Chewy Chocolate Chip Cookie Granola.
Welcoming Tuesday with a new kind of cookie, Chewy Chocolate Chip Cookie Granola.
Not technically a cookie, but this granola tastes like an oatmeal cookie that’s been crumbled up, and you guys it is so good.
I took this cookie granola with me for a super quick trip to Aspen this past weekend for the X-Games, and even though I was there less than twenty-four hours, the entire batch had been devoured by the time I left. It’s that good. But then who wouldn’t enjoy a cookie-like granola to snack on, you know?
Also, speaking of Aspen, I’m realizing I never told you guys about my weekend. My younger brother Red was competing at the X-Games, so my family and I went to watch. I only came for finals, but it was fun to get to watch Red complete. I don’t normally make it to his contests since a lot of them are out-of-state, but I always try to make an appearance to the ones that are here in Colorado…yet everyone is always so surprised when I show up, hmmm. Red took fourth, which isn’t his best ever, but he was having some speed issues with the snow and what not, he’ll get em’ next time. Either way, I am always so impressed watching that kid fly through the air. He makes it look effortless.
Between the two plus hour drive to Aspen Friday night, and then back on Saturday night, that pretty much took up my weekend. I spent Sunday cooking and packing for a quick trip to Austin, Texas, which is where I am now. I flew in yesterday for a fun shoot with Camille Styles, but will be off again to LA tonight for a quick overnight stay, then back home tomorrow night. A busy three days, but also a fun three days! Hoping to catch a glimpse of Red while in LA before he heads off to Korea for the Olympics (…no big deal or anything).
And now that we’ve caught up on life stuff, let’s talk about the today’s recipe.
I got this idea from my Mom’s Oatmeal Chocolate Chip Cookie recipe that I included in the Half Baked Harvest Cookbook. Mom’s cookies are my absolute favorite, but they do tend to be on the crumbly side, which is a good thing. Trust me.
PS. has anyone made these cookies?! Do you love them as much as I do? I hope so!
All the crumbs that are normally left behind by these oatmeal chocolate chip cookies made think about how good a cookie granola would be. Obviously, I immediately got to testing this recipe, because I mean, oatmeal cookie granola.
With CHOCOLATE CHIPS.
YES. Please.
Clearly, I am very excited to share this recipe with you guys.
Seeing as this is a granola recipe, I wanted it to be much healthier than your average cookie, so I decided to load it with all the good things….old fashioned rolled oats, quinoa, nuts, seeds, and honey for sweetness. So a lot of your classic granola game players.
So what makes this a cookie granola?
The addition of a little butter, plenty of vanilla, and a very generous amount of chocolate chips.
Three simple but perfect ingredients that take this granola from being just like any other granola, to honestly one of the best granolas. Ever. Again, chocolate chips are involved.
They’re soft, chewy, sweet, and chocolatey. The best.
I’m recommending you make a big batch to keep on hand at all times. This granola is great for breakfast, snacking, and even dessert.
I love, love, love eating this granola with a little milk and sliced bananas. It feels like an indulgent treat, but it’s actually very much on the healthy, protein, and nutrient packed side. To make the recipe a smidge healthier, be sure to use organic, grass-fed butter, and extra dark chocolate chips. If you are vegan, you can replace the honey with maple and use vegan chocolate chips.
And lastly, I’m planning to pack a bunch of food for the plane ride over to South Korea next week. I’m thinking that this granola will need to be in my food bag. Feeling like snacks are going to be a must for the long 18 1/2 hour flight (omg. too long).

I’ve been looking for some good recipes for a granola bar. I searched your site the other day and found some great ones, but am wondering what I could add to / change about this recipe to make them into granola bars as this looks like a recipe my husband would love. Thanks!
Absolutely love this granola! My favourite cookie in the whole world is a chocolate chip oatmeal cookie. And yes. The version in the HBH book is ah-mazing. But if I can have this for breakfast everyday I’m in. Like you said… with bananas. Obvs.
Ah thank you so much Debs! I am so glad you like the one in the HBH cookbook and this!
Ooooh this granola looks so so good! Granola is one of my favorite things to make on weekends, so I’ll be adding this one to the repertoire! xo

What would you recommend for substituting the almonds for a nut allergy? Increasing the pumpkin and sunflower seeds? This looks divine!
Yup! Just increase the other seeds. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂

I have a dairy and nut allergy. Any substitutions for the butter and almonds? Coconut oil and extra seeds? This looks DELISH!!
Coconut oil and extra seeds will be amazing! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Hey Tieghan,
I love this granola and think it would be lovely as snack food! I made your moms cookies for my mom before the spring semester and she loved them! I should send her this granola recipe (since I have the book with me), and maybe it would be nice with some coconut too. 🙂
I’m sorry Red didn’t do the best but I’m sure he loved seeing you there! I hope you’re getting some rest and enjoying all of your work travels.
I’m looking forward to tomorrow’s post and hope you’re sleeping well!
These look fabulous Teighan!! I could much my way through this tray. Love your version in the book too.

Hello new favorite granola!!
Thank you Natasha!
Yum! I can’t get enough of this!
Thank you Jennifer!
I’m planning on making this but I have a question about the quinoa.. I know that cooked quinoa is not okay to leave out m, but does baking it after cooking change it? Or should this granola be stored in the fridge?
HI! You don’t need to store this granola in the fridge. It keeps great at room temp. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Cookie granola sounds like heaven to me – need this in my life!
YES! You totally need to try this! I hope you love it, thanks Laura!
Made this today and it was seriously so easy and so delicious. It really tastes like an oatmeal chocolate chip cookie! I can’t wait to bring this to work as a snack!

This morning my boys (10 and 13) helped me make your granola, we ate it over Greek Yogurt and strawberries. It is OUTSTANDING! Thanks! L
I am so glad you all enjoyed this! Thank you so much!
My boyfriend recently acquired a taste for this super expensive granola from Whole Foods and he DOWNS these tiny bags like it’s his job… at $7 a pop, it drives me crazy!!! He LOVES chocolate chip cookies and I can’t wait to make this.. I have no doubt he’ll love it, and I’ll be happy he isn’t wasting money on overpriced, prepackaged food 😉 Side note: I have your cook book and made the chipotle turkey sweet potato skins for lunches this week and I’m obsessed!!! SO GOOD!!! (literally eating it on my lunch break as I type this)… Truly, everything I’ve ever tried from you is incredible; thank you so much for sharing your craft with us! Lastly, I’m originally from Wyoming (Hi neighbor!), currently living in Boston, MA, but we are moving to CO this summer! Can’t wait to get back to the west and the mountains. 🙂
Yes! Totally make him this I am sure he will love it! And homemade granola is always cheaper and usually healthier.. so win, win!
I am so glad you are loving the recipes from the book, thank you so much! What part of CO are you moving to? That is so exciting, totally love it here!
I just made this…my first homemade granola… and I am not disappointed! So good!
Thank you McKenna!

Love this recipe, thank you so much! I have one question though, I was wondering whether the calories that you specify in the recipe are per serving or for the entire recipe?
Hi Paula! I usually go per serving, but it is only an estimate. xTieghan
