was super nice as well, plus it’s fun to cook with wine cuz you always get to enjoy a glass or 2 with the meal of course! This was delicious! I spilled my bottle of red pepper flakes in the pan so it ended up a bit spicy, but it was SO good! And the bacon really does add to it, so that was a great call. The chicken breast was nice and juicy, and great mopping up that creamy sauce. Even my husband, who used to be anti-corn, ate every single kernel and loved it. And as much as I hate shucking corn, this is well worth it – I’ll be making this again! Thank you 🙂

This was alright but nothing to write home about. A few notes I’d give for anyone else making this. I think fresh or frozen corn only, I don’t think canned would go well here. Also I’d advise heating the cream in a different pot and incorporating the cheese completely in with it before adding in with the corn and all. I removed the chicken and simmered while whisking for 5+ minutes and there were still chunks of cheese in there- too many veggies to get it nice and smooth. Also the fresh basil really is needed here, to give a light fresh flavor to the otherwise heavy dish. I wouldn’t advise skipping it. I mean it’s hard to dislike anything with cream, cheese, and bacon in it 😛 But I honestly don’t think I’d make this again.
Also if you can’t find skinless boneless chicken thighs, just use skin on bone in, remove the skin, and pop the (oven safe) skillet in the oven for 10-15 minutes on 425º instead of simmering on the stove top to finish cooking through. Otherwise bone-in takes too long to finish on the stove and can make it rubbery- speaking from experience, glad I had the foresight this time!

10/10 delicious. I love a hearty, simple, one skillet dish and this one hits all the marks. Rich but not too rich, and not super carby where you feel “blah” afterwards. We did cut the red pepper flakes in half but that’s only bc I’m a wimp when it comes to spice. Will definitely make this again!

this dish may be my most favorite thing i’ve ever made. the balance of flavors is just perfect. i cannot tell you how much i love it. i use turkey bacon because i don’t eat pork and i’m too messy to cut kernels off of cobs and it is still delicious–so i can’t even imagine how amazing it is with fresh corn and pork bacon. (also, wanted to let you know that the chicken and sage dumplings were superb and my family went bonkers for the hawaiian chicken tacos) anyhoo, thanks for the amazing recipes!

I made this recipe last night for my boyfriend and I and it was a hit! I’m young and new to cooking and half baked harvest has been such a joy. I killed it last night with this one—thank you for making such yummy recipes that are not only easy to follow and well put but also involve ingredients that I’m happy to have leftovers of. I’ll certainly find something to do with all of this bacon! I asked my boyfriend if I made this again in like a month if he’d be excited, and he said “I’d be excited if you made it again next week!” The chicken was fabulous but the creamed corn stole the show.

I am going to try making this again when I have white wine on hand. I was drooling over the photo, but had to substitute the white wine for apple cider vinegar (recommended by a different blog, equal parts) BIG MISTAKE. My husband likes it but I can’t even stand the smell of the dish with the vinegar in it. Side note, I am pregnant so this could be affecting my taste preferences, but I would always recommend trying to have all the ingredients.

This dish has A LOT of flavors going on. It had a French vibe due to the butter, white wine and thyme, which wasn’t what I was expecting, although I typically love that flavor combo. My main critique of the dish was that you really couldn’t taste the corn over the bacon, butter, garlic, wine, thyme, basil, parmesan and onions. I liked the chicken and the sauce but it would have been just as good served with rice/potatoes/noodles, without wasting fresh-off-the-cob corn. It wasn’t bad, it just missed the mark for me.

I made this tonight after pinning it weeks ago, it was absolutely fantastic!!! August in Minnesota is all about corn and it was perfect in this dish. Both my girls 9 and 3 could have eaten the whole skillet.

This was good but took significantly longer than anticipated from start to finish…and when all was said and done found the richness didn’t equal the wow factor I was hoping for. Served with grits which was a good base for the creamy sauce and made it feel a bit more Southern. Also, had lima beans on the side. Used fresh corn but could absolutely use frozen corn. Did like the little kick of crushed red pepper that came through at the end of tasting note, not spicy but a nice flavor. Probably won’t make again just due to the richness but was enjoyed enough for one time by the family. Thanks.

Hi there! My sister and brother-in-law raved about this recipe so I decided to try it. I found the sauce did not get thick at all at the end, so it was rather soupy/runny. I did use whole milk as a substitute to cream, but added the parmesan also and was surprised it didn’t thicken up after simmering for a good 10-12 minutes at the end. Any suggestions?

I finally got around to making this. I used chicken tenders because it’s what I had. My husband, who will only eat corn directly off the cob, already asked when we can have it again.

This was my 1st time trying one of your recipes and I LOVED, LOVED, LOVED this!! The taste was even better than the way it looked (which was JUST as your picture and that RARELY happens for me when I try to follow a recipe!) 😂 My daughter said it was a TAD too spicy for her, but she IS only 3! I paired it with a white jasmine rice, it evened out the spice perfectly for her to mix the corn with, and she gobbled it all up! We all did! Thank you and I can’t wait to try more recipes!

I made this last night and it was perfection! I’m in Denver, and believe it or not, it snowed here yesterday/today. I loved being able to use fresh basil and thyme from my garden in this recipe, before everything froze over. Not to mention, this was the perfect “Summer” dish on a cold “winter’s” night. Such a cozy meal! My chicken breasts took forever to cook, so I ended up pulling them out of the dish and cutting them in bite sized pieces to speed up the cooking time. Next time, I’d probably butterfly them. Thanks for the amazing recipe – can’t wait to reheat the leftovers for lunch today.

Loved this recipe! I never knew that you could get a crispy chicken from just rubbing on a little oil and flour! Will be my go to method for “fried chicken” from now on. The creamed corn was delicious. We’ll probably skip the bacon next time as it had plenty of flavor already!

Tried this last night…the flavours are great – I used coconut milk and chicken thighs. I would however skip costing the chicken In flour next time. Since the chicken is in a sauce it doesn’t maintain any crispness (at least mine didn’t) and it just made it a bit soggy,

This is amazing! I wanted to share what I did with the leftovers. I had some homemade tomatillo sauce so I added it, some cooked rice and chicken broth and made soup! I have made this three times since spring and am doing it again tonite. Perfect for summer outdoor cooking. We use a Gas One 200,000 btu propane burner which is very sturdy and perfect for our 16” cast iron skillet. I’d does get heavy! We went with bacon, of course and served over brown rice. One question – last time, the flour burned a bit on the bottom of the pan when I cooked the chicken. Is including the flour totally necessary or could I skip that part and just sear the chicken with the seasoning/olive oil? Would I just need to throw in a bit of flour to thicken the corn? I made this today and made a mistake I think. I think I used too much flour to coat the chicken and then the flour burned in the skillet. subsequently , the onions looked burned too so I just threw the pan out and started over in the middle of the recipe. can using too much flour be a problem ?
